Recipe Corner
Virginians are known as some of the country’s best
(and proudest) barbecue chefs, so we’re not about
to tell you how to mix your sauce or cook your
meat. Instead, “ear’s” a healthy and delicious recipe
for Mexican Grilled Corn, courtesy of the Food
Network’s Tyler Florence.
Contest Corner

Ingredients:
4 ears corn
½ cup mayonnaise
1½ cups sour cream
¼ cup freshly chopped cilantro
1 cup freshly grated Parmesan
1 lime, juiced
Red chili powder, to taste
2 limes cut into wedges, for garnish
Directions:
1. Remove corn husks but leave cores attached.
2. Grill corn until slightly charred, turn so it cooks evenly.
3. Mix the mayonnaise, sour cream and cilantro in one bowl.
4. Grate the Parmesan in another bowl.
5. While corn is still warm, slather it with the mayo mix.
6. Squeeze lime juice over corn and sprinkle with Parmesan.
7. Season with chili powder, garnish with lime wedges and
serve.
