In western countries, fermented food is being treated as
personal preference, whereas the fermented food, Jang
in Korea is widely used as seasoning; the Jang it must be

Yak-Gochujang (stir-fried Gochujang) is a type of red pepper paste mixed with nuts, honey and
sesame oil, which is commonly used as sauce for Bibimbap. It is good to mix Yak-Gochujang with
fried rice or Bibimbap mixed with vegetable. It is also recommended to buy meatball from the
market and mince and mix them with rice.

3 Oven-cook: Preheat at 200℃ and grilled marinated chicken for 15 minutes.
Add rest of basic sauce once on grilled chicken wings (add spicy sauce if you want them spicy)

lemon zest 1T, water starch 1T, cooking oil ½T
1 Parboil Tofu with boiling salt water, and mash them up by pressing with cooking knife.
2 Mash up the steamed sweet potato.
3 Panfry chopped onions until it’s completely dried and looks clear.
4 Panfry walnuts and pine nuts slightly and crush them.
5 Mix all the ingredients and make a thick patty.
Coat the patty with starch, and panfry it on greased pan.
6 Making Doenjang sauce: chop shiitake mushroom and red and green chili peppers.
Panfry chopped ingredients on greased pan, add broth, Doenjang, white wine, lemon zest
and mix them thoroughly. When it starts to boil, add water starch and cook it up
until it is nicely thickened.
Tofu Steak
Tofu steak is the right choice for vegetarians, elderly people, and toddlers.
The patty is made with crush tofu, steamed sweet potato, and vegetables.
Therefore the texture is very soft and adding walnuts or pine nuts will
add more flavor and better texture to it. Doenjang is the main ingredient
for the sauce. Because both Doenjang and tofu is made with beans,
they taste very well together.

Doenjang Curry Sauce
Grilled Fish
Doenjang curry sauce grilled fish is done by grilling fish after spreading

Main ingredients fish fillet 200g, crushed garlic 1t, ground ginger ½t, white wine ½t,
little bit of black pepper, small green onion 1 stem
Doenjang curry sauce Doenjang 1T, whipped cream ¼t, sugar 1t, garlic ½t
1 Wash and rinse fish fillet thoroughly, and marinate them with garlic, ginger, white wine and
black pepper.
2 Lightly spread cooking oil on an oven baking pan and place fish fillets on it. Spread little bit of
oil on the top of the fish once more and prebake them in the oven preheated at 180℃.
3 Add garlics to whipped cream and boil it. Add curry when boiling to give it color.
Add Doenjang and blend them with blender to complete the sauce.
4 Add Doenjang curry sauce on the prebaked fillet fish and baked them for five more minutes.
Add thinly sliced small green onion and bake for two more minutes.

Ssamjang Pilaf

Main ingredients water soaked rice 2C, water 1½C, carrot 10g, red chili pepper 1,
bokchoy 50g, shiitake mushrooms 4, chopped beef 50g, chopped green onion 2T,
little bit of sesame oil, sesame seed, and cooking oil
Beef sauce Ganjang 1T, sugar ½T, little bit of crushed garlic and black pepper
Ssamjang sauce Ssamjang 1T, butter 1T, clear rice wine 2T, starch syrup ½T
1 Add enough water to rice and cook it.
2 Slice carrots and red chili peppers thinly to about 1cm long.
Parboil bokchoy in the hot salt water, drain them and cut them into the same size.
3 Slice shiitake mushrooms thinly to about 0.5cm thin.
Season the chopped beef with beef sauce.
4 Panfry carrots, red chili pepper, and shiitake mushroom separately.
Melt butter on the sauce pan, and add Ssamjang sauce ingredients and boil it.
5 Spread cooking oils and panfry chopped green onion first, add rice and Ssamjang sauce
and mix them. Add rest of the ingredients and mix thoroughly.
