Since its origin in 800A.D. coffee has become a sophisticated beverage drawing similarities to wine in both its complexity of flavor
and various stages of processing. and like wine, coffee undergoes a long journey from the initial picking of the cherry till the last drop
leaves your cup, with each stage being just as important as the last.
The idea of the Perfect Cup was created out of a need to maintain a certain standard and integrity of coffee. This guide will focus
on brewing, the last and most critical stage in an effort to bring out the best in your coffee experience.
By understanding a few simple concepts (The Five Fundamentals of Brewing, Strength vs. Extraction), along with the proper brewing
equipment, it is now possible to attain the Perfect Cup time and time again. Let the Science of Extraction Meet the Art of Taste™.
Originally founded in 1987 in Glenview, Illinois, USA, FETCO® burst onto the coffee scene with its first patent; the Gravity Flow Dispense
Tube System. Since its inception, FETCO® has grown exponentially now having moved to its state of the art facility in Lake Zurich, Illinois
and also featuring a fully functioning facility in Poland for easy distribution to its international customers.
FETCO® became a prominent name in the coffee industry when it introduced the first fully-insulated, portable bulk coffee dispensers
that required no warming base to maintain serving temperature. Over the years the LUXUS® Thermal Dispenser has seen many
changes and improvements, all to make it easier to serve large amounts of the freshest, hottest coffee and take
it anywhere. FETCO® recently introduced the newest version of the LUXUS® Thermal Dispenser, featuring
a liquid-crystal display that shows the amount of coffee and how long the coffee has been held inside

COFFEE TO WATER RATIO
Defined as the weight of dry coffee to the amount of water sprayed over the coffee
grounds in the brew basket. The suggested amount of coffee to use is between
50 and 60 grams of coffee for each liter of water sprayed over the grounds.
GRIND SIZE
Ground coffee is a combination of grind particle sizes. Since water moves through
the bed of coarser coffee much quicker than through bed of finer coffee, it’s important
to match grind particle size to the brewing method and type of equipment.

OPERATION OF EQUIPMENT
The key to selecting the proper equipment function is to Control the Contact Time
– this is defined as the amount of time the water is in contact with the ground coffee.

Brewing Temperatures should be between 90 and 96 degrees Centigrade throughout 90 to 100%
of the brew cycle. Optimal acidity, aroma, flavor and body are achieved when coffee is brewed at
the ideal temperature range. As water moves through the basket, it causes a mixing action called
turbulence, which allows for uniform extraction of the ground coffee. Ideally, the ground coffee
should be between 2.5 and 5.0 cm thick in the brew basket. This is also referred to as Bed Depth.

WATER QUALITY
Brewed coffee can contain up to 98% water so it is extremely important to brew with
good quality water. Completely pure water free of minerals is not recommended for
brewing coffee, as certain amount of minerals must be present in the water for
optimal brewing. Water quality parameters for a perfect cup include:

Remember: freshness of the coffee is measured in minutes, not hours!
Brewed coffee should be held at between 80-85 degrees Centigrade. It should also be kept hot
in an insulated dispenser away from heat, since heat and air quickly degrade the coffee’s taste.

Coffee is a very sensitive product; even if one mistake is made on one of the brewing procedures, the taste of the coffee will be lost.
The perfect cup of coffee has optimum balance of strength and extraction. Extraction is a process by which hot water removes
the soluble flavor compounds from ground coffee. Imagine water running continuously through 100 grams of ground coffee.
If you then dry those grounds and weigh them, they will weigh only 70 grams. This means that approximately 30% of
the matter in roasted coffee particles can be dissolved in water. The matter that you dissolve is made up of many compounds
comprised of flavor, aroma, and body. The ideal extraction is between 18% and 22%, as only that range of dissolved particles
will have optimal flavor. The brewing time is critical, and it should be stopped before the extraction has gone too far.
Quality of flavor is achieved by controlling the extraction process.
Strength is a percentage of dissolved coffee solids in relation to the amount of water. Most acceptable ranges of concentration
fall between 1% and 1.5% dissolved coffee solids and between 98.5% and 99% water.
Large amounts of coffee and very little water will result in increased strength, but not necessary good extraction.
Too much water over too little coffee will give you too much extraction and not enough strength.

EXTRACTOR® COFFEE BREWERS
The Extractor® Coffee Brewers are the latest in brewing technology.
They are automatic brewers with built in options and programmable recipes.
PRE-WET
Pre-Wetting Feature allows programmable initial amount of hot water to be dispensed
before the start of the brew cycle, preparing the coffee bed for an optimal extraction,
reducing astringency and bitterness.
BY-PASS

Choose your equipment according to the intended volume and type of coffee used, and set it up correctly.
Use the appropriate grind and check it periodically (at least once a week) to make sure the settings
have not changed. Grinder burrs will become worn as time goes on and adjustments
are necessary and usually take less than 10 minutes.

Use cold and fresh water as water represents 98.5% of correctly brewed coffee.
Cleaner water also extends the life of the equipment.

Clean your coffee equipment periodically, using a special cleaning solution, specific
for coffee equipment, that is able to dissolve coffee deposits but never use soap,
or chlorine, as they could leave residual taste in the brewers.

• Brew at 92-96 degrees Centigrade.

Rather store it in a cool, dry place in airtight container or its original packaging

Rather use separate brew baskets, grinders, and dispensers.

DO NOT allow filters to flatten out as it would make it easier for grounds to get into
the finished beverage. Rather store them in their original packaging to keep
the filters in their original shape.

DO NOT leave ground coffee exposed to air as coffee grinds absorb odors affecting
the taste of the coffee. Rather store it in its original packaging, closing
it tightly after opening.

The LUXUS® Thermal Dispensers are now available in two styles and five sizes: 2.0 L, 4.0 L, 6.0 L, 8.0 L, and 12.0 L.
The Newest L3D and L3S series are vacuum insulated and come with patented features like the Freshness Time®, Volume Indicator™,
and Built-In Drip Tray (on L3D models). These features allow for more control over the coffee program and give you the opportunity
to serve coffee that tastes just brewed. The TPD model is a stainless steel rugged thermal insulated dispenser which is perfect for
quick coffee service in locations where operators tend to be a little more abusive to the equipment. Needs to be pre-heated.
Among our accessories, we offer Servers, Airpots, and Decanters in glass or stainless steel.
