GREEK STYLE CHICKEN AND POTATOES
A ONE PAN MEAL

Here’s What You Need
4 skin-on chicken thighs*
4 large potatoes
Salt & Pepper
¼ cup dry white wine
¼ cup chicken stock
Feta cheese
Optional: onions, carrots, asparagus,
garlic
The Marinade
4 tablespoons fresh lemon juice and zest
4 tablespoons olive oil
1 tablespoons garlic cloves, minced
A few springs of fresh thyme
2 tablespoons sundried tomatoes
Salt & pepper to taste
Pinch of red chili flakes
Idaho Potatoes

Here’s What You Do
In a large bowl or zip lock bag, add the Greek style marinade and coat chicken evenly.
Allow the chicken to marinade for at least 10 minutes up to 1 hour. Preheat oven to
400 degrees.
Rinse and cut potatoes in quarters. Evenly coat a roasting pan with olive oil. Arrange
the chicken thighs skin side up and fill the empty spaces with potatoes. Add half of
the remaining marinade, chicken stock and white wine to the pan. Make sure to not
cover the chicken with cooking liquid.
Place roasting pan in the middle rack of your oven and cook chicken until chicken
juices run clear, about 30 minutes. Broil the chicken for 3 minutes until skin is golden
brown. Remove from oven and transfer chicken and potatoes to a serving tray. Strain
the remaining pan drippings for a simple gravy. Top chicken and potatoes with feta
cheese and fresh thyme or parsley. Enjoy your stress fee dinner and decide what you
will do with your free time.
Plating Tip: Serve family style- one big plate in the middle and let everyone share.
Recipe can be easily modified with different ingredients. Get creative!
*Bone-in is optional. I prefer chicken thighs without the bone, it can be a lot easier
to eat.
** Add the other half of cooking liquid half way through cook if need.
