from the publisher
Happy New Year to all!
This is the first time in
five years that we have
run our Best of Chicago
issue and it was about
ted with the Brown-Forman team
time. A lot of hard work
went into putting this together and I truly hope you enjoy it
as well as find it a useful, about town guide.
Congratulations to all the winners and keep up the excellent work that you do every day to make every experience
a great one. Thanks to all those who nominated Chicago’s
top venues, and a big thank you to the Chicago SCENE
academy members and industry leaders that took the time
out of their busy schedules to help us come up with our
tried and true Best of Chicago list. I also want to thank my
Editor, Kira Coplin, and all of the writers that were able
to pull this together in a very short period of time. And of
course, my Creative Director, Scout, who ma
de it all look so good–this month and every month.
The New Year brings some great new venues to our city.
Mannequin Nightclub has opened up in West Town and
Soiree Bar Bistro has landed in Lincoln Park. You can check
out these new places and more on page 40.
Enjoy the mag,

There’s a new venue adding life to the Fulton River District. The new Powerhouse
Restaurant and Bar (215 N. Clinton, 312.928.0800), housed in the historic Chicago
& North Western Railway Powerhouse building, offers classic American cuisine like the
Double Cut Iowa Pork Chop ($28). Run by Owner/Partner Jimmy Alexander (Alexander’s Steak House and Pegasus) and Partner/General Manager Mitchell Schmieding (Charlie Trotter’s and Eleven Madison Park in New York City), the upscale restaurant is the result of a major restoration
project spearheaded by Chicago-based
Parachin Design Studios Ltd. “This restaurant is a product of our collective vision,”
says Schmieding. “As a team, we worked
very hard to transform this remarkable
old building into a modern dining establishment that celebrates Chicago’s industrial past. We’ve given it a modern edge,
but there’s still a definite classicism to it.
We made a conscious effort to preserve
historic elements in a way that reflects Chicago’s great industrial spirit.” Powerhouse
offers two dining areas–the main dining
room and the bar–and come this spring,

masses. Strained into a sugar-rimmed glass, Absolut Kurant and Absolut Raspberri are
mixed with blueberry puree and lemon juice (not to mention straight Absolut) to make
up the delectably delicious Lily Martini recipe. How Carrie Bradshaw is that?
“The vodka martini is the epitome of cocktail sophistication,” says Claire Smith, International Brand Ambassador for Belvedere. “It’s an elegant, effortlessly cool drink that
requires dedication to appreciate, yet once understood, never fails to deliver. It is
strong yet graceful, simple yet complex. It is a cocktail icon because it represents so
many contradictions in terms.”
To help you in your quest for the perfect martini, we’ve found some of the best places
in Chicago that serve up the classic gin recipe and others that have taken a creative
approach to the quintessential cocktail. The martini isn’t the Holy Grail: it’s achievable, albeit difficult, but achievable. Master mixologists and veteran bartenders
can share their scientific gin-to-vermouth
ratios, but the perfect martini lies in the
palate of the beholder.
Stirred Not Shaken
Forget James Bond, if you’re serious
about the martini, then you know that
a proper gin martini should be stirred
rather than shaken. “Shaking creates air
in the spirit, known as bruising, and sometimes you can add too many shards of
ice which results in a dilution of water in
the martini,” adds Moreland. “The texture

If you’re as serious about the martini as Moreland, then you’ll
feel right at home at The Violet Hour (1520 N. Damen,
773.252.1500), a speakeasy-style lounge with chic, modern
design: parquet hardwood floor and plush, lavender, crushedvelvet curtains. A partial reference to the hour of dusk, the
hour of the martini, the Violet Hour delivers real drinks for real
drinkers. Every element screams sophistication, from the male bartenders’ Prohibitionera vests, collared shirts and ties to the classic LBDs that grace the women. Housing

connoisseur’s paradise and has a waitstaff
equipped and well trained to serve up sig-
nature libations like the Manhattan ($9) and an Amaretto Fizz
($10). It is at this establishment that you will be served not only a fine
spirit, but a proper cocktail. According to the 1896 Stuart’s Fancy
Drinks and How to Mix Them–the ultimate bartender’s bible–Plymouth Gin is documented as the gin used in the original dry martini
recipe. At the Violet Hour, order a Plymouth Gin Martini with 3
parts gin and 1 part Noilly Prat Vermouth. Garnish with a lemon
twist rather than olive as the former adds flavor, while the latter
modifies the taste.
Keeping with the theme of classic haunts that serve timeless cocktails, one can’t overlook Jilly’s Piano Bar (1007 N. Rush, 312. 664.1007) on Rush. Once a local hangout

By day Marchal works for General Growth Properties, a publicly traded company that
owns and manages shopping malls nationwide. But Marchal’s passion is running the
Lakeview Polar Bear Club, which started as a lark and seven years later is one of Chicago’s more unique charitable events.

The first year the Lakeview Polar Bear Club raised $6,800 for Marchal’s cousin, who
was diagnosed with pulmonary fibrosis, a genetic lung disease. Each year since then,
one Chicago family is chosen by the LPBC Executive Committee to receive the funds,
which include private donations and business sponsorships, such as the Scottsdale Convention and Visitors Bureau. Last year Marchal helped raise $12,500, a record for
the LPBC.
The event’s growth and success is a testament to Marchal’s initiative, whose only experience at spearheading a similar event was as the unofficial founder of the University
of Dayton’s Streaking Club. Marchal’s fondness for the goofy is dwarfed by his desire
to give something back to the community.
Have you always wanted to be a polar bear?
BM: I always wanted to do it, but back home in Ohio all we had was a dirty river. And I
wasn’t about to go up to Cleveland and jump in their lake. So me and a couple buddies
went out and did it on New Year’s our first year in Chicago. Then I found out about my

held for the Rowells, this year’s LPBC Chicago family in need.
