Rachesky. Hal was born in New Jersey and has lived
here most of his life. He bought his first “real” camera
when he was in the US Army in 1962 and learned how to
take pictures while traveling through many countries in
Europe.

with a brief bio of yourself and your photography to

Sizzling Shrimp Crepes
1 1/2 cups of white rice flour
1/2 tsp. each ground turmeric and sea salt
1/2 cup each of lager beer and coconut milk
1/4 cup coconut water
5 tbsp. canola oil
1 tsp. chopped shallots
3/4 pound raw shrimp, trimmed and peeled
1 zucchini julienned
10 snow pea pods, julienned
1 tbsp. white wine or rice wine
1 cup mung bean sprouts
Mint, perilla and butter lettuce (for serving)
**In a large bowl, whisk together rice flour, turmeric
and salt. Stir in beer, coconut milk and coconut water. Set
aside.
**Heat 1 tbsp. oil in a skillet over medium heat.
Add shallots, saute 2 minutes, add shrimp and saute until
opaque, about 2 minutes. Transfer shrimp to plate, set aside.
Add zucchini and snow peas to pan. Add wine, sprouts and
cooked shrimp, saute 1 minute.
**Brush nonstick pan with 1 tbsp. oil. Place over
medium heat turning to medium low when hot. Pour in a
ladle of batter, spread slowly to cover pan and cook until
edges are golden brown. Spoons 3 tbsp, of filling onto
one half of crepe, then fold other half over using spatula.
Cook 2 minutes, then flip. Cook until golden and crispy.
Repeat with remaining batter and filling, adding oil to the
pan as needed. Serve with garnishes, pickled vegetables
and sauces. Serves 7
For Bean Sauce
Soak 2 tbsp. dried white beans for 8 hours. Drain and
rinse. Bring small pot of water to boil over medium heat.
Add beans, 1/2 tsp sea salt, garlic clove and a sprig of
thyme. Cook until beans are soft.
Remove garlic and thyme, drain and rinse beans. In
saucepan, heat 1 tbsp. canola oil over medium heat.
Add 3 cloves minced garlic and chili paste to taste,
saute 30 seconds. Add 2 cups chicken broth slowly, stir in
1 tbsp. sugar, hoisin and oyster sauce. Simmer 5 minutes,
let cool. Combine sauce with beans in a food processor
and blend well.
Shrimp Cobb With
Cilantro-Lime Dressing
Active/Total Time: 40 min. Serves: 4
For just-set yolks, place cold eggs in a saucepan; cover
with 2 inches water and bring to a boil. Cover, remove
from heat, and let stand 6 minutes. Drain; transfer to an
ice-water bath until cold.
4 slices bacon, coarsely chopped
1 pound large shrimp, peeled and deveined
Coarse salt ond freshly ground pepper
1 teaspoon grated lime zest, plus 3 tablespoons juice
1/2 cup extra-virgin olive oil
1/4 cup lightly pocked chopped cilantro
1 bunch watercress, thick stems removed (3 cups)
2 hearts of romaine, thinly sliced (6 cups)
1 pint cherry or grape tomatoes, halved
4 hard-cooked eggs, peeled and halved
1 avocado, pitted, peeled, and sliced
1. Cook bacon in a large skillet over medium until
browned, 8 to 10 minutes. Transfer to paper towels. Remove all but 1tablespoon fat from skillet; return to medium
heat. Season shrimp with salt and pepper; cook in a single
layer, flipping once, until opaque and firm to the touch, 3
to 4 minutes.
2. Whisk together zest and juice, oil, and cilantro;
season with salt and pepper. Toss greens with half of dressing; transfer to a platter. Top with shrimp, tomatoes, eggs,
avocado, and bacon. Season with salt and pepper; serve,
with remaining dressing.
For Pickled Carrots
Make brine: In a large bowl, mix 2 cups of white wine
vinegar and 1 quart warm water with 2 1/2 cups of sugar
an 1/4 tsp. sea salt. Stir until dissolved. Cut 1 pound peeled
carrots into 1/8 inch rounds. Halve 5 Persian cucumbers
lengthwise, scoop out centers then slice into half-moons.
Place carrots and cucumbers in separate bowls. Sprinkle
1 tbsp. sugar on each, tossing to coat. Let carrots dry marinate 2 hours, cucumbers 30 minutes. Drain. Transfer
to separate canning jars, pouring brine 1/2 inch from the
top. Covers tightly refrigerate 24 hours.
