Kambolis, top chef recognized for sustainability
Suspects nabbed

B.C. restaurateur honoured for contribution to ocean conservation awareness

Harry Kambolis, owner of C,
Raincity Grill and Nu restaurants, and his executive chef
Robert Clark got their due Sunday when SeaWeb, an international ocean conservation organization, named them 2011
Seafood Champions at the International Boston Seafood Show.
The award, which was also
given to four others from
around the world, honours
those who contributed to
improving practices and awareness of responsibly produced
seafood.
“A true Seafood Champion
is a leader who demonstrates
dedication to responsibility
in the seafood industry,” said
SeaWeb president Dawn Martin. “Each of this year’s winners
is paving the way toward environmental and economical sustainability to ensure a healthy
future seafood.”
Kambolis and Clark have
indeed led the charge, not only
in Vancouver but in Canada, in
bringing ocean conservation to
the fore. Clark co-founded the
Ocean Wise program with the
Vancouver Aquarium. The program, which encourages restaurateurs to remove unsustainable seafoods from menus
and turn to green choices, was
based on C restaurant’s efforts
in working toward a green
menu. Ocean Wise is now being
implemented in other cities in
Canada.
C also was the first in the city
to include names of local seafood suppliers on their menu,
highlighting local sourcing.
Clark is grateful to Kambolis
for his commitment. “The reality is, Harry allowed me to do
it. He made a lot of financial
sacrifices to demonstrate its
success. The most outrageous
example is, for years, we bought
Kagan Bay scallops from the
Queen Charlottes, paying $54
a pound for the local, sustainable product instead of $15 or
$16 a pound others were paying
for non-local scallops. It was a
loss leader but it demonstrated
it was the right thing to do.”
Clark is also part of the Chefs
Table Society and one of its
accomplishments is taking back
our local spot prawns. Spot
prawns were almost exclusively
exported to Japan and the local
market was left with the ones
the Japanese didn’t want. The
Spot Prawn Festival was one of
the ways Clark and other chefs
were able to convince fishermen to sell locally and see this
market as a viable one.
“I’m thrilled,” Clark says of
the award. “I’d like to believe
we’re accepting it on behalf of
our entire community in Vancouver. I think we really put a
lot of effort in sustainability.
It’s the birthplace of Ocean
Wise, Sea Choice and Greenpeace. It demonstrates and
acknowledges work that we’re
all doing here in Vancouver. I
think Canada as a whole has a
pretty embarrassing environmental record but this is shining a little light on us.”
Meanwhile, C restaurant is
offering the menu that Clark
and C restaurant chef Lee
Humphries cooked at the 2011
Canadian Culinary Championship’s Black Box competition.
The four-course $55 menu
includes: smoked pork ragout,
bison cannelloni with bison
tartare, Dungeness crab cake,
and citrus-glazed Fraser Valley
quail breast. And for dessert,
“Chocolate Textures.”

RCMP arrested four people
after a man was attacked while
walking in Campbell River on
Friday.
The victim, in his early 20s,
was walking on Dogwood Street
around 7 p.m. when he was
approached by a group asking for his cigarettes, Campbell
River RCMP Cpl. Donovan Tait
said.
Members of the group
punched the man and pulled his
jacket over his head, Tait said.
The man fled and called 911.
He suffered injuries to his
face.
RCMP arrested four suspects a few blocks away after a
brief foot chase. All are Campbell River residents known to
police.

Small earthquake hits north island
A small earthquake hit the
northern end of Vancouver
Island Saturday night, causing
no significant damage. Sensors
from the U.S. Geological Survey
picked up a relatively shallow
4.4-magnitude earthquake 100
kilometres south-southwest
of Port Hardy, off the Brooks
Peninsula. The quake, which
occurred at 9:20 p.m., took
place 9 km into the Earth’s
crust along the coast where
the Juan de Fuca Plate subducts under the North American Plate.
