SPICY CHORIZO SODA
FARL PIZZA
SERVES
2-4
‘Soda farls make a great impromptu pizza base.
I tend to whip them up with whatever I have in the fridge.
This is one of my favourite combos.’
INGREDIENTS
METHOD
4 RANKIN SELECTION SODA FARLS
Preheat the oven to 200C (400F), gas mark 6
and preheat the grill if you prefer a crispier base.
If using the grill, arrange the soda farls cut side
up on a grill rack and lightly toast. Spread the
sun-dried tomato pesto over the cut side of the
soda farls and scatter the mozzarella or Cheddar
on top. Add the mixed pepper dice, chorizo
slices, green chilli rings and black olives and
drizzle a little olive oil over each one.
8 TBSP SUN-DRIED TOMATO PESTO
200G (7OZ) GRATED MOZZARELLA OR
CHEDDAR (FROM A PACKET IS FINE)
1/2 SMALL RED, YELLOW AND GREEN
PEPPER, SEEDED AND CUT INTO DICE
150G (5OZ) THINLY SLICED CHORIZO
2 MILD GREEN CHILLIES, THINLY
SLICED INTO RINGS
100G (4OZ) STONED BLACK OLIVES
ABOUT 4 TBSP OLIVE OIL
Arrange the prepared soda-pizzas on a large
baking sheet and bake in the oven for about 8
minutes until the cheese is bubbling and the
edges are lightly toasted. Put the spicy chorizo
soda-pizzas on warmed plates to serve.
