This course gives you the opportunity to retrain
for a new career and provides the experience
and qualifications to find employment in the
catering industry. It is a very intensive course
of up to 40 hours a week and includes a range
of cookery skills as well as menu planning,
healthy recipes and food safety.
ENTRY REQUIREMENTS
GC Express is for adults aged 19+ who
are looking for a career change. No formal
qualifications are required. Selection is based
on an individual assessment and interview.
PROGRESSION OPPORTUNITIES
Upon completion, you may be able to progress
on to the Diploma in Professional Catering
Level 3, part time study or into employment.
HEAD CHEF, RENAISSANCE
RESTAURANT
Shaun has over 30 years of experience in
the hospitality industry. His primary aim is to
encourage young people into the industry,
in order to pursue a career where they can
achieve their potential. Over the past 10
years, Shaun has developed 'Chefs on
Tour': an initiative to inspire budding young
chefs in the county's schools. The scheme
was recognised by the Professional
Association for Catering Education (PACE)
awarded Chefs on Tour their Innovative
Education Partnership Award.
My primary aim is
to encourage young
people into the
industry to pursue
a career where they
can achieve their
potential.
Shaun's career has seen him study at the
Ecole Lenôtre the legendary patisserie
school in France then go on to repeatedly
represent the UK in the Culinary Olympics
and World Championships. Always striving
to perfect his skills, he was fortunate to
have the opportunity to fulfil a lifetime
dream recently of working alongside world
renowned two Michelin star Raymond
Blanc, based at his famous restaurant Le
Manoir Aux Quat' Saisons.

GC offers a lot of qualifications and we know it can be confusing if you can’t tell a BTEC from an NVQ. That’s
why we’ve included a short guide to each course type to help you understand which one might be best for
you. If you still need help you can talk to our Student Services and Careers Teams.
BTEC AND
CACHE DIPLOMAS
People who study a BTEC qualification learn
about a particular area of employment and can
take this knowledge forward to a job or further
study. CACHE Diplomas are similar, but cover
the Care, Health and Education sectors.
A LEVELS
A Levels can cover the same subjects as
GCSEs and students normally pick three or
four topics to study. They are split into two
parts — the AS and the A2 — which combine
to make a full A Level.
NVQS
National Vocational Qualifications (NVQs)
demonstrate that a candidate is competent
in an area of work based on national
occupational standards. They are usually
worked towards via Apprenticeships but some
are available as full-time programmes at GC.
Consider NVQs if...
• You want to show that you have the
competence to carry out a job properly.
• You’re keen to get into work.
• You have a clear idea about the type of work
that you’d like to do.
Consider alternatives if…
Level 3 BTEC Extended Diplomas are equal to
three A Levels but allow you to focus all of your
energy on the subject that you enjoy the most.
If you want to keep your Higher Education
options open then make sure that the
qualification meets the requirements of the
course you wish to take.
Consider a BTEC or CACHE if…
• You know what you want to do for a job.
• You enjoy being assessed through a
range of methods including a portfolio and
practical work.
• You prefer coursework to examinations.
BTECs tend to involve fewer examinations
than A Levels, although this can vary.
Consider A Levels if...
• You want to mix and match subjects that
you are interested in. This provides a
balance of options when considering what
to do next.
• You want to follow a well-established route
to Higher Education.
• You want a fixed route to Higher Education.
Progression from NVQs can vary and you
will need to check with your chosen provider
what their entry requirements are.
Consider alternatives if...
• You don’t like exams. A Levels use them as
a form of assessment so if you find exams
nerve racking, this may not be the best option.
• You don’t want to choose three or four subjects.
At Gloucestershire College we are
committed to helping you develop your
English and maths skills so you can
achieve your learning goals and future
career aims.
All full-time learners on Level 1, Level 2
or Level 3 programmes will work towards
English and maths qualifications, if you
do not already have GCSE grade A* to
C in these subjects. You can study these
alongside a vocational course.

APPRENTICESHIPS

Apprenticeships allow you to earn
while you learn – you’ll be doing
real work for a real employer while
you study for a qualification!
GC was awarded Gloucestershire
Apprenticeship Training Provider of the Year
2012/13. We offer Apprenticeships in lots of
job types and we work with over 700 local
employers to arrange work-based learning for
our students.
The courses include college-based training,
workplace assessment and support from your
training coordinator. Each course will take
either one, two or three years, depending on
which level you study.
If you are ready for a new challenge, would
like to earn some money while gaining your
qualification and get a head start in the career
of your choice, an apprenticeship could be the
perfect choice!
HOW CAN I GET ON AN
APPRENTICESHIP COURSE?
Most Apprenticeships require you to have
GCSEs, grades A* to C, in English and maths,
but this is not always essential.
You must also be 16 or over, and not in
full-time education.
WHAT IF I’M NOT ELIGIBLE
FOR AN APPRENTICESHIP?
If you feel you lack the basic skills or
confidence to gain the job you want, or
you don’t meet the entry criteria for the
apprenticeship programme, we have other
courses which may help you.

HOW IS THE APPRENTICESHIP
QUALIFICATION MADE UP?
There are three levels of apprenticeship on
offer. The difference is in the level of National
Vocational Qualification (NVQ) you study for.
NVQs are work-based qualifications designed
to show your ability to do a job to specific
standards.
The Apprenticeship qualification is made up of
an NVQ Level 2 which is at an equivalent level
to GCSEs at grades A to C.
Advanced Apprenticeship qualifications include
an NVQ Level 3 which is at an equivalent level
to A Levels.
There is also an Higher Apprenticeship
route working towards a Level 4 or higher
qualification such as an HNC, HND or degree.
All Apprenticeships also include Technical
Certificates or equivalent and functional skills.

apprentices to be proactive, so you’ll need to
help find a suitable employer to take you on.

Technical Certificates are specific to your area
of work and are either earned by assignment
or by taking an exam.
Functional skills are the knowledge and
expertise to assist you in your job. Most
commonly these are communication, number,
and ICT (Information, Computing and
Technology) skills.
WHAT CAN IT LEAD TO?
Apprenticeships provide good routes for
progression. When you finish you will have
the opportunity to start an Advanced level
Apprenticeship or continue with other forms of education.
If you complete your Advanced Apprenticeship
you may be able to progress to a Higher
Apprenticeship or to a Higher Education
course such as a Foundation Degree.
Completion of any Apprenticeship course
can also lead to full-time employment in your
chosen sector.

• Those with higher Apprenticeships are the
most employable of all young people (data
taken from apprenticeships.co.uk )
• The National Minimum Wage for apprentices
is £2.68 per hour but many employers
prefer to pay more. Research shows that
the average salary is approximately £170
per week.
Traineeships are for young people who want
to work, but who have not yet had the chance
to develop the skills or gain the experience
needed to get a job or an apprenticeship.
Traineeships are for 16 to 24-year-olds, and
prepare them for work by focussing on:
• Skills employers want
• English and maths for work
• Work experience
The programme lasts a maximum of six
months. By the end of it you will have secured
either a job or an Apprenticeship, and be able
to continue your studies in English and maths.
Only colleges with an Ofsted rating of
‘Outstanding’ or ‘Good’ are able to devise
traineeships so we are proud to deliver this

Starting at a new college can be quite a culture
shock. For some people it can be nerve racking
but it’s also a wonderful opportunity. So what’s
different about studying at GC?
NEW FRIENDS
You’ll be making a fresh start – along with
everyone else in your class – so it’s the ideal
time to make new friends! You’ll also be studying
subjects that you chose, so there’s a good
chance you’ll have more in common with your
new class mates.
MORE RESPONSIBILITY
You’ll be expected to take charge of your studies.
It’s up to you to be on time for lessons, to make
time for coursework, pick topics for special
projects, and excel!
A CHANCE TO SPECIALISE
Remember all that time you were learning about
geography, or literature, or whatever your least
favourite subject used to be? Now you can really
focus on subjects that will help you with your
future career goals.

The Students’ Union organises and runs many social events and activities. Members act as ambassadors at GC events
and help promote the College in local schools. Some members are elected as Student Governors and sit on the Board of
Governors to represent student views.
As a member you will gain valuable experience and a volunteering certificate that you can include on your university
application or CV. Your involvement in different activities will win credits which you can exchange for goodies throughout the

If you are aged 24+ and want to study Further Education you can access a loan
to cover your course fees. They are similar to Higher Education loans, but for the
further education sector.
Loans will be available for learners aged 24 and over,
studying at Level 3 or Level 4, including QCF Certificates
and Diplomas, Access to HE, A Levels and Advanced
and Higher Apprenticeships.
£21,000 a year . If the loan is for an Access to Higher
Education programme and you progress and complete an
undergraduate degree, you will not have to pay back your
FE loan.
Who is eligible for a 24+ Advanced Learning Loan?
Individuals who are:
• aged 24 or over at the start of their course
• resident in the UK
• have not previously had a loan to do the same
qualification type and level of qualification
Additional information
For Apprenticeships the learner and employer are
expected to share the costs of the course, so the loan
you would take out would be for your half.
• If your course lasts for more than one year, you’ll only
need to take one loan out
• If you go on to study at a higher level you can get
another loan. You can have a maximum of four loans
Loans will not be means tested (or subject to credit
checks), and any individual who meets the criteria above
will be able to apply for a loan irrespective of their current
employment status.

The achievement of GC students across the entire College was
recognised during FE Awards Fortnight
2013. The two week celebration, now in
its third official year, sees each department
hold an awards ceremony to celebrate
and recognise academic achievement and
outstanding commitment across all levels.
Awards ceremonies took place across all
three campuses, which ranged from a BBQ
on Llanthony Priory and a Creative Academies
Summer Show in a grand marquee, to an
awards evening and BBQ hosted by guest
of honour Neill Ricketts, CEO of Versarian, at
Royal Forest of Dean Campus.
Neill Ricketts of Cinderford based engineering
firm Versarian, spoke of how everyone has the
‘raw materials’ to succeed and with drive and
determination dreams can be fulfilled.
He also spoke of how Grand slam winners
Wales, Wimbledon winner Andy Murray and
GB rowing squad ‘dug deep’ and persevered
despite setbacks, until they reached the top of
their game, never ever giving up. Neill Ricketts
was named Business Person of the year at the Forester Business Awards in 2013.

LEARNER OF THE YEAR
Successful entrepreneur, Aaron Freeman,
24, was named VQ Learner of the Year 2013
at a prestigious Parliamentary reception in
Westminster - as part of the sixth annual VQ
Day. Aaron’s award came in recognition of
his outstanding achievement in undertaking a
Public Services vocational qualification (VQ) at
Gloucestershire College.
Since leaving education, Aaron has utilised
the skills and understanding garnered from his
vocational qualification to help launch and run
his own successful business – Battlesports
– which offers people the opportunity to
experience ‘live’ versions of computer-based
war games in Longhope, Gloucestershire.
Aaron is still passionate about vocational
education and believes that his experiences at
Gloucestershire College have been invaluable
in running his current business.
A LEVEL RESULTS 2013
Students and staff at the Gloucestershire
College Cheltenham and Royal Forest of Dean
Campuses were celebrated, after receiving the
news that the College had achieved an A Level
pass rate of 98.5%, with a 100% pass rate at
the Royal Forest of Dean Campus.
28 of the 32 A Level subjects on offer at
the College achieved an 100% pass rate;
12 of which achieved an 100% pass rate at
A-C, including Accounting, Anthropology,
Archaeology, Economics, ICT, Italian and World
Development.

ICE HOCKEY HERO AT GC
Abdulrahman Fakhroo is 19 and studying
English at our Cheltenham Campus. He is also
the Captain of the Qatari national ice hockey
team, and has 36 Caps for his country!
Abdul began ice skating at the age of six at
one of three ice rinks that are in Qatar (all three
are inside large shopping malls and matches
attract crowds of 300-400 spectators). At the
age of 10, he saw Canadian workers playing
the game and decided to join in and give it a
go. He played in junior divisions before playing
in the adult leagues. His background has been
a mixture of ice hockey and speed skating
(which also requires fewer numbers), although
hockey is his passion.
The Qatari team formed in 2010, and Abdul
plays left Wing and Centre forward. Look out
for him in future Winter Olympics.

selected to compete in the Sainsbury's 2013
School Games," Beckham said.
Level 3 Art and Design student, Piers Gilliver,
began Wheelchair Fencing in August 2010 at
his local club, Cotswold Fencing.
Piers feels he is on the definitely on the right
track towards his hopes for selection at the
Olympics in Rio de Janeiro 2016.
In July 2012 he became a member of
GB Performance Squad and competed
internationally. Piers is set to take on the best
of Britain at the Sainsbury's School Games
with words of encouragement from David
Beckham ringing in his ears.

The 18-year-old wheelchair fencer from
Drybrook in the Forest of Dean will take to
the piste to represent England at the multisport event in Sheffield. The Gloucestershire
College pupil will be following some of his great
sporting heroes when he competes alongside
1,600 potential stars of the future in one of the
12 sports on show.
Gilliver said: "Obviously my main goal is to do
the best that I can in the competition.
"I was incredibly inspired by London 2012 and
knew when I was watching the Olympics and
Paralympics I wanted to emulate the athletes I
was watching and this is the next step on that
journey for me.”

enable students to re-take their maths and

In September 2013, we unveiled the latest designs for our proposed
new campus in Cinderford’s Northern Quarter. Although, the project
is still very much in its early stages (and is still subject to planning
applications), we wanted to give our students an idea of what the future
of further education in the Forest of Dean could look like.
The £14m development, which would be built to high energy efficient
standards, will provide a brand new centre of academic and vocational
education. The designs consist of three distinct, but complementary
elements; a vocational training college, a Sixth Form centre (jointly
developed and run by Gloucestershire College and Dene Magna
School), and a central hub providing dining, social and teaching
functions for both College students and the wider community.
Utilising the expertise and resources of both Gloucestershire College
and Dene Magna School, we will be focusing on the expansion of a
positive, academic, Sixth Form College culture with an emphasis on
excellent teaching and learning, pastoral care and progression routes
from A Levels onto further and higher education or employment.
The Sixth Form impressions include the creation of contemporary
learning spaces equipped with the latest ICT technology, as well as
a ‘touchdown zone’; an open plan stepped area suitable for large
groups. Possible uses for this space would include lectures from visiting
speakers, assemblies and film clubs.
Alongside A Levels in the joint Sixth Form, vocational curriculum
areas on offer at the new campus will include art, beauty and holistic
therapies, business, catering, computing, construction and building
services, hairdressing, health, care and early years, fashion, foundation
studies, media, motor vehicle, music, outdoor adventure, photography
and teacher training amongst others.
The plans for the new RFD Campus in
Cinderford are hugely exciting. There is still a
long way to go, but our key focus is to create
a fantastic modern FE learning environment
to help learners in the Forest of Dean to reach
their full potential. We are working towards
creating a space where teaching and learning is
accessible everywhere and anywhere; the new
campus will provide an inspiring place to work,
learn and socialise.

Is there a course you’d like to study or a job you’d like to apply for but you don’t have the right English and maths grades? Our
Entry to Further Education programme could be just what you need.
The programme is designed to give you the skills so you can progress
on to the course of your choice the following year. The programme
is structured around providing you with subject specialist delivery in
English and maths each day in order to achieve Entry Level, Level 1 or
Level 2 qualifications in these subjects.
Some aspects of the course will be assessed through short tests,
exams, written assignments and portfolio work. During tutorial sessions

take part on many location shoots all over
the country as well as studio based work.
Paul teaches both traditional and digital
photography.

front to back and then just keep on

Lee has taught at the college for four
years and has previously been in a touring
band and run an award-winning record
label. Lee is a working DJ and still runs a
club night in Cheltenham once a month.
He is currently working with previous
HNC Music Production students to build
their own MIDI control hardware, and still
performs in an experimental electronic
band. Lee is also a member of the charity
Gloucestershire Music Makers, and runs a
company called Plug & Play, specialising in
delivering music workshops to people with
disabilities.

Gloucestershire College is the main provider of hospitality, catering
and chef training in the county and has a long, successful track
record with students going on to develop careers with Raymond
Blanc and other Michelin starred businesses as well as Thomas
Cook, Easyjet and local tourism organisation, Marketing Gloucester.
Catering and hospitality students will gain industry experience by
working at GC’s commercially run restaurants, Renaissance at our
Cheltenham campus and The Beechwood at our Royal Forest of Dean campus.
Travel and tourism students are also provided with first class facilities
such as an aircraft simulation room with a plane body inside.
Across the UK, catering and hospitality has the largest student
workforce and it is expected that by 2017 the industry will need an

Shaun has over 30 years of experience in
the hospitality industry. His primary aim is to

The construction industry in the South West is a strong employment sector with high levels of demand

Construction offers a broad range of occupational areas to work in and
you can choose from working with your hands in a trade environment to
construct the external structures of buildings, a craft environment that
involves the interior fit out of buildings, such as carpentry or plastering

where she showcased her skills in classic

Natalie has worked in the industry since
the age of 15, beginning an apprenticeship
as soon as she completed her GCSEs

spend a lot of time at the L’Oreal Academy
in London where she achieved many

The Sport, Recreation and Outdoors industry currently employs over 663,000 people, representing just over 2% of the UK
workforce, with 371,800 within the sport and recreation industry and 26,400 people working in the outdoors industry. This opens
up an enormous range of job roles including activity instructor, events manager, sports development trainer, coach officer, athlete,

With this in mind GC has a variety of team
sports that compete against other colleges,

ENTRY REQUIREMENTS
Formal qualifications are not required, however
candidates must be aged 19+, show potential
to succeed at Level 3, be able to read and
write at a basic Level 2 literacy standard,
competent at basic maths at Level 1 and
working towards Level 2, and have a minimum
of one year out of formal education.
PROGRESSION OPPORTUNITIES
Upon completion, this course can be
your pathway to a wide range of degree
programmes, including teaching, nursing,
midwifery, social care, education,
physiotherapy, speech therapy, law,
engineering, history, archaeology, literature,
business, computing, science, psychology and

Catherine is in her ninth year of working for
the college and is Curriculum Leader for
Access to HE.
Catherine said “The best thing about
teaching Access to HE is seeing our
learners develop from the lack of
confidence they display at the start of
the course to confident learners in July
who are happy to stand up and do a
presentation to 30 people without a qualm!
Access to HE is a life transforming course
that changes our students’ lives and in
some cases, the lives of their families. They
are often the first people in their families to
apply for higher education. They progress
from people who didn’t finish school
and often consider themselves failures
academically to confident undergraduates
within one academic year. It’s amazing!
