Begin the tour by walking along St-Louis Street and see the first line of Québec’s
fortifications on the way to the Garrison Club for the lunch, a prestigious private
club with a rich history. Brigadier-General Richard Giguère will join the group
for lunch.
After the meal, a map will be set up for the participants to discuss and
illustrate the sieges of Québec. Then, the group leaves the venue, passing by
the fortification walls and the Parliament Building. The Parliament Building
is imposing, with its four wings forming a square roughly 100 meters on each
side. Designed by the architect Eugène-Étienne Taché and built between 1877
and 1886, on Québec’s foremost national historic site, the eloquent architecture
offers a veritable fresco of Québec history.
The tour continues with a visit of the National Battlefields Park, site of the
famous Battle of the Plains of Abraham, where the British conquered Québec
in 1759. The view of the well-preserved Martello towers, the hilly park, and the
nearby Citadelle illustrate the strategic importance of the site. Located atop
the Cap Diamant, the Citadelle constitutes the eastern flank of Québec City’s
fortifications. Largest British fortress built in North America, in a unique
location, it is still an active military garrison. Some of the walls enclose 300
years of military history in Québec City, spanning the French, British and
Canadian periods. The summer residence of the Governor General of Canada
stands within La Citadelle.

form characteristic of Vauban fortifications. Spectacular views of the city and
the St. Lawrence River await the participants.

The activity begins with a delicious lunch at Le Continental Restaurant, only
steps away from the Fairmont le Château Frontenac. It is housed in an elegant
Victorian residence built in 1845 by a former member of the Justice Court of
Canada, the honourable Jean-Thomas Taschereau.
After the lunch, the participants will visit the Upper Town’s Places d’Armes and
the Dufferin Terrace, a vast boardwalk with impressive views of the St. Lawrence
River, the Lower Town and the Citadelle. They’ll see cannons brought to Québec
by the British at the end of the 18th century, before entering the Governors’
Park with its monument to the memory of Generals Wolfe and Montcalm, both
mortally wounded during the famous Battle of the Plains of Abraham in 1759.
Along lively narrow streets, admire residential sectors with their domestic
architecture, before entering magnificent Notre-Dame-de-Québec Basilica. On
the way towards the Lower Town, a stop is planned at the Seminary of Québec,
founded in 1663. Now occupied by the School of Architecture of Laval University,
this institution is a remarkable collection of buildings erected around enclosed
courtyards.
In the Lower Town the participants will discover historic Place Royale, where
the government has restored merchants’ houses from the time of New France.
Cobbled streets, stone houses and tourists perpetuate most certainly the
liveliness of past times.

Our tour begins with lunch at Chez Jules, a French bistro located in a 19thcentury house across the square from the Chateau Frontenac. Then, just a
few minutes walk away, discover the living history, art and architecture of
two of Québec’s oldest institutions - one English, the other French. Visit the
Cathedral of the Holy Trinity (1800-1804), the first Anglican Cathedral built
outside the British Isles. Among the treasures you will see in the Cathedral is
an exceptional silver Communion Service, a gift from King George III, who
commissioned the Royal Goldsmiths, Rundell & Bridge, to make these works
especially for this church. The renowned firm of Rundell & Bridge, which served
four successive monarchs, made the crown of Queen Victoria.
Your next stop will be the Ursuline Convent. In 1639, the Governor of New
France and the inhabitants of the tiny settlement of Québec gathered to greet a
long-awaited ship from France. On board were nuns from two religious orders:
the Augustinian Sisters had come to establish Québec’s first hospital, while the
Ursuline Nuns had come to establish the first girl’s school of the colony. Over
the years these institutions have expanded and evolved but the Hôtel-Dieu and
the Ursuline convent have retained ancient buildings and works of art dating
back to the 17th and 18th centuries. In the Ursuline Convent, see the oldest
sculptural ensemble to have survived from the French Regime and magnificent
altar frontals embroidered with silver and gold thread and the finest silks.
Board your coach for a short ride to the National Museum of Fine Arts of
Québec, located in the heart of the majestic Battlefields Park. The impressive
building overlooks the St. Lawrence River; its sculpted ceilings, capital- topped
columns, elegant-spaces and other architectural features are truly a source
of enchantment for visitors. What’s more, with the construction of the new
Pierre Lassonde pavilion, the museum is finally able to exhibit a significant
percentage of its vast collections. The glass building, offering transparency and
bathed by natural light, offers an inspiring environment where art, architecture
and nature meet. Among the highlights will be our visit of the museum’s superb
collection of Inuit (Eskimo) art from Nunavik, Québec, and other northern
regions of Canada.

Born in France about forty years ago, canyoneering means traveling in canyons
using a variety of techniques such as stream hiking, abseiling, swimming and
jumping. Most people are fit to do the activity with no experience, but some
individuals prone to vertigo will appreciate the vertigo therapeutic skills of
the professional canyoneering guides. Everyone will live an exhilarating and
unforgettable experience suspended close to a waterfall!
Canyoneering will be led by passionate expert canyoneer, Marc Tremblay.
Box lunches will be provided on the bus to Mont Sainte Anne, with a warm and
dry suite following the excursion, where you can change and enjoy reliving the
experience over hot chocolate.
Levels of difficulty: beginner to intermediate, moderate physical endurance
activity.

This is a delightful tour to do in October when maple tree foliage becomes
blazing red. After a short 10-minute drive, you will be lead through the
magnificent region along the majestic St. Lawrence River and onto the île
d’Orléans.
The early pioneers of New France settled down in this region at the beginning
of the 17th century. Nowadays, its residents work hard to preserve its
agricultural tradition to which the people of Québec answer gracefully by
visiting its strawberry farms and orchards at harvest time to pick fruits, as well
as its sugar shacks for traditional end of winter outings.
Lunch will take place at Les Ancêtres. This is an authentic, old fashioned venue
that serves traditional Québec cuisine. Your guests will be charmed by the
traditional dishes and the hospitality of the owners, as they welcome them in
their old-fashioned 300-year old house.
After lunch, a visit and tasting is scheduled at the Bilodeau Cider House. The
family-owned orchard of over 3000 trees has mastered since 1982 the art of Ice
Cider, re-establishing the popularity of this amazing and well-adapted fruit.
They have recently been awarded for their 2016 edition of Le Breuvage des
Dieux ice cider (Beverage of the Gods), Petit Bonheur and Maple Mistelle.

shows, and gave numerous lectures while he was the lead chef of the Fairmont Le
Château Frontenac for 20 years. Chef Jean Soulard will lead an incredible culinary

The activity begins with a tantalizing gourmet demonstration and foie gras tasting/

respectful farming, Le Canard Goulu offers a top-of-the-range variety of Muskovit
duck products. This experience will delight the epicurean in them!
After the meal, Chef Jean Soulard, one of the local produce all-time best
ambassadors, will lead you through Québec’s farmer’s market.
The market is located along the St. Lawrence River and boasts ``produits du

Chef Soulard will lead a tasting adventure through the market while sharing stories
about his experience at the Fairmont Le Château Frontenac.
Jean Soulard grew up in a little town named La Gaubretière, fifty kilometers from
Roche-sur-Yon (France). Jean began his studies at the community school. In 1966, he
