Over 25 years ago, Citarella purchased a wholesale fish company - Lockwood & Winant, to eliminate the middleman & offer the freshest fish
available at the fairest price. In 2007, we opened Meat without Feet which is a seafood supplier to leading restaurants. Between the two
wholesale fish businesses, we are one of the biggest players at the Fulton Fish Market in Hunts Point. In the fall of 2008, we opened our FULTON

Brisket Recipe
Starting with our PRIME first-cut brisket, our classic recipe is a customer favorite for its unbelievable flavor, juiciness, and tenderness. Our simple
preparation makes it perfect for the holidays. Improving with age, the brisket can even be made in advance. Enjoy.
Ingredients
3 Tablespoons Citarella Extra Virgin Olive Oil; 2 Large Onions, sliced thin; 3-3 ½ pounds of Citarella PRIME First-Cut Brisket; 3 Peeled Carrots, cut into ½
inch chunks; 2 28 oz Cans of Citarella Whole Peeled Tomatoes; hand crushed; 1 Tablespoon Sugar; 1 Teaspoon Kosher Salt; ½ Teaspoon Pepper;
1 Bay Leaf
Directions
Preheat oven to 350 degrees. Heat 1 tablespoon of olive oil in a large ovenproof pan. Sauté onions until light brown and remove from pan and set
aside. Salt and Pepper both sides of the brisket. Add remaining olive oil and heat. Once hot, brown the brisket on both sides. Add sautéed onions
and remaining ingredients. Cover and bring to a simmer. Place in the preheated 350 degree oven for about 2 ½ hours until tender.
Remove the brisket from the pan and let rest for 15 minutes. Discard Bay Leaf. Slice brisket against the grain and serve with pan juices and
vegetables, straining fat, if necessary. To reheat, remove from refrigerator several hours before you plan to serve it. Skim off any fat from the surface
and reheat gently on top of the stove until heated through - about 15 to 20 minutes. Makes about 6 servings.
