Dear Members,
I want to take a moment to thank you for the warm welcome so
many have extended to our new chef. I know he really appreciates the time so many have taken to introduce themselves and to
visit with him. He loves those personal interactions and hearing
how he can make your dining experience better for you. If use
of the dining rooms is a measure of his reception, then a recent
week in mid-March was a great sign of approval. On Tuesday we
served 255, Thursday 108, Friday 148, Saturday 103 (while having
a wedding) and on Sunday 130 for Brunch and another 146 for
dinner.
We are gratified so many are dining with us and ask, whenever possible, to make reservations in advance as
this helps us direct staff levels, and forecast production needs for the kitchen. The past week represents the
busiest non-holiday week we have enjoyed since I came here two and a half years ago! Kudos to you!!
Also I would be remiss if I did not recognize the extraordinary kindness and generosity shown to Hans Grover
and his family. Truly an amazing outpouring of support for a wonderful family and friend.
As always, I look forward to seeing you around the Club!

Being your new Chef, I would like to thank every member I have met for your warm welcome; I am now very
proud and happy to be a part of the Hammock Dunes family and if we haven’t met yet, I look forward to
meeting you and I appreciate your feedback.
Your dining experience is of the utmost importance to us in the kitchen. We are here to ensure you enjoy
each aspect of your Club, whether you wish to celebrate birthdays, anniversaries, engagements, office
gatherings, holidays, or other special occasions here. We can accommodate all of your desires.
We encourage you to bring family or friends to take a tour of the kitchen, one of the most
important aspects of your Club. We have an open door policy at Hammock Dunes and would love
for you, at any time, to take a walk into the kitchen and watch how your food is being handled
and prepared. We are very proud of your club’s kitchen. You’ll see firsthand how clean and well
organized we are. I’m certain you will feel amazed and highly pleased.

Chef ’s Tips of The Trade
Carefully select what you eat and serve. Food is different from every other thing in life.
Food is not something we wear or drive. It’s nourishment we provide for our body.
It must be wholesome and an experience of flavor.
Flavor and Taste (d.n.a)
Food tastes exceptionally good, because of a very well balanced blend of saltiness, sweetness, bitterness, sourness and pungent
(spiciness) also astringent (as in harsh, sharp, acrid). To make it easier to remember, think of Salt, Pepper and Citrus (orange for
sweet, lemon for sour, grapefruit for bitter)
Flavor is a group of receptor cells of taste buds that are clustered together like the segments of an orange. An average human has
around 12,000 cells found not only on the tongue, but on the epiglottis, the soft palate and other parts of the mouth to determine
the four basic tastes of saltiness, sweetness, bitterness and sourness.
Flavor in food develops through the proper way of cooking, the quality of ingredients and the appropriate use of seasonings.
Aroma is the pleasing smell of plant fragrance, and other scented substance, such as spicy, fragrant, sweet and perfumed.
The misconceptions between spiciness and taste: Spiciness is a taste sensation and not really a “flavor” unto itself. Let’s ask
ourselves or anyone who has peeled chilies or chopped jalapenos, if you feel the “spiciness” or heat on your skin, to cut the
discomfort, wash the area with white vinegar. The “heat” you feel when touching your eye or eating peppers is the sensation caused
by the chemical components that are in the chilies. By the way, many sport rubs are made with Capsaicin which is what gives a chili
its bite. Some of the condiments can be added for a hot sensation, such as horseradish, wasabi, ginger, mustards, relishes, peppers,
herbs, spices and raw garlic.
Saltiness: salt is the primary taste in food and it acts as a preservative to bring out the natural flavors. A good cook should perfectly
season food with salt and pepper before leaving the kitchen, so there should not be a need for salt and pepper on the dining table.
Some cooks who under-salt purposely, justify that by saying “You always can add salt to food, but so little can be done to take it out,
with the exception of diluting the food.” By the way, people who smoke cigarettes do not have a balanced taste for salt.
A modest increase in certain food elements, allow for successful sodium/salt reduction without losing the flavors of salt, by adding
fresh seasoning, spices, garlic, celery, all dry pepper’s (black pepper, white, cayenne etc), red chilies, curry, etc.
Sweetness: is a true taste. While normally associated with refined sugars or fruits, not all sugars provide the same level of sweetness.
This needs to be taken into consideration if you substitute one sugar for another. One thing about sugar is the taste is more
pronounced when it is hot than when it is cold. If you were making a jelly, for example, it should taste over-sweet when it is hot
so that when it cools the taste will be correct. We can heighten flavor without excessive sugar if we add sweet herbs and spices.
Some of the varieties include allspice, anise seed, cardamom, chervil, cinnamon, cloves, lemon balm, nutmeg and vanilla. Also sweet
vegetables such as carrots, sweet potatoes, dessert wines, cooked garlic etc, allow us to experience sweet flavors.
Bitterness: is the taste that can be detected the easiest by the taste buds. You can mask bitterness with sweetness or salt but
bitterness cannot be removed from a dish. While the taste of bitterness varies on a personal basis, in some cultures such as
Mediterranean and Asian, bitterness is an acceptable taste. Olive oils, garlic browned in oil, herbs, citrus skin rind and greens such as
radicchio, endive, dandelion, etc are used as bitter substances to add interest to foods.
Sourness: is a true taste sensation and almost always due to an acid. When choosing a sour ingredient, keep in mind the region of
the world the recipe is from and choose something that is from that region. There are many naturally acidic souring agents used to
adjust foods. Some found in the kitchen are vinegars, fruit (tomatoes), sour milk, citrus juices, sumac, alcohol, wine, beer, sorrel,
tarragon, pomegranate molasses, tamarind, etc

F&B Happenings this Month...
Now that the weather is finally cooperating I have
decided to go with a white wine, for our April Wine of
the Month. I stumbled upon a great wine from Austria
called Leth, which is a Grüner Veltliner. It is a really nice,
easy-drinking white wine that offers a smooth balance
of lime and mineral flavors with a clean, dry finish.
The nose combines spice with a reductive fruit; the
palate displays peppery notes; a classic Veltliner from
loess terraces. This wine is part of a line from Leth that
displays complexity in flavor, minerality and durability.
A good wine to have with
soft, blue-veined cheeses as
well as roasted white meats.
Enjoy by the Glass for $8 or
by the Bottle for $26.
As we approach Easter, we have added some fun for
everyone that weekend. Thursday, April 2 we will have
our sunset social on the patio with our first official
Cornhole Tournament and Singer/Guitarist Frankie
B from 4 to 7 p.m. On Friday, April 3rd & Saturday
April 4th we will have live music out at the pool from
12 noon to 4 p.m. with a full bar set up. Looking forward

News from the Golf Shop...
As we become more acclimated to our spring weather and we have
more distant memories of miserable winter weather, let me spring a
few new ideas on you.
Please mark out April 24 on your calendar to attend a Demo Day
dedicated to innovation on the Links practice tee. On that day,
we will host two relatively new companies with great ideas: Cure
Putters on the practice green and Coates Golf on the range tee.
Many of you have seen Cure Putters being utilized by other Hammock Dunes members but you may not know what advantages they
provide. Some of you may know that this is the company of fellow
member Steve Davis. What makes these putters great? First, the
adjustable lie angle offers a comfortable and consistent address position for each golfer. Second, the adjustable weight system allows
the putter to be tailored to each player so as create a much better
chance of obtaining their optimum tempo for good results. Finally,
their high MOI results in one of the most forgiving putters on the
market. These putters are beginning to gain a lot acceptance on the
tours. See if they fit in your game.
Coates Golf is a new company dedicated to women’s golf. You may
have seen this name earlier in the season when they were the new
title sponsor of the LPGA event held in Ocala. After two and a half
years of research, design and engineering, Coates Golf was unveiled
at the 2015 PGA Show in January as a premium brand committed
to giving women performance equipment options. Coates’ stated
goal is to bring its high tech line to women golfers. Coates Golf
wants to promote women’s strength, athleticism and beauty. They
are empowering women to expect more from golf and to have more
fun with their game along the way. I have heard many great things
about this company.
Last month, we introduced a series of four lessons to help beginners in their efforts to start playing this great game. The response
has been overwhelming. So overwhelming that the response filled
the signups in the first hour they were available. As a result we will
continue these clinics in the coming months. We ask those who
attended the first series to give other new players the opportunity
to first sign up for the new series. My suggestion to the beginners
who have already been a part of the clinics is to sign up with one of
our great assistant professionals for private lessons. Why not get a
group of three or four of your friends together for a mini clinic to
save on the cost of taking a lesson as well as offer a great activity
for your group. This also helps many, as the group can share what
was suggested for each player rather than providing the recent golf
lesson du jour from a golf magazine. Please stay tuned in the May
Dunescape for the announcement of additional clinics.
As always, don’t struggle with your game. All of our pros are willing
and able to help you. We hope to see you on the course soon.

Clippings from the Green
What great weather we have had for our
many events in March, hopefully it will remain the same for the month of April. With
the warmer temperatures the courses are
beginning to green up, although along with
the color comes growth. This is not a problem for the majority of the course, except for
the greens. We will be grooming, solid tine
aerifying and topdressing as needed to keep
the green speed as consistent as possible.
With this being the first year of our new
agronomic practice of keeping the greens at
a higher height, we are still learning which
practices work best for each course. We are
going with this process because it has been
proven to be better for the turf, as well as
allowing us to maintain more consistent
greens.
The greens at the Links Course, due to a
recent hydraulic leak on the rollers, are
severely off color and will require heavy
topdressing, solid tine aerification, fertilization and spraying of neutralizers in order
to increase our chances of growing the turf
back. The pin placement on these greens
will be limited until such growth occurs. This
was an unfortunate accident which could not
have been seen sooner as we were rolling in
the morning hours due to the tournament.
We apologize for any inconvenience, and are
diligently working to repair this as soon as
possible.
The project crew will be working primarily at
the Links Course on our project schedule.

The weather has been great and Spring is in the air
setting up perfectly for this year’s Member/Guest
Tournament “April in Paris”! This is the biggest event of
the year and we look forward to seeing you there.

It is so true that we are moving along on the “Fairway of Life” with Murphy’s Law following close behind. Anything that can go wrong will go wrong.......
especially on the golf course!! We take our “swings”
and hope for the best!!
Thank you Donna Hires and Christine Sullivan for
chairing the 2014 Masters Tournament which was a
great success and had an exciting finish. Pat Bevan and Donna Neas both shot an 80, but Pat was
the victor winning on the second play-off Hole #17.

After a month long battle, congratulations to Dee
McEvoy and Cathy Honeycomb, our 2014 Dunes Cup
winners. A big thank you to Dee Klimisch and Jane
Ingrey for chairing this great tournament.
The Rally for the Cure Tournament was very well
attended with 53 ladies playing golf and almost 100
for lunch. Together we raised over $20,000 for the
Cure. A big thank you to all the local businesses,
friends and Club staff who donated the raffle prizes and
helped to make the Rally the huge success it is. The
entire community thanks Carol Rabinovitz, the Rally
committee, golf pros and dining room staff for their
continued support to this important cause.
Our Ladies Club Championship was very exciting with a
“3 day Elimination Match Play”. Congratulations to our
2014 Club Champion Dee McEvoy and Runner Up Cheryl
McCabe. Congratulations also go out to our Flight
Winners: Flight 1 – Sheila Striffler and Runner Up Fay

Sunday at 8 a.m. at the South Gate. Everyone is
welcome to join for a fun and energetic ride along
many of the excellent cycling trails in the county
- culminating with breakfast in one of the many
restaurants along the way.
Cycling is a great way to keep fit and enjoy good

In an effort to conserve heat and energy, the pool will
remain covered and the pool will not open until the
outside temperature has reached a sustained
temperature above 60 degrees.

Croquet News....
And the Games roll on as we proudly celebrate the Croquet Association. Hammock Dunes is the
recipient of the United States Croquet Association’s 2014 Club of the Year Award. We received the
award in 2011 and now in 2014 by capturing the interest of the members with fine leadership. We
will continue to live up to the standards set by the United States Croquet Association.
Rolling back to a different venue: In February, Mike Taylor, guest instructor, held an Association Rules
Clinic. Association Croquet is a different, challenging venue to be enjoyed by all players. “Thank
you” Ron for recruiting Mike Taylor, a motivational Association Six Wicket teacher and for a successful, educational morning.
In March - Croquet Rally for the Cure- blooming in our pink. Winners were: 1st place - Sharon Ralston; 2nd place Nadine Sidawi; Third Place - Judy Wiginton. Way to roll! “Merci” to Nadine Sidawi for organizing the day and to Carol
Rabinovitz for orchestrating this Rally every year. We applaud you!!
Also in March, the debut of a new event - Wine ‘n Wickets....(1158) A successful day seaside, balmy blue waters; sunny,
cloudless sky. Hammock Dunes Members enjoying wine, wickets ‘n friendship. A new venue introduced and ably directed by Pat Williams with Maureen Villiotte at her side. “Kudos” gals for introducing all members to a relaxed afternoon

Audubon Corner...
Book Club
Swallow-tailed Kites are being sighted over the Creek and
Links Courses. They are stunning birds in flight and are
easily identified by a forked tail and a large wing span.
They rarely flap their wings. They glide, almost continuously rotating their tail to as much as 90 degrees to hold
a direction or make a sharp turn.
Based on the historical orphan or
baby trains that ran from east coast cities
to the Midwest between 1854 and 1929, author
Christina Baker Kline creates a captivating story of
two very different women who build an unexpected
friendship: a 91-year-old woman with a hidden past
as an orphan train rider and the teenage girl whose
own troubled adolescence leads her to seek answers
to questions no one has ever thought to ask.
Amazingly, Kites have as much as a 5,000 mile migration
stretching from the Southeastern USA to Brazil, their
winter or year round home. Some spend 48 continuous
hours over water to reach their habitat. The Florida birds
arrive in February-March and most cross the Caribbean.
They drink on the wing and have been seen skimming
across the surface of the water on the lake on the Creek’s
10th hole. They feed on insects, lizards, and snakes. We
are part of their summer breeding ground.
They are not endangered but considered of critical conservation concern by many agencies and conservation
organizations. Please help monitor this bird by reporting
sightings to http://www.thecenterforbirdsofprey.org or

Long before the social safety net was established
in the 1930’s, more than 200,000 orphaned,
abandoned, homeless and traumatized children
-- many of whom, like the character in the book,
were first-generation immigrants -- boarded the
orphan trains for “adoption” in the Midwest, which
often resulted in indentured servitude, slavery
and sometimes abuse. The author interviewed
many orphan train riders and found that their
predominant story was one of redemption: “it was a
horrible experience, but without it, I would not have
had my beloved husband and family” for example,
etc. Author Kline says she chose to write her book
as a novel of fiction so she could show a strong
character who would survive, and also show how
difficult that was. Most agree that she accomplished
her goal in a compulsively readable book where
survival depends on a steely backbone and the
miracle of a large, generous heart.

Dear Members,
It is the time of year when our facilities get the
most use. We need all our members to take pride
in what they own and help take care of all our
assets. I mention this because several members
have approached me about the apparent disregard
for our facilities by some members. The concerns
have been primarily about our golf courses and
members failure to rake bunkers, repair ball marks,
pick up broken tees and discarded cigarettes
and cigars. Please take the time to care for your
property. Failure to do so reflects poorly on you.
If you notice someone in your group not caring, a
gentle reminder may help. If that does not work
rake the bunker for them or pick up their broken
tee and maybe they will get the idea.
On a separate issue some members are still not
taking care about where they drive golf carts.
Observe wear patterns and avoid them. Slow down
when entering and exiting the fairways. Do not go
past a white topped stake closest to the green.
The best way for you to help improve service in
your dining experience at the club is to make
a reservation. When we have 30 reservations
and 120 people show up it gets a little hectic for
the employees that were scheduled based on
reservations or past experience for this time of
year.
