BARCELOS - A TOWN IN PORTUGAL
THE LEGEND OF BARCELOS
Located on a hill above the River Cavado, Barcelos is one of
the prettiest places in the north of Portugal. From its origins
as a settlement in Roman times, the town later developed
into a flourishing agricultural centre and achieved political
importance during the 15th century as the seat of the First
Duke of Bragança. Today, Barcelos is best known for its
pottery, most notably the brightly-painted clay cockerel.
The legend is so told:

Despite his protests of innocence, the man remained
condemned.
With global trends of today demanding the fast lane
approach in so many spheres in our lives, little time, if at all
is available to enjoy good old-fashioned traditions and
ideals. This rule applies equally as much to food trends and
eating habits around the world.
At Barcelos we are determined to bring a fine balance
between the traditional, healthy home-style cuisine and the
fast lane demands of the current world.
Our quick service restaurants are an exciting concept,
specialising in the traditional way of serving healthy and
spicy flame grilled chicken as authentically prepared and
mastered by the Portuguese hundreds of years ago.
Although a humble story, it is important that one discovers
the unique taste and experience of the Barcelos concept
through its History and roots of origin.
Hundreds of years ago, in the small town of Barcelos,
which lies off the shores of Condado Portucalense, today
known as Portugal, the idealisation of the Barcelos cockerel
was born from a legend concerning a Gallego who was
sentenced to hang for stealing a handful of silver.
In a last minute appeal to the judge, who was enjoying
dinner at the time, the condemned man made a bold
statement: "My Lord" the Gallego said, "If my claim of
innocence is true, let the roasted rooster on your plate get
up and crow."
Suddenly, a glorious scarlet plumed cockerel rose from the
judge's plate, proudly crowing loud and long... The man
was acquitted of course!
In memory of the tale, Hand Painted earthenware cockerels
are until today the most characteristic souvenirs of Portugal
and are always recognised as a symbol of Portugal. These
well-crafted colourful roosters are famously and proudly
known as the... "Galo de Barcelos"

Whilst encapsulating this famous extract from our history and further combining authentic tastes with modern world
systems and technology, the Barcelos concept was created in 1993 in Southern Africa.
The popularity of the product was instantaneous, satisfying the pallets of the young and old and of various cultures alike.
Filled with vision, passion and dedication, combined with spicy and welcoming flavours throughout the menu, the Barcelos growth was imminent.
For the first five years since its inception, product and brand development were implemented and in late 1998, franchising and a speedy development plan began.
So much so, that from humble beginnings the Barcelos stable today boasts in excess of 85 outlets throughout South
Africa, Botswana and Nigeria.
Based on sound business principles, the founders of Barcelos have set the cornerstones for the exciting brand to
continue to reach new boundaries for all in the Barcelos family stable to enjoy.

THE BARCELOS PRODUCT MENU
THE BARCELOS LOOK AND FEEL
The Barcelos menu has been carefully balanced so as to
satisfy patrons in need of a quick bite through the takeaway menu as well as catering for a full family dinner in the
seated restaurant area. The Barcelos brand offers patrons a
choice of four primary spicy flavours of marinade to enjoy.
As important as the product is, so are the aesthetics of the
Barcelos look and feel. Colours and matching materials
have been selected so as to match both the historic value
of the name as well as the ethnic value of the product.
Our marinades are blended from a variety of tantalising
spices combined with various strengths of Peri-Peri spices,
fresh Chillies and also the infamous Bird's Eye Chilli.
Patrons have a choice of Tangy Lemon, Mild Peri, Veri Peri
and for the super daring and hot spirited individuals, we
also offer our famous Supa Peri marinade.
Our specialty chicken products are marinated for a period
of 24 hours prior to being char-grilled on open flame gas
griddles to absolute perfection before serving. The weights
of our spatched-cock broilers range between 1.1kg to
1.2kg.
The Barcelos chicken burgers have also proven to be one
of the most popular meals on the menu. Using pure
chicken breast fillets in combination with the Barcelos
marinades served on a fresh hot bun undoubtedly makes
this product a must for the hungry.
Colourful menu boards are used to depict appetising
photographs of the various food items.
Latest technology software and hardware is used for ease
of flow whilst processing orders through the kitchen.
The Barcelos open plan kitchen layout is especially
designed so that the customer has visual contact with the
preparation of the product. This design, whilst pleasing and
theatrical in that the customer sees the product being
prepared on the flame, also allows the customer the
freedom to observe the cleanliness of the preparation area.
The latest and most efficient catering equipment is used to
facilitate the production line.
All equipment is supplied with castors so as to make
cleaning easier and enhance mobility. Staff and managers
are styled in branded Barcelos uniforms so as to create a
professional image of the brand.

SETTING UP A BARCELOS OUTLET
Barcelos has created an all round system whereby the complete setup of all new outlets are handled by experienced
in-house contract teams.
All drawings and designs are handled through an internal design and print studio and all drawings are presented in
electronic format.
All furniture, shop fitting and internal decor is handled by an internal team of professional joiners.
All the kitchen equipment has been custom designed and sourced from long standing reliable suppliers to suit the
Barcelos operation.
Once the outlet is set to open, the entire project management and installation is handled by the team of the franchisor. A
minimum of 6 weeks lead-time is required after contracts are concluded for the outlet to be completed. Whilst the outlet
is being erected, a qualified member of the franchisor will select and interview new staff to operate the outlet. A comprehensive seven-day theoretical and practical training programme is afforded to all newly appointed staff and management
of the new outlet. Once the outlet is complete and ready to open, the operations team of the franchisor will in conjunction with the newly trained staff and management undertake to open the outlet.
This assistance programme will continue for a minimum of ten days whereby the franchisee takes over the operations of
the outlet.

Advanced electronic point of sale operating systems are used both at front and back of house.
The advanced software package used allows the operator to maximize controls whereby product usage is continuously
monitored.
Food cost analysis; complete recipes breakdown, purchases and sales are also monitored through the system. Various
management reports offer the operator the ability to monitor the outlet and take proactive measures in areas which need
attention.
Reliable hardware such as touch-screens, kitchen printers etc. add value in rendering quick and speedy service to the
customers.

At every turn, the operators will find a dedicated and experienced member of the Barcelos team ready to support them.
With a culture of uncompromising high service levels in place the entire Barcelos team prides itself in rendering support
beyond expectation.

and ongoing outlet courtesy visits can be expected by the operator.
