Pioneer Woman’s Perfect Pot Roast
Ingredients
• 1 whole 4-5lb chuck roast (on sale
$3.19lb!)
• 2 tablespoons olive oil
• 2 whole onions
• 6-8 whole carrots
• 1 cup red wine (optional—you can
use beef broth instead)
• 2-3 cups beef broth
• 3 sprigs fresh thyme, or 1-1 ½ tsp dried
• 3 sprigs fresh rosemary, or 1-1 ½ tsp dried
• kosher salt to taste
• pepper to taste
Directions
• First and foremost, choose a nicely marbled piece of meat. This will
enhance the flavor of your pot roast like nothing else. Generously salt
(kosher salt adheres better to the meat) and pepper your chuck roast.
• Heat a large pot or Dutch oven over medium-high heat. Then add 2 to 3
tablespoons of olive oil (or you can do a butter/olive oil split).
• Cut two onions in half and cut 6 to 8 carrots into 2-inch slices (you can
peel them, but you don’t have to). When the oil in the pot is very hot (but
not smoking), add in the halved onions, browning them on one side and
then the other. Remove the onions to a plate.
• Throw the carrots into the same very hot pan and toss them around a bit
until slightly browned, about a minute or so.
• If needed, add a bit more olive oil to the very hot pan. Place the meat in
the pan and sear it for about a minute on all sides until it is nice and brown
all over. Remove the roast to a plate.
• With the burner still on high, use either red wine or beef broth (about 1
cup) to deglaze the pan, scraping the bottom with a whisk to get all of that
wonderful flavor up.
• When the bottom of the pan is sufficiently deglazed, place the roast back
into the pan and add enough beef stock to cover the meat halfway (about
2 to 3 cups). Add in the onion and the carrots, as well as 3 or 4 sprigs of
fresh rosemary and about 3 sprigs of fresh thyme.
• Put the lid on, then roast in a 275F oven for 3 hours (for a 3-pound roast).
For a 4 to 5-pound roast, plan on 4 hours.
• I usually cook a 2 ½-3lb roast and it is usually done in 2-2 ½ hours!
Don’t wait until the 3-hour mark to check it for the first time!
Make it a Meal! I always make this pot roast with a big pot of homemade
creamy mashed potatoes (5lb bag on sale $1.69ea!) and some warm rolls
(Rhodes frozen rolls are my personal favorite!) This is sure to be a hearty
meal that any dad would love on Father’s Day!

Susan Diane Few Douglas, age 52 of Shepherd, Texas, passed away
Wednesday, June 3, 2015. She was born January 22, 1963 in Livingston,
Texas to parents Charles C. Dodd and Evelyn Marie Dodd. She is preceded
in death by her mother, Evelyn Marie Dodd.
Survivors include her husband, Tommy Douglas; father, Charles C.
Dodd; step-daughters, Tammy Loving and Bonnie Lindig; sons, Gary
Anderson and John Few Jr.; sisters, Debbie Shrader and husband Ralph
Shrader and Cindy Finley and husband David Finley; brother, Charles
Dodd Jr., and wife Carol Dodd; grandchildren, Gage Anderson and Logan
Anderson; step-grandchildren, Brady and Bryanna Loving and Mason and
Jenna Lindig; numerous other relatives and friends.
Visitation was held from 5:00 p.m. – 8:00 p.m., Friday, June 5, 2015 at
Pace Stancil Funeral Home, Cleveland, Texas. Services were held at 3:30
p.m., Saturday, June 6, 2015 at Pace Stancil Chapel, Cleveland, Texas.
Interment will follow at Old Big Creek, Shepherd, Texas.

Due to the increasing number of business ad submissions there will now
be a fee implemented for submitting a business advertisement into the
Shepherd News newspaper as of May 28, 2015. The fee will be $20 per
business advertisement per week, or $75 for four weeks. Ad cannot exceed
the size of a regular business card. Payments will need to be given to
McClain’s Courtesy Booth at time of submission. If you are emailing your
ad directly to Shepherd News, a payment will still need to be dropped by
the Courtesy Booth. We will only be able to take cash for advertisements at
this time. All advertisements subject to available space. If allotted space is
not available, ad will be pushed back to a later week at editor’s discretion.
