COMMENTS
Welcome to the latest edition of 380 Lygon Court. You may have noticed there have been a lot
of changes within the centre over the past year. As we chip away at creating an even better
Lygon Court, we thank you for your patience and continued patronage.
We welcome Brunetti back to Lygon Street this edition and are proud of what this magnificent
establishment brings to Lygon Court and what it means to Melbourne, and especially Carlton.
If you haven’t visited yet, you must, as we can promise you won’t be disappointed.
In this edition we chat to head chef of Brunetti Café Giuseppe Santoro and discover what he has
in store for the café and what brought him all the way from Geneva to Carlton.
We celebrate winter fashion 2013 with two fashion shoots. The first is our catwalk-inspired shoot
in the glorious new Brunetti café. We look at the theme of metallic for the season and its use
in all areas from casual day wear to glittery evening attire.
Beating the Blues is our second fashion inspired studio shoot and we include a touch of blue in each
shot. The colour is a solid thread throughout the season coming in many tones from the deep navies,
through to steel blues, sky blues and turquoise. Every shade of blue makes the grade this season.
As this is our Mother’s Day edition we talk beauty with La Face Beauty Clinic and discover exciting
ways to pamper mum and learn how to beat skin dehydration and ageing.

Brunetti is back in town
Melbourne and, more importantly, Carlton have a worldclass eatery as the much anticipated new Brunetti Café is
now open for business.
The space is carefully designed not to be one vacuous
space but many intimate spaces, even though large glass
windows allow the outside world to look in.
After more than a year of sweat and a few delays, Fabio
and Yuri Angele with whom the responsibility rested
in bringing this world renowned café back home to it’s
original location on Lygon Street have achieved their
dream, but this time only bigger and better.
The décor was chosen to reflect the warmth that is the
Italian custom and is instantly felt once you step foot
inside what can only be described as a foodies heaven.
“It’s funny how things happen,” says Fabio about returning
to where it all began. “It’s been a long time coming.”
The Lygon Street address is the only thing the café has in
common with its previous incarnation. The new Brunetti
Café is a groundbreaking venue that will undoubtedly bring
tourists and visitors to the café as a special destination and
to Lygon Court.
“Even overseas franchises are bringing out people to see
it,” says Fabio Angele. Occupying the whole space that
was formerly Borders Bookstore at Lygon Court,
the whole concept of the café is one of being on show.
Glass spaces allow you to watch the homemade pasta
being lovingly created, the fresh gelato being churned
and the pizzas being tossed.
This feeling filters through to the staff who make sure
everyone feels special from the young children whose eyes
light up at the sight of all the surrounding colours of cakes
and ice-creams, to their mothers, the Carlton university
students and people who come to talk business over a
coffee or grab a quick bite, and to the taxi driver getting
his first caffeine hit at 4am in the morning.
“We are very family oriented and everyone is welcome.
Our food caters for everyone,” says Fabio. “With the
expanded space we’ve been able to add special little things
in every section, new ideas.”
Fabio says they’ll offer ice creams in little jars and mini
cones for cocktail parties as an example of their innovation,
something they have been known for in the past when they
served the first baby chino in Melbourne.

“We travel, see and incorporate different ideas that come
from our staff. Input is always taken onboard,” says Fabio.
The larger premises have allowed the brothers to expand
their food offering from the previous location and service
their customers even better.
While the place looks expensive, Fabio is at pains to point
out that the price will remain affordable. “We are not going
too sophisticated as we don’t want this to be an expensive
place to come to. We want it to be a friendly place that
caters for everyone,” he says.
“The main thing for us always is servicing the customer
and the biggest addition is the food offering.” While anyone
would be hard pressed to find fault with the previous
Brunette Café, Yuri says the old space limited them for what
they could serve and how they could present the food.
Here, he says, they have better control to properly produce
and present the food and better control in what they do.
It’s the perfect platform to deliver the food.

“Over the years we have improved our business with
expansion and this is reflected by our customers returning.
The staff are proud of the improvements and are often
involved in the ongoing process of how to make
improvements,” says Fabio.
To the Angele brothers, the staff is just as important as the
customer and is reflected in retention rates of employees
with many having been with Brunetti for 10 to 15 years.
“Our pastry chef Carmelo Ferlito has been with us just
on 20 years,” says Fabio.

When asked to sum up how they feel about this achievement
Yuri says he’s relieved and already planning the next stage.
“I’m already thinking about what comes next,” says Yuri.
“We now know that we can create a world class concept.”

A slice of Sicily
When he was holidaying in Australia four years ago,
a chance meeting between Giuseppe Santoro and the
Anglele brothers set in motion a long-term plan that
resulted in him becoming head chef at Brunetti Café’s
new premises.
Santoro has been very busy working behind the scenes
with suppliers - who he likes to call partners - sourcing
the finest ingredients. If he can’t find what he is looking
for he then works with them to develop what he needs in
the restaurant such as a type of salami or cheese.
In 2009 Santoro walked into the old café in Faraday
Street and by chance met the owners Fabio and
Yuri Anglele. They stayed in touch over the years with
a desire one day to be able to work together. Four
years later, that chance meeting has come to fruition
for both parties.
“It’s about going back to traditional roots,” says Santoro.
Santoro says the Australian way of life and the chance to
be able to express himself and his ideas in food is what led
the Sicilian chef to stay in touch with the brothers when
he left Australia and wait for the opportunity to return
when they had something to offer.
“We use natural yeast for our pizza bases and handmade
pasta. I’ve been working with a salami manufacturer to
make new products. Working with our partners I’ve
changed their vision to participate in what we want to
achieve,” says Santoro.
“I first visited Australia in 1999 and liked the way of life,”
says Santoro.
“Then one day when I was visiting again I came into the
old Brunetti and met Fabio. We chatted. Over the years
we kept in touch.
I had business in Sicily at the time and then I was happy
working in Geneva in an Italian restaurant, but I liked the
idea of being able to rediscover the old-fashioned flavours
of Italian food utilizing this country’s abundance of fresh
ingredients,” says Santoro.
Santoro and the Angele brothers are on the same page
when it comes to Italian food. The idea is to plan a menu
that goes back to the traditional roots of Italian food.
“This is happening in Italy, as people want real food.
While the visual is very important, more importantly
is the flavor and content of food that is natural.”
Everything is made in the kitchen at Brunetti Café.
Santoro acknowledges there is really only one particular
focus with the food and that is to offer simple, traditional
food following the ancient recipes with fresh produce with
a secret ingredient tossed in.
And what is that secret ingredient?
“The Brunetti family,” he says. “Who put their heart and
soul into it!”
And by the Brunetti family, Santoro means everyone from
the producers of the fresh ingredients to the cleaners,
cooks, chefs, waiter’s, baristas and upwards, of course, to
the brothers Fabio and Yuri Angele.

If you are wondering what to give mum for Mother’s Day
this year, Danielle Mercuri, part-owner of La Face Beauty
Clinic, suggests you don’t go past giving her some time

Mercuri explains that often mums don’t give themselves
facials as they feel guilty but it’s an important component
to a healthy beauty routine as much as hands and feet.

experience,” she says. “It is a decadent experience with
lots of massage and hands-on treatment resulting in a truly

Every season has its definite look
and this autumn is no exception.
If you were into the natural washand-walk-out-the-door hairstyles of
seasons past, you may have to get up
a bit earlier. This winter is all about
glamour and sophistication, taking its
inspiration from fashion and film.
(think platinum blond, bright red or
deep violet) or you can opt for soft
and sexy with dimensional colour.
The looks come from the 1950s and
‘60s but with a modern twist. Hair
needs to be in good condition, shiny
with a good cut.
If short isn’t your look you can
lean towards the vixen-influenced
creations in the past of Elizabeth
Taylor. She best wore voluptuous
tousled curls, which sit well in rich
wine burgundy tones this season.
Think Katy Perry glamour when she
isn’t dyeing her hair blue.
The Hollywood muses driving this
trend could have been Brigitte
Bardot, Elizabeth Taylor and Twiggy.
Remember the incredibly voluminous
bouffant and beehives, classic set or
boyish, almost androgynous, look?
It’s all back but with a twisted
modern texture with intense vibrant
colours. Hair has looked back to the
past to move into the future.
For hair that is short into a cropped
‘Twiggy’ type-style block colours
often work best. Solid block colours
always look great on short hair
Movie stars best representing this
style are Anne Hathaway, Charlize
Theron, Agyness Deyn and Emma
Watson.
However, probably one of the biggest
trends at present would have to be the
use of flaming reds, coppers and deep
blondes in up-dos.
They sum up the season beautifully
with the carefully tousled, seductive
locks of the Bardot trend. Young
starlets following this trend are Mila
Kunis, Mia Wasikowska and Reese
Witherspoon.
This style can be interpreted for
anyone who has length in her hair.
Salon Diector and head stylist at
Raw Element, Wendy Marziano, says
many clients come seeking out the
most current trends.“It is our job to
interpret these trends into wearable
looks which are easily maintained and
achieved at home,” says Marziano.
“The most requested looks this season
are all forms of styles from braiding
and disheveled chignons to lots of
styling using dual gel and frizz in
one hair style.”
These do’s can take time and effort
but once you get used to twisting a
braid, creating a teased bee hive or
slightly disheveled chignon you’ll get
it down pat it no time or you could
visit your salon for a lesson in how to
create the most sensual hair style in
many seasons past.

Flu vaccine
We are only just getting over
Melbourne’s heat wave summer
and colds and flu seem a long
way off, but autumn is the ideal
time to start thinking about
influenza protection.
Influenza is caused by influenza
A and B viruses which cause minor
or major epidemics of seasonal flu
most years, usually in winter.
There are also novel strains like
H5N1 (avian flu) or H1N1 2009
(swine flu) that have caused
outbreaks in recent years.
Influenza is much more severe
than a cold and can cause serious
complications.
In Australia, there are on average
85 deaths and 4000 hospitalisations
recorded each year due to influenza
- even healthy people can get severe
influenza.
Vaccination is the single best way
to protect against the disease, and
now is the time to vaccinate.
Following the emergence of two
new strains in the past year, the
composition of the 2013 vaccine
has altered from the 2012 version,
therefore people vaccinated in 2012
will need to be revaccinated with the
2013 vaccine for continued immunity
this season.
Flu is spread easily, especially
in enclosed communities, so it is
important to have good infection
control.
Help prevent spread of droplets
by covering up coughs and sneezes,
and washing hands frequently.
Flu vaccine is currently arriving in
store and is recommended for groups
at risk, but in practice it is provided
to anyone over the age of six months
who wants protection and has no
contraindications to its use, like
allergy to egg.
It is also important to note, that if
you are unvaccinated and are exposed
to the virus by an infected person, all
is not lost.
Effective prescription-only
treatment is available, but it needs
to be started no later than 48 hours
after symptoms occur, and this is
only a small window of opportunity.

One of the fastest ways to age
your skin and look older is to have
dehydrated skin. Many of us think
summer is the time when skin becomes
dehydrated but it is the winter months
we really need to be on guard against.
Dehydrated skin looks dry, has fine
wrinkles and often feels rough. Yet,
it is often one of the easiest ageing
signs to repair.
Cold weather, wind, and stepping in
and out of heated buildings and homes
plays havoc with the moisture level of
the skin.
The best way to avoid dehydrated skin
according to Danielle Mercuri, part
owner of La Face Beauty Clinic, is to
layer the skin and form a barrier on it
to prevent moisture loss and then lock
in extra moisture with a good cream.
“Skin becomes more aged looking
in the colder months because of the
drier air and heating in our homes
and offices that can really dry out
the skin. This is when you really need
to keep skin hydrated by applying
a good emollient under a good skin
moisturizer to lock in moisture,”
says Mercuri.
“Using a good product is essential and
it must be done every day, day in and
day out to make a difference to the
skin.” However, Mercuri says it doesn’t
matter what you apply if you don’t
cleanse properly as it won’t penetrate
the skin.
“Forty per cent of women don’t cleanse
their skin properly and I’m not talking
about getting in a hot shower as that
strips skin of its moisture balance,”
she says.
Mercuri recommends staying away
from soap and going for something
gentle on the skin to cleanse. Use a
good quality cream and stay away
from products that contain parabens
or sulfates and when using a cleanser
make sure it is soap-free to avoid
stripping the surface of the skin
of its natural moisture.
“A cream cleanser should be used and
it is essential to exfoliate twice a week
to remove all the superficial dead skin
cells that sit on top of the skin and
don’t allow penetration of moisture,”
says Mercuri.
“In winter most of us require a thicker
moisturizer to compensate for loss of
humidity in the air. A good hydrating
gel should be worn under your daily
skin cream to lock in the skin’s natural
moisture. It’s a layering effect that
is effective.”
Telltale signs that your skin is
dehydrated and in need of extra
attention, according to Mercuri,
is redness, flakiness, slightly raised skin
and rosacea.
“All dryness is treatable with
a good skin routine at home and
with visits to a qualified beautician,”
says Mercuri.
“You should get advice for your skin
from a beautician who has spent years
studying the skin rather than from
someone over the counter.”
