1 Päckchen Puddingpulver Vanille für 1/2 Liter
Flüssigkeit
750g Schlagsahne
1 Päckchen Vanillin-Zucker
Mehl für die Arbeitsfläche
Fett für die Form
Zubereitung:
Etwas Mehl auf die Arbeitsfläche sieben. In die Mitte eine Mulde drücken. Das Ei, 100g
Zucker, Backpulver sowie Butter hineingeben. Alles rasch zu einem glatten Teig verkneten. Teig zugedeckt ca. 30 Minuten kühl stellen. Rosinen auf einem Sieb waschen und
abtropfen lassen. Rosinen mit Rum beträufeln und zugedeckt durchziehen lassen. Äpfel
waschen, Kerngehäuse mit Apfelausstecher ausstechen. Den Teig auf einer leicht bemehlten
Arbeitsfläche zu einem Kreis (Durchmesser 31 cm) ausrollen. Eine gefettete Springform
(Durchmesser 26 cm) damit auslegen, und Teig am Formrand andrücken. Die Äpfel in die
Springform setzen und mit Rosinen füllen. Das Puddingpulver mit 125g Sahne glattrühren.
Die übrige Sahne, Vanillinzucker sowie den restlichen Zucker aufkochen. Das angerührte
Puddingpulver in die kochende Sahne rühren, nochmals aufkochen lassen und über die
Äpfel verteilen. Den Kuchen im vorgeheizten Backofen (E-Herd: 175°C) ca. 1 1/4 Stunden
backen. Kuchen aus dem Ofen nehmen und ca. 24 Stunden in der Form ruhen lassen.
