This recipe was completely accidental. My partner, Brad, has a great intolerance to cacao (which is
very common for many people with gluten sensitivities), therefore any chocolate products are off
the list for him. But, he misses chocolate. By pure experimentation, I ended up using cacao butter
(which is acceptable to most people) and carob powder. The combination of cacao butter, carob
powder, vanilla and cinnamon is surprisingly similar to chocolate. How to make

Time to refrigerate: 30 minutes
Serves: 6 servings
1. 
Slowly melt he cacao butter but don’t let it overheat
till it starts to bubble (it will then fry the carob
powder).
Equipment: baking or chocolate mold,
mixing bowl and a whisk

Pour to a mixing bowl and whisk in one tablespoon
on carob powder at the time. If you add all the
powder at once, it will clump up.
3. 
Finally, whisk in salt and vanilla extract.

The mixture should now be as thick as a melted
conventional chocolate. Pour the mixture to a
baking or chocolate mold and let it chill in the
fridge for 30 minutes to harden.

Tips: You can use many creative variation of this
recipe by adding various fruit and spices. The recipe
I photographed uses cherries.

8 tbsp carob powder
1 tsp vanilla extract
pinch of fine sea salt
Fruit Bowl Jelly

How often can you say that a dessert can be healing? Well, this one can claim it for
the gelatin it is based on. Time to prepare: 30 minutes
Time to refrigerate: 4 hours
Serves: 6-8 servings
How to make
Equipment: juicer (to juice oranges and ginger).
Alternatively, use an orange squeezer and skip
the ginger. Nutribullet would work, too – blend
and squeeze juice through a cheese cloth or
coffee filter.
2.  Warm the juice up in a pan, stirring constantly,
until very warm to the touch. Do not bring to a
boil. Remove pan from the heat and whisk in
gelatin. Do it slowly and in stages. Too much
gelatin at once will create lumps which are no fun
to eat.
Ingredients:
•  Handful of strawberries, chopped
•  1 ripe banana or blackened plantain, cut to
pieces
•  handful of blueberries
•  4 figs, cut to quarters
•  3 oranges
•  1 inch ginger
•  2 tbsp gelatin
•  1 cup coconut milk
1.  Juice oranges and ginger.
3.  Combine all fruit and our warm orange juice (plus
gelatin) in a serving bowl.
4.  Cool for about 4 hours in the fridge.
5.  Gently separate the jelly from the edges of the
bowl, turn it upside down, give it a bit of a knock
to get it to a serving plate.
6.  Pour coconut milk over the main jelly formation
or onto each individual serving bowl.
Coconut Milk Yogurt
Healing food:
•  Coconut Milk
•  Probiotics
Making your own dairy-free, probiotic-rich yogurt is easy and absolutely delicious.
Top yogurt with fresh fruit, nuts, or seeds.
Time to prepare: 10 minutes
Time to Culture: 6 – 8 hours
Serves: 4
How to make
1. 
Equipment: saucepan, thermometer,
mixing bowl, whisk, mason jar, yogurt
maker.
Gently heat one quart coconut
milk to 110F or 43C.
2. 
Stir in ⅛ to ¼ teaspoon starter
culture.
Ingredients

•  1 qt coconut milk, preferably fresh
though canned will do
•  ⅛ to ¼ tsp starter culture or probiotic
like GutPro
Transfer the mixture to a yogurt
maker and culture the yogurt at
108F (or 42C) for six to eight
hours.
4. 
Transfer to the fridge.
