When Chaim and I met 12 years ago, we were working on a project
to create a Passover Seder training video for our store employees.
We immediately became fast friends. His knowledge, passion and
enthusiasm for kosher have been a tremendous help for Wegmans
(and me). His commitment has made it a textbook partnership.
We are privileged to have his guidance along this 12-year voyage.
Meal Guide recipes were developed using Kosher-for-Passover ingredients
and are available at wegmans.com/passover.
Our Kosher Trays in our Full Service Kosher Delis are only made with Kosher for Passover ingredients using dedicated
equipment and utensils. However, there is no rabbinical supervision. At our Non-Full Service Kosher Delis, these trays
are also available. They are made using only Kosher for Passover ingredients, but they are not prepared with dedicated
utensils, bowls, platters and equipment, and are not prepared in accordance with Orthodox Jewish Religious Standards.

Potato Latkes with Salmon & Cream Cheese
Total Time: 40 min Servings: 4
Directions:
Ingredients:
2 large baking potatoes (about
¾ lb total) peeled, shredded
½ medium onion, peeled, finely grated
(about ½ cup)
1 garlic clove, peeled, chopped
½ tsp chopped fresh thyme
Gefen Kosher Salt and Gefen Pepper
5 Tbsp vegetable oil or clarified butter,
divided
¼ cup Wegmans Cream Cheese,
softened
2 oz Wegmans New York Style
Smoked Nova Salmon
1. Rinse potatoes in large bowl of cold tap water, changing water 3-4 times until water runs clear. Drain. Combine drained potatoes with onion, garlic, and thyme; season with salt and pepper.
2. Heat oil in large skillet on MEDIUM, until oil faintly smokes. Divide potato/onion mixture into 2 portions and place in oil,
flattening each with spatula to a 6-inch circle. Cook 3-4 min
on each side, pressing down on pancakes with spatula
as they cook to maintain their shape, until crisp and
golden brown.
3. Transfer pancakes to paper towels to drain. Spread one
side of one pancake with cream cheese; top with salmon
Top with remaining pancake to complete. Cut in half,
making 2 servings, or into 8 wedges as an appetizer.

Ingredients:
2 Tbsp extra-virgin olive oil
3 cubes Dorot Crushed Garlic

2 cups (5 oz) thinly sliced carrots
1 Tbsp chopped fresh ginger or 3 cubes Dorot
Ginger (Frozen Foods)
6 cans (10.5 oz each) Manischewitz Clear
Chicken Consomme
6 oz fresh shiitake mushrooms, stemmed,
thinly sliced
2 heads (about 1/2 lb) baby bok choy,
chopped
1/2 pkg (about 4 cups) Manischewitz Extra
Wide Egg Noodles

1 bunch green onions, white parts only, sliced
4 cups cooked Empire Chicken
1 Tbsp fresh chopped fresh cilantro or 2-3

Directions:
1. Heat oil in pan on HIGH until oil faintly smokes.
(If oil smokes too much, pan is too hot.).

and pepper. Mix in green onions, chicken, and cilantro.
Bring to simmer.

Directions:
Ingredients:
1 pkg (20 oz) A & B Frozen Gefilte
Whitefish, thawed ¼ cup finely diced celery (about 1 stalk) ½ cup finely diced red sweet pepper
(about ½ pepper)
¼ cup finely diced red onion
(about ¼ onion)
½ cup Manischewitz Mayonnaise 1 Tbsp Kelchner's White Horseradish
¼ cup chopped fresh dill ½ tsp Gefen Ground Black Pepper
1 large egg ½ Tbsp Gefen Lemon Juice
1 cup finely crushed Manischewitz Matzo
4 Tbsp Zeta Extra Virgin Olive Oil, divided
1. Add whitefish, celery, peppers, onions, mayonnaise, horseradish, dill, pepper, egg, lemon juice, and matzo to bowl; stir to combine. Form into cakes about 4 oz each. Place on baking sheet; refrigerate 45 min.

Mix mayo, horseradish, dill, lemon juice, and pepper in

cakes to skillet. Cook 4-5 min until golden brown; turn.

Add remaining 2 Tbsp oil to pan. Cook 2nd batch of cakes;
transfer to serving dish. Serve with horseradish dill sauce.
Chef Tip | Try making the patties smaller for appetizers
or stuff into a portobella mushroom and broil on the
