PUNTARELLE

A member of the chicory family with long,
tapered jagged leaves, Puntarelle blends
the spiciness of arugula with the delicate
sweetness of fennel. Catalogna, Chichorium
Intybus or Italian dandelion are other
names for this winter variety. Both the
leaves and the shoots are edible and can
be served cooked or raw. It is delicious
paired with other strong flavors, such as
anchovies, lemon juice or capers.
