FPHP di Ekspo Selangkah UiTM 2016 Faculty of Hotel and Tourism Management April- July 2016 Oleh: Siti Nurhanifah Sulong, Siti Aisah Abas & Siti Norfadillah Ahmad Shariff UiTM (Terengganu) telah menganjurkan Ekspo Selangkah ke UiTM 2016 pada 13 Mac yang lalu bertempat di Dewan Aspirasi, UiTM (Terengganu). Ekspo yang diadakan setiap tahun ini bertujuan untuk membantu para lepasan SPM dan STPM bagi mendapatkan maklumat-maklumat terkini berkenaan syarat kemasukan ke UiTM dan mengetahui kursus-kursus yang sesuai dengan kelayakan mereka. Selain itu, ekspo tersebut turut dimeriahkan dengan siaran langsung radio MyUFM dan juga pertandingan ‘Booth Paling Havoc’ dan ‘Booth Terbaik’. ‘Booth Terbaik’ dimenangi oleh Fakulti Kejuruteraan Elektrik (FKE) dan ‘Booth Paling Havoc’ telah dimenangi oleh Fakulti Pengurusan Hotel dan Pelancongan (FPHP). Persediaan Booth FPHP diusahakan oleh pensyarah fakulti dengan mempamerkan ukiran buah, table setting, coffee machine dan juga medal-medal pencapaian pelajar dan pensyarah di dalam beberapa pertandingan kulinari. Keramahan petugas-petugas melayani tetamu yang hadir disertai dengan pameran booth yang menarik dan meriah adalah kriteria yang melayakkan FPHP menerima anugerah ‘Booth Paling Havoc’ dan hadiah disampaikan oleh Koordinator Unit Korporat , En. Arma Mohd Faizal Bin Abu Bakar. Terima kasih diucapkan kepada semua warga fakulti yang terlibat dalam menguruskan booth sempena ekspo tersebut. Prof. Dr. Abdol Samad Nawi 1 THE DANNA, A LUXURY ESPLANADE By: Muhamad Shafiq Zarulail & Fatimah Abd Ghani T he Danna, a 5-star luxury hotel in Langkawi, the Jewel of Kedah tells a tale of a lifestyle getaway. It is enveloped by the immaculate splendor of sandy beach, marina and lush tropical hills. This award-winning hotel embraces the architectural beauty from the Colonial era in a Mediterranean ambiance, which offers travelers an experience of luxury vacation in Malaysia. The Danna is a place of my choice for internship because of its luxurious characters and I believed that The Danna promised valuable experiences for everyone. During the first day of arrival, warmest welcoming was given by The Danna’s Housing Coordinator, Mr. Hafiz. He was the person in charge who picked me up at the Langkawi Ferry Jetty. He brought me to a restaurant nearby to grab a lunch together before we proceed to The Danna’s hostel for checking-in. Upon check in at the hostel, I saw such beautiful place, which is a condominium with swimming pool opposite the building. It is also included with a magnificent view of the sea and lush tropical hills. My accommodation was fully furnished and equipped with an air-conditioner with 3 rooms plus an Astro decoder; such accommodations being given to every team member of The Danna. On my first day of reporting duty as a trainee, I started my day by taking shuttle as early as 0700 am to The Danna. It took around 45 minutes to reach The Danna from the condominium itself. Throughout the journey, everyone could enjoy panoramic views of the island itself, from the busy town to the urban scape. Such magnificent and refreshing view of nature, it felt so peaceful. Upon arrival, I took a step into the Human Resource Department and met Mr. Shahril, Training Manager of The Danna. He accompanied me for breakfast at the hotel staff café named Tiffin Café before we proceed with the registration and hotel tour. We had an introduction talk and met all of the Human Resource staff, including Mr. Muneshwaran, the Director of Human Resource department. Next, Mr. Shahril brings me for a quick tour of The Danna from the front house to the back to the house. I met most of the staff and they were very courteous and friendly, thus I felt welcomed immediately. I was so amazed to see every inch of the building. The ambience is quite breathtaking. The decorations are very luxurious with colonial themed building. A white painted hotel with a garden landscape will absolutely catch everyone’s eyes. It’s an honor to be a part of the team of The Danna to serve the best for the guests. Later, we headed to the kitchen, which located near to the security department. I met with Chef Shafiq with the Pastry Team at The Danna, Langkawi (On the left hand side) Zainal, Executive Chef and Chef Sapizal, Pastry Chef of The Danna. A brief explanation was given by Chef Sapizal and I was placed under his supervision throughout my internship here at The Danna. Birthday Cake for General Manager (Blueberry Cheese Cake) I am thrilled to meet lots of new people daily, including my pastry team; Chef Saufi, Chef De Partie, Abang Wan, Demi Chef, Kak Ju, Commis 1 and also Din, Commis 3. I had personally requested and insisted to be stationed in only Pastry Department during my entire internship. We worked together in a team to face lots of challenges that arise every day. I will receive daily new recipe to write and follow. I gained lots of new experiences that I had never dreamt of before joining The Danna. The Pastry Chef also is a friendly and approachable guy. He is generously willing to share his knowledge and skills for trainees and other staffs to learn. Sometimes, I volunteered to do overtime to learn more from the Pastry Chef himself on pastry skills and techniques at a more leisurely time. 2 Varieties of desserts made for ala carte and buffet menu. The most unforgettable moment is when I was being assigned to decorate a birthday cake of our General Manager. It was an honor for me as the Pastry Chef has faith in me. I was very happy and felt so fortunate to be part of team. Surely, The Danna is the best place to undergo the internship and also a wonderful place to work in. All the wonderful memories that I went through will be remembered deeply in my heart forever. These include…. 3 TRIP TO By: Miraidayu Mohd Mokhtar & Wan Nazriah Wan Nawawi o n Tuesday, 26th February 2016 students from HM110 UITM Dungun went on a trip to Prinzpark Resort Terengganu for the yearly assessment. It is located in Kuala Terengganu. We went there by 42-seater bus with 38 students and our hospitality lecturer who organize this project, Madam Wan Nazriah. The head project is our very own student, Shahril Bin Mohd Zabri. At 12:30p.m., all HM110 students assembled at post A for a short briefing. During the journey we saw quite few numbers of breathtaking scenery and outstanding resort and hotel. After an hour, we arrived at Pantai Batu Burok where we had our lunch and perform our prayers at Masjid Terapung Kuala Ibai. We continue our journey to Prinzpark Resort at 2:15 and the journey is just a stone’s thrown away. As we arrived at the hotel, we received a warm welcome from the front office manager and he led us to seminar room. We were lucky because the general manager of the Prinzpark Resort joined and gave some inspirational thought about the hotel industry. He shared the history of the Prinzpark Resort, which officially opens on 1st December 2012. The specialty about this hotel is located right next to a Polo club and near to a jaw-dropping clean lake. It is very strategic because the beach is just a walking distance away. After the seminar, we got the chances for a tour of rooms that are provided. We even got the chances to see the other seminar room in the hotel. Prinzpark Resort has 207 rooms and each floor has 41 rooms. The things that Prinzpark Resort provided for the guest is quite exclusive because they are using high international quality mattresses, quality linens, duck feather pillows and duvets. Prinzpark also provide a hall for their guests. There are 7 halls that have been provided by the Prinzpark Hotel for their guests for the event. They also bring us to their best part of the hotel which is the D’Lagoon floating restaurant. What makes it interesting is the guest can have a direct view of the lake. We depart from the hotel at 6:30 pm. We stopped at Masjid Terapung Kuala Ibai to perform our Asar prayers. We continued our journey and stopped at Kelulut to buy food. We reached UiTM around 7:20 pm. As the conclusion of this site visit, it gave exposure to HM110 about the reality of the hospitality industry. Everything that we learn in a hospitality management subject is implied in this site visit. 4 Know Your Daily Calories Intake By: Siti Rapidah Omar Ali T he key success to lose weight is closely aware how many calories you should consume each day and how many should you have at each meal. Choosing healthy food is a key success in realizing your goals and leaving you feeling energised and satisfied. What are calories? Calories are a measure of energy in food. Calories needed by the body to generate energy, but if it taken excessively it will turn into fat. If the calories are not burned, weight gain will take place and eventually will cause health problems. A man needs around 2000-2500Kcal while for woman 1600-2000Kcal a day to maintain weight. Remember that women have different calorie requirements to men. Men tend to have more muscle and less fat on their bodies so they burn more calories throughout the day and so can eat more. Every 8000 unburned calories or collected will raise 1 kg weight. We need to balance the amount of calories consumed through food and drinks with the amount of calories burned through physical activities in order to maintain a healthy weight. If you are gaining weight, it usually means you have been regularly eating and drinking more calories than you have been using through normal bodily functions and physical activity. Each of us can use the calorie information to assess how a particular food fits into our daily calorie intake. Checking calories in food. Around 8.00a.m on that day, the bus and car came to fetch us after everything was settled. We arrived there at 10.30a.m and the first place that we go is Water Park. After a short queue and countless selfies, we entered the pleasure ground. Inside the water park, we discovered the activities that can be done in small groups. The weather was quite disturbing due to slight rain, but we still enjoyed our time there. The guys with their stunts and skills while the girls with the slides and tubes were enjoying the moments. At 1.00p.m the Muslim guys, went to the nearby mosque to perform Friday prayer. As for the girls, they changed into dry outfits and went for lunch. A fter the boys were back from prayer and had taken their meal, we decided to visit the beasties in the Safari Park. Some of us decided to take the trams and the rest tramped. At the Safari Park, we discovered different kinds of animals; the wilds, the reptiles, the mammals, the underwater creatures, and the best of all, is the white lions. Some of us were lucky to have the opportunity to pat and feed certain animals. Between the ramble, we were entertained by a few animal shows. After the last show by ‘The Tarzan Adventure’, curtain was closed. We understood that it was time to go home. Talks and chats filled up the bus before the tires roll. But as usual, on the road only the sound of snores heard shows that everyone was so tired. We stopped for dinner at Cherating and continue the journey. R eaching UiTM Dungun at 12.30a.m, we feel tired and worn out but somehow the excitement still lingered. Although it was only a oneday trip, we had fun and learned lots of new things such as how to run a resort and how to handle guests’ problems. Lastly, special thanks to our advisor, Madam Amanina and Miss Aisah for the guidance and make us able to experience this enjoyable trip. 6 POTENTIAL CARCINOGENIC FOODS: CANCER CAUSING CHEMICALS By: Mohd Firdaus Mohd Zainudin, Muhamad Khairi Abd Haddi & Noorazlin Ramli B asically carcinogenic or carcinogen is a substance or radiation that can cause cancer. This may be due to the ability to damage the genome or to the disruption of cellular metabolic processes. Several radioactive substances are considered carcinogens, but their carcinogenic activity is attributed to the radiation, for example, gamma rays and alpha particles, which they emit. Common examples of non-radioactive carcinogens are inhaled asbestos, certain dioxins, and tobacco smoke. Carcinogenic foods are a food that contains certain chemicals that might contribute to the cancer during consumption. The foods become harmful when it is going to the cooking process such as prepare foods by using the microwave. The microwave basically produces heat touch to the foods and the heat is basic sources of radiation in which the extensive use of microwave and over consumption food that using microwave can cause cancer. them, look appealing and fresh but are well known carcinogens. This both method are not using oil or other substance to make the food items cooked but depends to the heat by using charcoal. Therefore the method can lead to the process of charring in which chemical process of incomplete combustion of certain solids when subjected to high heat. The resulting residue matter is called char. By the action of heat, charring removes hydrogen and oxygen from the solid, so that the remaining char is composed primarily of carbon. The carbon when consume can effect human’s health. T hus, diet is thought to be a contributing factor in especially stomach and colon cancer. The consumption of very salty pickled foods may lead to the stomach cancer. Preserved meat such as bacon, sausages and ham also will increase the risk. However, the diet high in fresh fruit and vegetables may reduce the risk of cancer. Eating lots of fruits and vegetables have been linked to a lower risk of cancer of the mouth, esophagus (food pipe), lung, larynx (voice box) and some types of stomach cancer (Cancer Research UK, 2015). Fruit and vegetables are an important part of a healthy diet and are an excellent source of many vitamins and minerals, as well as fiber. Fruits and vegetables contain a wide variety of nutrients that have many different effects on the body. These nutrients include carotenoids, folate, vitamin C, vitamin E, selenium, flavonoids and various other phytochemicals (chemicals found in plants.) References: O ne of the most popular food item that is related and have a close relationship with carcinogen is processed meats. Processed meat is a large group of food items including bacon, sausage, and hot dogs. The excessive salts and chemicals that are used when making processed meats are damaging to human’s health. The study showed that 1 in every 17 people who were involved in the study died and those who ate 160 grams or more of processed meats increased their risk of early death as much as 44 percent within 12 years as opposed to those who ate 20 grams or less. This study involved people from 10 European countries and went on for almost 13 years (Health Science Journal, 2015). All these processed meats contain numerous chemicals and preservatives, including sodium nitrates, which make 7 Halal Food Adulteration By: Mohd Aliff Abdul Majid E veryday we consume food, sometimes almost every hour. Food and its nutritional contents are among the topics that have been discussed by many scholars. Fresh produce, processed foods, high in sodium, low fat, less trans fat, high in fiber, no cholesterol, you name it. We had it all, and sometimes we did not even know what’s inside. But what’s important to us especially Muslim, we eat halal food. How to find it? It is as easy as ABC. We rely on halal logo. You know what it is. Everyone does. A s more food products are available in the market and the increment of food supply by food manufacturers, Muslim consumers had raised concern on its halalness. Recently, Malaysian was shocked by the news of food known to be halal, but unfortunately it was contrary. Issues on halal food adulteration are serious matters in Islam and the term ‘halal’ is necessary to protect Muslim food consumptions. Adulteration refers to food product that fails to meet certain standards. One of the examples is inappropriate labeling of ingredients. Ideally, adulterants might be added into food products to enhance food characteristics or other deceptive purpose. Obviously, halal food manufacturers that failed to meet the standards had violated the halal assurance system. Halal assurance system is established based on three zero concepts, which are zero limit (no haram material used in the production), zero defect (no haram product is produced) and zero risk (no disadvantages risk should be taken by the producer). G enerally, the definition of haram and prohibitions of pigs can be found in Quran, in surah Al-Baqarah verse 173. In the verse, the word ‘flesh of swine’ refers to pork and lard. Indeed, its derivatives should also be included. The derivatives of this animal can be derived in many forms, especially modified foods that contain E-codes. Some E-codes are doubtful such as E422 (glycerine/ glycerol), E470 or E483 (emulsifiers) and E542 (edible bone phosphate). Doubtful things are questionable in Islamic law and it is stated in the sunnah of the Prophet Muhammad (s.a.w): “ Both doubtful things are evident but in between there are doubtful (mashbooh) things and most of the people having no knowledge about them. So whoever saves himself from these doubtful things, he saves his religion and his honor, but who falls into doubtful matters fall into that which is unlawful, like the shepherd who pastures around a sanctuary, all but grazing therein. Truly every kind has a sanctuary, and truly Allah (s.w.t.) sanctuary is His prohibitions.” I n point of fact, food should not contain pig and its derivatives to comply with shariah law. Therefore, halal food issues should not be taken lightly, regardless sides. With manufacturers defy law to increase the product supply and lack of enforcement by authorized organization, issue of halal food will never find its way out. From consumer’s point of view, look closely and choose wisely. 8 DAY TRIP TO KUANTAN,..... WHAT YOU SHOULD EXPLORE? Operating from 9am until 6pm daily, ticket admission is only RM15.90 for MYKAD holders and RM7.95 for MYKID holders, senior citizen and disabled person. The expedition starts with a ride on the “The Minecraft” (tin mine train) and continues on foot tour taking approximately 1 hour to complete. It is an educative tour with the objective of learning the mining operation in the yesteryears and discovering the contribution of tin mining in the country’s historical path. You will come across the display of mannequins’ miners, drilling machines, trams, interactive exhibits and info boards, and be surprised with the tunnel’s unique cooling climate!
