From Seed to Salad
Imagine that you could combine literally any taste, colour and shape in
a new leaf to make the most delicious salad ever. It may sound like a
fantasy, but it is in fact possible to ‘create’ leaves like this by combining
desired traits. At Rijk Zwaan, we call this ‘breeding’: we mirror the natural
process, selecting the best plants and then embarking on the lengthy
and often challenging task of crossing them to develop new varieties.

Selection
We evaluate each plant regarding the desired traits. In the case of a visual trait, this
simply means assessing a plant’s appearance – such as leaf shape, colour, head size,
etc. But resistances against diseases or the potential for a long shelf life need to be
tested. Is the new variety intended for the fresh market or specifically for processing? Rijk Zwaan has invested in its own processing facility to simulate the preparation, washing and drying steps that leaves are subject to in a fresh cut factory so we
can be sure newly developed leaves can withstand being processed, if required.

Salanova® beauties
Salanova lettuce has many leaves of babyleaf
dimensions that are characterised by a good
shelf life, a nice flavour and a high percentage
of usable product. This makes Salanova a very
interesting product for the processing industry.
With the stagnating growth in the market for fresh
cut salads, product development is becoming
increasingly important. Consumers want variation
in taste, shape and colour as well as softer leaf
textures. Salanova butter and Salanova oakleaf
meet all these demands and offer consumers an
entirely new quality of lettuce. The large number
of uniform, small leaves per head make them very
efficient for processing companies. The core of
Salanova lettuce is easily removed by cutting it
out with a circular movement. What remains are
lovely, tender leaves which are unmatched by
other lettuce types.

Salanova butter comes in a green version and with a very pretty
colour contrast on the red butter: combining yellow, green and red
in one leaf. Salanova oakleaf has very nicely-lobbed leaves and
comes in a fresh, (dark) green or warm red colour. Its small,

around the world since it offers some very
important advantages. And now, thanks to the
introduction of new varieties, the possibilities
just got even more interesting.
One of the most important reasons for choosing
mechanical harvesting is the fact that it reduces
the need for labour, which is becoming increasingly scarce, and hence expensive, in more and
more countries. As well as reducing the number
of workers required, mechanical harvesting can
also improve processing efficiency and result in a
higher-quality end product.

Iceberg and cos remain the most important bagged
salad ingredients in the world, while smooth endive
is also extremely popular in certain countries.
What they all have in common is a strong, crisp
leaf texture, a nice green colour and large heads
which produce an abundance of usable leaves after
cutting. Rijk Zwaan asked itself what could be done
to improve these primary lettuce types, which are in
effect ‘commodities’, so that consumers could gain
even more enjoyment from their favourite salads.
Cos lettuce already comes in a wide range of shapes
and sizes to suit almost any palate: baby-size little
gem, short and dense small cos, dark and upright
midi, and various larger types. However, Open
Heart Cos and Crunchy Cos are true innovations

Rijk Zwaan breeders set out to combine the best characteristics from the
numerous existing cos varieties to produce a new, multi-purpose cos.
The result was Open Heart Cos, a variety named after one of its most
notable characteristics: its open habit.
The Open Heart Cos lettuce’s open habit makes it ideal for mechanical
harvesting, either as loose leaves or whole heads for further processing.
A single cut above the plant’s growing point reveals lots of strong,
uniformly narrow leaves with solid veins. Practical trials have
demonstrated that Open Heart Cos generates approximately 25% more
usable product than a traditional cos lettuce.

introductions combine an open habit
with the savoyness that characterises
true cos lettuce.
Crunchita RZ (41-101 RZ)
Rijk Zwaan’s new ‘Crunchy Cos’ represents a
very interesting alternative to cos or iceberg
lettuce in salad bags. This innovative cos offers
the best of both worlds: its leaves are just as
elongated and green as those of a normal cos lettuce,
both on the outside and the inside. In addition, they
have the crisp and crunchy bite of an iceberg lettuce, and these
combined characteristics create an excellent taste experience.
Crunchita RZ is the first variety of Crunchy Cos
and has been designed for large-scale processing.

Not only the vegetable industry itself stands to
benefit from increasing the amount, and in particularly the number of times, of vegetables consumed
per day, but so too does the wider food industry and
in fact society as a whole. Vegetable snacks are no
longer a new idea, and several products are already
available which promote vegetables as an alternative
to confectionery by selling them as impulse buys at

Definition of the Terms Describing the Reaction of Plants to Pests1 and Abiotic Stresses for the Vegetable Seed Industry
(Adopted by the ISF Vegetable and Ornamental Crops Section in June 2012)
1. Introduction
The relationship between a plant and a pest is very complex. The
terms that describe the reaction of a plant variety to a pest are
determined by tests under controlled environmental conditions with
known and characterized biotypes, pathotypes, races or strains of the
pest in question. In practice however, the ability of a pest to cause
disease in a plant depends on environmental conditions, the
properties of the organism itself and the capacity of the plant to
defend itself. Varieties within a plant species can differ in their ability
to defend themselves. Under different conditions, such as age of the
plant, pest pressure and virulence or adverse environmental
conditions, the interaction between the same plant and pest may
have different outcomes. Pests are known to develop and form new
biotypes, pathotypes, races or strains that can cause damage to plants
that remain unaffected by the original form of the pest. To promote
consistency in the terms used to describe the reaction of a plant to a
pest, ISF Vegetable and Ornamental Crops Section has defined the
following terms.
2. Definitions
Susceptibility is the inability of a plant variety to restrict the growth
and development of a specified pest. Resistance is the ability of a
plant variety to restrict the growth and development of a specified pest
and/or the damage they cause when compared to susceptible plant
varieties under similar environmental conditions and pest pressure.
Resistant varieties may exhibit some disease symptoms or damage
under heavy pest pressure. Two levels of resistance are defined.

High resistance (HR*): plant varieties that highly restrict the growth
and development of the specified pest under normal pest pressure
when compared to susceptible varieties. These plant varieties may,
however, exhibit some symptoms or damage under heavy pest pressure.
Intermediate resistance (IR*): plant varieties that restrict the growth
and development of the specified pest but may exhibit a greater
range of symptoms or damage compared to high resistant varieties.
Intermediately resistant plant varieties will still show less severe
symptoms or damage than susceptible plant varieties when grown
under similar environmental conditions and/or pest pressure.
It is to be noted that if a resistance is claimed in a plant variety it is
limited to the specified biotypes, pathotypes, races or strains of the pest.
If no biotypes, pathotypes, races or strains are specified in the resistance
claim for the variety, it is because no generally accepted classification
of the cited pest by biotype, pathotype, race or strain exists. New
biotypes, pathotypes, races or strains that may emerge are not covered
by the original resistance claim. Immunity is when a plant is not subject
to attack or infection by a specified pest.
3. Statement
The ISF Vegetable and Ornamental Crops Section recommends that
vegetable seed companies use the terms susceptibility, high or
intermediate resistance, and immunity to describe the reaction of
plants to pests in communication with their customers. They should
avoid the term tolerance for this purpose. Vegetable seed companies
will continue to use the term tolerance to describe the ability of a
plant variety to endure abiotic stresses without serious consequences
for growth, appearance and yield. The definitions and
recommendation will be reviewed in five years.
FAO defines a pest as: Any species, strain or biotype of plant,
animal or pathogenic agent injurious to plants or plant products.
Pathogens (microorganisms such as bacteria, viruses and fungi
that cause a disease) are, therefore, included in the term “pest”.
* The standard abbreviations HR (high resistance) and IR
(intermediate resistance) shall be used in all languages.
