Different cultures Welcome Breeding for convenience 3 4 Convenience catalogue Breeding for convenience From Seed to Salad Imagine that you could combine literally any taste, colour and shape in a new leaf to make the most delicious salad ever. It may sound like a fantasy, but it is in fact possible to ‘create’ leaves like this by combining desired traits. At Rijk Zwaan, we call this ‘breeding’: we mirror the natural process, selecting the best plants and then embarking on the lengthy and often challenging task of crossing them to develop new varieties. 1 Selection We evaluate each plant regarding the desired traits. In the case of a visual trait, this simply means assessing a plant’s appearance – such as leaf shape, colour, head size, etc. But resistances against diseases or the potential for a long shelf life need to be tested. Is the new variety intended for the fresh market or specifically for processing? Rijk Zwaan has invested in its own processing facility to simulate the preparation, washing and drying steps that leaves are subject to in a fresh cut factory so we can be sure newly developed leaves can withstand being processed, if required. 2 Trialling Once a variety has been selected that combines the desired traits, it can be trialled at any of several locations around the world; the Rijk Zwaan demo fields enable growers, processors, traders and retailers to see, feel and taste a wide range of new varieties as well as exchange experiences and ideas for future developments. “That’s how we get from seed to salad ” 3 Commercial production Salanova® beauties Breeding for convenience 5 seeds of the new variety. These are then delivered to growers around the world so that they can grow the new leaf with the desired combination of traits. This makes Salanova a very interesting product for the processing industry. With the stagnating growth in the market for fresh cut salads, product development is becoming increasingly important. Consumers want variation in taste, shape and colour as well as softer leaf textures. Salanova butter and Salanova oakleaf meet all these demands and offer consumers an entirely new quality of lettuce. The large number of uniform, small leaves per head make them very efficient for processing companies. The core of Salanova lettuce is easily removed by cutting it out with a circular movement. What remains are lovely, tender leaves which are unmatched by other lettuce types. Salanova oakleaf has very nicely-lobbed leaves and comes in a fresh, (dark) green or warm red colour. Its small, 3D-shaped leaves have a pleasant nutty flavour. Because of the whole leaves and 3D shape, Salanova has extra in-bag appeal. What they all have in common is a strong, crisp leaf texture, a nice green colour and large heads which produce an abundance of usable leaves after cutting. Rijk Zwaan asked itself what could be done to improve these primary lettuce types, which are in effect ‘commodities’, so that consumers could gain even more enjoyment from their favourite salads. Cos lettuce already comes in a wide range of shapes and sizes to suit almost any palate: baby-size little gem, short and dense small cos, dark and upright midi, and various larger types. However, Open Heart Cos and Crunchy Cos are true innovations in this range, both bringing interesting characteristics to the table. The result was Open Heart Cos, a variety named after one of its most notable characteristics: its open habit. The Open Heart Cos lettuce’s open habit makes it ideal for mechanical harvesting, either as loose leaves or whole heads for further processing. A single cut above the plant’s growing point reveals lots of strong, uniformly narrow leaves with solid veins. Practical trials have demonstrated that Open Heart Cos generates approximately 25% more usable product than a traditional cos lettuce. “Strong, uniformly narrow leaves with solid veins ” Little gem Small Cos Midi Cos Crunchy Cos Open Heart Cos About 10 cm, small, dense, very tasty. Its fine yet solid midribs do not crack, which reduces browning and means that sandwiches remain appealing for longer. Setting new standards Open Heart Cos is unique in the way that it unites so many product benefits in one single product, thus raising the bar for new varieties. The first Open Heart Cos varieties were Actarus RZ, Easala RZ and Avidius RZ. The latest introductions combine an open habit with the savoyness that characterises true cos lettuce. Crunchita RZ (41-101 RZ) Rijk Zwaan’s new ‘Crunchy Cos’ represents a very interesting alternative to cos or iceberg lettuce in salad bags. This innovative cos offers the best of both worlds: its leaves are just as elongated and green as those of a normal cos lettuce, both on the outside and the inside. In addition, they have the crisp and crunchy bite of an iceberg lettuce, and these combined characteristics create an excellent taste experience. Crunchita RZ is the first variety of Crunchy Cos and has been designed for large-scale processing. One-cut-ready Cos do not squash the bread, which It is still a prototype, but the first trials with mechanical harvesting have been very promising. Let’s snack BARUNDI RZ Different cultures • Multi-purpose lettuce • 30 Convenience catalogue Different cultures Every country has its own culture with its own eating habits – dishes that families have been preparing for generations, based on products typical for that country or region. This is also reflected in the market for fresh-cut fruit and vegetables, with different types of produce being sold ‘ready to cook’ or ‘ready to eat’ in different countries. What is common to all countries, however, is the fact that – driven by the need to innovate and differentiate as a result of increased competition – growers, processors and retailers alike have identified fresh-cut vegetables as a way of offering consumers greater convenience, and hence generating growth. While the market for fresh-cut vegetables still demonstrates certain regional differences, convenience is clearly emerging as a universal trend. The result: global consumption of fresh-cut vegetables is on the up. Batavia green and red Lollo rossa and bionda Oakleaf green and red Cabbage white Cabbage red Different cultures Cauliflower Let’s snack Multi-purpose lettuce One-cut-ready Salanova® beauties Breeding for convenience 31 32 Convenience catalogue Different cultures Universal convenience As consumers’ lives become increasingly busy, growers, processors, retailers and foodservice companies are developing new and innovative ways of setting themselves apart by offering increased convenience. While it invariably helps consumers to save time, convenience can take many different forms: packs of pre-chopped, ready-to-use vegetables, useful or even inspirational mixes of ingredients in the same bag or package, or handy ‘snack-sized’ packs for eating on the go, to name but a few. And it is interesting to see how local cultures and eating habits have influenced the development of markets for fresh-cut ‘convenience’ vegetables around the world – and are continuing to do so. The fresh-cut evolution Consumers in The Netherlands, with its traditionally vegetablebased diet, have been able to buy fresh-cut vegetables for use in soups and vegetable mashes since as long ago as the 1970s. Since then, Dutch processors have continued to innovate and expand their product ranges, resulting in one of the most extensive ranges of fresh-cut mixed salads and stirfry vegetables in Europe. Just across the border, German consumers have been enjoying sauerkraut and coleslaw for decades. However, since German consumers eat ‘out of home’ most frequently of all Europeans, the retail fresh-cut market there remains small and is developing relatively slowly. On the other hand, in response to the high rate of out-of-home consumption, the sale of fresh-cut vegetables and salads through foodservice channels is relatively big there. “Salad vegetables are gaining a new lease of life ” Local tastes continue to determine which vegetable types should be included in sandwiches, salad bags and other convenience meals in each country. In Italy, for instance, babyleaf is a popular product, which is why Italian growers have started to wash the baby leaves in order to supply them ‘ready to eat’. The French, meanwhile, eat tonnes of their beloved corn salad, oak leaf and batavia lettuce, whilst cos and iceberg lettuce are still relatively new to the market there. Salads as innovation The market for prepared salads is particularly well established in the USA and the UK, where consumers enjoy eating salads but do not like the chopping, rinsing and other preparation involved. Hence, processors are increasingly offering complete ‘salad kits’, including croutons, dressings and more. 33 Breeding for convenience As this market matures, retailers and consumers alike are continually seeking innovations in taste, flavour, texture and appearance. Hence, while babyleaf spinach is still served cooked or stir-fried in most countries around the world, it has become a main ‘leafy’ salad ingredient in the USA. Likewise rocket, the peppery serrated leaf that has been spicing up Salanova® beauties Italian dishes for centuries, has recently gained a new lease of life: consumers in the UK have ‘adopted’ it, rightfully Although ‘leafy’ vegetables are very popular in the Western world, the idea of eating raw leaves is still a novelty in many Asian countries, where convenience tends to focus on fresh-cut vegetables in stir-fry dishes. Nevertheless, this has started to change – a clear sign of the impact of globalisation echoed in cross-border retailing, the international success of major foodservice companies now starting to discover and enjoy salads as a trendy and above all healthy meal. The universal convenience trend – combined with increasing demand for food which is local, healthy, fresh, sustainable, honest and tasty – means At Lovemysalad.com, salad lovers that the global future looks bright for from around the world come together fresh-cut salad vegetables! to share and promote their passion for “The global fresh-cut future looks bright ” One-cut-ready Changing tastes result, many women in the Far East are vegetables and salads. Introduction The relationship between a plant and a pest is very complex. The terms that describe the reaction of a plant variety to a pest are determined by tests under controlled environmental conditions with known and characterized biotypes, pathotypes, races or strains of the pest in question. In practice however, the ability of a pest to cause disease in a plant depends on environmental conditions, the properties of the organism itself and the capacity of the plant to defend itself. Varieties within a plant species can differ in their ability to defend themselves. Under different conditions, such as age of the plant, pest pressure and virulence or adverse environmental conditions, the interaction between the same plant and pest may have different outcomes. Pests are known to develop and form new biotypes, pathotypes, races or strains that can cause damage to plants that remain unaffected by the original form of the pest. To promote consistency in the terms used to describe the reaction of a plant to a pest, ISF Vegetable and Ornamental Crops Section has defined the following terms. 2. Definitions Susceptibility is the inability of a plant variety to restrict the growth and development of a specified pest. Resistance is the ability of a plant variety to restrict the growth and development of a specified pest and/or the damage they cause when compared to susceptible plant varieties under similar environmental conditions and pest pressure. Resistant varieties may exhibit some disease symptoms or damage under heavy pest pressure. Two levels of resistance are defined. 45 Convenience Manager Italy Bauke van Lenteren [email protected] +31 65 10 92 872 Asia Carlo Fermi [email protected] +39 33 55 23 94 33 Middle East Jan Doldersum [email protected] +86 13 96 98 42 915 Australia & New Zealand Abdullah Sa’sa [email protected] +96 27 95 65 44 41 The Netherlands Frances Tolston [email protected] +61 48 81 83 588 Belgium Wim in ’t Groen [email protected] +31 65 32 98 991 North America Marc Celis [email protected] +32 47 58 40 170 Brasil Karen Marie Feliz [email protected] +18 31 22 91 332 Scandinavia Valério Maldonado da Silveira [email protected] +55 19 97 18 13 25 Central America Harm Ehmen [email protected] +45 65 90 65 02 Spain, Portugal & Moroco Santiago Gastón de Iriarte Dupuy de lome [email protected] +34 670 99 18 26 Vincent van Wolferen [email protected] +31 62 03 77 958 Central Eastern Europe South Africa Jörg Werner [email protected] +49 171 21 22 517 France Marcus Burnett [email protected] +27 83 631 4298 South America Frank Roelofs [email protected] +33 60 34 33 280 Germany, Austria & Switzerland Jürgen Parschau [email protected] +49 17 52 62 83 60 Indonesia, Malaysia and Singapore Rara Dewayanti [email protected] +62 816 119 3333 High resistance (HR*): plant varieties that highly restrict the growth and development of the specified pest under normal pest pressure when compared to susceptible varieties. These plant varieties may, however, exhibit some symptoms or damage under heavy pest pressure. Intermediate resistance (IR*): plant varieties that restrict the growth and development of the specified pest but may exhibit a greater range of symptoms or damage compared to high resistant varieties. Intermediately resistant plant varieties will still show less severe symptoms or damage than susceptible plant varieties when grown under similar environmental conditions and/or pest pressure. It is to be noted that if a resistance is claimed in a plant variety it is limited to the specified biotypes, pathotypes, races or strains of the pest. If no biotypes, pathotypes, races or strains are specified in the resistance claim for the variety, it is because no generally accepted classification of the cited pest by biotype, pathotype, race or strain exists. New biotypes, pathotypes, races or strains that may emerge are not covered by the original resistance claim. Immunity is when a plant is not subject to attack or infection by a specified pest. 3. Statement The ISF Vegetable and Ornamental Crops Section recommends that vegetable seed companies use the terms susceptibility, high or intermediate resistance, and immunity to describe the reaction of plants to pests in communication with their customers. They should avoid the term tolerance for this purpose. Vegetable seed companies will continue to use the term tolerance to describe the ability of a plant variety to endure abiotic stresses without serious consequences for growth, appearance and yield. The definitions and recommendation will be reviewed in five years. FAO defines a pest as: Any species, strain or biotype of plant, animal or pathogenic agent injurious to plants or plant products. Pathogens (microorganisms such as bacteria, viruses and fungi that cause a disease) are, therefore, included in the term “pest”. * The standard abbreviations HR (high resistance) and IR (intermediate resistance) shall be used in all languages. 1 Jan Frank Omvlee [email protected] +31 65 19 38 176 Turkije Deniz Karayol [email protected] +90 53 03 07 17 39 United Kingdom Gerard van der Hut [email protected] +44 79 21 05 97 63 Rijk Zwaan Distribution B.V. | P.O.
