let in the Texas sunlight, but keep energy costs down.
This 1,700 square foot home is full of special touches. It has an openplan living/dining/kitchen area perfect for a family center and parties.
The living room has a true wood-burning fireplace and large windows to
take in the sweeping mountain views. Granite counters, custom cabinetry, and enough
workspace for the most creative chef fill the kitchen. The bedrooms are spacious with
ceiling fans and nicely designed closets with built-in storage. The master bath has a
full walk-in shower, and a Jacuzzi tub is found in the second bath. Italian porcelain
tile covers the living area, hallways, and bathrooms, with luxurious carpeting in the

Summer Heat Arrives in West Texas Gardens
We have been most fortunate this year to have a mild June and July. However, August arrived with the heat, and it’s time
to change your lawn and garden habits.
Sarita Hernandez of Persimmon Gap Landscape Company in Marathon, Texas, suggests plenty of water – but not too
much! “It is so easy to over water your lawn,” says Sarita. “You want water only as much to moisten one to one and a half
inches of soil. Extreme moisture will encourage fungus growth in your grass.” She also suggests to water your lawn either
early morning or late at night, and to avoid the heat of the day (from 3 pm to 6 pm) because it also will create a fungal
environment as well as cooking your grass as the water droplets magnify the heat of the sun.
Trees, however, need a little deeper watering. “Many make the mistake of watering at the base of a tree, but that misses the
root tips that absorb the water. They are located at the ‘drip line’ – at the ends of the branches. So step out to the furthest
limb of the tree, and that is where your root system absorbs the water – and where to water,” suggests Sarita.
Believe it or not, this is the perfect time to start preparing for winter. Start looking now at what will need to be pruned.
Check your highline wires and which trees are in the highline. Hire a professional tree
trimmer to properly trim your trees – both for aesthetic appeal and for the health of the
tree. Sarita says, “If the power company clears your trees from the highline, they are more
likely to chop your tree in half, making it unattractive or downright ugly.”

Fermented beverages have been a part of daily life since the dawn of man. Today beer is one of the most widely consumed
alcoholic beverages, with Shiner Bock one of Texas’ jewels.
Few, however, think about the versatility of this malted nectar – from

exploring beer in recipes, I went to Alpine’s local brewmeister, Harry
Mois.
Harry hails from Germany, considered the Mecca of beer. In 1998,
he traveled extensively to find a climate that was better for his health.
By serendipity he arrived in Alpine in 1999, and after staying here the
full ninety days allowed by his visitor visa, he decided this was to be
his new home. He returned to Germany long enough to complete the
paperwork for a work visa and was back in Alpine ten days later.
After working several restaurant jobs in Alpine and in a brewery in Colorado to earn his green card,
Harry opened the Edelweiss Restaurant and Brewery in 2005. Harry still oversees the brewing at the
Edelweiss and has opened his own bar – Harry’s Tinaja on Holland Ave. Harry’s Tinaja is a warm,
friendly, neighborhood bar where customers come to drink from a selection of four beers on draft,
thirty choices of bottled beer, and a nice selection of nonalcoholic beverages. With an inside bar

The day before: Combine the spicy brown mustard, garlic cloves, caraway
seeds, thyme, salt and pepper. Rub the entire roast with the mustard paste.
Wrap securely in plastic wrap. Refrigerate overnight.
When ready to cook: Preheat oven to 450 degrees. Remove plastic wrap from
veal roast and place the roast in a roasting pan with lid. Add onions, tomato
paste, carrots, celery leaves, butter, and enough water to cover bottom of pan
about 1” deep.
Put into preheated oven and cook for 2 hours, checking about every 30 minutes
and adding hot water as necessary.
After 2 hours, remove the lid and pour the Shiner Bock over the roast.
After 2 hours, reduce temperature to 350 degrees. Remove the lid from the
roasting pan. Pour the Shiner Bock over the roast. Cook for 1 hour, basting
frequently.
At the end of the hour, remove roasting pan from oven, and remove the meat
from the pan. Transfer the liquid and vegetables to a large saucepan. Add the
potato flour and cook over medium heat until slightly thickened. Strain the
sauce to remove the vegetables.
Slice the roast and place on a deep platter. Pour the sauce over the roast. Serve
with white rice, pasta, or mashed potatoes.
