Ayaspaşa Russian Restaurant, operating since 1943 is the unique
site, left from the White Russians, who had shaped
the entertainment world of Beyoğlu.
White Russians
After the Bolsheviks Russian Revolution in 1917, many members of the army,
together with other citizens have fled to Istanbul by boats, in order to build a
new life for themselves. The word “White Russian” does not mean a race, a nation or an ethnic group. If it were not the 1917 revolution, there would never
be a term as “White Russian”.
SPASSİBO CONSTANTINOPLE
“Spassibo” means “Thank you” in Russian language.
Spassibo Constantinople was a newspaper prepared by the Russian journalists
and writers of that time, as a contribution to the helps and hospitality of the
Turkish people. Between 1918 - 1940, Russian influence in Beyoğlu was at its
peak point. White Russians, in a way, were the architects of a new life style in
Istanbul, especially in Beyoğlu. Ayaspaşa Russian Restaurant is the ony place
where the Russian tradition and cuisine is implimented and still commemorates the “good old White Russians”.

Ayaspaşa Russian Restaurant and
Its History of over Half a Century
Restaurant was established in 1943 by a White Russian Mr.
Boris İvanovich Kreschsanovsky an Hungarian immigrant
Madame Judith Krischsanovki, or -Countess-. Different
kinds of tasty foods were prepared by Madame Judith an
Boris, which in a short time was very popular and received
high recognition for the restaurant. Tasty food soon created an abundance of regular guests. Writer Jak Deleon
mentioned this restaurant as, “an old friend’s house”.
At the establishment state, restaurant was for 25 persons
only an it was a meeting place for the old friends. It was
a place for breathing after the crowded an chaotic rhyme
of Beyoğlu. In 1955, during the provocative incidents of
September 6-7, the place was ruined and so they changed
is name as “Ayaspaşa Restaurant”, which later on was again turned into” Ayaspaşa Russian
Restaurant”.
Mr. Cemal Ok, started working with Madame Judith, first as a service personnel and continued as a waiter and learned all the small details of preparation of foods, and cooking from
Madame Judith. After many years of working, in 1976, Mr. Ok was ready both mentally and
financially to take over the ownership of the restaurant with the consent of the Madame.
Madame Judith, until her death at the age of 90, was highly respected by Mr. Ok and she was
always considered as the guest of honour.
Mr. Ok is still happly working in his restaurant.
