CHEDDAR CABBAGE CASSEROLE
1 large head cabbage, shredded
10 Tbsp. butter or margarine, softened, divided
1/4 C. all-purpose flour
1/2 tsp. salt
1/8 tsp. pepper
4 C. milk
2 C. (8 oz.) shredded cheddar cheese
1 C. soft bread crumbs
In a large kettle or Dutch oven, cook cabbage in boiling salted water for 2-3 minutes or until crisp-tender,
drain well. Add 2 Tbsp. butter; set aside. In a small
saucepan, melt 6 Tbsp. butter; stir in fl our, salt &
pepper until smooth. Gradually add milk. Bring to a
boil; cook & stir for 2 minutes or until thickened. In
a greased 3 qt. or 13”x9”x2” baking dish, place half
of the cabbage. Pour half of the sauce over cabbage.
Repeat layers. Sprinkle with cheese. Melt r emaining butter; toss with br ead cr umbs. Sprinkle over
cheese. Bake, uncover ed, at 350 0 for 18-22 minutes,
or until cheese is melted. Yield: 12 servings

1/2 C. red hot cinnamon hearts
2 C. water
2 sm. pkg. cherry Jello
2 C. applesauce
Simmer cinnamon hear ts and water together until
hearts melt. Add Jello packages to hot liquid. Stir in
applesauce. Pour into a mold and chill.

In 1883 in Allentown, New Jersey, a wooden Indian
- the kind that was seen in front of cigar stores - was
placed on the ballot for Justice of the Peace. The
candidate was registered under the fictitious name
of Abner Robbins. When the ballots were counted,
Abner won over incumbent Sam Davis by 7 votes.
A similar thing happened in 1938. The name Boston Cur tis appear ed on the ballot for Republican
Committeeman fr om W ilton, W ashington. Actually, Boston Curtis was a mule. The town’s mayor
sponsored the animal to demonstrate that people
know ver y little about the candidates. He pr oved
his point. The mule won!
Such election results don’t seem so far-fetched
when we consider that many voters seldom take
the time to investigate a candidate’s moral standards, political philosophy , and position on vital
issues.
The apostle Paul said, “The authorities that exist
are appointed by God.” But we who live in lands
where the people elect their leaders can have a
voice in who will fi ll the Lor d’s appointments. Let
us therefore take that privilege seriously. We must
get to know all we can about the candidates, pray
about our decision, and vote wisely . It would be
embarrassing to lear n that we voted for a mule.

Steve McCurry is probably today’s number
one photographer as far as fame and publicity
goes. Recently, in an article I read, he said how
he enjoyed his old slides. They were fading and
he felt they soon would be lost.
Some years ago, the US Congress discovered that Kodak was selling film with the processing. “We can’t have that”, they said, “That’s
a monopoly”, so they passed a law making Kodak separate the two services. That opened
the door for every fly-by-night operator, all the
cheapskates, and all the inexperienced processors. They all lowered the price so they
would be cheaper than Kodak. But to get to a
lower price, they had to cut some corners, so
they did not wash or fix the slides and movies
as Kodak was doing.
This was fine when your film came back and
the pictures were new and shiny. Who cared
that five years later they would fade? To combat any complaints, they printed on the envelope
that color film would fade in time and if they had
problems, all they had to do was point to that.
The public still thought that their film was going
to Kodak and no one said any different. After all,
Kodak was charging $2.95 to do a roll of slides
and Dynachrome could do it for $.99. What a
savings. (To be continued next week)
