EXECUTIVE SUMMARY
Being the largest and most prestigious food and hospitality tradeshow in Asia for 2015,
HOFEX has served the food and hospitality industry in the Asia-Pacific region since 1987,
providing an ideal platform for industry players to explore business opportunities, as well as
gaining market updates and expanding both their business and social networks.
Part 3 of this report intends to give an overview of the opportunities and trends of the F&B
industry in Macao – the nearby city of Hong Kong - and its thriving tourism, hotel, restaurant
and meat and coffee markets which could boost your business to new heights.
With rapid development in China, Macao is positioned as an important gateway to one of
the world’s most lucrative consumer markets. Thanks to the rosy gambling industry and the
ever-growing number of tourists, Macao is developing more and more hotels and eateries
to cater to the surging demands for accommodation and gourmet. The number of hotel
rooms is forecasted to double the existing number to around 57,000 in the near future.
Macao has a very promising dining scene in terms of growth amid huge demand from
locals and tourists. Receipts and Expenditure of restaurants & similar establishments in 2013
amounted to US$1.1 billion and US$1.0 billion, up by 23% and 24% respectively. It is also the
perfect base for companies that want to do business in Mainland China and across the
region. HOFEX 2015, as the largest regional show, is the most effective and efficient platform
for suppliers and buyers from around the globe to meet and generate the greatest benefits
for their business, as well as further growth in the food and hospitality industry throughout
Asia.
Part 1 of the report, gives an overview of the strengths and opportunities of the hosting city
of HOFEX – Hong Kong, and its burgeoning tourism, hotel, restaurant and coffee market. It
can be viewed here.
Part 2 of the report, explains the opportunities and trends of the meat market in Hong Kong
which offers a surging demand for imports. Having the highest per capita meat
consumption in the world and limited local production, Hong Kong recorded an increase of
91.8% in imported frozen beef in 2013. It can be viewed here.

Macao has close relationships with Portuguese-speaking countries (PSCs) including Angola,
Brazil, Cape Verde, Guinea-Bissau, Mozambique, Portugal and East Timor, which help
facilitate the trade activities and cooperation between China and those resourceful,
emerging PSCs. According to the General Administration of Customs of China, the trade
volume between China and PSCs have increase from US$10 billion in 2003 to around
US$128 billion in 2012. They also signed a new version of an Economic and Commercial
Co-operation Action Plan (2014-2016), aiming to reach the goal of US$160 billion of bilateral
trade by 2016.
Located on the south-eastern coast of China, at the estuary of the Pearl River Delta, and
about 60km from Hong Kong, Macao consists of the Macao Peninsula, Taipa Island and
Coloane Island, with an estimated population of 624,000 living in an area of 31.3 km².
According to the World Trade Organization (WTO), Macao’s trade and investment remains
as one of the most open in the world. Similar to Hong Kong, Macao is a free port in which
there is no restriction on the flow of goods and services, money or capital. The city’s
advantages are also characterised by its separate customs territory, simple and low
taxation system, widespread international market network, and the implementation of the
Mainland and Macao Closer Economic Partnership Agreement (CEPA).

in Macao or forming partnership with Macao enterprises,” said Mr. Jackson Chang,
President of Macao Trade and Investment Promotion Institute (IPIM). “Also, Macao serves as
a stepping stone for overseas products and services, especially those from the Portuguese
speaking countries, to enter the Mainland market.” In the past 10 years, Macao’s total
transit trade of wines and foods produced in PSCs has grown 10 times.
In terms of further promoting F&B trade in Macao, as well as what Portuguese-speaking
countries could offer, IPIM has been participating at HOFEX for years, “HOFEX is the leading
tradeshow in the region which allows buyers to source from a huge selection of products. It
is a must-attend event and in the coming May, we will be bringing a delegation and
exhibitors from Macao to participate in HOFEX again”, said Mr Chang.
Macao Pavilion, in the size of 354m2 which is organised by IPIM, will be showcasing a range
of wine, food, hotel supplies, catering equipment and etc from some Macao enterprises at
HOFEX 2015. Be sure to check out their booths at Hall 3F when you visit the show!
New Development of Hengqin
In 2014, the Macao’s Government has been promoting all-out reciprocation in the key
areas of Hengqin Island and Nansha and has continued to use and enhance the
co-operation mechanism with its mainland counterparts.
On co-operation with Nansha, Macao has actively participated in the construction of
“Nansha CEPA Early Implementation and Early Trial Comprehensive Pilot Zone”, while
promoting co-operation on “visa free yachting” and construction of the cruise liner port,
which accelerates the process of fresh and live food supplies to Macao.
The development of Hengqin also creates a favourable condition for the tourism industry in
Macao. Sitting between the two checkpoints visitors have to pass through to enter Macao,
Hengqin would ease entry and exit to Macao by allowing visitors to stay there, so they can
stay longer and spend more in the gambling city.

Hengqin Development Planning
Food & Beverage Trading
As a small open economy with scarce natural resources, Macao is highly dependent upon
external trade activities. Imports are of utmost importance and most of its international food
and beverage products are imported through distribution channels in Hong Kong.
It has imported US$775 million food and drink in the period between January and August
2013, with 11% growth compared to the same period in 2012. “With the support of the
Chinese Central Government, Macao is building a centre for the distribution of food
products, which will no doubt open up new business opportunities for the food and
beverage industry.” said Mr. Jackson Chang.

Coffee Trading
The growing number of high-end hotels in Macao provides a huge market for coffee, as well
as promoting the coffee culture in the city. A handful of foreign brands have entered or are
going to step into this emerging market. The largest coffee chain in Korea which owned
over 1,400 outlets worldwide - Caffé Bene, has made its first foray in Macao; Café Mart has
opened its door in July 2014, providing specialty coffee and imported waffles from Belgium.
Tan Heong San Enterprise Ltd, a local coffee roasting brand famed for its self-operated
Macanese chain of cafes ‘Honolulu’, showed their intentions to invest about US$1.88 million
in two more upmarket cafes in the city. One of them will be a 5-storey cafe equipped with
cellar and warehousing space, which is expected to be constructed and enter into
operation in 2015.
It is also believed that there will be more export opportunities for Ecuador’s coffee and other
food products and the trade and investment between Macao and Latin American
countries have been growing in a steady pace.

When Macao is mentioned, the very first thing that may come to your mind is casino.
However, being one of the earliest and last remaining European colony in Asia, Macao is
also rich in attractions with well-preserved buildings of different architecture styles and eras.

Although having a smaller market than Hong Kong, Macao has been developing rapidly
since the liberalisation of the gambling industry and the opening of several new resort hotels.
Crowned the world’s gambling hub with 2013 revenue exceeding US$40 billion - almost 20%
growth over the previous year - Macao is dwarfing U.S. gambling revenue. It is forecasted
that the territory's gambling revenue will hit US$77 billion by 2017, driving the food &
beverage and the hospitality industry to grow alongside. The Macao government has also
been encouraging diversification of the city's tourist base.
Macao Government Tourist Office Director Maria Helena de Senna Fernandes stated that
“Traditionally Macao is associated with gambling. It is not just that, we are rich in historical
attractions and the one-of-a-kind Macanese food, Macao is branded as a World Centre of
Tourism and Leisure.” MGTO has launched the “Step Out, Experience Macao's Communities”
walking tour route project to encourage visitors to explore different neighbourhoods, the
routes are expected to balance visitor trends around Macao and foster community tourism,
as well as moderate diversification of economic development. Currently, a total of eight
walking tour routes are presented for visitors’ choice.
Tourist Arrivals
According to Macao Statistic and Census Service (DSEC), for the whole year of 2014, visitor
arrivals reached a record high of 31,525,632, up by 7.5% year-on-year; same-day visitors
amounted to 16,959,949, sharing 54% of the total. Visitors from Mainland China (21,252,410),
the Republic of Korea (554,521) and Japan (299,849) increased year-on-year, while those
from Hong Kong (6,426,608) and Taiwan (953,753) decreased. Moreover, visitors from the
United States recorded year-on-year increase; however, those from Australia, Canada and
the United Kingdom registered decrease. In 2014, the average length of stay of visitors held
stable as in 2013, at 1.0 day.
Total spending of visitors for the whole year of 2014 reached MOP61.75 billion, up by 3.7%
from MOP59.54 billion in 2013, with that of overnight and same-day visitors rising 2.6% and
9.1%, at MOP50.88 billion and MOP10.87 billion respectively. Analysed by consumption
structure, visitors spent mainly on Shopping (45.3%), Accommodation (26.9%) and Food &
Beverage (19.9%) in the fourth quarter of 2014.

Infrastructure Improvements to Foster Tourism
Major infrastructure improvements will create a “one-hour living circle” connecting Macao,
Hong Kong and Guangzhou, driving more mainland visitors to Macao in the near future. The
US$10 billion Hong Kong-Macao-Zhuhai Bridge is targeted to open in 2016, replacing an
hour-long ferry ride on the South China Sea with a 20-minute drive and creating a
spectacular new road link spanning the Pearl River Delta.
Other major projects set to come on stream include a capacity upgrade for the Macao
International Airport and a Light Rapid Transit rail system. The former will double capacity to
12 million passengers a year, making it possible to expand the existing route network which
mainly focuses on links with the mainland, Taiwan, Japan, South Korea and Southeast Asian
cities. The latter one, which the government has committed to investing US$939 million to
fund a rail link shuttling from the territory’s historic centre to Cotai, will be able to carry up to
8,000 passengers per hour in either direction.

There were 67 hotels and 33 guesthouses operating in Macao in 2013; receipts of the hotel
industry rose by 15% year-on-year, at $US 3.2 billion. Food & Beverages accounted for 22% of
the total receipt and had a 14% increase over 2012 - from $US 630 million to $US 716 million.
Expenditure of the hotel industry increased by 10% year-on-year to $US 2.8 billion, with
payments abroad rising by 14%, at US$ 369 million.
A total of 18 hotels are currently under construction in Macao, with an additional 25
development projects being appraised. Currently there were approximately 28,890 hotel
rooms in Macao and it is expected that the number will be doubled to around 57,000 upon
completion of all projects.
In 2015, Marriott International and Galaxy Entertainment Group will open the first-ever
all-suite Ritz-Carlton and the world’s largest JW Marriott hotel in Macao; while Sands group is
planning to open the Parisian - a new complex that will offer 3,000 hotel rooms, with a 160m
tall replica of the Eiffel Tower as an attraction. The Hong Kong-listed Louis XIII Holdings Ltd will
open in 2016 an exclusive luxury hotel and entertainment complex in Cotai Strip, offering
around 230 duplex suites and 16 villas. Melco Crown Entertainment Limited is developing
their fifth hotel, The City of Dreams Hotel Tower, which is due to open in 2017. Sociedade de
Jogos de Macao, S.A (SJM) expects to unveil the US$3.9 billion Versailles-like Lisboa Palace
in the same year, which will be equipped with 700 gambling tables and feature three hotels
housing around 2,000 rooms, with one of the hotels designed by Karl Lagerfeld, the creative

director of the luxury fashion brand - Chanel.
Not only catering for gamblers, developers are also creating recreational facilities suitable
for the whole family. Fisherman’s Warf - Macao’s first theme park - has been approved for a
redevelopment project, adding three more hotels, a cultural and entertainment facility and
several shopping and dining venues while improving the existing facilities. “With the support
of the government, sustainability and green living will be the future trend of the hospitality
industry, aiming to minimise the environmental impact without jeopardising the comfort of
our customers,” Mr Yeung said. “Under the megatrend of environmental protection, there is
a surging demand for energy-saving, cost-effective equipment and technology in the
Macao’s hospitality industry.”

Macao's medley of Portuguese and Cantonese cuisine has made the peninsula one of
Asia's top culinary destinations for decades. The city is also famed for a variety of Macanese
street food, such as pork chop bun, Portuguese egg tart, Serradura Pudding and so on. A lot
more high-end restaurants and foreign restaurants chains have been tapping into the
market in the last decade, making Macao an exciting world-class culinary frontier. Some of
the exclusive addresses include Robuchon au Dô me at the top of the Grand Lisboa casino,
opened by French celebrity chef Joë l Robuchon; and Don Alfonso 1890, the Asia’s branch
of the highest Michelin-rated restaurant in Southern Italy.
According to DSEC 2013 Restaurant and Similar Establishments Survey, a total of 1,918
restaurants & similar establishments were operating in 2013 in Macao, up by 14.3%
year-on-year. Their receipts and expenditure amounted to about US$1.1 billion and US$1.0
billion, up by 23% and 24% respectively (see Chart 1).

“With the development in Hengqin, Macao is likely to benefit in a couple of ways. Firstly,
Hengqin will provide housing for workers in Macao as its rent is more competitive and the
location is very close to the Cotai strip,” said Mr Luczak. “Secondly, if the Pearl River Delta
(PRD) to become a counterpoint to Shanghai and Hong Kong, then Macao’s non-gaming
business will definitely benefit as we offer a very high concentration of F&B and
entertainment.”
A number of foreign restaurants and brands have also decided to step into the thriving
dining scene and catch the opportunities. As part of a partnership with Las Vegas Sands,
British celebrity chef Gordon Ramsay will open a restaurant named Bread Street Kitchen in
Macao in one of the Sands China’s resorts in early 2015. Future Bright Holdings Ltd is
introducing two famous Korean food franchises to Macao, namely Mad for Garlic and Bistro
Seoul. And, The Cheesecake factory from USA has announced recently a new licensing
deal with Maxim's Caterers Limited and planned to open a branch in Macao in the near
future.
A well-established name “SOHO” has officially opened at City of Dreams on August 13, 2014,
elevating Macao’s dining and entertainment scene to the next level with its portfolio of
top-notch eateries bathed in a cosmopolitan, vibrant ambiance. It features 16 restaurants
and bars from overseas, serving a kaleidoscope of international delights and an exciting
line-up of daily live performances.

Demand of Beef
Meat of Bovine Animals re-exported from Hong Kong to Macao reached 5630.72 MT in 2013,
up 10.6% over 2012. Frozen beef, which accounted for 71% of the total bovine products
imported in 2013, increased by 13.5% and 20.7% in quantity and value respectively, and
they are primarily used in high-end steak houses and restaurants.

US is one of the major suppliers of beef product used in Macao. It is estimated that 542 MT of
US beef valued at US$6.7 million were shipped from Hong Kong to Macao during the first 10
months of 2013 - a 57% increase over the same period in 2012. The Government of Macao
has started accepting US bone-in beef derived from cattle under 30 months of age and
boneless beef from cattle of all ages when shipments are accompanied by FSIS health
certificates issued on or after August 1, 2013. “US beef shipments to Macao are set to grow in

future years as Macao offers more entertainment beyond gaming.” said John Lam, USMEF's
regional programmes manager based in Hong Kong.
Macao has also given the green light to the import of beef and lamb from the UK in early
2014. The announcement follows collaboration between Defra, UK Trade & Investment
(UKTI), and Eblex. According to Eblex, the organisation for beef and lamb levy payers in
England, they are investing a significant amount of resources in opening this market as the
Government of Macao is understood to be keen to include UK meat products in its offering
to the growing number of visitors.
Demand of Pork
Due to the traditional cultural preference and relative price when compared to beef, pork is
the most popular meat item for Macao’s consumers. Over 50% pork products shipped from
Hong Kong to Macao in 2012 and 2013 was frozen and they mainly came from Brazil, China,
the Netherlands and Germany. In 2013, Hong Kong re-exported 9,308 MT of frozen pork to
Macao and maintained a modest growth of 3.4% over 2012. There was also a significant
increase (352.1%) in prepared and preserved pork and offal - up from 1,379 MT to 6,234 MT.

Although the import of frozen poultry cut and offal experienced a mild drop of 1.4% in 2013,
the import of frozen poultry (not cut in piece) had a remarkable increase of 43.9%, reaching
678 MT. The import of prepared and preserved poultry meat & offal has also surged from 910
MT to 941 MT in 2013.
In early 2014, Macao authorities discovered a positive H7 sample in a batch of poultry
imported from the Zhuhai, China. It is expected that more customers will switch to frozen
chicken because of health concern, leading to an increasing demand in frozen poultry
from other countries.

Demand of Lambs and Others
A potential market could also be seen for the import of other kinds of meat. For instance, the
import market for sheep and goats marked an increase of 32% in quantity in 2013, reaching
375 MT.
Hong Kong also re-exported more sausages meat, offal or blood to Macao, showing
increases of 36.1% and 41.4% in quantity and value respectively; and started sending offal of
sheep, goats, horses, asses, mules or hinnies to the city.
