The Auvergne region has a long tradition of cheesemaking
and is home to some of France’s most distinctive cheeses.
This region’s ancient volcanos have eroded into rolling hills
and plateaus with fertile soil and lush pasture, creating a
unique micro-climate for cheesemaking. Selected breeds of
cows, including Salers, graze on natural pastures rich with
many different plants and grasses.
Milk used to produce the Terre des Volcans cheeses is carefully
collected and the cheesemaking process begins that same day.
A gentle, low temperature process is used to pasteurize the
milk and a custom blend of cultures is added. These cultures
are selected to offer the same robust flavor profile and balanced
aromas found in many raw-milk blue cheeses.
Once the wheels are formed, they are transported to the
Caves de la Collonge. Built in an abandoned railway tunnel,
the Caves de la Collonge possess the ideal conditions for
aging these blue cheeses. The wheels are turned by hand
many times during maturation and the tunnel’s naturally
high humidity, cool temperature, and gentle airflow work
together to develop the cheeses’ unique characteristics to
their full potential.
Finished wheels are selected and packed by hand before
shipping directly to the US. With a direct connection to the
cows, cheesemaker, and affineur,
we are very proud to offer these

Small format, soft ripened, washed rind, and ooey-gooey cheeses abound. These are wonderful to
enjoy in France but most of them don’t travel well. In an effort to make these beautiful, fragile cheeses
available in the Northwest, we have partnered with expert cheese mongers at Rungis to form our
Peterson Air Ship Program.
• How It Works •
Every other week, we take your orders and assemble a collection of cheeses to be shipped by air to the
U.S.A. By working on a pre-order basis and using air shipping logistics, we are able to offer cheeses
that would never survive the normal import process. Our French Air Ship Program is a slice of the Rungis
cheese market made available to you right here at home.
