WHO WE ARE ?
530 exceptions! Established 60 years ago when top hoteliers teamed up with talented
chefs, Relais & Châteaux now sets the standard for excellence in hospitality and culinary
arts. Relais & Châteaux is not a chain but an Association of 530 outstanding properties,
with independent owners, Maîtres de Maison and chefs. These rare individuals open up
whole new worlds in upscale hospitality. How do they manage this feat? By underscoring
the need for unique, personal experiences which offer our guests, over 5 continents, the
opportunity to enjoy our fine arts of living, and build their own treasure trove of living
memories. This is our unique selling point and what makes us special: “All around the
world, unique in the world”.
In 2014 Relais & Châteaux initiates with its Vision and its 20 Commitments a dedicated
and worldwide movement for “A better world through cuisine and hospitality”. With
this determination, the Association wishes to elevate the Fine Arts of Living to the rank
of the 10 th Art.
“Imagine Relais & Châteaux
as a very fine French-style
library of top-quality books
each entitled In Honour
of the Joys of Living. ”

EDITORIAL
BY PHILLIPE GOMBERT
RELAIS & CHÂTEAUX’S INTERNATIONAL PRESIDENT
60 years!
60 years of shared passions,
60 years of magical experiences and unforgettable
moments! 2014 has seen the celebration of more
than 200 events to highlight the unwavering
quest for excellence which has characterised
our Association for six decades now. A Route
du Bonheur put together for this occasion
underlines the DNA of Relais & Châteaux.
From the past we preserve the foundation on
which we built our history but we nonetheless
have a visionary spirit which guides us in a
constant search for novelties every day on our
way towards new horizons.
Looking ahead, we have developed new
orientations. The publications Taste of the World and Travel Journal are a perfect
illustration of this. These publications provide our printed media with a new format.
In addition, we have created an exceptional interactive showcase through our new iPad
Application which has already been largely acclaimed.
New projects, new ambitions. At Relais & Châteaux we are convinced that it is
possible for us to make the world a better place through cuisine and hospitality. We
have started a campaign together with others on a worldwide level to defend three
initiatives: preserve the cuisines of the world, share the passion for the beautiful and
the good, be players of a more humane world. We want to do this with humility but
with pugnacity.

RELAIS & CHÂTEAUX VALUES
AND EXPERIENCES
While each property is distinctively individual, there is a common philosophy shared
by all Members and best summed up by the following five values and experiences.
The soul of the
Innkeeper
Each Innkeeper puts his or her
personal touch to a place, based on
its environment; from the welcome
they offer to the service and cuisine
that is provided. Each property
beats to the innkeeper’s heart.
The taste of the land
For our Members, the local terroir
is revealed through architecture,
landscapes, leisure activities and
culinary exploit of each Relais &
Châteaux Chef.
The celebration
of the senses
Relais & Châteaux properties, on a
daily-basis and for special occasions,
provide the most suitable settings
for the awakening of the senses and
well-being.
An awakening
to the Art of Living
The passport of friendship
Each property is unique, and yet all share the same core values. They
all offer our guests the same feelings of belonging, the same desire to
get to know other Members.
5
At the heart of the Relais & Châteaux
philosophy is the notion that travel should
be a journey of discovery into the pleasures
of the Art of Living. The ultimate goal of
the Relais & Châteaux Innkeeper is to
introduce our guests to these pleasures.
Relais & Châteaux Press Kit 2015
60 YEARS OF HISTORY
Our history is delightful, telling of men and women who take over a charming hotel,
an outstanding restaurant, and then join forces to share their enthusiasm with
others. This history dates back to 1954. Sixty years ago, Marcel and Nelly Tilloy,
a couple of music-hall artists who owned La Cardinale, a hotel and restaurant on
the right bank of the Rhône, came up with the idea of advertising eight properties
under the slogan ‘La Route du Bonheur’.
Eight totally different houses, all authentic and inhabited, each with its own
personality, located away from towns on the road from
Paris to Nice, they were all united by shared values: topquality amenities, outstanding fine dining and their own
particular ideas about the Art of Living. This union of
kindred spirits merged together to create the most prestigious
hotel Association in the world: Relais & Châteaux. Today,
nearly 530 Members are to be found along 65 Routes du
Bonheur in 64 countries, all sharing the same enthusiasm.
“Hoteliers, restaurateurs must speak from the heart” ,
was Marcel Tilloy’s recommendation. This was 60 years ago
and that belief is still alive today.

OUR VISION
Leverage and preserve the diversity of the cuisines and the hospitalities of the world,
fight against the excessive standardisation within the properties: these are the objectives
of the initiative by Relais & Châteaux. At Relais & Châteaux we would like to stimulate
and revive the Fine Arts of Living and their values through sharing, transmission and
preservation of resources.
Brainstorming started more than a year ago by the Relais & Châteaux World Culinary
Council, which includes sommeliers, chefs and innkeepers, has resulted in a movement
which Relais & Châteaux initiates through 20 strong Commitments included in the
Relais & Châteaux Vision. These Commitments are part of a fight that we want to
engage in together with others on a worldwide level, and in this connection we want to
elevate the Fine Arts of Living to the rank of the 10th Art.
With this declaration we want to start a militant movement in order to “Make the
world a better place through cuisine and hospitality”. We will do it with humility but
with pugnacity.

“MAKING A BETTER WORLD THROUGH
CUISINE AND HOSPITALITY”
At Relais & Châteaux, we know that others share these beliefs and have similar
humanitarian goals, and we wish to work with them to support our vision and
movement.
This mission is focused on 3 areas:
•Preserve the diversity of cuisines in the world
• Share our passion for all that is good and beautiful
•Work together to create a more humane world
It is with this vision for a fairer, healthier and happier world that the Relais &
Châteaux family will serve as a catalyst and an inspiration, making this world better
through cuisine, hospitality and our relentless pursuit for the Fine Arts of Living.

THE VISION AND ITS COMMITMENTS
COMMITMENTS
for cuisine and hospitality
THIS DOCUMENT ADDS TO OUR VISION IN ORDER TO SET THE PRACTICAL DAY-TODAY GUIDELINES FOR OUR MEMBERS. THE FOLLOWING COMMITMENTS ARE BASED
ON THE THREE SECTIONS THAT STRUCTURE THE VISION.
To preserve the diversity of
cuisines and hospitality in this world
so that future generations can know
and share in their richness
Offer a “cuisine” that is representative of local traditions and environments and reflects
their global diversity.
Receive guests in a way that respects the individuality of each Relais & Châteaux
property location, landscape, decor, and its unique way of good living and fine dining.
Welcome guests as friends, in an atmosphere where the host Relais & Châteaux property
share its passion for “living well”.
11
Relais & Châteaux Press Kit 2015
THE VISION AND ITS COMMITMENTS
Initiate strong relationships with local farmers and fishermen and develop a
Conservatory that protects and promotes biodiversity.
Encourage responsible fishing to protect the biodiversity of the oceans.
Contribute to renew natural resources by reducing food waste and using seasonal
products locally sourced.
12
Relais & Châteaux Press Kit 2015
THE VISION AND ITS COMMITMENTS
Limit the environmental impact of Relais & Châteaux properties with regards to energy,
water and waste by employing the Sustainable Restaurant Association (SRA) system
of checks.
Associate the finest tastes with nutrition and health to show our guests how fine
“cuisine” and well-being go hand in hand.
Develop a system for training young people in each region in the art of good taste, food
preparation and service.
13
Relais & Châteaux Press Kit 2015
THE VISION AND ITS COMMITMENTS
Be part of the regional culinary culture and share our knowledge to teach and enrich
the Food Arts as part of the Intangible Heritage of Humanity and as the 10th Art Form.
Share our passion for all that is
good and beautiful in this world
Sign contracts with small local producers who supply our restaurants, offering them
an appropriate price allowing them to grow their products without chemicals or GMO,
avoid overproduction and the depletion of natural resources.
Set up a plan to train the young in the spirit of the “artisan journeymen” where they
can learn the skills our professionals use daily throughout the world.
14
Relais & Châteaux Press Kit 2015
THE VISION AND ITS COMMITMENTS
Give our personnel good working conditions and salaries that allow them to achieve the
level of excellence of Relais & Châteaux so they become our ambassadors everywhere
they go.
Develop “the art of taking care and being attentive to someone’s needs and desires” by
conveying, in a personal way, our pleasure to serve, making the experience at Relais &
Châteaux a unique, fulfilling and inspiring moment.
Create relationships with local authorities to participate in the planning and initiation
of programs for local development.
15
Relais & Châteaux Press Kit 2015
THE VISION AND ITS COMMITMENTS
To work together to create
a more humane world
Participate in the promotion of manual jobs, which stress the importance and value of
working with one’s hands, allowing young people to realize professional goals.
Explain these 20 principles to our clients so that they can improve the way they plan
their holidays, in a responsible manner.
Invest locally to help communities unite the cultural and practical links between the
city and the countryside.
16
Relais & Châteaux Press Kit 2015
THE VISION AND ITS COMMITMENTS
Create global alliances, starting at the local level, between people working with
different means but sharing the same objectives (to diminish food waste, develop
local and sustainable food production, maintain biodiversity).
Share the Vision among the owners of Relais & Châteaux, chefs, dining, hotel staff
and wine experts, and ensure through local and international events, that our actions
and our words contribute to “make the world a better place through cuisine and
hospitality” and to recognize the “Arts of Living” as the 10th Art.

All around the world the Relais & Châteaux restaurants strive for the same goal: to offer
thrilling, memorable meals. Their selection of ingredients, honed techniques, perceptive
associations of flavours all combine to create an art of true excellence in perfect harmony
with an idylic setting. The chefs, who make up the Relais & Châteaux Restaurants, transport
us with the mere mention of their names to the haute couture of gourmet cuisine at the
peak of its perfection. The chefs are the people who set the tone for an inspirational,
groundbreaking cuisine.
Throughout the world the Relais & Châteaux Restaurants are places which are the
expression of culinary arts blending the cultures and terroirs of the world. From Great
Britain to Italy, from Canada to Argentina, the route is long and presents countless
culinary richnesses. There is no doubt that the Relais & Châteaux chefs who are the true
virtuosos of taste, cultivate a cuisine rich in influences. But it is also the cohesion, the
sharing of experiences and knowledge of the chefs that make Relais & Châteaux rise to
culinary exceptions.
“ Pleasure and
passion for finedining is universal;
all we do is share

each day has to
offer”

THE CULINARY EVENTS
The Relais & Châteaux Chefs never miss a chance to share their expertise and love
for gourmet cuisine.
For the 60 th anniversary of the Association, the Relais & Châteaux Restaurants have been celebrating
almost 200 exceptional events. They were able to highlight their attachment to the terroir, with the
expression of a know-how and the feeling of belonging to the same family. On 12 May 2014, 60 chefs
met in Vonnas (Ain, France) to celebrate the anniversary of the creation of the Association. On this
occasion, a lunch for fellow chefs was organised at Georges Blanc in the presence of historical members
and journalists from all over the world.
Several Gourmet Festivals were organised in 2014: in Switzerland and in Liechtenstein there were
11 events, 32 in Italy, 11 in Spain and Portugal, 6 in Japan, 30 in the United Kindom and 15 in Austria,
Eastern Europe and Northern Europe. In California the first edition of the Gourmet Fest took place
in Carmel by-the-Sea and welcomed 15 Relais & Châteaux chefs and more than 1,000 guests for four
days around a top culinary and oenological programme.
In October 2014 almost 30 exceptional dinners were organised in North America with American and
foreign chefs.
Each year, chefs open their kitchen door on the occasion of the Fête de la Gastronomie to prepare in
front of their guests a recipe inspired by their terroir, highlighting their sommelier through workshops
and tastings as well as festive meals at the end of each days and at reasonable prices.
For several years the Biennale des Antiquaires has staged a pop-up restaurant with almost 10 Relais &
Châteaux chefs in the Grand Palais in Paris.
In September 2014, the Arts and Elegance Concours in Chantilly was an opportunity for a dynamic
encounter of art and elegance of the past and the future. Orchestrated like an elegant Sunday in the
countryside and hosted in the beautiful Domaine de Chantilly, a gem of the French architectural
heritage, French art de vivre was celebrated in all its forms; cars, couture, fine arts, equestrian arts and
of course culinary arts with Relais & Châteaux and its chefs.

TASTE OF THE WORLD
AND TRAVEL JOURNAL
“A world of tastes for you to enjoy” , these are the words of Philippe Gombert on the
first page of this magnificent publication. The promise is kept and throughout the pages doors
are opening to the universe of Relais & Châteaux, whilst highlighting the strict demands on
quality and excellence that are ours.
Leafing through this beautiful book means leafing through the world which presents itself to
you, introducing continents, countries, people. The soul of a territory, its cultural richness, its
terroir, its cuisine, its hopsitality represent the Taste of the World. The publication invites the
reader, through many illustrations, to savour a region sometimes unknown or an unexpected
scenery. It is a true invitation to travel: with the hot air balloon over the valley of Göreme in
Cappadocia, enjoying the charm of seclusion in New Zealand, British Columbia, where the
mountains touch the sky, the shimmering colours of a preserved Morocco, a seducing Provence
which exudes the scents of lavender.
These enchanting landscapes on all five continents are described by writers and lead to
intoxicating f lavours that the Taste of the World presents as a testimonial. By tasting the world,
we accept the appeal to our five sense and trigger our curiosity to inhale the fragrances of a
country and succumb to the ecstasy of its savours. From an infusion with white lotus f lowers
created by Kyoung-Won Park in her restaurant in Seoul to the seaweed served with scallops at
Andrew Fairlie in Scotland, the chefs have always highlighted their region by disclosing the
gems of their terroir.
It is accompanied by a Travel Journal highlighting the new properties and listing the addresses
of the 530 Relais & Châteaux properties.

VILLAS & FAMILY HOMES
Go somewhere different and feel at home. A dream comes true. Relais & Châteaux has
welcomed 85 Villas and Family Homes in 11 different countries. Here, our members hand
the keys over to their guests so that they can enjoy our Arts of Living, some magical time
with friends or family in privacy and the philosophy of our Association.
Chalets belonging to a private mansion, a villa in Tuscany, a cruise on a yacht, a victorian
cottage, a retreat up in the trees, a chalet at the peak of a mountain...: like the Association,
our Villas and Family Homes offer choice and originality. Whatever the season, whether
on snowy peaks or the ocean wave, in the heart of a mega city or the depth of the bush,
these unique places all offer the same courtesy, charm, character, calm and cuisine. Our
core values, which are shared by our members in their pursuit of an identical goal: to
make their guests feel at home, and now enjoy the total freedom to invent “their own”
Relais & Châteaux.
39

THE ROUTES DU BONHEUR
The Route du Bonheur, with BMW as the official partner, is part of the DNA of Relais &
Châteaux. This is clear from our history. The culinary itinerary which brought together
for the first time 8 charming properties along the road parallel to the famous Train Bleu
has since 1954 laid the tracks for many other routes. 60 years later, the Association has
65 Route du Bonheur, on all five continents, shared by half of our members: Peru, from
Lima to Lake Titicaca, taking in Machu Picchu on the way; Greece and the Cyclades by
boat; Mont Blanc as seen by chef Emmanuel Renaut; Western Canada, from Lake Louise
near Calgary to Vancouver; Japan from Kobe to Osaka... Tomorrow, 10 new opportunities
to get away in France, Germany, the Baltics, China, India, Sri Lanka, Chile, the United
States and Japan are to be added to these dream destinations. There will be many new
opportunities to discover a particular area by theme and visit some very special, and often
secret, restaurants owned by chefs and Maîtres de Maison, each fascinated about their
own region.
