The weather is warm, flowers
have blossomed in vivacious color
and the sun seems to smile gently
down on our coming 2013 harvest.
We here at the Vineyard at Borgo
Medioevale are delighted to be a
part of such a glorious season of
abundant and flourishing life! Our
meticulous care in early Spring has
certainly paid off for this year’s
harvest. Thanks to a rigorous
application of lime and regular
maintenance of our irrigation
system, we’re proud to announce
that we didn’t have a single vine
death this winter – for the second
year in a row! This means we had
more healthy vines to train, weed
and fertilize this year. And we all
know what that means, right?

If you've read this column before, you know I'm normally chained to the computer. But this
summer, I've actually been spotted at various Renaissance and craft fairs selling cider and
preserves to our wonderful customers!
So, to make things easier for you, our wonderful customers, I've updated our website to
include all upcoming events we'll be attending. This includes the Village Renaissance Fair in
Newtown, Pennsylvania on September 21 & 22, 2013, The Medieval Festival at Fort Tryon Park
in New York City on September 29, 2013, and the Fall Harvest Festival at the Bayard Cutting
Arboretum in Great River , NY on October 5 & 6, 2013. We will be appearing at several other
events on the east coast, as well, but we’ll keep you updated on those in the next edition of
our newsletter. So, in case you misplace this newsletter over the next few months, make sure
to check our website regularly to see where we'll be next. Or, of course, you can make the web
guy happy and buy online!

If you've visited our website recently, you'll see a link to a CBS News story that confirms much
of the recent nutritional and health information about Resveratrol ("Resveratrol does provide
anti-aging benefits, study shows - CBS News - March 11, 2013). As you all know by reading
Carolyn’s Corner in every addition of our newsletter, our grapes have the highest
concentration of Resveratrol around! So we’re thrilled that our products have been proven to
be as healthy as they can be. For an in-depth discussion of the Harvard study, check out this
edition of Carolyn’s Corner on page X.

Recipes
At every event, we often give out free copies of our food and drink recipes. We’ve put down
on paper a number of tasty ways that you can improve everyday dishes and experiment on
some exotic cuisine with the help of the Mighty Muscadine™. In fact, if you haven't already
tried it, you can use our preserves as a braise on certain meat dishes, and our cider can be
mixed with alcoholic drinks to make heavenly concoctions. But we often run out of recipes
before the events are over! So we're working on a compilation for you – a cookbook which will
have all of our delicious recipes available for you in one place. In the meantime, we’ve created
a shortlist of exciting recipes for you to browse and download on our website:

Dear Friends,
Well, folks, the only thing I have to say about this past spring
is….wow! We accomplished more than I ever thought we would.
We started off the spring participating in two amazing festivals.
First, on Mother’s Day weekend, Greg spent the weekend at home,
minding the store and hanging out with his mom, Buy-A-Vine
sponsor Christine DiFalco, while I went off in search of adventure in
Virginia. I took my mother, vineyard Investor & Buy-A-Vine sponsor
Dorothy Cassamassino, and Joe Prinzivalli (Buy-A-Vine sponsor) to
the Virginia Renaissance Faire in Spotsylvania, VA. It was held at a
winery known as the Lake Anna Winery, and it is a truly beautiful
location. Dressed in period costumes each day throughout the
weekend, we sold cider and jam like nobody’s business! The main
comment as people took their first sip was always, “Wow!”
Invariably, the muscadine grape triumphed once again. My mom
and Joe were real troupers throughout. They stayed in their
costumes, didn’t complain at all, and looked like they were truly
enjoying themselves. One could honestly say that a good time was
had by all!
The Vineyard was engaged in the VA Renaissance Faire for 5
consecutive weekends; two of which were adeptly covered by
Christine and husband Steve DiFalco. During the weekends when I
wasn’t at the VA faire, I was in Charleston, SC, at the Piccolo
Spoleto Festival. Again, our muscadine grape products were as
popular as they could be! With record sales and excellent support
from both Greg and Buy-A-Vine sponsor Don “Dante” Mallon (both
of whom accompanied me to SC), we enjoyed a little vacation and a
lot of both the Piccolo Spoleto and Spoleto Festivals, which were
running concurrently in Charleston at that time. From South
Carolina and Virginia, Greg and I traveled back to NY and then on
to Ansonia, Connecticut, for the Midsummer Fantasy Renaissance
Faire. Greg and I represented The Vineyard on three consecutive

weekends, from June 22 to July 7 , and what we learned about
Renaissance Faires from our experiences last year in the Bronx and
in Pennsylvania, held true up and down the eastern seaboard:
RenFaire people are invariably the most wonderful folk around! Not
only did they make us feel welcome and show their true

Studies have proven the validity of claims regarding resveratrol’s
healthy benefits. It has been scientifically verified that resveratrol DOES delay
signs of aging. Just this past spring, even Harvard Medical School conducted a
study and confirmed that Resveratrol actually does provide anti-aging benefits.
This just helps to support what we’ve been thinking all along – that Muscadines
are not only good tasting, they’re good for you. An article featured on CBS
News by Michelle Castillo, titled “Resveratrol Does Provide Anti-Aging Benefits,
Study Shows” says:
“The study, which was published on March 8 in Science, shows that
resveratrol stimulates production of SIRT1, a serum that blocks diseases by
speeding up the cell's energy production centers known as mitochondria.
Researchers have also figured out which gene allows resveratrol to produce
SIRT1, and believe that some drugs currently in clinical trials may be able to
provide the same anti-aging benefits as well.”
And…..
“This is not weak evidence at this point," Leonard Guarente, a biologist at the
Massachusetts Institute of Technology and a Sirtris scientific advisory board
member, added to the Los Angeles Times."
This means that we can actually trust that resveratrol is doing
positive things for our bodies. And the fact that it is coming from a natural,
renewable source is why we love our Muscadine grapes. We know that they
have their perks and are also very delicious to eat straight off the vine. Think
about this next time you consider buying our products for yourself or as gifts
for loved ones, or investing in our vineyard. There’s nothing better than
wholesome, South Carolina-grown Muscadine grapes from The Vineyard at
Borgo Medioevale.

Guest columnist Noelle Tolve’s Sognando Muscadine recipe
In this section of Viniferous Victuals, I am honored to have been invited into the
kitchen with Dexter Lee, Certified Cellar Manager and Viniferous Victuals
columnist, where we will be making my Sognando Muscadine. This recipe is extra
special to me, as it is a variation of one of the summertime desserts my Grandpa
Tony would make for me when I was young. It is a very simple dessert that has a
multitude of layers of flavorings thanks to the help of Borgo Medioevale’s
Muscadine Grape Cider, and the robustness of fresh strawberries over a warm
and toasty slice of pound cake. Your guests will certainly think you have spent all
day in the kitchen!
Ingredients:
 20 Fresh Strawberries
 2 Cups of Borgo Medioevale Noble Muscadine Cider
 4 Thick slices of Marble pound cake or vanilla
 1 Sauté pan
Preparation:
1. Pre-heat oven to 200.
2. Wash and gently pat dry fresh strawberries. Carefully remove tops from
strawberries using a knife and slice strawberries into elongated slices.
3. Place slices of pound cake directly on the oven rack and carefully
monitor until they reach a light golden brown color
4. Add two cups of Borgo Medioevale Red Cider to medium heat and just
as it reaches a low boil, incorporate strawberries. Bring the temperature
down to a simmer and stir frequently to avoid overcooking.
5. Once pound cake has a light golden brown color, remove it from the
oven and plate. Carefully ladle strawberries and cider reduction over top
of the pound cake.
6. Serve and enjoy! Makes 4 servings
Resveratrol works!
Most of us want to look young and beautiful at any age. We
don’t want those indicators of aging to start showing up early - or at all.
I mean, we all know it is inevitable. There is no “fountain of youth,”
but fortunately, there are ways to prevent these signs of aging so you
can look “forever young” (at least for a little longer). The Muscadine
grape is one of those amazing superfruits that can go a long way to
helping you look and feel your best every day.
These days, it’s difficult to decipher who is telling factual
information versus who is stretching the facts (or all together making it
up). The Vineyard at Borgo Medioevale wants to make sure that you
are fully aware of the factual benefits of our Muscadine grapes and
products.
Resveratrol is a “naturally occurring” polyphenol antioxidant
found in some plant products, such as Muscadine grapes. Antioxidants
protect your cells against the effects of free radicals. These free
radicals can be damaging to the human body. Resveratrol is
considered a phytoalexin, which is an antimicrobial compound that
plants have that protect them from harmful conditions, infections,
climate changes and much more. It basically makes the plant tough
and disease-resistant. If you’ve seen our Muscadine grapes, the skin,
which holds a huge amount of resveratrol, is very thick. That is where
the majority of the grape’s healthy benefits lie. You can enjoy the grape
as a fruit, as a jam, as a juice or cider or in a yummy wine.

Muscadine lacquered seared duck breasts
Duck is most certainly one of the most popular of game proteins. Its meat is rich
and succulent, especially when served with its crispy skin. Savory duck dishes
are often served with a sweet fruit sauce – think berries, plums, or the classic
duck à l'orange. This simple to prepare muscadine lacquered seared duck breast
recipe utilizes Borgo Medioevale red muscadine preserves as a base for a
delicious sweet sauce. This duck dish is shown served with oven roasted baby
carrots and zucchini.
Ingredients (serves 4-6):
 2 magret duck breasts (approximately 1 lb each)
 Salt and pepper to taste
 4 tablespoons Borgo Medioevale red muscadine preserves
 4 tablespoons balsamic vinegar
Preparation:
1) Cut small slits in the skin side of the duck breast, without slicing all the
way into the flesh. This will help the fat to render out and the skin to
crisp. Season on both sides with salt and pepper.
2) Preheat a large skillet over medium-high heat and sear the duck
breasts, skin side down, for 7-8 minutes, reducing the heat to mediumlow about halfway through. Flip the duck breasts and cook them for an
additional 5-6 minutes. Transfer them to a plate and allow them to
rest.
3) Pour the rendered duck fat into a clean container and save for other
culinary uses. Turn the heat up to medium and deglaze the skillet with
the red muscadine preserves and balsamic vinegar, scraping up the
browned bits (also known as fond) as the sauce cooks. Simmer the
muscadine vinegar glaze for 3-4 minutes, or until it starts to turn thick.
4) Return the duck breasts to the pan, turning them to coat them with the
glaze. Slice them and serve them immediately, garnished with a drizzle
of extra glaze if desired.

LEVELS OF SPONSORSHIP:
L’Ordine del Conte Verde – Created in 1362 by Amedeo VI of Savoia, who was
known as the Green Count for his predilection for that color in his banners. The
Order was quite selective, composed of only 15 knights tied to the Count by great
devotion. It was characterized by a relationship of equality between the Count
(one of the 15) and the other members (defined as brothers and companions). The
Order was represented by the acronym FERT, which for us at Borgo Medioevale
stands for Faith, Equality, Respect and Trust. This level of sponsorship is dedicated

L’Ordine della Notte di San Lorenzo di Roma – A mixture of two Italian traditions
steeped in history, San Lorenzo di Roma was a 3rd century archdeacon of Rome,
distributor of alms, guardian of the Church’s treasures, and caretaker of the poor.
To this day, dreamers look up into the sky on the Notte (night) di San Lorenzo
(August 10) and seek out the meteor shower that follows the Swift-Tuttle comet,
known throughout the Middle Ages as the burning tears of San Lorenzo. It is
believed that on this one magical night, thanks to San Lorenzo, dreams really can
come true. This level of sponsorship is dedicated to supporters who have
demonstrated unwavering dedication to making the hopes and dreams we have
for Borgo Medioevale a reality. For contributions of $5,000-$24,999
L’Ordine di Dionisio-Known as Bacco in Italian and as Bacchus or Dionysus in
English, he is the ancient Greek god of all things grape -the harvest, winemaking,
wine - and he even presided over those who had had one too many! We celebrate
the ancients in their knowledge of agriculture and understanding of its importance
to everyday life and society. This level of sponsorship honors Borgo Medioevale’s
environmental commitment and is dedicated to those who strive to protect nature
every day –whether through recycling, conserving resources, or even just planting
a vegetable garden at home. Every little green step we take helps ensure that the
“roots” of Borgo Medioevale’s successful harvest will continue to grow! For

Wouldn’t it be nice to wake up and realize that money had miraculously materialized
in our accounts, and that we would never have to worry about the price of gas or
debate the cost of movie tickets and a night out to dinner?
We at The Vineyard at Borgo Medioevale know how hard you work for every penny
you earn. Believe us when we say that we work as hard as we can all year ‘round to
bring you the high quality Muscadine products you’ve grown to love and expect from
us. And since we all love our jobs here, it makes the fruits of our labors even sweeter
to us, each and every year.
But running a vineyard, while incredibly rewarding, isn’t without expense. As our
vines grow, they need more and more care. Last year’s harvest almost tripled in size
– just under 6 tons of grapes! And although this is a sweet reward, costs can be a
factor. Each year, your generous contributions help us defray the cost of tractor
repairs, labor, fertilizer, fuel, and a host of other necessities. We’ve also begun the
process of building our new winery, where we can produce our delicious wines,
ciders and jams on site. Each year, we need more workers and supervisors, so our
staff is increasing, too. That means more delicious products for all of you – but it
also means additional expenditures for us.

Borgo Medioevale Muscadine Grape Cider, Preserves &
Spiced Butter
We are currently selling the fruits of the 2013 harvest. Choose
from Borgo Medioevale Muscadine Grape Cider in White (exclusive
blend of Carlos grapes) Blush (a mixture of our deep purple Noble and
bronze Carlos grapes) or Red (exclusive blend of Noble grapes). The
fully pasteurized cider is sold in 750 ml wine bottles that stay fresh
(unopened) for up to 2 years. In addition to the White and Red ciders
that we unveiled last fall, we’ve also added Muscadine Grape Preserves
to our product line. Choose from White Muscadine Grape Preserves
(with a smooth consistency and flavor perfect for those who love apricot
or peach flavors) or Red Muscadine Grape Preserves (for those who
enjoy a grapey, earthy spread on their morning toast instead of butter).
And, exclusively available this Summer, for a limited time, is our muchpraised Spiced Muscadine Butter. Delicious right off the spreading
knife or as a pumpkin-spice-infused alternative to traditional jam on
your morning carb of choice, this taste sensation is even versatile
enough to top your of breads or cakes, including cornbread, and
breakfast breads made of whole grains and berries. Although this is not a
Kosher product, our products are not made in a facility that processes
meat or dairy.
