Try McKinney’s surprising

“Sometimes the simplest
appetizers are the tastiest,”
McKinney says. Here’s one she
makes with fresh eggplant. Slice
the eggplant into ¼-inch slices and
brush with olive oil. Grill 3 to 4
minutes per side, until grill marks
have formed. Top the slices with a
mixture of ricotta and goat cheese
and cherry tomato halves. Drizzle
with a little balsamic vinegar.

SKEWER YOUR SALAD.
Everyone will want to eat their
veggies when they’re on a stick.
“All of my favorite components
of a crisp chef’s salad—on a stick.
This recipe is picnic style at its
best!” McKinney says. Skewer
iceberg lettuce chunks, bread
cubes, hard-boiled egg halves,
cubed turkey, cherry tomatoes,
sliced English cucumber and
cubed Cheddar cheese. Serve
with your favorite creamy herb
dressing.
MAKE AHEAD—FOR EASE AND
TASTE. Some dishes benefit from
an overnight chill. From coleslaw
to potato salad to pimento
cheese, make whatever you can
the day before. This strategy
will give you time to enjoy
yourself on your deck or in your
backyard.

END ON A “JARRING” NOTE.
Desserts like puddings and trifles
are extra-special when served in
small glass jars. Everyone likes
getting their own, and you can
make and assemble them ahead of
time. Use jars for serving ice cream
or chilled fruit, too.

Grill a lean, mean flank steak this
weekend and you’ll have
a couple of dinners covered
later in the week
Flank Steak Tacos
Preheat oven to 375°F. Wrap 4 to 6 corn tortillas
in foil and warm in oven for about 10 minutes.
Heat 2 Tbsp oil in a nonstick skillet over medium
heat; add thinly sliced leftover steak. (Sprinkle
with chili powder and crushed red pepper flakes
if you like.) Cook, tossing the steak, until warmed
through. Divide the steak among the tortillas and
add toppings, including sliced avocado, chopped
red onion, chopped jalapeño peppers, chopped
cilantro, shredded Monterey Jack cheese, shredded
lettuce and chopped tomatoes. Serve with lime
wedges for squeezing on top. Makes 4 to 6 tacos.

MAKE THE CUT It’s important to slice flank steak across the grain
(rather than with the fibers of the meat) for the tenderest slices. For
most flank steaks, this means slicing across the short width, rather
than along the length.

Pulse 3 cloves of garlic
and 1 (¼-inch) slice
of onion in a food
processor to chop. Add ½ cup each fresh cilantro
and flat-leaf parsley, 1 Tbsp red wine vinegar, and ¼
tsp each dried oregano, crushed red pepper flakes
and salt. Pulse to combine. Through the food chute,
stream in ¼ cup extra-virgin olive oil, processing
until smooth. Divide 12 oz mixed salad greens,
cherry or grape tomato halves and sliced button
mushrooms among four plates. Place thinly sliced
leftover steak (microwaved for 1 minute if desired)
on the greens. Spoon the sauce over the steak.
Serve with extra sauce on the side and crusty bread.
Serves 4.

1. Score steak in a crisscross
pattern on one side, making the
cuts about 1 inch apart.

steak to the bag, seal and refrigerate

grill until hot (450°F to 500°F). Grill
steak about 5 minutes per side for
medium-rare. Place on a platter,

slice the steak across the grain into
¼-inch slices. Or slice half of the
steak and reserve the rest for tacos
or salad. Serves 8.

(Storey Publishing), may teach elementary
and middle schoolers the basics of meal
and recipe prep, but it’s far from boring.
Kids ages 6 to 12 will learn simple kitchen terms,
practical safety tips and dozens of beginner-friendly
recipes, like these Lettuce Roll-Ups and Cheesy Bean
Quesadillas. Tear-out pages of colorful jar labels,
stickers, blank recipe cards and placecards add
interactivity and fun. And when budding chefs see
the photographs of creative food projects like hardboiled egg faces and PB & Honey Pockets, they’ll beg

Cheesy Bean Quesadillas

cups shredded Monterey Jack cheese

1. Place a tortilla on a plate or cutting board. Add
a few spoonfuls of refried beans and spread them
out with the back of the spoon. Sprinkle evenly with
some of the cheese. Place a second tortilla on top.
3. Flip and cook on the other side until light brown.
Repeat with the rest of the ingredients to make
three more quesadillas.
Crazy Quesadillas
FLOWER FUN Arrange the quesadilla wedges like petals
around a tiny bowl of salsa. Add a cilantro leaf stem.
4. Place the quesadillas on a cutting board. Use
a pizza cutter to cut it into wedges. Arrange
the wedges on a plate and serve with salsa or
guacamole. Serves 8.
FLUTTER AWAY To make a butterfly, cut the quesadilla into
halves. Add an olive head, cilantro stem antennae, and some
corn and tomato spots.

1 lb dried navy beans or 3
(16-oz) cans, drained and
rinsed
2 medium onions, vertically
sliced
½ cup molasses
1 Tbsp brown sugar
4 tsp brown mustard
¼ lb thick-sliced bacon

1. If using dried beans, soak
and cook according to package

Rum and Mango Marinade
The fruit juice and rum caramelize on the meat,
resulting in a nicely browned crust.
Whisk together ¾ cup light rum, ¼ cup
dark rum, 1 cup mango nectar, 1 Tbsp
vegetable oil, 1 Tbsp white vinegar, 1 tsp
kosher salt and a few splashes of Caribbean
hot sauce. Marinate pork tenderloin, spare
ribs or pork chops for at least 30 minutes at
room temperature, or refrigerate overnight,
wrapped or covered. Remove meat from
marinade and season with salt and pepper
before grilling. Makes about 2 cups.

In a saucepan, mix 2 cups
apple cider or juice, ¾ cups
water, 1 Tbsp vegetable oil
and 1 Tbsp Dijon mustard. Heat the baste before you use it initially
and keep it warm over low heat between bastes. Season poultry
with salt and pepper, and then apply baste one to two times during
grilling or about once an hour during smoking. Makes about 3 cups.

Melt ½ cup (1 stick) unsalted butter
in a small saucepan. Stir in 2 to 3 tsp
Chesapeake-style crab seasoning
and the minced peel and juice of 1
medium lemon. Keep warm and baste
on vegetables two or three times
during grilling. Makes about ⅔ cup.
NOTE Leftovers can be
refrigerated in a covered

VEGETABLES
Because they cook so
quickly, vegetables
need strongly flavored
rubs or bastes.
FOR BEEF
This batch makes enough for 4 to 5
pounds of meat. Try it on flank, rib or
sirloin steaks.
In a blender or food processor,
combine 1½ cups soy sauce (like Kikkoman), ¼ cup plus 2 Tbsp
packed light brown sugar, ¼ cup sesame oil, 2 Tbsp Sriracha
(optional) and 6 to 8 cloves garlic. Pulse until a smooth, thick puree
forms. Pour over meat and refrigerate, covered, from 2 hours to
overnight. If possible, turn the meat in the marinade a time or two.
Makes about 2¼ cups.

A Summer Salad
to Remember
Just in time for Mother’s Day, a cookbook author
and her daughters share their kitchen traditions
Greek Pasta Salad
3 quarts water
½ cup Kalamata olives,
1½ Tbsp salt
pitted and coarsely
12 oz bite-size pasta,
chopped
your choice
½ medium red onion,
2 cups diced seedless
thinly sliced
cucumber, lightly
1½ tsp dried oregano
½ cup extra-virgin olive
sprinkled with salt
oil
2 cups cherry
3 Tbsp red wine
tomatoes, cut into
vinegar
halves and lightly
Freshly ground black
sprinkled with salt
1 cup crumbled feta
pepper
cheese
1. Bring water to boil in a large pot. Add salt and pasta.
Using back-of-the-box times as a guide, cook pasta until
just tender. Drain pasta (do not rinse), pour into a shallow
pan and let cool to room temperature.
2. When ready to serve, place pasta, cucumber, tomatoes,
feta, olives, onion and oregano in a large bowl. Add oil;
toss to coat. Add vinegar and pepper to taste; toss to coat.
Adjust seasonings and serve. Serves 8.

uby red and super tart, rhubarb is a
plentiful, if underappreciated, herald
of spring and summer. This leafy
perennial is a vegetable that poses
as a fruit in desserts and jam. Its peak season is
April through June—look for thin, crisp stalks,
which have the best flavor. In these tartlets,
cooking softens rhubarb’s fibrous nature,
sugar sweetens its tart bite, and a streusel tops
everything off with a bit of crunch.
Rhubarb Tartlets with
Almond Streusel
This recipe makes one 10-inch tart or eight
3-inch tarts. You can toss some strawberries
or raspberries in with the rhubarb. Just be
sure to use a total of 1½ lbs fruit.

cup granulated sugar, divided
Tbsp cornstarch
tsp salt, divided
tsp almond extract
cup all-purpose flour
(14-oz) package refrigerated
piecrusts (like Pillsbury)

Tbsp cold unsalted butter, cut
into ½-inch pieces
cup chopped almonds
1. Combine rhubarb, ¾ cup granulated sugar,
cornstarch and ¼ tsp salt in a saucepan over
medium heat. Cook until sugar dissolves and
rhubarb begins to release its juices, stirring
frequently. Reduce heat to medium-low and
cook until rhubarb softens but some chunks
remain, stirring occasionally.
Stir in almond extract and
remove from heat. Let cool to
room temperature.
LEAVE THE LEAVES, PLEASE.
If you’re lucky enough to have
a patch of rhubarb, remember
to eat only the stalks. The
leaves contain oxalic acid, a
potentially toxic substance.

2. Preheat oven to 350°F. Let
the piecrust stand at room
temperature for 15 minutes.
Line tart pan or pans with the
dough.
3. Place flour, brown sugar,
cardamom, 2 Tbsp granulated sugar and
remaining ¼ tsp salt in the bowl of a food
processor. Pulse to combine. Add butter and
pulse until mixture resembles coarse crumbs.
Transfer to a bowl and mix in almonds.
4. Lightly sprinkle each tart shell with about
½ tsp granulated sugar. Spoon rhubarb
mixture into shells. Sprinkle streusel over
filling. Place on a rimmed baking sheet. Bake
until crusts and streusel are golden brown
and filling is bubbling, about 25 minutes.
Serve slightly warm or at room temperature.

n this modern version of a school cafeteria
favorite, hamburger buns are swapped out
for ready-made piecrust, which is filled with
the classic, messy concoction of ground beef,
onions, ketchup and seasonings. The result? A
neater (if no less delicious) dinner.

clove garlic, minced
lb 90 percent lean ground beef
cup ketchup (like Heinz)

piecrusts (like Pillsbury)

1 Tbsp water
1. Preheat oven to 375°F. Line 2 baking sheets
with parchment or foil.
2. Place bacon and onion in a large skillet over

floured work surface and roll it into a larger
(about 12-inch) round. Cut into 6 wedges.
Repeat with second piecrust. Spoon 2 heaping
Tbsp beef mixture on half of the wedges,
leaving a ½-inch margin around the edges. Beat
egg with water; brush edges of pastry with some
of the egg mixture. Place remaining wedges on
top. Fold edges toward the center, and press the
tines of a fork onto the edges to seal.
4. Place pockets on baking sheets. Cut 2 or 3
small slits on top of each pocket and brush with
remaining egg mixture. Bake 35 to 45 minutes,
until pastry is golden. Let stand 5 minutes.

Seared Omaha Steaks® Filet Mignon
2 (5 oz.) Filet Mignons Fresh Thyme Sprigs
Salt & Black Pepper
1⁄4 tsp Chopped Garlic
2 tbsp Canola Oil
3 tbsp Unsalted Butter
1. Season your thawed steaks with salt & pepper.
2. Heat oil in skillet on high until it starts to
barely smoke.
3. Sear each flat side for 2 minutes, then sear all
4 small sides for one minute.
4. To baste: Lower heat to medium. Add butter
and melt with thyme & garlic. Spoon butter
over steak.
5. Steaks are done at 135º internal temp.
Remove from skillet & let rest for 5 minutes
before serving.
