DIRECTOR
M
erriam-Webster defines spring as “a time or season of growth
or development”. This statement couldn’t ring more true
in light of all the new projects on the horizon for Downtown
Rochester. This spring, new bike racks will be installed, thanks to
the efforts of the Green City Committee of Rochester. Also, the
first phase of the new Downtown Wayfinding Signage System will
begin to appear throughout the downtown.
We are very excited to unveil our new Alley Pedestrian
Enhancement Plan. In the Phase One, the alleys will be made
one-way. This will streamline traffic flow in the alleys. Phase Two
will bring creation of a pedestrian walk, plantings and lighting. All
amenities are designed to encourage traffic calming and make visitors
comfortable accessing the businesses from their rear entrances. To
create a sense of place, the alleys will be renamed as “Vias”.
These enhancements are in
preparation for the Main Street
Reconstruction Project in 2012.

will include new sidewalks, trees,
planters, benches, bike racks

1/3 cup diced red pepper
1/3 cup diced yellow pepper
1/3 cup julienned sundried tomatoes
1 teaspoon capers
Handful of snow peas
1/3 cup whole cilantro leaves
1/3 cup whole parsley leaves
3 roasted asparagus spears, cut into 1/2 inch lengths
4 oz. roasted salmon filet
1/8 cup rice wine vinegar or lemon juice
1/2 teaspoon Dijon mustard
Coarse salt and freshly ground black pepper
1/2 small shallot, minced
Zest from 1/4 lemon
3/8 cup extra virgin olive oil
Combine all salad ingredients, except salmon in
bowl. In a separate bowl, whisk together rice wine
vinegar, mustard, salt, pepper, shallot and lemon zest.
Drizzle in oil whisk constantly. Pour desired amount of
vinaigrette over the salad, tossing to coat. Flake the
salmon filet, add to salad and gently combine. Add
the salmon last in order to preserve the larger pieces.

1/2 pound fresh mussels
1 Tilapia filet, medium dice
1 pound fresh bay scallops
1 green bell pepper, large dice
1 red bell pepper, large dice
1 small yellow onion, small dice
1Tbsp garlic, minced
1/2 jalapeno, minced
1 chicken breast cut into medium sized pieces
1 stick of good salami - sopressata or a good
pepperoni, small dice
1 gallon strong vegetable stock
1/2 cup tomato paste
4 cups long grain rice
1/4 cup chopped fresh herbs (basil, oregano
and parsley)
1/4 cup olive oil
Salt and pepper
In a large pot (at least 4 gallon) heat olive oil, add
peppers, jalapeno, onion and garlic, saute until
golden brown season with salt and pepper. Add
chicken, and salami cook for 2 minutes, add seafood
and chopped herbs cook for 3 minutes. Then add
vegetable stock and tomato paste, bring to a boil and
add rice bring to a simmer and continue to simmer
uncovered until the rice has absorbed all of the liquid.
Check a piece of rice, if it has not reached desired
tenderness add more water 1 cup at a time and
continue to simmer until rice is cooked. Season with
salt and pepper, serve family style on a large platter.
3 cups sugar
1/2 cup water
4 cups whole milk
1/2 vanilla bean, scrape vanilla bean and split lengthwise
4 eggs
8 egg yolks
2 T dried lavender
Preheat the oven to 300 degrees. Pour 2 cups sugar into the
center of a deep saucepan. Carefully pour the water around the
sugar, trying not to splash any sugar onto the sides of the pan.
Do not stir; gently draw your finger through the center of the
sugar twice, making a cross, to moisten it. Over medium-high
heat, bring to a boil without stirring. Reduce the heat to a fast
simmer and cook without stirring until amber-caramel in color, 5
to 10 minutes. Immediately remove from the heat. Meanwhile, set
ramekins nearby. When the caramel is cooked, quickly pour into
the ramekins and swirl to coat the sides. Set aside to cool.
In a saucepan, bring the milk, lavender, and scraped vanilla bean
and bean pod to a boil over medium heat. Immediately turn off
heat and set aside to infuse. Meanwhile, in a large bowl, whisk
together the eggs, additional egg yolks, and the remaining 1 cup
sugar. Whisk about 1/2 cup of the hot milk into the egg mixture.
Whisk the remaining hot milk into the egg mixture. Strain the
mixture into a pitcher to smooth it and to remove the lavender and
vanilla bean pod. Pour the mixture into the caramel-lined ramekins
and place in a hot water bath. Bake in the center of the oven until
dry and set in the center, 45 to 50 minutes. Remove from the water
bath and let cool. Refrigerate at least 4 hours. (Or refrigerate until
ready to serve, up to 24 hours.) Turn out onto a serving platter.

Spring in
Rochester

Rochester Hills Museum at Van Hoosen Farm
S
pring in Rochester was highly
anticipated considering the
agricultural roots that shaped
our community. As winter thawed away,
hope for a new growing season was all
around. New calves at the Van Hoosen
Farm would help Dr. Sarah Van
Hoosen Jones win the premier breeder
banner in 1939 with Van Hoosen
Roamer Brilliant and Van Hoosen
Regal Creamelle leading the way. Milk
was sold at her farm store in Stoney
Creek Village and at her retail shop on
Main Street. In the early 1800s, wheat
was the main crop grown for food in
Rochester in the fields that had been
cleared of trees. As the honey supplied
ran out from the fall harvest, maple
sugar was harvested each spring to
supplement the meager supply of cane
sugar that came from Detroit with the
railroad in 1872.

were able to buy bridles for their horses

and farm implements and tools, pet
supplies, and seeds from Main Feed
and Seed Store on Main Street that had
been opened in the 1920s by Albert
Michalka. The Rochester Elevator
provided vast amounts of seed and
fertilizer to our residents each spring,
and the railroad brought a new crop of
travelling salesmen who could finally
navigate our muddy roads as they
thawed out selling the newest gadgets,
tonics, farm implements, fabrics,
wallpapers, and more.
While deer may be a pest to some
residents, woodchucks in the spring
were so prevalent that a bounty of fifty
cents was levied and between 1886 and
1902, $650 was paid.
The Chapman Mill Pond teemed
with fish each spring, and its banks
provided numerous adventures to our
younger residents. In 1887 the pond
drained and a nine pound pickerel
was captured. When the pond drained
again in the 1940s, it created a location
for the Rochester Hills Library, Royal
Park Hotel, US Post Office and Sunrise
Assisted Living.
The Ferry Morse Seed Farm
planted over 560 acres for seed
breeding and stock seed. Plants were
started in hotbeds during the winter
and then transplanted each spring
to the fields. Stock seeds harvested
were not sold, but rather were sent to
Detroit to be tested for germination
and vitality. In addition, 5,000 sheep
were raised to provide fertilizer for the
farm and the spring season created an
abundant supply of wool.
This spring, Rochester residents
will again plant and fertilize their
gardens, look for crayfish in Paint
Creek, and enjoy our community
events much like our residents did a
century ago.

A Rochester Area Nonprofit with a Global Reach
T
hough the founders of Leader Dog probably weren’t
contemplating how their decisions would effect the
organization 70 years in the future, they had the good
luck of choosing the Rochester area to locate their nonprofit.
This location has proven to be extremely beneficial due to its
easy access to a downtown, suburban and rural streets, parks
and businesses.
Rochester area residents have always welcomed Leader Dog
with open arms and continue to show their support through
volunteering as dog walkers, puppy raisers, breeding host
families and by making monetary donations. Local businesses,
government offices and schools have always accepted their
puppies and dogs in training into their facilities.
In May, 1939 Lions Leader Dog Foundation, as it was
called at the time, leased a small farm with a house, barn and
garage from the Martell family for $50/month. Located at
the SE corner of Rochester
and Avon roads, this is
still the current location
of Leader Dog. In 1942
they purchased the farm
and over the years bought
adjoining parcels of land
to form the 14 acre campus
they occupy today.
The farmhouse was used as a residence facility for
students for the month they were in class. It also housed staff
members, some of which occupied the house year round.
In the beginning, the dogs were kept in the unheated barn
with straw for insulation (unfit by today’s standards). The
barn housed dogs until 1946 when the first kennel was built.
The merchants and businesses of the Rochester area have
always welcomed Leader Dog’s canines – whether they were in
training with instructors or in training with students. Without
the strong support of area businesses, the dogs could not
obtain the everyday experiences needed to prepare them for
the total accessibility they enjoy when working with a person
that is blind.

going to Knapp’s as
much as the residents of
Rochester.
Beginning in 1948
when Leader Dog
accepted its first student
from Mexico, they have brought international focus to the
Rochester area. Leader Dog has served students from over 35
countries including Spain, Greece, Germany, Taiwan and
the Czech Republic. These international students return
home and extol the virtues of Leader Dog and the Rochester
community.

student from Mexico to graduate
from a U.S. dog guide school and
the first person in Mexico to use a
dog guide. Throughout the years
Leader Dog has placed 423 working dogs with deserving
individuals throughout Mexico.
In 1975 Leader Dog purchased property on Walnut
Street in downtown Rochester where they built a training
facility in 1976. The building gives students, dogs and
instructors a place to rest between training sessions.

the support and dedication that
Lions Clubs and Lions members
from all over the world continue to
give Leader Dog.
Leader Dogs for the Blind is in
need of loving families to host female breeding stock dogs in
their homes. More information on this and other Leader Dog

League of Southeastern Michigan. The shop features
