Treebeards' Jerk Chicken
Preheat oven to 350º
Jerk recipes come from the Caribbean Islands and each has its own special flavor.
Our recipe is not only used as a marinade for chicken, but also works well for beef, pork, or fish.
Jerk Marinade
1 teaspoon ground allspice

2 tablespoons vegetable oil

1 tablespoon salt
/2 teaspoon ground nutmeg
/2 teaspoon ground cinnamon
/2 cup finely chopped green onions
(including tops)
/2 cup white vinegar
/4 cup soy sauce
pinch of garlic powder
6 medium Serrano peppers,
chopped small
In a small bowl, mix marinade ingredients.
Oven Jerked Chicken
2 chicken breasts, bones
and skin intact, cut in halves

/3 cup lemon juice

/2 cup jerk marinade
Wash chicken in lemon juice. Discard lemon juice and place chicken and
marinade in an airtight container. Marinate overnight in refrigerator.
Place chicken with marinade in a baking pan.
Bake at 350° for 20 minutes.
Turn and bake an additional 20 minutes or until golden brown.
Serves 8.
