Discussed will be: Note: Completion of the Basic class is required in order to participate in the Intermediate level Prerequisite: the Basic class and at least one of the Intermediate sessions Designed for either working professionals who would like to broaden their credentials or home-cooking enthusiasts eager to learn new skills, this three month course will cover everything from managing the kitchen effectively to presenting dishes with eye-appeal. The instructor will have you whipping up batters, filling egg rolls, stuffing dumplings and even rolling sushi by the end of the course. Lots of one-onone attention; class limited to 5 students. DRAFT • Rice: the 4 different types, and traditional cooking method vs. rice-cooker • The whys-and-wherefores of cooking sauces vs. MSG • How to handle a chopping knife safely and effectively • How to stir fry using a wok • The difference between authentic traditional Chinese and “Chinese-American” cooking End of Class Bonus Optional: Learn to speak Cantonese through an informal half-hour lesson with a native speaker. Pick-and-choose from a series of monthly classes where you will learn to prepare a variety of basic dishes such as lo mien, fried rice, hot & sour soup, and chicken & broccoli. These sessions are 10% lecture, 90% hands-on – with the instructor guiding you through each step.
