Established 1994
For over twenty years Okinami, Brighton’s first and longest running
Japanese restaurant has been providing a taste of Japan’s healthy,
satisfying cuisine to this fair city and its visitors. Husband and wife
team Mike & Azita Dodd are at the helm. True believers in the
“roll-your-sleeves up” approach to business, you will often find them
working side-by-side with their loyal staff.
Okinami is a traditional family business steeped in values that are
sadly becoming a thing of the past. In fact, during University breaks,
the Dodd’s sons Daniel and Joseph put down their books and come
and earn their keep at their business. It was also Azita’s sister, Nazanin Kamali, a renowned furniture designer, who designed Okinami’s
sleek and minimal interior and bespoke furniture. As well as holding traditional values the Dodd’s ensure that their decidedly modern
views, forward thinking and ethical ethos are written into lore.
Okinami’s aim is to provide good, satisfying and healthy Japanese
food, in a calm and beautiful setting. In terms of business Okinami
forms close relationships with its suppliers and Mike himself ensures
that all produce is locally sourced, where possible, and ethically
treated.
Okinami has a rigorous approach to recycling everything from vegetable waste (which is composted in his own garden where he grows
herbs and veg for use at home and in the restaurant), cooking oil
and the packaging that stock arrives in. Okinami also goes to great
lengths to ensure that all waste is kept to a minimum and that energy
usage is carefully monitored. So as you can see, Okinami is far more
than a simple restaurant, it’s a productive part of the community and
a proud ambassador of the diverse and compassionate life associated
with Brighton.
