Thorpe, General Manager Dear Members, As you might have noted, we have significantly expanded the number and type of communications we are sending out to our membership as part of our continuing effort to keep you informed in a timely manner. A recent conversation I had with a member who had seen and read the “Notes from the Board” e-mail indicated that he had decided to look on the web site for minutes from the many committee meetings we have here. He noted that he was able to find “all the answers” to his questions in the minutes posted on-line. I would like to encourage all who have questions to go to the member side of the web site and review the minutes posted there. Typically minutes are posted within 14 days of any meeting after they have been reviewed and approved by members of the committees. More pressing items that require communication to the membership typically are communicated in a separate mailer, especially if there is any time sensitivity related to the topic. In the very near future we will be rolling out our updated web site which will feature the ability to select the type of e-communications you would prefer. Chef ’s Tips of the Trade For those of you who are away this summer in a cabin, cottage etc, with a craving for a barbecued meal, here are some helpful tips: Issa Moussa, C.E.C. H.O.F , Executive Chef • Prevent meat from sticking to the grill: Preheating the barbecue grill is very important and necessary. A hot grill top surface starts the meat with nice marks. Moisture from food will cool the grill and food will stick to a lukewarm or cold grill, so before grilling food, always brush the grill with oil or meat fat and dry fish and poultry of excess water. • Slow Cooking on low heat: Nice grill marks on meat, fish or poultry are usually done on a very hot grill then the grill is immediately turned down to a low heat. The other option is to have one side of the grill on high heat for marking and the other side on low for slow cooking. A well done steak is then put on first in order to allow for longer cooking time, followed by a medium steak, then a rare steak; always season food while it is being grilled. • Rotating: The more you rotate or turn over the meat, the juicier it will become. Also remember that the rarer the steak, the juicier it will remain. Keep in mind that over-grilling food will generally dry it out and make it tough. • Marinating: Grilled food should always be tender, either by buying tender cuts of meat, or tenderizing a tougher piece of meat by marinating it overnight. The acids in the marinade break down the meat's “collagen” (the tough, stringy tissue that holds the muscle together). Marinating not only tenderizes the meat, but it will also add a nice flavor. • A common mixture for marinades includes: Balsamic vinegar, lime or lemon juice, wine, Worcestershire, olive oil or vegetable oil, Thyme, Oregano, Rosemary and Bay leaves, diced celery, onions, carrots, garlic, and Papaya juice, white grape juice or apple juice. • Searing Meat will not “lock in the juices” it will however provide a tasty flavor. Tomatoes or wine when added to roasts will help tenderize them naturally. The acidic qualities work at breaking down meats. Veal has less fat than any meat; it has fewer hormones and is very tender. • Wild Game such as venison or buffalo is low in fat and cholesterol. • Rotisserie-cooked meats and poultry contain less fat than those cooked in their own juices. • The Best Lamb comes from New Zealand (spring lamb) because New Zealand does not allow the use of hormones or tenderizers. • The eight main cuts of beef are: shank, flank, brisket, chuck, round, plate and loin. The secondary name is the retail cut, such as sirloin, porterhouse, etc. and explains the way the cow was cut up. Dunescape Page 4 Dining & Special Events Chef's Tip of the Trade (cont'd) Facts about meat quality and how it is graded The USDA meat grades are Prime, Choice, Good and Commercial • Prime meat has a high fat content, with 50% of calories coming from fat, which makes it very tender. The marbling tenderizes the meat and also makes it very expensive. Here at your Club we only use Prime USDA grade for New York steaks. • Choice is becoming harder to find in the supermarket. It is still expensive and relatively tender with 39% of calories coming from fat. • Good is one of the most common grades of meat in the supermarkets today. It needs some tenderizing because it has less fat, with only 30% of calories coming from fat. • Commercial grade meat comes from older animals and is tough and mainly used in canned meat products and TV dinners. Supermarkets creative meat packaging wording Supermarkets use fancy names on meat packages to make us, the buyers, think that we are getting a better grade. • Since the price of USDA grades Prime and Choice are a lot higher than the grade of Good, and many times the consumer is not willing to pay a higher price for the better meat, the supermarkets found a way to make the USDA “Grade Good” sound better. Let us take a look at what they are doing. • Since the supermarket can’t say that the meat is USDA Prime Grade meat when it is not, instead they say that by their standard the cut is a “Premium Cut”, “Prime Quality Cut” or a “Premium Beef Cut”. • For the USDA Grade Good, a fancy name is given, such as “Select Choice” and as you can see, it is not a USDA Choice grade meat. Dunescape Page 7 Golf News News from the Golf Shop... Before many of you return to the north for the summer I wanted to say thanks for a great season. As this was my first season at Hammock Dunes, I can only hope that they continue this way. Rounds were up, tournament participation was up, and New Golfer Clinics were filled to capacity. I am very enthusiastic about growing the golf program. One of the objectives that I hold and have asked the assistants to have, is to better understand the golf games of this membership and to get to know as many members as possible. The best way to do that is by teaching and playing with them. In that regard we would like to introduce a new year long event. The “Play with your Pros Tournament” event runs May 1, 2015 to April 30, 2016 and is open to Male and Female members. Teams can be mixed. All rounds will be played at the Links Course so that round comparisons are more easily made and the scoring would be two best balls of four net. The event will cost $5 per member per attempt. Prizes will be for 1st, 2nd and 3rd at year-end (ties decided by USGA scorecard method). Two thirds of the money collected would go to prizes. One third of the money collected will go to the assistant professionals for their time. More details on how to get started are in the Links Golf Shop. Response has been overwhelming to the free monthly beginner and new golfer clinics. Signup has been so overwhelming that we were forced to have waitlists on all of the dates. In order to meet the demand, we will continue these clinics into the summer months. Please see next month’s Dunescape for further details. In an effort to help as many as we can, we will be asking those that took advantage of any of the initial four clinics to give others a chance in the summer months. We hope that you all have had the opportunity to meet our newest golf staff member in the golf shop. Liana Lopez comes to us from Brooklyn, New York. Liana has had extensive hospitality training in her previous employs. She has worked in the Crowne Plaza Hotel System and she has worked for American Eagle Outfitter and GAP on the retail side of things. We hope that you will take a minute to get to know Liana. The Member/Member tournament was chaired by Sue Scott and Cathy Honeycomb who did an amazing job with their theme “African Safari” as they took us through the jungles at Hammock Dunes. The tournament was well attended with over 80 members and the decorations, gifts and prizes were wonderful. Thank you both for this great event and a job well done. The finale to the tournament was an exciting shoot out on Hole 18 and the team of Ann Gregorits and Diane Stenclik won with Sue Averdick and Brygitte Lusinski as runners up. Congratulations ladies! Our Member/Guest tournament this year was “April in Paris”. Denise Buonaiuto and Diane Barber co-chaired along with their committee members, Jennifer Cote, Mary Heise, Kim Juvinall, Cheryl McCabe and Dee McEvoy. Thank you again ladies for an amazing tournament and for all your hard work. Working this event two years in a row is above and beyond your call of duty and it doesn’t go unrecognized. Everything was spectacular, from the food to the prizes, to the Eiffel Tower Glasses and amazing weather. It couldn’t have been more perfect. We also want to thank our new Chef, Issa Moussa, Crystal and her staff, and the Golf Shop staff for all their help in making this event truly the highlight of the year. The HDLGA Nominating Committee has posted a Slate of Officers for next year in the Ladies Locker Room. The election will take place on May 6, so please plan to attend the Closing Day Golf and/or Luncheon at the Links. It has allowed us to keep the playing conditions up to standards and now with the warmer months approaching, we can’t wait to see how it performs this summer. The greens have played very consistent for the last month and we see no reason why they won’t maintain their speed until aerification. The Links Course will be closed May 26-29 for aerification. The tees are beginning their transition from overseed back to Bermuda. During this time the tees will look off color compared to the rest of the golf course, but this is to be expected. Fairways will be lowered this week to .500, which is where they are normally kept. The project crew has been working very hard on tree trimming and mulching the natural areas. There is a group of residents called the Care Bears of Hammock Dunes, whose name may be familiar to most but whose role is not always understood. The Care Bears is a voluntary organization whose sole purpose is to show neighborly and caring concern for our Hammock Dunes residents. Whenever a Care Bear prepares a meal, picks up a prescription, or pays a visit to an ailing neighbor, she or he personifies the Hammock Dunes spirit of friendship by showing it in tangible ways. Their calling card, a miniature Teddy Bear, serves as a reminder that no one who can use a helping hand need ever be alone. Anyone in need of Care Bear assistance – either for themselves or for a family member -- can call a Care Bear; a telephone number is usually listed in the Dunescape. Everyone’s privacy is respected and assistance is provided only to those who request it. We all know that Hammock Dunes is renowned for its spectacular ocean views, magnificent golf courses and outstanding amenities, but, as exemplified by the Care Bears, its greatest assets are the people who live here. It Is Sea Turtle Nesting Time Yes, it is that time of year again when we can expect to see Sea turtle nests on our beach. The most common ones will be Loggerhead nests but we do get Green and some Leatherback turtle nests as well. This year the Club will be sponsoring 3 nests. You will receive an email notifying you when the Flagler County Turtles Patrol will be cleaning out the hatched nests, so you can watch. How we, as good stewards, can help.... • It is against the law to touch or disturb nesting sea turtles, hatchlings, or their nests. Sea turtles are protected by Federal and State Laws. • All sea turtles are classified as Endangered under the Endangered Species Act. • Keep lights from shining onto the beach at night. Turn off or shield exterior lights, draw your drapes. REASON….. baby sea turtles after hatching, head for the horizon, they are oriented to the light. If your light is brighter they will head to your light not the ocean. Lights disturb nesting turtles. • Avoid using flashlights, lantern or flash photography on the beach at night. • Unfortunately we have had a dead turtle on our beach already this year. The cause seems to be plastic. • Help in beach cleanup. Sea turtles often mistake debris such as balloons, plastics, Styrofoam, tar balls and other non-degradable materials for food. Not being able to digest this debris causes death one example; plastic bags and balloons resemble jelly fish, one of their favorite foods, they eat it….. they die. They can get entangled fishing lines, ropes and nets. PLEASE WALK WITH A BAG AND PICK UP DEBRIS. • Remove all items, including beach chairs and umbrellas, from the beach at night. Thanks for sharing!
