Creature of routine?
I
am guilty. Guilty of the same thing as many of you —
eating at the same handful of restaurants each week
despite literally hundreds of options within a few miles.
Why? Because I know the offerings at my favorite places
will be consistent and I am comfortable there.
Casa Azteca, one of the longest-lived among Milpitas’
eateries, is one place where many people including myself
consider themselves regulars. Many of the patrons don’t
need to order; their servers place their Ensalada Cancun or
Tostada Compuesta in for them. In cities as frenetic and
diverse as Milpitas and Fremont have become, it is nice to have a place so familiar.
But, to shake those of us from our routines, we have featured two new places in
this issue and another locale that you probably thought you knew, but may not.
The two new places, Yellow Cab Pizza Co. and Coffee Adventure Co., are among
the bustling restaurants within the recently-opened Seasons MarketPlace at
Landess, a Filipino-American mall.
Yellow Cab offers Asian twists on what you would expect from a New York-style
pizzeria. Try pastas glistening in Asian-inspired sauces and pizza pies with shitakes.
Coffee Adventure Co. goes beyond a coffeehouse with bistro-style upper-scale
food. It’s not your corner Starbucks, that’s for sure.
Finally, for those cursed by too many forgettable “hotel food” experiences,
Crowne Plaza’s Pasta’s Ristorante is forcing us to eat our words. Executive Chef
Brian Crump is blending a traditional menu with soul-warming dishes like
slow-cooked pork tenderloin in dark cherries and rustic grilled chicken spinoffs,
to defy the norms in Italian cuisine.
Talented young writer Amir Friedlander, a graduate of the University of
Riverside with a master’s in fine arts-creative writing, wrote all of the profiles in
this issue. Scott Hester, a Milpitas native and professional photographer-videographer, shot all of the images.

A Taste of
Old Mexico
Casa Azteca maintains authenticity through new ownership
AMIR FRIEDLANDER
he Aztecs knew a thing or two about
longevity, having lasted a couple centuries. Casa Azteca has been open at 20
N. Abel St. in Milpitas for 30 years — a
blink of an eye for the Aztecs, but quite impressive for an independently-owned restaurant.
Casa Azteca offers traditional Mexican cuisine
that its owners proudly tout as the best in the
Bay Area, and the proof lies in the number of
repeat customers.
“Everything is made completely and totally
from scratch,” says owner David Souza. “Even
beans are separated by hand.”
One must-try dish is the Enchiladas Suizas
($11.95 dinner) — two stuffed corn tortillas buried
in a mild red chili sauce and delicious cheese,
topped with smooth guacamole and sour cream.
Accompanying the meal are refried beans and
rice, perfectly seasoned and prepared fresh.
Another popular selection is deep-fried Chiles
Rellenos, mildly spiced in ranchera sauce ($11.95).
The house sauces are apparently so good, food
companies have asked Casa Azteca to bottle
them. Certainly the salsa, a dark and zesty blend,
should appear on supermarket shelves.

North Hollywood. After marrying in 1974, they
opened their first restaurant, El Paseo, in
Mountain View. In 1980 they relocated to
Milpitas and renamed their business Casa
Azteca. Socorro still works there as a hostess.
Souza was a loyal customer and, despite being
an insurance agent with no formal background
in restaurants, was compelled to buy Casa
Azteca to ensure its time-tested ways remained
untouched. “We’ve tried to maintain the same
traditions, the same foods,” Souza says.
The interior of Casa Azteca is distinguished
and inviting, livened by Tijuana artist Sanchez
Ozar’s vibrant paintings depicting Aztec warriors, beautiful maidens and families at the foot
of pyramids. An intricate Aztec calendar, handcrafted in Guadalajara, hangs on the wall.
For timeless, scrumptious Mexican food, you
don’t need to trek through any lost jungle. Casa
Azteca is right around the corner, and hopefully it will be there for a long, long while.
Casa Azteca Flan
Socorro shares a time-tested flan recipe
from her days as a young girl in a convent.

Syrup
1/2 cup sugar
Water
Flan
2 12-ounce cans evaporated milk
3 eggs
1 small package unflavored Knox Gelatin
1 ounce vanilla
1/2 cup sugar
20 ounces whole milk
Wash down your food with one of Casa
Azteca’s signature margaritas ($6.45-$7.45),
which recently caught the attention of national
tequila connoisseurs at TopMargaritas.com.
Also available are low-cholesterol chicken
fajitas ($12.95) and vegetarian burritos ($8.95),
as well as “gringo goodies” such as New York
steak ($14.95) and hamburger ($9.45).
The quality of the food is only half of the equation at Casa Azteca. The excellent service from veteran staff ensures a return visit. Souza estimates
that the combined restaurant experience between
all employees adds up to a whopping 175 years.
Manager Harihar Dahal greets customers by
name — many of whom have frequented Casa
Azteca since day one — as they sit at their own
reserved booth and are immediately presented
with their favorite dish without ordering. Dahal says
he has seen multiple generations dine at Casa Azteca,
and he doesn’t hesitate to call his patrons family.
Founders Beto and Socorro Cardenas were
both born in the little town of Atengo, Mexico,
but they didn’t meet until many years later in
Mix sugar and water in medium saucepan
and bring to light boil. Stir constantly and continue until sugar and water mixture turn golden
brown. Be careful, as too much heat will burn
the mixture. Set syrup aside.
Blend all flan ingredients into mixing bowl.
Place approximately one teaspoon syrup mixture
into the bottom of eight 10-ounce ramekins.
Gently pour flan mixture over the top of sauce
mixture to near the top of each ramekin. Place
filled ramekins in a water bath and cook at 325
degrees for two and a half hours or until top of
flan is light golden brown. Remove and refrigerate. To serve, cut around the top edge of the
ramekin with a knife, put a small serving plate
on top and quickly invert. The flan should
release onto the plate and the syrup mixture fill
the plate bottom. Top with whipped cream if
desired. Serves eight.
Casa Azteca provides catering and delivery
services, as well as a banquet room for events of
up to 75 people. Casa Azteca is located at 20 N.

Pasta’s Ristorante Executive Chef Brian Crump’s
chicken ratatouille diverges from the norm
using grilled vegetables.
New Classics
at the Crowne
Chef doesn’t let Italian name
limit restaurant’s menu
AMIR FRIEDLANDER
he sign outside Crowne Plaza’s restaurant at 777
Bellew Drive says Pasta’s Ristorante, leading you
to believe this is an exclusively Italian joint. But
Executive Chef Brian Crump refuses to limit
himself to one genre. With 30 years of experience,
Crump is always on the lookout for new twists on old
favorites, evolving menus and the reinvention of food.
Crump, a Detroit native, received a small amount of
formal training in San Francisco but proclaims himself a self-taught chef.
“I like to say I graduated from the college of the
streets,” he explains jovially. Crump has cooked for
Crowne Plaza a decade and has been at the Milpitas
location for the past three years.
Crump emphasizes that most of his inspiration
comes from pleasing customers with new and exciting
food. Thus, he dances outside the borders of traditional Italian cuisine.
Lovers of Italian will go for classics such as the
chicken scaloppini ($12) or the winter Caprese salad
($8) with oven-dried plum tomatoes, fresh mozzarella
and basil pesto.
To sample Crump’s creativity, however, order the
grilled chicken ratatouille ($12). Traditionally a stew,
Crump has transformed this ratatouille into a colorful,
heart-healthy dish of soft grilled chicken, lightly drizzled with garlic butter, alongside roasted red peppers
and tomatoes, savory grilled zucchini and eggplant.
Another popular choice that completely deviates
from any Italian norm is the Smoky Burger ($11), a

Crump shares this revamped classic that’s
become a popular choice at Pasta’s.

1 cup lowfat Italian dressing
1 teaspoon fresh thyme
1 teaspoon fresh oregano
1 teaspoon fresh basil
1 ounce chopped garlic

ground chuck patty spiced with a special house blend
of herbs and Worcestershire sauce that locks in moisture
and flavor. The Smoky Burger is also packed with
smoked bacon, cheese and crispy onion straws.
For dessert, Pasta’s offers shot glass servings of creamy
chocolate mousse, s’mores, rich cheesecake or berry parfait ($2 each) — just enough to satisfy a sweet tooth
without inspiring guilt in the calorie-conscious patron.
The breakfast buffet at Pasta’s ($18.95) provides
eight hot items that change daily, including an omelet
station and waffles.
Crump is eager to satisfy his customers any way,
even preparing special dishes for homesick hotel
guests or plain old chicken noodle soup for those feeling under the weather. Pasta’s, its neighboring Salúte
Lounge and Crowne Plaza as a whole also organize
client appreciation events. Recently they partnered
with Second Harvest Food Bank for a fund-raiser.
Out-of-towners staying at the Crowne and native
Milpitans alike will enjoy exploring Crump’s latest
creations, whether the food is distinctly Italian or
something refreshingly unique.
Vegetables
1/4 cup of zucchini
1/4 cup of Italian or baby eggplant
1/4 cup of red pepper
1/4 cup of yellow onion
1/4 cup cherry tomatoes
1 ounce extra virgin olive oil
Red potatoes
4 medium-sized red potatoes
Par boil potatoes until just done, let cool. Slice each
potato into three pieces
Marinate the chicken in the dressing with herbs,
garlic and pepper for at least one hour. Cut the vegetables into wedges and toss with the oil. Grill the chicken until fully cooked (about 10 minutes), pull the
chicken from grill and let rest. While chicken is resting, grill vegetables and potatoes until tender. Arrange
vegetables on a plate, place chicken on top of the vegetables and serve family-style.

New York’s Finest layers Italian sausage, ham, pepperoni, bacon, ground beef and fresh vegetables on a crispy crust.
A Slice of Manhattan ... from the Pacific Rim
Yellow Cab is a popular chain originally from the Philippines
AMIR FRIEDLANDER
id someone call a cab? Yellow Cab Pizza
Co., located in Seasons MarketPlace, won’t
pick you up from anywhere, but they will
deliver. Although originally from the
Philippines, Yellow Cab takes on the Big Apple with
authentic New York-style pizzas, made only from
fresh and succulent ingredients.
Since its birth in 2001, Yellow Cab has grown from
15 employees to 1,500, and become a popular chain
throughout the Philippines, Malaysia and Qatar. The
pizzeria at Seasons, which opened in June, has the
distinction of being the only Yellow Cab in the
United States, and the food is attracting not just the
Pacific Asian community
How authentic is the New York-style pizza? For
starters, it’s sized the same as New York pizza pies,
available in a 10-inch, 14-inch, and a whopping 18inch. Metropolitan portions are generously topped
with fresh vegetables that never, ever come from a can.

The secret weapon is the crust.
“That is our edge,” says restaurant manager Tristan
Gopez. He explains how the dough is baked on the
spot without the oily residue found on most commercial pizzas, which emerge from a freezer.
Each pizza at Yellow Cab has a distinct taste, incorporating vibrant ingredients such as fresh meats,
zucchini, eggplant and multiple varieties of mushrooms. Instead of the usual base of tomato sauce,
Yellow Cab kicks things up with bases of barbecue
chicken sauce, tomato salsa or wine-butter sauce.
The most popular pizza, New York’s Finest ($12.79
for the 10-inch pie), layers Italian sausage, ham, pepperoni, bacon and ground beef with a hearty serving
of veggies on a crispy crust. This bestseller goes well
with the chili olive oil.
Not in a pizza mood? Try the Charlie Chan Chicken
Pasta ($6.29), a thick blend of noodles, grilled chicken
and shitake mushrooms smothered in a spicy Asianstyle sauce and peanuts. Or sample the hot wings ($5.29
for four pieces). In other restaurants, the hot wings
might be tired little strips, but at Yellow Cab you get an
actual wing — guaranteed to fire up your tongue —
along with creamy garlic ranch sauce, also made fresh.
Gopez invites everyone to try the specialty deals going
on now, such as a two-topping 14-inch for $13.99; $2
off or free hot wings with the purchase of the No. 4
cheese pizza ($10.59 for the 10-inch), Corona Chicken
Salsa pizza ($10.99 for the 10-inch), Barbecue Chicken
pizza ($10.99 for the 10-inch) or Four Seasons sampler
pizza ($12.99 for the 10-inch); a meal of half pasta, two
slices of 14-inch pizza and a soda for $7.59; a meal of
half pasta, one slice of 14-inch pizza, one-piece hot
wing and a soda for $6.99; and a $19.99 meal that
includes one 14-inch New York Classic pizza, fourpiece hot wings and a bottle of Coke.
Yellow Cab delivers within a five-mile radius,
although the yellow-and-black-checkered Vespa
parked outside — truly an icon of authentic New
York pizza — is, for now, merely decorative.
Yellow Cab Pizza Co. is located within Seasons
MarketPlace at Landess at 1525 Landess Ave. No.
147, (408) 946-9222, yellowcabpizza.com/usa.

Adventure Co. at Seasons
MarketPlace combines Filipino
comfort food with the elegant presentation
of an upscale bistro.
Since May it has offered popular Filipino
dishes such as the Adobo Salvador ($5.95 for
two pieces), a buttery-soft blend of shredded
chicken and pork in a grilled pan de sal
sandwich, served with salad dressed in a citrusy vinaigrette. But Coffee Adventure doesn’t limit itself to the Philippines; also available is a wide variety of pastas, soups and

Naturally, you can’t pass up the coffee,
grown in the Philippines’ Mountain Province.

creations of any major American coffee chain.

Coffee Adventure’s interior, far from being
the noisy postmodern clutter you’d expect in a
coffee shop, is elegantly relaxing, colored in
subdued maroons and browns, with original
artwork on the walls and chandeliers overhead.
It’s an excellent place for a business luncheon.
The Filipino American Chamber of Commerce
has even held mixers at Coffee Adventure,
according to owner D.D. Peña.
Peña is no stranger to the coffee industry,
having been involved with Figaro Coffee Co., a
vast chain throughout the Philippines. Peña
and his business partner, formerly his classmate in law school, have evolved their menu
from simple sandwiches to varied rice meals.
And the menu is expected to get larger next
year.
“What we’re trying to position ourselves as is
your neighborhood coffee shop where you
actually have a real meal,” Peña says. “And it’s
for everybody.”
Beginning mid-January, open microphone
nights will showcase local talent, adding
another unique touch to this independent café.
Coffee Adventure provides catering services
to many businesses, notably Kaiser’s Milpitas,
Mountain View and Santa Clara facilities, Peña
says. Coffee Adventure also delivers and has
