Dear Reader,
Se han cumplido ya dos años desde mí llegada al Hotel Ritz de Madrid y es un placer, para mí y para todo
mi equipo, comenzar una nueva primavera en la que
procuraremos ofrecer a nuestros clientes un sinfín de
sorpresas para que su estancia resulte inolvidable.
I joined Hotel Ritz by Belmond in Madrid two years ago
and, as spring comes round again, my team and I are
ready to offer our clients all sorts of surprises to make their
stay unforgettable.
Sin duda, la primavera representa la llegada de la estación más luminosa del año y la más esperada en el Ritz
pues conlleva la apertura del Jardín y de la Terraza del
Restaurante Goya, donde nuestro chef Jorge Gonzalez
nos deleita con cartas innovadoras que representan lo
mejor de la gastronomía madrileña y de la española
en general, como recientemente le ha sido reconocido
por la Real Academia de Gastronomía Española.
Además, le informamos que, en nuestro constante afán
por mantener actualizada la joya arquitectónica que
César Ritz construyera allá por 1910, se han puesto en
marcha trabajos de restauración de la fachada histórica
de este emblemático establecimiento; una inversión de
más de medio millón de euros que le devolverá todo
el esplendor con la que fue concebida originalmente.
Aprovecho estas páginas para presentarles a Jérôme
Guyon de L’Atelier Verde, el creador de los espectaculares detalles florales que decoran el hotel, y a nuestra
Jefa de Lencería, Jacinta Mancilla, responsable de esos
pequeños grandes lujos del Ritz, como las sábanas de
lino perfectamente planchadas, las blanquísimas toallas de algodón orgánico o el mimo con que se trata a
las prendas que nos confían los huéspedes.

Spring represents the arrival of what must be the
brightest time of the year and one of the most eagerly
awaited seasons here at Hotel Ritz by Belmond. It heralds
the opening of the garden and of the Goya Restaurant
terrace, where our chef, Jorge González, tempts us with
his innovative menus representing the best of Madrid’s
gastronomy and of Spanish dining culture in general,
as was recently acknowledged by the Royal Academy of
Spanish Gastronomy.
Furthermore, in our perpetual desire to keep the building
– an emblematic establishment built by César Ritz in
1910 – in tip-top condition and to maintain architectural
standards, restoration work has begun on the historic
façade – a half-a-million-euro investment that will see it
regain all its original splendour.
In this issue we introduce Jérôme Guyon from L’Atelier
Verde, creator of the spectacular floral displays that
decorate the hotel, and our Head of Linen, Jacinta
Mancilla, who is in charge of those little hallmark luxuries
of the Ritz, such as the perfectly ironed linen sheets,
the snow-white organic cotton towels and the careful
treatment of the clothes that the guests entrust to us.

brought out their first album, The fourth world, a work

they re-appeared, calling themselves Maroon 5, and
went on to win several Grammy awards and multiple
Platinum Discs, and now the Maroon 5 World Tour
2015 kicks off in Madrid.
They will perform on stage themes from
their fifth studio album: “V”.

The English National Ballet, whose artistic director
is the prestigious Spanish ballerina Tamara Rojo,
returns to Teatros del Canal with Lest We Forget.
The programme opens with No Man’s Land, by
young British choreographer Liam Scarlett, one
of the best-known exponents of modern classical
dance. This is followed by a performance of The
Firebird choreographed by George Williamson, and
the session ends with Dust, by the ballet dancer and
choreographer Akram Khan, who also leads his
own dance ensemble.

Exposición organizada con motivo de la restauración del gran Calvario de El Escorial. La muestra es una oportunidad única y extraordinaria de
contemplar el Calvario, el Descendimiento de la
Cruz y la Virgen Durán juntas, con otras obras del
pintor Rogier van der Weyden cómo el célebre
Tríptico de Miraflores, procedente de la Cartuja de Miraflores y hoy en el Museo de Berlín. La
muestra permite apreciar diversos aspectos de
la creación artística del maestro flamenco como
la fuerte relación de sus obras con la escultura, la
gran influencia posterior que tuvo su arte y su repercusión en España.

El Reina Sofía exhibe una selección de más de
cien obras maestras (pinturas, esculturas, collages, fotografías y vídeos) de la colección del
Kunstmuseum Basel, El conjunto, que abarca desde finales del siglo XIX hasta la actualidad, ofrece
un amplio panorama del tránsito del arte moderno al contemporáneo, incluyendo ejemplos de
movimientos como el expresionismo, el cubismo,
el purismo, la abstracción, el constructivismo, el
minimalismo, el post-expresionismo alemán, la
abstracción estadounidense de postguerra o el
Pop Art.

This exhibition has been organised to mark the
restoration of the Great Crucifixion in El Escorial. The
display is a unique opportunity to see The Crucifixion,
the Descent from the Cross and the Durán Virgin
displayed together, along with other works by artist
Rogier van der Weyden, such as the famous Miraflores
Triptych from the Carthusian monastery in Miraflores
which is now housed in the Museum of Berlin. The
display allows the visitor to appreciate different
aspects of the Flemish master’s artistic oeuvre, such as
the close links between his paintings and sculptures,
the far-reaching subsequent influence of his art and its
repercussions in Spain.

evolution of modern art, including examples from
movements such as Expressionism, Cubism, Purism,

partida para un recorrido por piezas de distintas

Lo que se busca es que los instructores enseñen
a contemplar la obra y a comprender la información que contiene. Para ello se fomenta el diálogo entre los participantes y se presenta el arte
como un medio a través del que entender otras
culturas y sus maneras de interpretar la realidad.
Este programa, que nació como una cita puntual para los turistas que visitaban el Thyssen,
ha tenido tanto éxito que se ha convertido en
una opción permanente dentro de la oferta de
la pinacoteca. La actividad está dirigida tanto a
familias extranjeras, como a españolas que deseen ocupar su tiempo de ocio en la práctica
del inglés. Family Thyssen también se hará en
español en periodos vacacionales de Navidad,
Semana Santa y verano.
The museum’s Education Department is broadening
its scope with its new “Family Thyssen” initiative. This
new weekend activity aims to introduce families
with children aged from 6 to 12 to the world of art.
The tour through the rooms housing the museum’s
permanent collection takes about an hour and a
half and is in English. Following a common theme:
“The city for families who travel”, and accompanied
by an instructor, participants go on an imaginary
journey via the paintings, visiting several cities from
around the world and learning about different
themes linked with the portrayal of travel and the
city through art.

departure point for the tour of works depicting
different places at different periods.

The aim is for the instructors to teach participants
to study the work and take in the information
it contains. To this end, dialogue between the
participants is encouraged and art is presented
as a medium for becoming acquainted with other
cultures and the different ways in which they
interpret reality.
This programme, which started out as an
occasional activity for tourists visiting the Thyssen
Museum, has been so successful that it has become
a permanent option among the art gallery’s
activities. It is intended for families from abroad and
for Spanish families who wish to spend their leisure
time practising their English. During the Christmas,
Easter and summer holidays, the “Family Thyssen”
tour will also be conducted in Spanish.

Darío Villanueva (Villalba, Lugo, 1950), ha sido
recientemente elegido por el pleno de la Real
Academia Española (RAE) director de la institución. Se convierte, así, en el trigésimo titular del
puesto desde su fundación en 1713 y ocupa el
sillón D de la RAE.
Es licenciado en Filología Románica por la Universidad de Santiago de Compostela y doctor
en Filología Hispánica por la Universidad Autónoma de Madrid. Catedrático de Teoría de la
Literatura y Literatura Comparada de la Universidad de Santiago de Compostela.
Es correspondiente de la Academia Argentina
de Letras y doctor honoris causa por siete Universidades de Argentina, Estados Unidos, Perú,
Reino Unido y Suecia.
Señor Villanueva, antes que nada permítame
darle la enhorabuena por su reciente nombramiento. Es un honor y un placer que nos haya
concedido esta entrevista pues, como sin duda
conoce, uno de los salones del Hotel Ritz de Madrid se llama Salón Real Academia.
Si le parece, comenzaremos la entrevista hablando del español. ¿Cuál es el estado de salud actual
del español?
El español goza
de buena salud
Muchas gracias por su felicitación y por esa iniciativa del Hotel Ritz de dar el nombre de nuestra corporación a uno de sus salones.
Aunque el símil médico resulta muy tentador
para diagnosticar el estado de la lengua, si he
de responder en unas líneas, permítame decirle que la lengua española, hablada por cerca
de quinientos millones de personas en todo el
mundo, goza de buena salud.

No solo mantiene su esencial unidad en todo el
ámbito hispanohablante sino que se expande
de forma muy considerable, especialmente en
Estados Unidos, que puede convertirse en el
país con mayor número de hispanohablantes
del mundo en 2050, según algunos estudios.

absolutamente audiovisual como la actual ¿No
condiciona mucho la educación lingüística?

Darío Villanueva (Villalba, Lugo, 1950) was recently
elected as director of the Spanish Royal Academy
of Language (Real Academia de la Lengua, or RAE).
He is the thirtieth holder of this position since it was
founded in 1713.
He has a degree in Romance Philology from the University of Santiago de Compostela and a doctorate
in Hispanic Philology from the Autonomous University of Madrid, and is currently Professor of Theory
of Literature and Comparative Literature at the University of Santiago de Compostela.
Q: Mr Villanueva, first and foremost I should like
to congratulate you on your recent appointment. It is an honour and pleasure for us to have
been granted this interview with you since, as
you are probably aware, one of the rooms at Hotel Ritz by Belmond is called the Salón Real Academia. If you agree, we will start the interview by
talking about Spanish. What is the current state
of health of the Spanish language?
A. Thank you for your congratulations and for the
initiative taken by the Hotel Ritz in naming one of
its rooms after our corporation.
Although it’s very tempting to use a medical metaphor for diagnosing the state of the language, if I
have to answer in a few words, just let me say that
the Spanish language, which is spoken by around
five hundred million people worldwide, is in good
health.
Not only does it maintain its basic unity in the entire Spanish-speaking world, but it is also expanding considerably, particularly in the United States
which, according to some studies, could have the
largest number of Spanish-speakers by 2050.
Q. Language is a fluid thing. It is said that every
speaker creates language. But surely a culture
as audiovisual as today’s must have a major impact on linguistic education?
A. Linguistic education is one of the pillars on which
the correct usage of language rests, and as such
should be carefully guarded. I don’t think that any
problems or possible inadequacies to be found
there are related to the so-called audiovisual culture.

No creo que los problemas o las posibles deficiencias de la educación lingüística, que constituye uno de los pilares que sustentan el buen
uso del idioma y que como tal ha de cuidarse
con sumo interés, estén relacionados con la denominada cultura audiovisual.
Es cierto que vivimos rodeados de imágenes, pero
los medios audiovisuales, o “eléctricos” como los
denominaba McLuhan en los años sesenta del siglo XX, lejos de poner en peligro la oralidad, muy
anterior a la escritura, la han potenciado. Claro
que la televisión es imagen, pero también palabra,
como las tertulias, que son pura expresión verbal.
Algunos expertos hablan, incluso, de audiovisión.
Los teléfonos móviles se han convertido en herramientas para transmitir imágenes y también
palabras. Nunca se ha escrito tanto como ahora,
en gran parte gracias a esos llamados teléfonos
inteligentes.

Mientras el sistema educativo, como decía antes,
pieza clave junto con los medios de comunicación para el buen uso de la lengua, sea capaz de
formar ciudadanos cultos y curiosos, nada estará perdido ni será irremediable.
¿Cómo valora la incidencia de la era digital y
las nuevas tecnologías en el uso correcto de
la palabra?
Lo que para muchos de nosotros, los nacidos en
el siglo XX, sigue siendo un mundo aún sorprendente y a veces ajeno, para los jóvenes y adolescentes de hoy constituye su medio natural.
Esta revolución digital afecta notablemente
las distintas manifestaciones de nuestras vidas,
desde las personales hasta las profesionales,
pero, bien usada, las posibilidades y las ventajas
que ofrece la tecnología digital son inmensas.
En su discurso de toma de posesión expresó su
deseo de poner en marcha un plan estratégico
cuatrienal. ¿Cuáles serían sus objetivos fundamentales?
Según manifesté cuando accedí al cargo tras las
elecciones celebradas en diciembre de 2014, mi
propósito es poner en marcha un plan cuatrienal que haga sostenible esta institución con sus
recursos propios.

La Academia nunca recibió fondos públicos que
supusieran más del cincuenta por ciento de su
presupuesto anual. Ahora, esa aportación es
menor, pero nuestra intención es buscar nuevas
alternativas y soluciones para garantizar la viabilidad de esta institución tricentenaria.
It is true that we live surrounded by images, but far
from endangering orality, which pre-dates the written word, the audiovisual or ‘electronic’ media, as
McLuhan called them in the 1960s, have strengthened it. Obviously, television is image but it is also
words, as in talk shows, which are pure verbal expression. Some experts even talk of audiovision.
Mobile phones have become tools for transmitting
images as well as words. Never before has so much
been written, partly thanks to the so-called ‘smart’
phones.
As I said earlier, the education system and the media both play vital roles in upholding the correct
use of language so, as long as it is possible to create
cultured, curious citizens, nothing will be lost or irreparable.
Q. How much impact do you think the digital
age and the new technologies have had on the
proper use of words?
A. What continues to be a surprising and sometimes
alien world for those of us who were born in the
20th century, is a natural environment for today’s
youngsters and adolescents.
This digital revolution significantly affects both our
personal and professional lives, but when digital
technology is used well, the possibilities and advantages it offers are immense.
Q. In your inaugural speech you said that you
would like to implement a four-yearly strategic
plan. What would its basic aims be?
A. As I said when I accepted the post after the elections in December 2014, my aim is to create a fouryear plan that allows this institution to be sustainable using its own resources.
The Academy has never received public funding of
more than 50 per cent of its annual budget. That
contribution is lower now, and we intend to look for
new alternatives and solutions in order to guarantee the sustainability of this 300-year-old institution.
Q. The director of the RAE is also ex-officio chairman of the Association of Spanish Language
Academies (ASALE). Can we speak today of a
truly pan-Hispanic linguistic policy?
A. We certainly can. All of today’s academic works
result from the consensus and collaboration of the
22 Spanish language academies in Spain, America
and the Philippines.

El director de la RAE es también el presidente
nato de la Asociación de Academias de la Lengua Española (ASALE) ¿Se puede hablar hoy de
una política lingüística panhispánica real?
Sin duda alguna. Todas las obras académicas actuales son fruto del consenso y de la colaboración
de las veintidós academias de la lengua española,
distribuidas entre España, América y Filipinas.
Muy pronto esperamos promover, en el seno
de la ASALE, la incorporación de la Academia
Ecuatoguineana de la Lengua, hoy en proceso
de formación. Y aún existe otro proyecto en ciernes: la creación de una academia del sefardí o
judeoespañol. El ladino, la lengua de los judíos
expulsados de España en el siglo XV, constituye
un patrimonio cultural que ha sobrevivido de
generación en generación.

2014 recibimos un total de 54 grupos. Asimismo,
hemos organizado un club de lectura en torno
a nuestra colección Biblioteca Clásica, dirigida
por el académico Francisco Rico, y una serie de
representaciones teatrales, dirigidas por el académico José Luis Gómez, bajo la denominación
“Cómicos de la lengua”, tanto en 2014 como en
2015. Ambas iniciativas con gran éxito.
Pero también nos acercamos a los ciudadanos,
y esto es lo esencial, a través de nuestras obras
académicas, disponibles gratuitamente en Internet, y del servicio de consultas lingüísticas
que atiende el Departamento de “Español al día”.
Sin olvidar nuestra considerable presencia en
las redes sociales.

The Equatorial Guinean Spanish Language
Academy is currently being formed and we in
ASALE hope to include it as one of our members
very soon. We also have another project that is
still in its infancy: the creation of a Sephardic or
Judeo-Spanish academy. Ladino, the language of
the Jews who were expelled from Spain in the 15th
century, has been passed down from generation to
generation.
Q. Both the Academy’s headquarters building
itself and the works that are housed there are
quite marvellous. Should closer ties be promoted
between the public and this institution to make
it better known?
A. The Spanish Royal Academy of Language is,
first and foremost, a work and research centre.
That being said, we participate in open days on a
fairly frequent basis, accepting visits from schools,
universities and associations that want to take a
closer look at the Academy. A total of 54 groups
visited us in 2014. We have also set up a reading
club focusing on our Classical Library collection
and directed by Academy member Francisco Rico;
plus a series of theatre performances, directed
by Academy member José Luis Gómez, entitled
“Cómicos de la lengua” (Comedians of Language)
that were held in 2014 and are continuing in 2015.
Both these initiatives have been a huge success.
We also reach out to ordinary citizens, and this
is crucial, through our academic works that are
available free on the Internet and our linguistic
consultation service run by the “Español al día” (Upto-date Spanish) Department, not to mention our
considerable social media presence.

in Madrid 400 years ago.

El museo, inaugurado por S. M. el Rey Don Felipe VI, el 5 de noviembre de 2014, expone una
extraordinaria colección de pinturas de Rubens,

With an eye to safeguarding Spain’s historical ties
with the Seventeen Provinces of the Netherlands –
now Belgium, Holland, Luxembourg and Northern
France – which were ruled by the Spanish Catholic
Monarchy, first from Brussels and then, after 1558,
from Madrid, the Foundation recently opened a
new museum with an exhibition of works by the
best Flemish and Dutch artists of the 16th and 17th
centuries.
Inaugurated by His Majesty King Felipe VI on 5
November 2014, the museum has on display an
extraordinary collection of paintings by the likes of
Rubens, Van Dyck, Jordaens, and Jan Brueghel the
Elder, many of which are on loan from the Royal
Museum of Fine Arts in Antwerp (Government
of Flanders). Others are on loan from the Prado
Museum, Spanish Heritage, the Casa de Alba
Foundation, private collectors and the Foundation
itself. An enormous number of Flemish pictures
and tapestries can also be seen in many Spanish
churches and cathedrals – further evidence of the
historical links between Spain and the Netherlands.
Divided into three halls, the exhibition takes you on
a tour of the different genres in Flemish painting. For
example, on display in Hall 1 are several portraits,
the most outstanding of which is a magnificent
portrait of Margarita of Austria, Governess of the
Netherlands (1519). In Hall 2 is “The Martyrdom
of Saint Andrew” by Rubens (the Foundation has
owned this painting since its inception), along
with other works with religious and mythological
themes, while Hall 3 is dedicated to landscapes, still
lifes and scenes from everyday life.

The selection criterion employed by Fernando
Checa, the museum’s scientific adviser, was not just
to show paintings by the great Flemish masters,
but to astonish the public with the sheer scale
and quality of the portraits, mythological works,
religious iconography, still lifes, landscapes, genre
scenes and portrayals of animals, all of which
formed part of the so-called “Flemish school”. It is
an effective way of opening the public’s eyes to two
centuries of common European history.
El criterio de selección de Fernando Checa, asesor científico del museo, no ha sido sólo mostrar
piezas de los grandes maestros flamencos, sino
asombrar al público con la gran calidad de retratos, obras mitológicas, iconografía religiosa,
bodegones, paisajes, escenas de género, y representaciones de animales, que dieron vida a
la llamada “escuela flamenca”. Es un modo excepcional de contar al gran público dos siglos
de historia común europea.

delicado diseño y el color, los tapices son parte
integral del patrimonio cultural flamenco. El Museo exhibe también dos excepcionales tapices
ejemplo del arte flamenco en esta actividad.
Uno es el tapiz del s. XVI, “Los funerales del rey
Turno” y el otro, “El triunfo del tiempo”, de principios del XVI, que perteneció seguramente a la
colección de la reina Isabel La Católica.

Pero además, la Fundación Carlos de Amberes,
decidió en 2008 emprender el proyecto de restauración de la magnífica y única colección de
los tapices flamencos de Pastrana, hoy expuestos en el Museo Parroquial de la Colegiata de
Pastrana, que relatan las conquistas africanas
del Rey Alfonso V de Portugal. Su alta calidad
estética, valor histórico y su origen flamenco,
llevaron a la Fundación a asumir el esfuerzo de
restaurarlos y difundirlos, por lo que le fue concedido el premio Europa Nostra.

The Flemish tapestry
tradition
During the 15th, 16th and 17th centuries, Flanders
was the centre of tapestry production in Europe.
Flemish tapestries, famous for their colour and
complex, delicate design, form an integral part of
Flemish cultural heritage. Two examples of these
exceptional Flemish tapestries are on display in
the museum. One is from the 16th century entitled
“The Funeral of King Turnus”, and the other is an
early 16th-century tapestry entitled “The Triumph
of Time”, which probably belonged to the collection
owned by Queen Isabel the Catholic.
In 2008, the Carlos de Amberes Foundation decided
to embark on a project to restore the unique
Pastrana collection of Flemish tapestries that tell
the tale of the African conquests of King Alphonse
V of Portugal, not only because of their magnificent
aesthetic quality and historical value but also
because of their Flemish origin. The Foundation
was awarded the Europa Nostra prize for its work
and today the restored tapestries hang in the Parish
Museum of the Collegiate Church of Pastrana.

A lo largo de los 420 años de historia de la Fundación Carlos de Amberes, muchos han sido sus
avatares históricos, económicos y sociales. Sus
inicios, en 1594, tuvieron un marcado carácter
asistencial, determinado por el propio Carlos de
Amberes, que cedió terrenos y posesiones en
Madrid para que, a su muerte, sirvieran de albergue y hospedaje a los pobres y viajeros procedentes de las antiguas Diecisiete Provincias de
los Países Bajos que llegaban a la Villa de Madrid.
En 1988, la Fundación pasa a ser una institución
cultural cuya finalidad, en palabras de su Directora Catherine Geens, “es la de mantener vivos
los vínculos históricos y culturales que desde
el s. XV han existido entre España y las antiguas
Diecisiete Provincias de los Países Bajos”.
La Fundación promueve programas y actividades en las áreas humanísticas y científicas, además de exposiciones, conciertos, conferencias y

The Foundation’s commitment
to European heritage
During its 420-year history, the Carlos de Amberes
Foundation has experienced a great many
historical, economic and social changes. It was
created in 1594, and the early years were marked
by the hands-on involvement of Charles of Antwerp
himself, who ceded land and possessions in Madrid
so that after his death they would serve as shelter
and accommodation for the poor and for travellers
from the former Seventeen Provinces of the
Netherlands who arrived in the City of Madrid.
In 1988, the Foundation became a cultural
institution whose aim was, in the words of its
Director Catherine Geens, “to keep alive the
historical and cultural links that have existed
between Spain and the former Seventeen Provinces
of the Netherlands since the 15th century.”
As well as laying on exhibitions, concerts,
conferences and seminars, the Foundation
promotes programmes and activities in the
humanistic and scientific fields. The museum
receives support and contributions from its Friends
and the Ministry of Education, Culture and Sport,
the Autonomous Community of Madrid, Madrid
City Council and the Ramón Areces Foundation.

impar y preparaciones más barrocas”, apunta.
Having been trained in interior architecture and
history of art, and having spent a considerable
amount of time in France and England, Jérôme
Guyon can boast an impressive list of leading
figures from public, cultural and social life for whom
he has made truly delightful flower arrangements.
But quite apart from that, the look in his eyes tells
us that he has a passion for his work and exquisite
taste as evidenced in the rooms of Hotel Ritz by
Belmond where his creations are on display.
Flowers adorn all of the hotel’s rooms, from the
lobby to other public areas, including reception,
the concierge’s desk, the Goya restaurant’s tables
and the rooms used for the various events that are
held here every day. In addition, every one of the
bedrooms is adorned with orchids and bouquets
of red roses. These beautiful, colourful centrepieces
help to create a uniquely glamorous and welcoming
atmosphere.

make all the difference. It is a real luxury,” says

Hay clientes que solicitan que su habitación
contenga flores blancas o de otro determinado
color y a los huéspedes más habituales siempre
se les ponen las flores que son de su agrado. Si

En Navidad y, especialmente, coincidiendo
con la apertura de la terraza y la llegada
de la primavera, el hotel se transforma y se
convierte en una explosión de color difícil

puede definir la idea original de Jérôme para
decorar el hotel. El secreto está en la combinación de un hotel clásico con la exquisitez

With the opening of the outdoor terrace and
the arrival of spring, the hotel undergoes a
transformation, providing the setting for an
explosion of colour that is hard to imagine
unless experienced from inside. This year,

Renovation work has commenced on the emblematic Hotel Ritz by
Belmond to restore its historic façade. In a major drive to bring it
back to the state it was in when it was first built, the same materials are being used as the ones used last century.
Jérôme, who creates different arrangements
depending on the nationality of the people staying
at the hotel. “People from China like red flowers,
while someone from Russia is sure to prefer
an odd number of flowers and more baroque
arrangements,” he explains.
Some clients ask for white flowers or another
specific colour to be placed in their room, and we
always make sure our more regular guests have
their favourite flowers. If someone famous is due
to stay at the hotel, Jérôme takes care to find out
beforehand what his or her aesthetic tastes are in
order to give that person a lovely surprise when they
enter their room.
Many guests, famous or otherwise, have
congratulated him personally on this attention
to detail, recognising how flowers are capable of
transforming an entire room with their exquisite
presence. An effort is always made to make guests
feel comfortable and at home, and there is a huge
sense of satisfaction when that is achieved.

Jérôme says that in Spain, less importance is
attached to the world of flowers than in France
or England, where he lived for 14 years. He does,
however, sometimes receive special orders for a
wedding or a private dinner party. In such cases,
he likes to meet the clients to see what kind of
people they are before making suggestions that
will probably not only meet their expectations but
exceed them.

Cuando vio la fachada del hotel, ya sin necesidad de pasar a su interior, me comento: hijo, aquí
vas a estar muy bien. La intuición que vi en sus
ojos me hizo entender que estaba orgullosa de
mí. Yo también me siento orgulloso de trabajar
en este paradigmático hotel”.

When asked what he likes best about his work,
Jérôme immediately replies that it is “being able
to work in a hotel like Hotel Ritz by Belmond. I am
happy to be part of this team, where I feel I belong to
a large family. When my mother visited Madrid, she
came to have a look at the place where I work. When
she saw the façade of the hotel she just said, “Well,
dear boy, you’re going to be just fine here,” without
even needing to enter the place. I understood from
the knowing look I could see in her eyes that she
was proud of me. I, too, feel proud to work in this
paradigmatic hotel.”

Según ha asegurado el director del hotel Christian
Tavelli, «la restauración se ha planificado cuidadosamente en tres fases para conseguir que los clientes
puedan seguir disfrutando de su estancia sin percibir los trabajos».
El arquitecto Rafael de la Hoz - Premio Internacional
«Bex Awards 2005» en la categoría «Mejor Edificio
Tecnológico» por el edificio de la Junta Municipal
de Retiro, entre otros galardones - es el encargado
de tutelar el proyecto.
De la Hoz ya ha llevado a cabo importantes trabajos en la capital como el campus de Repsol, la sede
de Telefónica o el Hospital Rey Juan Carlos de Móstoles. También ha dejado su huella en otros países
como Dubai, donde ha levantado un complejo hotelero y residencial.

El edificio del Hotel, inaugurado en 1910 gracias al
impulso del Rey Alfonso XIII y la dirección de César
Ritz, fue obra del arquitecto Charles Mewes, de París, que trabajaría mano a mano con el español Luís

de París y Londres.
Hotel manager Christian Tavelli has given his
assurance that “the restoration has been carefully
planned in three phases so that guests can continue to
enjoy their stay without noticing the work in process”.
Architect Rafael de la Hoz – winner of various awards
including the Best Technological Building category
of the international BEX Awards 2005 for the Retiro
district council building – is in charge of supervising
the project.
De la Hoz has already carried out important building
works in the capital, such as the Repsol campus, the
headquarters of Telefónica and Rey Juan Carlos
Hospital in Móstoles. He has also left his mark in other
cities such as Dubai, where he has put up a hotel and
residential complex.
The hotel building, which was inaugurated in 1910
at the behest of King Alfonso XIII and under the
supervision of César Ritz, was designed by Parisian
architect Charles Mewes, who worked in collaboration
with Spaniard Luís Landecho. Mewes had also
designed the Ritz hotels in Paris and London.

Method:
Ponemos en una bandeja de horno las cebollas,
ajos, hierbas, el agua y los licores. Salpimentamos
las paletillas y las disponemos en la bandeja. Las introducimos en el horno a 160 ºC y las dejamos asar
durante una hora y media. Cada 5/10 minutos salseamos las paletillas para que queden más jugosas
y se vayan glaseando. Una vez asadas recuperamos
el jugo de la bandeja y reservamos.
Put the shredded onion, garlic and herbs into an oven
tray and add the water and spirits. Season the lamb
shoulders with salt and pepper and arrange them on
the tray. Place them in a pre-heated oven (160ºC) and
let them roast for an hour and a half. Baste the lamb
shoulders every 10 minutes to make them more succulent and give them a glaze. Once they have finished
roasting, pour off the gravy from the tray and set it
aside.

Clean the sweetbreads, bringing them to the boil for
one minute.

Simmer the shallots in water with sugar, salt, pepper
and butter until they are tender and slightly caramelised.

dorado añadimos el resto de la guarnición (espárragos, tomates semi-secos, cebollitas y gnocchi de
patata) y glaseamos con un poco de jugo de cordero que hemos recuperado del asado.
Sautée the sweetbreads in a little oil until they turn
golden brown. Then add all the other garnish ingredients (asparagus, onions, semi-dried tomatoes and potato gnocchi) and glaze with a little of the lamb gravy
from the roasting tray that has been set aside.

Jacinta Mansilla es la responsable del departamento de lencería del Hotel Ritz by Belmond,
que se ocupa de todos los tejidos presentes en el
hotel; desde la ropa de cama a las mantelerías
pasando por las cortinas y visillos de todas las
estancias y la ropa del personal. Sus enormes y
cálidos ojos acompañan a sus palabras cuando
asegura que la encanta su trabajo.
En un alojamiento emblemático como es el Hotel Ritz, todos los detalles tienen que estar perfectos para el cliente. Para conseguirlo, la labor
de Jacinta Mansilla, responsable de lencería del
hotel, es fundamental.
Su jornada comienza verificando y distribuyendo el trabajo del día. Controla lo que se envía a la
lavandería y tintorerías externas, que colaboran
en exclusiva con el hotel, y los encargos que se
atienden en las instalaciones propias; y la revisión diaria de toda la lencería, para que siempre
esté impecable. Además, debe dar respuesta a
las peticiones de piso y ocuparse de que la limpieza general de las habitaciones resulte impecable.
A todo ello hay que sumarle las actividades extras, como el montaje de banquetes o de acontecimientos especiales, las peticiones personalizadas de cada cliente.
In her role as manageress of the drapery
department at Hotel Ritz by Belmond, Jacinta
Mansilla takes care of all the fabrics used in
the hotel, from bed and table linen to the heavy
drapes and net curtains in all the rooms as well
as staff uniforms. Her expressive eyes reflect her
sincerity when she confesses that she adores her
job.
In accommodation as emblematic as that of
Hotel Ritz, every detail has to be perfect for the
client. Jacinta Mansilla’s work plays a vital role in
achieving this.
Her day starts with checking and allocating the
tasks for that day. She monitors everything sent
to the outside laundry and dry cleaners, which
hold exclusive contracts with the hotel, as well as
dealing with the guests’ laundry requests which
are carried out using the hotel’s own facilities. All
the linen is checked over on a daily basis to make
sure it is immaculate. She also has to deal with
requests received from each floor and ensure that
the standard of cleaning in the rooms is impeccable.
In addition, there are extra duties such as preparing
for banquets or special events, and satisfying each
client’s individual requests.

Purchased by the roll, it is made up exclusively for
the hotel in a craftsman’s workshop. Unless the
client prefers other options, all the sheets and towels
are made from this particular fabric and the hotel’s
insignia is embroidered on them in silk thread to
add that touch of distinction.

Recognition for a lifetime of service to others
Antes de ocuparse de la lencería del hotel, Jacinta fue gobernanta de la Clínica Loreto de Madrid,
donde nacieron las Infantas doña Elena y doña
Cristina, y el Rey Felipe VI. Después, sus pasos
profesionales se centraron en el sector hotelero
y en la formación de camareras y gobernantas,
para pasar a ocuparse después de la lencería de
un Colegio Mayor de la Ciudad Universitaria antes de recalar en el Hotel Ritz, hace ya una década. Una trayectoria profesional que le ha hecho
merecedora de un galardón otorgado por parte
del Instituto de Sostenibilidad Turística, que ha
querido reconocer públicamente la dedicación
a un oficio que, como bien reconoce Jacinta,
“hoy en día se está degradando, entre otras cosas por la falta de un título oficial. Yo tengo la
suerte de sentirme valorada en mi trabajo, y eso,
para mí, es algo impagable”.
Before becoming manageress of the hotel’s drapery
department, Jacinta was housekeeper of Madrid’s
Clínica Loreto, where the Princesses Elena and
Cristina and King Felipe VI were born. After that, she
moved into the hotel sector and was involved in
the training of waitresses and housekeepers before
moving on to manage the linen department of
one of Madrid’s City University’s halls of residence.
She moved on to Hotel Ritz by Belmond ten years
ago. This professional career has earned her a
prize from the Sustainable Tourism Institute, which
wanted to reward her publicly for her dedication
to a profession that, as Jacinta is ready to admit,
“is losing prestige nowadays because, among
other things, there is no official qualification for
the job. I am lucky enough to feel that my work is
appreciated, and for me that is something that
money cannot buy”.

Si el huésped prefiere el algodón, éste será de
suprema calidad o si pregunta por cualquier
otro tejido, se hará lo imposible por conseguirlo.
Si se desean sábanas especiales para personas
alérgicas, no hay más que requerirlas. Jacinta
asegura que algunos clientes, salen tan satisfechos que han solicitado juegos de sábanas de
idéntica calidad para su vivienda, y que por supuesto se les facilitan a la mayor brevedad.

La ropa del cliente recibe también un mimo
especial, tratándose directamente en las instalaciones del hotel. Cuando regrese a su habitación encontrará su ropa ya limpia y planchada,
impecable tras haber sido revisada por el departamento de lencería que dirige Jacinta. Se deposita delicadamente en una coqueta cesta de
mimbre, envuelta en papel seda con el logotipo
del hotel y una flor natural a modo de exquisito
detalle. Hay huéspedes que desean que la ropa
quede doblada de una manera específica, por
ejemplo, para ser introducida en la maleta, o
que sea directamente colocada en el armario o
distribuida por colores. Cada gusto se trata de
forma personalizada con el fin de lograr su completa satisfacción.
Los huéspedes habituales tienen su propio albornoz, con sus iniciales bordadas en hilo de
oro, de manera que cuando llegan a la habitación lo encuentran dispuesto para su utilización
inmediata. En cada habitación hay cinco modelos de toalla, entre ellos uno de baño de 1,40 x
1,90 metros, que regala la más agradable de las
sensaciones. Y todo ello con una calidad de felpa
superior, de un gramaje de 540 gramos, el doble
de lo habitual, lo que permite disfrutar de un
contacto mullido y muy, muy agradable.
Para Jacinta, lo que más le gusta de su trabajo
es colaborar en ofrecer una exquisita atención
al cliente, cuidar su descanso, saber que en sus
manos tiene ese detalle que le hará recordar con
el mayor agrado su estancia en el hotel. La satisfacción de arreglar un botón descosido sin que el
cliente lo pida, hacer una cama siguiendo un gusto determinado o arreglar ese vestido que una
clienta ha comprado por la mañana para pueda
cumplir su deseo de estrenarlo por la noche. En
ocasiones, recomponer una cremallera que se ha
roto en plena cena o subir un vestido de novia
a la habitación donde una joven espera ilusionada. Pero también repasar una mesa imperial
y descubrir que todo está perfecto o manejar un
volumen mensual de más de 35.000 servilletas…
cada acto reporta una inmensa satisfacción.
Cuando el cliente acude al hotel Ritz by Belmond hay un montón de sensaciones aguardando su llegada. Entre ellas, las que se sienten
a flor de piel, que son, probablemente, las más
difíciles de olvidar. Jacinta Mansilla es una de las
responsables de que la estancia de cada cliente
sea perfecta. Sus manos y sus ojos son artífices
del descanso, la distinción y la exclusividad. Su
trabajo es la agradable caricia que se llevan los
clientes del hotel.

Everything is impeccable
If a guest prefers cotton, this will be provided
in premium quality, or if they ask for any other
fabric, everything possible will be done to obtain
it. If allergy sufferers require special sheets, they
only have to ask. Jacinta tells us that some clients
are so satisfied when they leave that they ask
for sets of sheets of exactly the same quality for
their own homes, and are naturally provided with
them in the shortest possible time.
Clients’ own clothes are also given very special
treatment, using the hotel’s own facilities. On
returning to their room, clients will find their
clothes have already been washed and ironed
and are in impeccable condition after having
been checked over by Jacinta’s linen department.
These items are delicately placed in a charming
wicker basket that is then wrapped in tissue paper
bearing the logo of the hotel, and accompanied
by a fresh flower by way of exquisite detail.
Some guests ask for their clothes to be folded in
a particular way, for example ready for packing,
or placed in the wardrobe or sorted by colour.
Every taste is catered for so that full customer
satisfaction can be achieved.
Regular guests have their own bathrobe, with
their initials embroidered on it in gold thread, and
when they reach their room they will find it laid
out ready for immediate use. There are five types
of towel in every room, one of them being a bath
towel measuring 1.40 x 1.90 metres which is a real
joy to use. Made from premium quality towelling, it
weighs 540 grammes, twice the usual weight, which
means that wrapping it around oneself is a very
pleasant experience indeed.
What Jacinta most likes about her work is the part
she plays in offering an exquisite service to clients,
ensuring that the conditions are perfect for their
rest and relaxation and knowing she holds the key
to that particular detail that will give them extra
pleasure when recalling their stay at the hotel.
Also, the satisfaction of sewing on a loose button
without the client asking her to, making a bed in
the way the client likes it or making alterations to a
dress that a client has bought in the morning so she
can wear it that same evening. She has been known
to fix a zip that has broken in the middle of dinner,
and to take a wedding dress up to the room where

the young bride-to-be is happily waiting. Other
jobs include checking over a high table to make
sure everything is perfect and handling a monthly
volume of more than 35,000 napkins... every task

A great many sensations assail guests when they

Located on the first floor of the Spanish Armada
Headquarters building, Madrid’s Naval Museum
has been designed to welcome the wider public.
As well as looking after, studying, displaying and
adding to its holdings, its aim is to make accessible
all aspects of the history of the Spanish Navy, from
shipbuilding, navigation and auxiliary sciences, to
the voyages of discovery, underwater archaeology
and intangible marine heritage, showcasing the
decisive influence the Spanish Navy has had on the
political, economic and social history of Spain and
Latin America.
Collections
The museum holds around 10,700 pieces which are
of immense value because of their quality, variety
and unique nature, emphasising the central role
played by the sea in the history of Spain and its
status as the leading naval power during the 16th
and 17th centuries.
The most important of the collections are those
relating to Naval Construction, Nautical and
Scientific Instruments, Artillery and Weapons,
Plastic and Decorative Arts, Ethnography, and
Uniforms and Flags.

La especial vinculación del museo Naval con la
Casa Real se pone especialmente de manifiesto en el hecho de que Alfonso XIII fuera presidente de honor del Real Patronato del Museo
tras su creación en 1929, y que su hijo, Don
Juan de Borbón, conde de Barcelona y padre
del Rey Juan Carlos I volviera a desempeñar
este cargo desde 1983 hasta su fallecimiento.
The Naval Museum had special links with the Royal
Family in the past. Alfonso XIII was honorary president of the Royal Board of Trustees of the museum
after it was created in 1929, and his son, Don Juan
de Borbón, Count of Barcelona and father of King
Juan Carlos I, also held the post from 1983 until
he died.

More than 1,000 pieces show how artillery, bladed
weapons and firearms have evolved from the 14th
century up to the present.
The naval construction collection is the most
representative and consists of models of more than
600 ships that have served the Navy from the 16th
century right up to the present. Most of them are
arsenal models, made before the ship was built,
which served to assess the suitability of its design.
Reproductions of merchant ships, fishing and sports
boats are also on display.
The painting and engraving collection features
1,400 pictures, prints and oil paintings by artists
such as Rafael Monleón, Ángel Cortellini, Múñoz
Degrain and Granelo, of seascapes, naval battles,
views of ports and cities as well as portraits of
officers.
True to the Spanish Navy’s scientific tradition,
the museum’s holdings include 660 scientific and
astronomical instruments that have been used
since the 15th century as a support for navigation,
including compasses, astrolabes, sextants and
marine chronometers.
The museum provides a comprehensive view of
naval history and man’s relationship with the sea. A
chronological overview guides the visitor through
the history of the Navy, its leading figures and its most
outstanding feats, and there are six in-depth spaces
that focus on shipbuilding and living conditions
aboard ships, in addition to demonstrating the
important role played by the Navy in geographical
discoveries and scientific advancement.

A FUSION OF NATURE AND CULTURE
Entre las hoces de los ríos Júcar y Huécar, que abrazan
la ciudad antigua como los fosos de un castillo medieval,
se asienta esta ciudad Patrimonio de la Humanidad de la
UNESCO.
A UNESCO World Heritage site, Cuenca lies between the gorges
of the rivers Júcar and Húecar, which embrace the old town like
the moat of a medieval castle. Not only is it extremely picturesque,
it also has more than its fair share of cultural offerings.

Bien podría decirse que Cuenca son dos ciudades. La primera, la alta, la monumental, ubicada
en un espolón largo y escarpado en la confluencia de los dos cursos fluviales del Júcar y del
Huécar, conserva el aire medieval en sus calles
y edificios. La segunda Cuenca, la de la ciudad
baja, es la zona moderna surgida de los ensanches acometidos a partir del siglo XIX.
Cuenca is really two towns. The first of them, the
high-up monumental town, sitting on a long,
steep spur at the point where the rivers Júcar and
Huécar meet, retains a medieval air in its streets
and buildings. The second, low-lying Cuenca, is the
modern area that encompasses the various urban
expansions that have taken place since the 19th
century.

El Puente de San Pablo, vertiginosamente colgado entre las dos orillas de la hoz del Río Huécar,

entrever, en cada rincón, lustros de historia.
From San Pablo Bridge, giddily suspended between
the two banks of the River Huécar gorge, the views
are spectacular and their beauty will enthral any
visitor. No less magical is the old city centre whose
squares and streets offer glimpses of decades of
history in every corner.

La Plaza Mayor es parada obligada, con su superficie irregular casi trapezoidal es auténtico
nudo de comunicaciones entre los diversos
elementos urbanísticos de la parte antigua. En
ella se alzan La Catedral y el Ayuntamiento rococó, construido en la época de Carlos III; justo
enfrente, el convento de las Petras con su iglesia del siglo XVI. Y enlazando ambos edificios, la
concurrida Calle de Pilares.
Otra de las calles que da acceso a la Plaza Mayor es la de Alfonso VIII, con casas de variados
colores y dos magníficas casonas: la Casa del
Corregidor, antiguo magistrado nombrado por
el rey en algunas poblaciones importantes, y la
Casa-Palacio de los Clemente de Aróstegui, con
una magnífica rejería y dos blasones a la altura
del balcón principal.
Y por qué no caminar por la Ronda del Húecar,
un paseo lateral que, por un costado recibe la
fachada trasera de las edificaciones y, por el otro
se abre al impresionante espectáculo de la Hoz
del Huécar.

Las Casas Colgadas, emblema mágico de la ciudad, son el mejor reflejo de aquella Cuenca de
antaño adaptada a las características del lugar.
Toda la fachada de la Hoz del Huécar tuvo casas colgadas, pero hoy solamente se conservan
tres. De origen gótico popular, fueron restauradas a comienzos del siglo XX.
La Catedral
Las iglesias, conventos y ermitas de Cuenca
merecen capítulo aparte. Nos permiten viajar a
otros tiempos entre bellas fachadas e interiores
románicos, barrocos, rococós o neoclásicos. El
edificio de las Carmelitas Descalzas es un ejemplo de la arquitectura del siglo XVII y una de las
más hermosas casonas que la ciudad conserva.

The splendid Plaza Mayor (main square) whose
irregular shape is almost trapezoidal, serves as the
hub of communications between the different urban
components of the old town. Here you will find the
gothic Cathedral and the rococo Town Hall, built
during the reign of Charles III, and opposite is the Las
Petras Convent with its 16th century church and the
busy street, Calle de Pilares, running between them.
Another street leading off the Plaza Mayor is
Calle Alfonso VIII where the houses are painted in
different colours and there are two magnificent
mansions: the Casa del Corregidor (magistrate),
the name given in former times to a dignitary
appointed by the king in some important towns,
and the Residential Palace of the Clemente de
Aróstegui family, with its magnificent wrought-iron
window bars and balconies and two coats of arms
placed at the same height as the main balcony.
After visiting the Plaza Mayor you might like to take
a stroll along the Ronda del Huécar, an outer street
skirting the old town on one side and opening out

the Huécar gorge.
But most magical of all are the Casas Colgadas
(Hanging Houses) – the best demonstration of how
the Cuenca of yesteryear adapted itself to fit the
landscape. The entire façade of the Huécar gorge
was once lined with hanging houses, but only three
remain. Gothic in origin, they were restored in the
early 20th century. One of them now houses the
Spanish Museum of Abstract Art.
Religious buildings
The churches, convents and hermitages of Cuenca
deserve a chapter all to themselves. They offer us
the chance to move among beautiful Romanesque,
baroque, rococo and neoclassical façades and
interiors. The Convent of the Discalced Carmelite
Nuns is a fine example of 17th-century architecture
and one of the most beautiful mansions still
standing in the town.

normandos, que marcaban tendencia. Dentro
del templo, llaman la atención las bóvedas de
crucería, las capillas laterales y la Capilla Mayor
y el efecto de los rayos del sol al atravesar las vidrieras y el rosetón del Arco de Jamete, tal vez
el mejor elemento arquitectónico de la catedral.
Posee además dos magníficos órganos del XVIII
que funcionan perfectamente.

Cuenca’s most remarkable monument is, however,
Our Lady of Grace Cathedral, which was first built
on top of the old mosque in the late 12th century
in the Norman Gothic style, and perhaps took
its inspiration from Queen Eleanor of England,
wife of King Alphonse VIII, who arrived in Castile
accompanied by knights, craftsmen and priests
from Normandy, as was customary at the time.
Inside the cathedral there are eye-catching crossribbed vaults, side chapels and a chapterhouse.
It also has two magnificent 18th-century organs
that are in perfect working order. But the effect of
the sunlight as it passes through the stained glass
windows and rose window of the Jamete Arch is
perhaps the most impressive feature of all.

más de un centenar de pinturas y esculturas de
artistas españoles de la generación abstracta de
los años 50 y 60 como Chillida, Tàpies, Oteiza,
Saura, Zóbel, Torner, Rueda, Canogar, Chirino,
Feito, Millares, Sempere, etc. En 1966, el artista
Fernando Zóbel situó en Las Casas Colgadas su
colección personal de obras del abstracto español, que cedió posteriormente a la Fundación
Juan March.

halla el Parque Cinegético de El Hosquillo y
la Estación Termal de Solán de Cabras, conocida por su manantial de aguas medicinales.
The culinary tradition of Cuenca is as varied as its
geography and has been determined through the
ages by landscape and climate. Morteruelo (hot
meat pâté), cod “al ajo arriero” (with oil, garlic
and peppers), chorizo (hard pork sausage), zarajos (roasted lamb entrails), lamb, partridge, trout,
cheese, alajú (gingerbread: a sweetmeat in the
form of a cake typical of Castile), together with
excellent local wines and herbal liqueurs (locallyproduced resolí) to aid the digestion are the basic
ingredients of Cuenca’s traditional gastronomy.
North-east of Cuenca, nature shows itself in all its
splendour in the Ciudad Encantada (Enchanted
City), where the limestone has been eroded over
thousands of years into spectacular, whimsical
shapes. Further north you will find the El Hosquillo
Wild Game Park and the Solán de Cabras Thermal
Station, renowned for its medicinal spring water.

The famous Hanging Houses.
The Antonio Pérez Foundation Museum, which
was created on the basis of more than 3,000 works
by contemporary artists that were collected by
the editor and artist himself, are housed in the
old Convent of the Discalced Carmelite Nuns. This
building is also home to the curious Found Objects
Museum that exhibits all kinds of discarded objects
and items from nature which, because it was the
artist who selected them, have been given the
status of art. There is only one other museum like it
in the world: Le Musée de l’Objet de Blois, in France.
The Science Museum is housed in a former
convent situated next to the Cathedral and the
famous Hanging Houses. It boasts a spectacular
planetarium, an impressive telescope and a time
machine.

Situado en pleno corazón de la Serranía Alta
de Cuenca, el Parque Cinegético de El Hosquillo ocupa una superficie de 910 ha. Debe su
nombre a lo intrincado y hosco de su orografía,
configurada por altos e inaccesibles riscos que
descienden, en empinadas laderas cubiertas por
una densa maraña vegetal, dibujando un valle
estrecho y asimétrico por el que discurren las
cristalinas aguas del río Escabas.

La Fauna y la Flora
En el parque cinegético de El Hosquillo se encuentran representados diferentes ecosistemas.
Desde los altos riscos que cierran el valle y donde anidan importantes especies de aves rapaces
protegidas (águila real, halcón peregrino, buitre
leonado, búho real, etc.) hasta el rio Escabas y el
arroyo de las Truchas, donde habita una variada
fauna entre la que se puede destacar la trucha
común y la nutria, y los amplios y densos bosques en los que los pinos conviven con tejos,
acebos, bojes y avellanos y son refugio de toda
una cohorte de aves forestales.

A lo largo de todo el recorrido se pueden observar especies cinegéticas como el ciervo, corzo,
cabra montés, jabalí, y especies protegidas o en
peligro de extinción como el lobo y el oso, los
habitantes más populares de El Hosquillo. Aunque el Parque Cinegético no fue originalmente
pensado para la cría en cautividad de osos, estos
plantígrados han habitado en El Hosquillo desde su creación.
El lobo ibérico se ha adaptado a vivir entre
pinos negrales y bojes.

Occupying a surface area of 910 hectares in the heart
of Cuenca’s Serranía Alta, El Hosquillo Park derives its
name (‘hosco’ means ‘dark’, ‘gloomy’) from the harsh,
intricate nature of its landscape which consists of
high, inaccessible crags morphing into steep slopes
covered with dense, tangled foliage, marking out
a narrow, asymmetrical valley through which the
crystalline waters of the River Escabas flow.

Protected species
Several different ecosystems are represented in the
Park. These range from the high cliffs that close off
the valley and are the nesting place for important
protected species of birds of prey (such as golden
eagle, peregrine falcon, griffon vulture and eagle
owl), to the Escabas and Las Truchas Rivers, which
are home to varied forms of wildlife including
common trout and otters, and the extensive, dense
forests where pine trees growing alongside yew,
holly, boxwood and hazelnut trees provide shelter
for a whole host of forest birds.
Hoy solo es posible encontrar osos y lobos en
las montañas de la Serranía conquense dentro
de El Hosquillo, donde se crían en semilibertad.
Aunque en el pasado sí hubo en El Hosquillo
oso pardo ibérico, los osos pardos del Parque
Cinegético Experimental proceden de poblaciones de Centroeuropa. Es el caso de Paca y
Tola, dos oseznas que quedaron huérfanas tras
la muerte de su madre, a manos de un furtivo,
y que se criaron en el Rincón del Buitre, antes
de integrarse, en 1969, en el Cercado Osero del
Monte Fernanchín (Santo Adriano), en el Principado de Asturias.

Uno de los lugares más bellos y populares de
El Hosquillo es el citado Rincón del Buitre, una
hondonada rodeada por colosales farallones
rocosos que sirven de límite natural a la población de osos criados en semilibertad.
Ciervos, gamos, corzos y jabalíes se crían en semilibertad en El Hosquillo y sirven fundamentalmente para la repoblación de acotados de
caza pero también para que se realicen importantes estudios sobre esta fauna.
Si bien El Hosquillo es conocido principalmente por la fauna que alberga, cabe destacar asimismo una densa vegetación dominada, en su
mayor parte, por el pino albar y el pino negral,
y en menor medida por el quejigo. En el sotobosque abunda el boj o “buje” y la aliaga. En
los lugares más umbrosos aparece el tejo y el
acebo; y en las proximidades de los cauces fluviales el sauce, el chopo y el avellano, destacando un pequeño grupo de álamo temblón en el
Rincón del Buitre.
Wild game species, such as fallow deer, roe
deer, Spanish ibex and wild boar can be seen
throughout the park, alongside El Hosquillo’s
protected and most popular inhabitants: wolves
and bears. The Park was not originally intended
as a venue for the semi-captive breeding of
wolves and bears, but that is what happens now
as these species can no longer be found in any
other part of Cuenca’s Serranía Alta
Although Iberian brown bears used to live in
El Hosquillo in the past, the brown bears living
there now come from Central European stock.
That is the case of Paca and Tola, two female
bear cubs, orphaned when their mother was
killed by a poacher, and raised in Rincón del
Buitre (a ravine surrounded by huge rocky
outcrops serving as a natural boundary for
the bear population), before being moved to
the Monte Fernanchín (Santo Adriano) Bear
Enclosure in the Principality of Asturias.

Fallow deer, roe deer and wild boar are also
bred in semi-captivity in El Hosquillo in order
to repopulate game preserves and to allow
important studies on this type of wildlife to be
carried out.
Although El Hosquillo is mainly known for its
fauna, no less important is its dense vegetation,
which is largely dominated by Scots pines and
black pines and, to a lesser extent, by gall oaks.
Boxwood or “buje” and gorse grow abundantly
in the undergrowth. Yew and holly trees appear
in the shadiest spots, while willow, poplar and
hazelnut trees grow near the rivers, a small
group of aspens holding pride of place in the
Rincón del Buitre.
LA VISITA AL PARQUE
Visits to the Park
Las visitas al Parque son guiadas por monitores
y se realizan en grupo. Los visitantes acceden
al interior del parque donde primero se visita
el Museo del Parque y el Centro de Interpretación. Desde aquí se puede realizar un pequeño
recorrido a pie por atractivas rutas señalizadas
para observar los diferentes ecosistemas y los
animales en libertad (ciervos, corzos, cabras
ibéricas, lobos ibéricos...). Finalmente se puede
acceder en vehículo a otras zonas más interiores (los osos).
Visits to the Park are by guided tour in groups.
Once inside, your first port of call is the Park
Museum and the Interpretation Centre. From
there you can go for walks along designated
paths to observe the different ecosystems
and see animals roaming freely (deer, goats,
wolves…). Then you are taken by vehicle into
the more protected areas to see the bears.

Centre
As well as its work in studying, handling and
the semi-captive breeding of wild game species,
the Park provides an excellent natural setting
for environmental education activities. Themed
routes and footpaths have been marked out with
information panels to help visitors to understand
and thus preserve the Park’s extensive flora and
fauna.

semilibertad de especies cinegéticas, el Parque

Cuenta para ello con diferentes itinerarios y senderos temáticos con paneles informativos, que
ayudan a conocer, entender y conservar estas
flora y fauna.
La visita del Centro de Interpretación permite
descubrir la extraordinaria biodiversidad que
alberga el parque a través de diferentes salas
orientadas al conocimiento de la Flora y Vegetación, la Geomorfología, el Paisaje y la Fauna.
Durante la visita se escuchan sonidos de los animales que habitan en el parque.

El Hosquillo el primer documental sobre
la fauna de España de su aclamada serie televisiva El Hombre y la Tierra El
Hosquillo featured in Félix Rodríguez de
la Fuente’s first documentary on Spain’s

“Man and Earth”.
The Interpretation Centre, which has been divided
into three different sections: Flora and Vegetation;
Geomorphology; and Landscape and Fauna, gives
visitors the opportunity to learn about the Park’s
amazing biodiversity. The sounds made by the
animals that live there can also be heard.
In the Wild Game Museum, there are displays
showing the various species of mammal whose
natural habitat is found in the mountains around
Cuenca. There is also an area dedicated to huntable
species and another dedicated to species that are
either protected or threatened with extinction.

radio, tutelará un Retiro de Escritura Creativa para

first time. British-born Diane Redmond, author of
plays, children’s stories, novels and scripts for television and radio, will be supervising a Creative Writing Retreat for groups of writers, which will include
master classes and workshops. The courses will be
held from 17 to 23 May and from 4 to 10 October.

open to anyone who wishes to visit the art gallery,

Raw Food, to offer three special event days at
El Olivo on 15, 16 and 17 April. Beverley will be
demonstrating how to prepare healthy raw
meals at home to provide you with a diet that is
nutritious, bursting with vitamins and minerals
and absolutely delicious. Also, on 28 April, the
restaurant will be offering a special menu in
honour of the chef Josef Sauerschell. Josef holds
a Michelin star and was El Olivo’s first chef. He
also tutored Guillermo Méndez, the restaurant’s
current chef and since then has tutored many
others students, some of whom will be joining

Always meeting
expectations
Belmond La Residencia has a high percentage of
loyal clients who come back regularly and send
gratifying messages to the hotel by letter, e-mail
or through comments on social networks. This is
clearly the result of constant investment both in the
property and in the hotel’s staff.
Twelve rooms, the art gallery and the Café Miró
bar and restaurant were renovated last winter and
the beautiful gardens have been carefully tended
to produce a spectacular visual impact. However,
what is perhaps most important is the ongoing
training given to the staff. All of them have wide
experience and identify fully with the management
and this, of course, is a major contributing factor to

Algunos rehabilitados y en uso, y otros con el
encanto que deja el lento transcurrir del tiempo,
no hay mejor atalaya para planificar excursiones
por la isla o revivir la historia de la isla. Se puede acceder a pie, a caballo o en coche; y si es al
romper el día, con la construcción para nosotros
solos, se vive una experiencia difícil de olvidar
disfrutando de la visión de un paisaje tan inmenso y tan mágico como la del propio recinto.

Bellver Castle
Bellver Castle, just three kilometres from Palma city

Palma and its bay, it is home to the City History Museum and the Despuig Classical Sculpture Collection,

Bellver Castle was built by order of King James II of
Mallorca in about 1300. In the late 14th century, King
John I of Aragón moved there with his entire court,
fleeing from the outbreak of plague that was ravaging the Peninsula. More recently it was the refuge of
nobles and merchants and a political and military
prison, its most famous prisoner being Gaspar de
Jovellanos, Minister of Grace and Justice, who was
imprisoned within its walls from 1802 to 1808.
Alaró Castle
Rising up like twin reflections in a mirror, the silhouettes of the Puig d’Alaró and Puig de s’Alcadena
peaks are one of the most remarkable sights to be
seen on the island. Alaró Castle, an ancient fortress
dating back to Spain’s Islamic era, stands on the first
of these peaks and now serves as a splendid vantage
point for the Es Pla region, Palma and Alcudia Bays
and the Tramuntana Mountains.
The castle is now home to the Mare de Déu del Refugi Sanctuary and an inn. It has an awesome his-
tory linked to the legendary heroic deeds of Guillem
Cabrit and Guillem Bassa, who in the 13th century
defended the fortress on behalf of King James II of
Mallorca against King Alfonso II of Catalonia and
Aragón’s occupation of the island. They were burned
alive for their efforts.

defender la fortificación y mantenerse fieles a

El rey Jaume II mandó construir, en 1300, un recinto amurallado sobre una estratégica colina
para divisar el canal marítimo que separaba las
islas de Mallorca y Menorca. Primero se edificó
una iglesia y una cisterna, a las que más tarde
se unieron las murallas y las torres defensivas,
Aunque gran parte de la población, que vivía
desperdigada por la zona, no era partidaria de
abandonar sus tierras para pasar a vivir dentro
de la fortificación, el asedio de piratas y corsarios, hizo que las cincuenta casas construidas
inicialmente pasaran a ser más de ciento cincuenta, ocupando la mayoría de los huertos
disponibles.
Con el tiempo, las viviendas fueron saliendo del
recinto y, a finales del siglo XVIII tan sólo quedaban veinticinco casas habitadas dentro del mismo. En 1983, el castillo pasó a ser propiedad privada y finalmente fue donado al Ayuntamiento
de Capdepera.

unas preciosas vistas de la costa, se puede partir
de la pequeña población de Sant Elm, situada
frente al islote de Es Pantaleu y la isla de sa Dragonera, y pasar por el Camí de Can Tomeuí; una
excursión a pie que conlleva la magnífica experiencia de atravesar un bello pinar e ir ganando
altura para contemplar sa Dragonera, la Cala en
Basset y el Morro de sa Rajada.

In 1300, King James II gave orders for a walled
enclosure to be built on a hill, which proved to
be a strategic vantage point for the sea channel
separating the islands of Mallorca and Menorca. A
church and a water tank were built first, the walls and
defence towers being added later. Although many of
the residents whose homes were scattered over the
area were unwilling to leave their farms and move
inside the fortress, there were so many raids and
sieges by pirates and corsairs that the fifty houses
originally built within the walls increased to more
than one hundred and fifty, occupying most of the
available kitchen garden land.
Eventually, building started again outside the
enclosure and by the end of the 18th century only
twenty-five inhabited houses remained inside. In
1983, the castle became privately owned and was

Built in the 16th century to defend the coast against
pirate raids, Cala en Basset Tower offers some breathtaking views of the coast. To visit it, you can set out on
foot from the small town of Sant Elm, which is situated opposite the small islands of Es Pantaleu and
Sa Dragonera, taking the Can Tomeuí road. This trail
passes through a beautiful pine forest and gradually
climbs higher until you are rewarded with the spectacular sights of Sa Dragonera, Cala en Basset and
the Morro de Sa Rajada promontory.
Canyamel Tower
The profile of this tower probably fits most people’s
idea of what a fortress tower should look like. It is
thought to have been Muslim in origin, having been
built to keep watch over the coast and provide shelter for the inhabitants of the fertile valley in which it
stands.
Following the conquest of the island in 1229 by
King James I, the tower was given to Pere de Montsó
who built a three-storey defensive tower on the
site, representing the third corner of the defensive
triangle which includes Capdepera Castle and Artà
Almudaina. Despite being more than 700 years old,

Canyamel, además de Capdepera, Artà y Son
Servera. Y si se tiene la suerte de coincidir con la
celebración de un concierto, dicen quienes han
vivido la experiencia que no se olvida en la vida.

have an experience you will never, ever forget.
Cap Andritxol Tower
Cap Andritxol Tower, together with its sisters the Cala
en Basset and Sa Mola towers, formed part of a network of towers that enabled visual communication
to be established between the most strategic places
on the island whenever pirate raids posed a threat.
The Andritxol Tower was built between 1580 and
1582 and, according to the local residents, it is the
tower that boasts the best views. Situated at a height
of 180 metres above sea level, on the spur of land
separating Camp de Mar from Cala Fornells, its walls
emanate a sense of deep peace from where you can
admire a seemingly endless horizon.
Walking to the tower from Cala Fornells is not particularly difficult. The return trip can be completed in
approximately two hours, but allow more time if you
are thinking of having a swim in Caló des Monjo, a
beautiful cove very close to Cala Fornells.

a cabin of especially generous proportions. The passenger compartment, which was separated from
the driver’s seat by a partition, had four splendid

Numerous heads of state and monarchs from all over the world routinely
use Mercedes-Benz limousines with the ‘Pullman’ badge for their official
journeys by road. The armoured version of the best-known Pullman limousine in the world, the Mercedes-Benz 600 Pullman, celebrates its 50th birthday in 2015. The first model of this exclusive version left the factory in 1965.
However, the tradition of the exclusive Mercedes-Benz limousines with the
Pullman name pre-dates that. In 1960, three Pullman-format versions of
the 300 model, popularly known as ‘Mercedes Adenauer’, were manufactured by special order. After that model and before the current one, there
were other special Pullman versions. In presenting this new model, the

Por la noche
Es la base de la piel sana y bella. La limpieza diaria del rostro, a poder ser mañana y
noche, es el fundamento para que cualquier
acción posterior haga su efecto. Ni el maquillaje ni el tratamiento serán lo mismo sobre
una piel que no esté limpia y tonificada.

Durante el sueño, la piel alcanza la máxima velocidad de regeneración celular. Según todos
los estudios sobre el tema, entre las veintitrés
horas y las cuatro de la madrugada siguiente, es
cuando las células se renuevan y se oxigenan,
para reponerse de todas las agresiones que han
sufrido durante el día. Estrés, sudor, polución,
horarios desordenados, tabaco, sol, viento, frío o
las potentes calefacciones, agreden y ensucian
la piel.
La limpieza
Si se ha usado maquillaje, es fundamental desmaquillarse a conciencia. Con una piel seca, hay
que optar por una leche limpiadora, de textura
más suave y untuosa, o por un aceite que ‘deshaga’ el maquillaje de la forma más suave posible.
Para retirarlo, se debe utilizar un tisú o una toalla
de tocador humedecida en agua caliente; esto
hará que los poros se abran y se limpien mejor.
Si, por el contrario, se tiene una piel grasa, lo
más apropiado es utilizar un gel limpiador que
se retirará con agua templada (demasiado caliente podría romper los capilares pequeños) o
jabones faciales; esta última opción es recomendable consultarla con un dermatólogo. Lo mejor
es optar por un producto sin detergentes y dermatológicamente contrastado.
Si no se ha usado maquillaje, deben seguirse los

night
While you are asleep, the skin reaches top cellregeneration speed. All the research on the subject
indicates that, between 11pm and 4am, cells renew

from all the assaults they have undergone during
the day. Stress, sweat, pollution, chaotic timetables,
cigarette smoke, sun, wind, powerful heating systems all attack and harm the skin.
Cleansing
If you have used make-up during the day, it is essential to take it off conscientiously. If you have dry skin,
choose a cleansing milk with a soft, oily texture, or an
oil that ‘dissolves’ the make-up in the gentlest way
possible. To remove it, use a tissue or a cottonwool
pad moistened with hot water; this will open the
pores and allow them to cleanse themselves better. If
you have greasy skin, use a cleansing gel and remove
it with warm water (if the water is too hot, it will break
the little capillaries) or a face soap (it is advisable to
consult a dermatologist about this option). Opt for a
detergent-free and dermatologically-tested product.
If you have not worn any make-up, follow the same
steps but do so more gently.
Removing eye make-up
Always use a make-up remover specifically for the
eyes and remove the make-up gently, in a downward movement, with a cottonwool pad soaked
in the product. A cotton bud is useful for removing
small traces of make-up.

Prescindir del tónico sería una grave equivocación. El tónico tiene como misión eliminar todas

Apply toner to a cottonwool pad and wipe the face

En esta época hay que preparar muy bien las zonas que llevamos tapadas durante el año y que

cual introducimos productos activos a mayor profundidad y de forma no invasiva. De esta forma
conseguimos reafirmar la piel, alisarla y tratar la
