The most famous of the side dishes is Kimchi, a Napa cabbage pickled in a red pepper chili sauce. Kimchi is the lifeline of Korea and is eaten at every meal. In addition to the famous cabbage, Kimchi, there are dozens of equally delicious varieties. In the traditional meal setting, all the dishes are brought out together and eaten together much like a medieval banquet, with the various flavors and textures of the dishes complimenting and accentuating each other.
