Nina Katrina
If you missed her last October – you don’t want to miss her in May.
Nina was born in Texas, but grew up in Brazil and Panama. She began performing in the Austin,
Texas area and spent the next ten years traveling. While on tour she performed extensively in the
San Francisco Bay area, Europe and St. Croix. Nina speaks and sings in many languages, including Spanish, Portuguese, Catalan, French, Hebrew and Italian.
Nina recorded with The Austin Lounge Lizards featuring Jerry Jeff Walker and has opened for a variety of international musicians including Brazilian recording artists Milton Nascimento, Djavan, Airto Moreira & Flora Purim and
South African recording artists Johnny Clegg and Savuka. Her CD "Sea Level Sessions" features an eclectic mix of treasured songs by friends Walter Hyatt, Emily Kaitz and Dana Harding, as well as gems in Portuguese, French and Spanish.
Nina's many years of experience as a recording and performing artist in diverse venues allows her to tailor her performance to the unique needs of the client, from a solo format to a full orchestra.
In addition to her talents as a vocalist, Nina plays guitar and percussion. Her voice over credits include being the voice of
Nortel Networks EJ for South America.

Randy Mayeux
For well over a decade, Randy Mayeux has been presenting book reviews to
audiences throughout the North Texas area. The phrase “book review” is
inadequate – he provides an entertaining and captivating presentation of
the best stories and ideas from the books he chooses. His curiosity drives
his varied interests. He has reviewed books on the Middle East, Al Qaeda,
Success, Business, and an array of towering biographical figures. The Big
Rich is a perfect choice for Randy.
The Big Rich: The Rise and Fall of the Greatest Texas Oil Fortunes by Bryan Burrough is the selection for our June Chautauqua. Here are some excerpts from reviews of this genuine Texas story:
"If Texas Oil had a Mount Rushmore, their faces would adorn it," Burrough writes. "A good ol' boy. A
scold. A genius. A bigamist. Known in their heyday as the Big Four, they became the founders of the
greatest Texas family fortunes, headstrong adventurers who rose from nowhere to take turns being acclaimed America's wealthiest man."
Capitalism at its most colorful oozes across the pages of this engrossing study of independent oil men.
Vanity Fair special correspondent Burrough (coauthor, Barbarians at the Gate) profiles the Big Four oil
dynasties of H.L. Hunt, Roy Cullen, Clint Murchison and Sid Richardson, along with their cronies, rivals,
families and, in Hunt's case, second and third families. The saga begins heroically in
the early 20th-century oil boom, with wildcatters roaming the Texas countryside
drilling one dry hole after another, scrounging money and fending off creditors until
gushers of black gold redeem them, and goes forward from there.
Burrough brings each of his outsized subjects brilliantly to life, pitching their individual epics against a grand narrative of rise and decline.

IN GOOD SPIRITS
Every few months I seem to find another wine varietal to get passionate
about. It started about three years ago with dry French Roses, I had to try
every one I could find. After that I moved on to Malbec from Argentina
which I still enjoy. Last year my grape of choice was Carmenere, a little
known varietal grown widely in Chile which is quite value priced (i.e.
cheap!). A special thanks to PCC Wine Committee member Larry Fellman
who recently brought me a bottle of Bonarda, a wine I had never heard of
from Argentina. The beautiful fruit flavors and well balanced tannins may
make this the next to receive Malbec level popularity.. My big varietal of
choice at the moment is Grenache.

Grenache is one of the world's most widely planted grapes. It's used in
everything from France's Châteauneuf-du-Pape and Tavel to Spain's Priorat and Garnacha rosés.
It was Australia's top grape until it was supplanted by Shiraz. And it has been widely grown in California for decades. I have especially been enjoying the Garnachas from Spain. Widely used in the
past only as a blending grape, Grenache is now being grown in better areas with more care and now
is able to stand on its’ own. Grenache is enjoying a surge of popularity with winemakers in the
United States now and there is buzz that it will be the next Pinot Noir sized hit, especially as Pinot
Noir prices have risen so high. My favorite wine writers, Dorothy Gaiter and John Brecher of the
Wall Street Journal recently conducted a tasting of American Grenache and were quite impressed
with the quality of the wines. They also wrote about white wine versions called Grenache Blanc
and Grenache Gris which I have not tried but will be on the lookout for. Next time you are in
your neighborhood wine store pick up a bottle of Grenache in any form and let me know what you
think and find. I am on the lookout for the perfect ones to add to the new PCC Wine List coming
out in May.
Grenache is a great warm weather wine, and speaking of warm weather or should I say HOT
weather, Chef Michael and I are planning our first "Summer Wine Dinner" in July. In the past we
have presented a Summer Wine Tasting, this time we will have a full dinner matching great Summer Cuisine with wonderful wines suited to our Texas climate. This is an event I am very excited
about, look for more details soon.

“ALIVE” from México

Chiles en Nogada…VIVA!
It is May and the siren song of chiles en nogados beckons.
Unexpectedly, my presence is required in Mexico City. It has rained for weeks, and the air is fresh.
I have a few hours to spend before an afternoon engagement. Should I visit a favorite museum,
search for wild mushrooms in local markets, or buy elegant, fantastically intricate wax tapers at a
decades-old family business, steps from the Zócalo? No, I opt for a bee-line three block walk from
my hotel to the FONDA EL REFUGIO, the cornerstone of the Zona Rosa for fifty years.
Perhaps no other dish says “MEXICO” to me, with the possible exception of mole, also a Puebla
creation, than this elegant, complex dish, which trumpets the arrival of the month of September
and almost non-stop regional festivities. Its presence becomes ubiquitous, as it appears on menus
from the meekest meson to the great culinary shrines of the city.
RED - WHITE - GREEN. The colors of the Mexican flag. Legend is that the recipe originated in
Puebla, and was first served in 1821, at a banquet on the occasion of the saint’s day of General
Agustín de Iturbide, August 28. The honoree was a man who, in spite of having fought on both
sides of Mexico’s war for independence, finally loosened the stranglehold of the Spanish, only to
crown himself emperor in 1822. His eight month imperium came to an end when he was forced to
abdicate by none other than Antonio López de Santa Anna, of Alamo infamy. The tale does not end
there. But I digress.
According to the recipe, a chile poblano is broiled, peeled, and filled with a seasoned meat mixture
sweetened with dried and fresh fruits. It is then egg battered and fried, smothered with a walnut
sauce, garnished with pomegranate seeds and parsley, and served cold or slightly warm.
At the Fonda, a riotous tangle of Italian parsley crowns a plump chile and pomegranate seeds
swath the lower third, like a lap towel in a sauna. But it is the enshrouding sauce, a white creamy
concoction made with the peeled tender meats of new walnuts, hence enogado, that raises the dish
to sublime. Few restaurants offer an authentic version, peeling the walnut meat is a time consuming effort, and the nuts must be fresh or it is all but impossible - making this a seasonal dish of
short duration. La Fonda sprinkles a generous portion of chopped, peeled walnuts across the
“shoulder” of the chile, announcing authenticity in ingredients and technique.
The vendors roll towering wagons down the street, almost toppling with their loads of tri-colored
banners and flags. My nod to national pride is to sit quietly at my place by the window, white napkin in lap, and offer a sigh of appreciation for the visual pleasure of the chile en nogada, red, white
and green, and smacking my lips in
anticipation of the tastes to come.
