Ingredients
Method
Serves 8
Pre-heat the oven to 180°C/350°F/
Gas Mark 4.
300g Self Raising Flour
300g Caster Sugar
300g Perfect for Baking
Spread, at room temperature
5 large Irish Free Range Eggs
2 tsp Vanilla Extract
2 packets 152g Skittles or your
favourite small Aldi sweets
60g Raspberry Jam
250g Unsalted Butter,
softened
Liquid/Gel Food Colouring –
red, green, blue and yellow
480g Icing Sugar

20cm Round Sandwich Tin
1. Line the tins with some non-stick paper.
2. In a food processor, blend together
the flour, baking spread, sugar,
vanilla extract and eggs to make
a smooth batter.
3. Put two thirds of the mixture into
the piñata cake mould and the other
third into the sandwich tin.
4. Bake in the oven for 20 minutes until
golden brown and slightly risen, then
allow to cool for a few minutes before
removing from the tins and placing
on a wire rack.
5. Meanwhile, make the icing by beating
the butter in a large bowl until soft,
whilst gradually adding the icing sugar.
6. When cool, cut a 12cm diameter/2cm
deep hole in the centre of the sandwich
cake, ensuring you don’t go through
the bottom of the cake.
7. Place this cake on your favourite
stand or plate and spread jam and
a little icing on top.
8. Fill the hole in the sandwich cake
with sweets, piling them high.
9. Next, place the piñata cake on top
of the sandwich cake.
10. Divide the remaining icing into
4 bowls and mix different food
colourings into each one.
11. Using a piping bag, swirl different
icing colours in rosettes on top and
around the sides of the cake.
12. Allow to set, then serve and enjoy!

You will need
180g Self-Raising Flour
180g Caster Sugar
180g Perfect for Baking Spread
3 medium Irish Free Range Eggs
25g of each – White, Milk and Dark Chocolate Chips
12 Cupcake Cases
1 x 12 Hole Muffin Tray
Pre-heat the oven to 180°C/350°F/Gas Mark 4.
1. Put the paper cases in the tin.
2. Put the flour, eggs, sugar and spread into a food
processor and blend until you have a smooth dough.
Transfer to a mixing bowl and stir in all the
chocolate chips.
3. Divide the mixture between the wrappers in the tin.
Bake in the oven for 15 minutes – until the cakes
have risen. Allow to cool in the tin for 5 minutes –
then enjoy!
