Curried Chicken Salad
with Apples and Raisins
Ingredients:
16 oz (480 g) chicken breast,
skinless, chopped
3 Tbsp (45 mL) lemon juice
2 Tbsp (30 mL) fresh parsley, chopped
1 Tbsp (15 mL) fresh thyme, chopped
½ tsp (2.5 mL) black pepper,
freshly ground
¼ cup (62.5 mL) mayonnaise, low-fat

Combine lemon juice, parsley, thyme and black
pepper to make a rub.

Rub on chicken until covered.

Grill on medium heat.

Set aside to cool; after cooling chop chicken into
bite-size pieces.

Combine mayonnaise, curry powder, and water in a
medium bowl, stirring with a whisk until well blended.

Add the chopped grilled chicken, chopped apples,
celery, raisins, and salt; stir mixture well to combine.

Cover and chill.

2 small Braeburn apples, chopped
/3 cup (83 mL) celery, diced
