HEN’S TOOTH
Extra Special/Strong Bitter (English Pale Ale). St. Edmonds,
Suffolk, England. There’s only one description for this — the
nearest thing to real ale in a bottle. Its balanced blend of strong,
rich flavors leads to a satisfyingly smooth, clean finish. The
active yeast in the bottle continues to condition and mature the
ale through its life, producing not only the wonderful flavors but

A blend of 10-14 percent Old 5X (aged up to 5 years in oak vats,

RYEDICULOUS IPA
American India Pale Ale. Milwaukee, WI. This IPA/Rye hybrid
begins with a citrusy, earthy, slightly spicy hop nose. Soon the

EL REY MEXICAN BEER
A blend of malts and hops with a high carbonation level which
really enhances the fresh and unique taste of El Rey Mexican
Style Ale. What separates El Rey from other beers is the emphasis on a beer that pairs well with food.
MORITZ SPANISH BEER
Very slightly buttery but a lovely blend of German and Czech
character sorts things out well enough. Clean as a whistle pale
gold with a thin white head. Good slightly sweet malt, really nice
delicate citric hops. Lovely balance of sweet and bitter.

Belgian Blonde Ale from the Flanders region. This ale is refermented in the bottle, resulting in a sediment at the bottom. Pour
delicately to obtain a nice head. Dominant caramel flavor mixed
with the bitterness of roasted malts and hops.

BELHAVEN SCOTTISH STOUT
We reckon this is the porter equivalent of the tall, dark and
handsome stranger, but with its blend of triple malts, roasted
chocolate flavor and hop character, once you’ve tried this deluxe
stout you’ll want to get reacquainted. Q
MONTY PYTHON HOLY GRAIL DARK
Another fine addition to the Black Sheep Brewery range of
premium bottled ales, this was specially commissioned to
commemorate the 30th anniversary of Monty Python. It has
a distinctive taste with plenty of fruity hops and is full flavored
with a dry and refreshing bitterness.

TWISTED THISTLE
A stunning India Pale Ale (IPA), don’t think that this has
anything jaggy, spikey, prickly or otherwise pain-inflicting in
its nature. Quite the opposite. Your taste buds will tingle with

Is a 4.9 percent pale lager which has been produced since the
1950s. It is marketed as a “Dark Lager Beer,” though it is pale

Fruit Beer. Bangor, ME. This is a dry, crisp refreshing ale with

American India Pale Ale. Newport, ME. This light copper single
hop India Pale Ale is brewed only with the Fuggles hops. It has
a smooth, dry, and crisp flavor with floral aroma and apple
plum palate.

Blonde Ale. Portland, ME. The flagship beer, is a full bodied ale,
with a hint of sweetness up front, a subtle and distinctive hop
taste, and a very clean and traditional finish.
BLUE FIN STOUT

Schwarzbier (Black Beer). Glendale, WI. This intensely dark
Kulmbacher style lager has a superb malt complexity with the
distinctive flavors and aromas of coffee, caramel and chocolate. A renowned smoothness and a creamy, tan head make it
an all-time brewery favorite.
SPECIAL AMBER
Vienna Lager. Glendale, WI. A delicate balance of toasted malt
and fresh hops give this medium-bodied German style lager an
intriguing complex flavor. A creamy head, deep golden color

Special/Best/Premium Bitter. Witney, Oxfordshire, England.
Traditionally craft brewed in Oxfordshire using organically
grown English Barley Malt and Organic Target Hops. This is a
wonderfully refreshing Golden Ale evoking lazy, hazy days of
summer in golden meadows and ripe barleyfields. A winning
combination of tart citric fruit flavors perfectly balanced by a

This is a crisp, American style wheat beer with raspberry puree
added after filtration. Therefore, you may see raspberry pulp
in the beer. The raspberries provide the lager with a subtle
purple coloration and haze, a fruity aroma, and a tartly sweet

ANDYGATOR
Andygator, a creature of the swamp, is a unique high-gravity
brew made with pale malt, German lager yeast, and German
Perle hops. Unlike other high-gravity brews, Andygator is
fermented to a dry finish with a slightly sweet flavor and subtle
fruit aroma. Reaching an alcohol strength of 8 percent by
volume, it is a Helles Dopplebock.

that great, but your friends will tell you it does) the recipe was
dialed in to become what is now Tallgrass IPA. We love this

Oasis is a Double ESB/IPAish beer that came about from playing around with one of Jeff’s favorite homebrew recipes. Here
at Tallgrass we love malt and we love hops, and this beer has
both of them in record quantities; well, at least records for our
baby brewery. At a hefty 7.2 percent ABV and 93 IBU, Oasis is
a big beer that has to be priced a bit higher than our regular
line of beers. We think that once you taste the over-the-top
hops and surprisingly sturdy malt backbone you will realize
why it’s worth it.
VELVET ROOSTER BELGIAN STYLE TRIPEL
This beer is a Belgian Tripel that lives up to its name. Smooth
and carefully crafted like a fine velvet painting, but with an 8.5
percent ABV this bird has some spurs! The beer pours a golden
straw color with brilliant clarity. Topped with a lofty pure white
head the beer has a wonderful floral nose, with subtle fruit
notes. The taste is clean and crisp, with subtle fruit notes and
a touch of candy like sweetness. The beer has a Champagnelike effervescent that provides a crisp offset to its sweet finish.
HALCYON UNFILTERED WHEAT
We are proud of all our beers, but Halcyon is special. We are in
“the wheat state” after all, so the pressure was on us to make a
wheat beer, but we knew it had to be great. Halcyon Unfiltered
Wheat is the result of that Midwestern angst, an all-American
wheat with real Kansas-grown grain in the brew. We start with
raw Kansas white wheat in the mix to give it a nice edge, but
what really makes it shine is the hops. We use “hop-bursting”
late in the brewing process and this gives Halcyon its palate of
tropical fruit flavors and aromas with a bright and refreshing
taste like the best days of summer.

Carlsberg Elephant Beer is an amber-colored beer with big

Crisp and refreshing year-round, this American Wheat Ale
pours a lazy, hazy golden color. Its large, white, foamy head
can be attributed to the generous amount of malted white
wheat added to the mash. The aroma is enhanced by our fruity
house ale yeast and its fresh baked bread flavors are perfectly
balanced with a Cascade hop addition.
MURPHY’S BREWING
STOUT
Dry Stout. Cork, Munster, Ireland. Is a dry stout brewed in
County Cork according to the original recipe by Murphy’s
Brewery since 1856. In comparison to its heavier and more
bitter chief competitors, Guinness and Beamish, Murphy’s
is a lighter and sweeter dry stout. Its flavor is evocative of
caramel and malt, and is described as “a distant relative of
chocolate milk.” The resemblance to milk extends beyond
flavor to texture; Murphy’s is free from any hint of carbonation,
and is delivered “black as strong cappuccino” with an inch of
foam – “the head” – on top. The head, in particular, is lauded
for its remarkably thick and creamy nature and its “spoonable”
density.

Irish Red Ale. Cork, Munster, Ireland. Malted barley, chocolate malt, water, hops and yeast. First brewed in Lady’s Well
Brewery, Cork in 1856. Heineken purchased the brewery in
1983. Beer now produced in Heineken Nederland. Also known
as Irish Amber and Draught Irish Ale.

Dry Stout. Carlow, Ireland. Full bodied and luxuriously smooth
it is the combination of traditional stout hops, an extra pinch
of roast barley and crystal clear Irish water that make O’Hara’s
Celtic Stout a delicious stout with just enough malt sweetness
to balance that discernible roast bite.

Company in southern Ireland since 1998, is a 4.3 percent
ABV traditional Irish red ale available in 330ml bottle and on
draught. This full-bodied Irish red is fruity and aromatic with

PAULANER/ HACKER PCHORR BREWING
SALVATOR (LIMITED POUR)
Doppelbock. Munich, Germany. The Paulaner Salvator with
its strong,typically malty taste is the original Paulaner. The
bottom-fermented Doppelbock-Bier unites the finest hops and
dark barley malt. The Paulaner monks served Salvator as a
replacement for food at Lent. Their most famous brewer was
Brother Barnabas, who was the head of the Paulaner monastery brewery starting from 1773. Its original recipe is today
almost the same as it was in Barnabas’ time. In order to protect
the original recipe, Paulaner had the trade mark “Salvator”
patented in 1896. Q
OKTOBERFEST
Oktoberfest/Märzen. Munich, Germany. By Munich law, only
the six Munich breweries are allowed to serve their beer at
Munich’s Oktoberfest celebration. Paulaner is one of the six,
as is its sister brand, Hacker-Pschorr. Paulaner’s Oktoberfest
brew is the most popular at the yearly event. Paulaner
Oktoberfest-Märzen was originally a seasonal brew, however,
is now brewed and enjoyed all year long. Q
PAULANER HEFE-WEIZEN
Weizen/Weissbier. Munich, Germany. A deep straw-yellow
color with a dense haze and equally dense head formation with
great retention... a very Hefe-like appearance. Solid aromas of
half-bananna, half-clove, and decorated with a light peppery,
bubble-gum and lemon zest. Flavors exhibit the same attributes
as those found in the nose, but seem lesser in intesity than
expected. The lemon and pepper notes increase into the finish,
lessening the influence of other esters and phenols. Creamy
texture that wavers quickly and allowing for great drinkability.
Finishes very clean with a lemony, hop/grassy bite. Q

American Amber Ale. Newport, OR. Tawny Amber in color with
a coffee aroma and tight head. A delicate roasted malt accent,
generous use of hops and a smooth finish. American Amber,
originally known as Ashland Amber (created at Rogue Brewerys
original brewpub in Ashland, Oregon which was destroyed
by flooding several years ago), is created from Northwest
Harrington and Klages, 95-115 and 135-165 Crystal Malts.
Kent Golding and Cascade Hops. American Amber is available
in a 22-ounce bottle, 12-ounce six-pack (new for 2005), and
on draft.
CAPAIN SIG’S NORTHWESTERN ALE
American Amber Ale. Newport, OR. India Red Ale. Dedicated to
the Hansen brothers — Sig, Edgar, and Norman — the Rogues
of the Bering Sea. Portions of proceeds of Deadliest Ale will
support the Fishermans Fund. Deep red in color, this ale starts
off with a floral, slightly citrus hop nose, hop flavor soon fades
into the malty backbone of this red ale. Nine ingredients: Malts:
Two-row Pale, Munich, Carastan and Chocolate. Hops: Amarillo
and Cascade. Yeast and Water: Rogue Pacman Yeast and Free
Range Coastal Water.
ST ROGUE BREWERY RED
American Amber Ale. Newport, OR. Reddish copper in color,
a roasty malt flavor with a hoppy sprucy finish. Saint Rogue
Brewery Red is made with two-row Harrington, Klages and
Munich malts, along with Hugh Baird 30-37, 13-17 Carastan,
and Crystal 70-80 malts (44.4 speciality grains .39 lbs grain per
bottle); Chinook and Centennial hops.
HAZELNUT BROWN NECTAR
American Brown Ale. Newport, OR. HazelNut Brown Nectar is a
nutty twist to a traditional European Brown Ale. Dark brown in
color with a hazelnut aroma, a rich nutty flavor and a smooth
malty finish. Dedicated to the homebrewer in each of us — the
homebrewer who inspired this creation is Chris Studach, a
friend of Rogue Brewerys resident wizard John Maier, who
added a Northwest twist to the classic style by adding hazelnuts
for the host homebrew at the 1993 American Homebrewers
Association convention. Chris put the nut in nut brown!

exotic traditional floor malts, citrusy, hoppy flavor, stupendous
hop aroma.

American Stout. Newport, OR. An Imperial bitter with exotic
traditional floor malts, citrusy, hoppy flavor, stupendous hop
aroma.
DEAD GUY ALE
Maibock/Helles Bock. Newport, OR. Gratefully dedicated to the
Rogue Brewery in each of us. In the early 1990s Dead Guy Ale
was created as a private tap sticker to celebrate the Mayan Day
of the Dead (November 1, All Souls Day) for Casa U Betcha in
Portland, Oregon. The Dead Guy design proved popular and
was incorporated into a bottled product a few years later with
Maierbock as the elixir. Strangely, the association with the
Grateful Dead is pure coincidence. Dead Guy is a German-style
Maibock made with Rogue Brewerys proprietary “PacMan” ale
yeast. It is deep honey in color with a malty aroma, rich hearty
flavor and a well balanced finish. Dead Guy is created from
Northwest Harrington, Klages, Maier Munich and Carastan
malts, along with Perle and Saaz Hops. Q
SIERRA NEVADA BREWING
BIGFOOT BARLEYWINE STYLE ALE
American Barleywine. Chico, CA. Gold Medal Winner, Great
American Beer Festival (Ales: Brown, Bitter and Pale 1987,
Barleywine 1988,1992,1995). Sierra Nevada Bigfoot is an
award winning example of the English Barley Wine style. It
boasts a dense, fruity bouquet; an extremely rich, intense,
Bittersweet palate; and a deep, reddish-brown color. This ale is
superbly balanced between an almost overpowering maltiness
and a wonderfully Bittersweet hoppiness. Q
TORPEDO IPA
American India Pale Ale. Chico, CA. Torpedo is an assertive
American IPA deep reddish-gold in color, with a smooth and
bready malt presence and over-the-top hop aromas. The beer

2012 BLACK ALE
Schwarzbier (Black Beer). Stevens Point, WI. Inspired by the
mystery of the ancient Mayan “Long Count” round calendar,
Stevens Point Brewery’s brewmasters have created 2012 Black
Ale, a dark, robust brew to satisfy beer lovers’ tastes any day
of the year. In addition to the Mayan calendar mystery, 2012
Black Ale is inspired by traditional German “schwarzbier,” or
black beer. German-style schwarzbiers typically are lagers, but
we saw this beer is an opportunity to be more creative. We
brewed our interpretation of black beer as an ale, which means
more hops as well as fruity notes that come from using an ale
yeast. The use of roasted malts adds a slightly burnt character
to the beer. Q

least one piece of equipment that’s just a bit persnickity. Here
at Boulevard it’s fermenter number seven, the black sheep of
our cellar family. Ironically, when our brewers were developing
variations on a traditional Belgian-style farmhouse ale, the perfect combination of elements came together in that very vessel.
You could call it fate, but they called it Tank 7, and so it is.
Beginning with a flavorful surge of fruity aromatics and hoppy,

del Agua” brewery in Mexico City was putting the finishing
touches on his master creation when a ray of sun reflected on
the surface of the liquid. He was so intrigued and fascinated by
the effect, that he decide to call his brew “Sol” or Sun. Medium
bodied and vibrantly foamy, Sol is crisp and thirst quenching.
The beer’s lively citrus notes are balanced by a hint of vanilla,
great nutty malted character, and a zesty hoppy bitterness. It

Winner of four World Beer Cup medals and eight medals at the
Great American Beer Fest, Abbey Belgian Ale is the Mark Spitz
of New Belgium’s lineup — but it didn’t start out that way.
When Jeff and Kim first sampled the beer at the Lyons Folks
Fest, reviews were mixed at best. One of founder Jeff’s first
two Belgian style homebrews (along with Fat Tire), Abbey is a
Belgian dubbel (or double) brewed with six different malts and
an authentic Belgian yeast strain. Abbey is bottle-conditioned,
weighs in at 7.0 percent alcohol by volume, and pairs well with
chocolate (or boldly served by itself) for dessert. XQ
BELGO
When we set out to brew, we use imagination and salvation
to guide us- not necessarily style guidelines. It’s the Belgian
way. So, Ameri-Belgo and IPA both being styles, the branding
begged for New Belgium whimsy to liven things up. Hmmm
Belgo sounds like a Belgian disco. Hops like to party. Next thing
you know, we bust out a disco-ball and brewers started groovin.
Hops started hoppin. Add in an authentic Trappist yeast strain
and the place brewed into a frenzy of citrus hoppy folly. X
TRIPPEL
Our Trippel Belgian Style Ale (pronounced triple) opens with
a bold blast of hops that slowly gives way to the fruity esters
implied by our Belgian yeast strain. The Three Graces handpainted on the label are Zeus’ daughters Aglaia (splendor),
Euphrosyne (mirth) and Thalia (good cheer). In the Belgian
tradition of brewing singles, doubles and triples, Trippel is the
strongest with the longest fermentation. Remarkably smooth
and complex, our bottle-conditioned Trippel is spiced with a
trace of coriander. Q

paddle. Our first foray into lagered beers, Blue Paddle PilsenerLager, is a Czech style pilsener with a refreshing crispness

the implement our warehouse manager’s Grandma once used
to lovingly paddle his ass when she caught him stealing sips of
her beer. With more body than a traditional Belgian pils, Blue
Paddle is reflective of Europe’s finest pilseners. XO

Standard American Lager. Woodridge, IL. Since 1844, Pabst
Blue Ribbon has remained one of America’s finest beers.
This American lager is brewed utilizing a blend of the choicest imported and domestic hops. This combination includes
Cluster, Tettnang, Willamette and imported Styrian hops. The
Clusters and Tettnang provide most of the bitterness for PBR,
while the Willamette and Styrian render most of the aroma.
The Clusters, Willamette and Tettnangs originate from the
Pacific Northwest, and the Styrian from Yugoslavia. Pabst Blue
Ribbon is a smooth, flavorful, light colored lager created by a
combination of domestic malted barley and corn. The original
smoothness goes down easy without even a hint of bitter aftertaste. The Blue Ribbon for excellence and quality continues to

Standard American Lager. Woodridge, IL. The Joseph Schlitz
Brewing Company was based in Milwaukee, Wisconsin and
produced Schlitz, often considered the archetype of workingclass beers and supported by one of the best-known slogans in
the American brewing industry: “The beer that made Milwaukee
famous.” Pabst Brewing Company in Woodridge, Ill., which
now produces the iconic brand, is re-launching Schlitz “Classic
1960s Formula” based on the original recipe and packaged
in traditional “Brown Glass” — a packaging innovation that
Schlitz introduced in 1912 to prevent light from spoiling beer
before it can be served.

18th century and is one of the most successful beer brands
worldwide. A distinctive feature is the burnt flavor which is
derived from the use of roasted unmalted barley (though this is
a relatively modern development since it did not become a part
of the grist until well into the 20th century). For many years a
portion of aged brew was blended with freshly brewed product

PETRUS AGED PALE
The new Aged Pale was developed from Petrus Oud Bruin,
the brewery’s more typical example of the local style. That
beer is blended from two specially made pale beers and
one dark, the latter aged for 20-24 months in wood. The
brewery has three cellars of wooden casks, each with nine
60-hectolitre vessels. A fourth cellar, the one primarily used,
has beautifully maintained casks of 220 hectoliters each.
These are about 50 years old, bought a couple of decades
ago from France, where they first held white wine and then
Calvados. Q

tan head that leaves some lace. The aroma is big on chocolate and roasty coffee tones, some earthiness and oakiness
are in there as well, this smells really appealing.

aromas of citrus and pine. Specialty grains deliver a rich and
full-bodied flavor, with a bold taste of caramel and toasted
malt. Our brewery is located in the former headquarters of
the Maytag Corp. and the “Pastime” was the first washing

HONEY PILSNER
Light and crisp, our Honey Pilsner has great flavor for an
easy drinking beer. It is golden in color, with subtle fruit-like
flavors balanced with noble hops. A delicate floral aroma is
achieved with addition of honey, which is sourced from the
Ebert Company, an Iowa-based apiary. Drink carefully, you

HOPBURST IPA
Hopbursting is a relatively new brewing technique in which
the vast majority of hops are added to the kettle late in
the boil in order to achieve enhanced extraction of hop
components (i.e. Hopbursting gives you tons of hops flavor
and aroma!) Our Hopburst IPA has a substantial malt base,
balanced with huge additions of our unique hop blend. This
creates an incredibly flavorful beer, with smooth bitterness

John Henry Three Lick Spiker Ale is an imperial stout brew
style that has been bourbon oak aged. This beer is brewed

flavors and a dark appearance. Oats are also added for additional body and flavor. Combined with the pale and caramel
malts, there are more than 12,000 lbs. of barley in the brew.
Cascade, Willamette, and Alsace Hops are the three hops
added for a hoppy tasty and full aroma. After fermentation
has been completed with our top fermenting ale yeast,
conditioning starts and the fun begins. We condition our
brew with bourbon oak and let the extended aging process
take over. Hints of bourbon and vanilla from the oak come
