For all the marinades here, combine ingredients in a large resealable
plastic bag, a shallow bowl, or baking dish. Add 1 1/2 to 2 pounds of meat or poultry and
refrigerate, covered, for at least 30 minutes and up to overnight. Marinate 11/2 to 2 pounds of
seafood or tofu for 15 minutes maximum. Turn the food occasionally so all surfaces are exposed
to the marinade. Shake off the excess liquid before cooking on a preheated grill.

2 jalapeño peppers, sliced
4 sprigs fresh thyme
1/2 fresh lime juice
1 tbsp. lime zest
1/4 cup olive oil
2 tbsp. honey
2 tbsp. grated fresh ginger
2 tsp. kosher salt
1/2 tsp. black pepper
Rubs For all the rubs here, combine the
ingredients in a small bowl. Coat 1 1/2 to 2
pounds of beef, pork, poultry, lamb, seafood, or
tofu with 1 tbsp. olive oil, then sprinkle with the
rub, pressing gently to help it adhere. Cook on
a preheated grill.

Don’t want to play bartender all night long? Mix up this
party-sized batch to keep guests’ glasses full all night.
Recipe by Michael Chiarello.
1 tbsp. grated fresh ginger
1/3 dark brown sugar
1 bunch fresh mint, cleaned
1/4 cup ketchup
1 cup sugar
1/4 cup fresh lime juice
4 lemons, juiced
1/4 cup soy sauce
4 limes, juiced
1/4 tsp. Kosher salt
Ice cubes
1/4 tsp. black pepper
1 (750 ml bottle) light rum
Sauces For all the sauces here, follow
the cooking methods specified. Reserve half the
sauce for dipping, if desired. Cook 11/2 to 2 pounds
of beef, pork, poultry, lamb, seafood, or tofu on
a preheated grill. Brush on the sauce during the
last 2 to 3 minutes of cooking.
Heat the oil in a medium skillet over
medium heat. Add the scallions and
ginger and cook until the scallions begin
to soften, 1 to 2 minutes. Add the sugar,
ketchup, lime juice, soy sauce, and 1/4
tsp. each salt and pepper and bring to a
simmer. Cook, stirring often, until slightly
thickened, 4 to 6 minutes.

This beautiful take on sangria gets its kick from tequila instead
of brandy. Mix it up with fruit and juice, and then top it off with
your favorite Spanish red wine. Recipe by Darryl Robinson.

1 tbsp. canola oil
2 cloves garlic, chopped
1/2 small onion, chopped
3/4 cup orange marmalade
1/2 cup spicy brown mustard
1-2 tsp. chopped chipotles in adobo sauce
1/4 cup honey
1/2 tsp. ground cumin
1/4 cup cider vinegar
1/2 tsp. kosher salt
1/2 to 1 tsp. crushed red pepper
1/4 tsp. black pepper
1/2 tsp. Kosher salt
2 tbsp. red wine vinegar
1/4 tsp. black pepper
Heat the oil in a medium skillet over medium
heat. Add the garlic and cook until fragrant,
about 1 minute. Add the marmalade, chipotles,
cumin, 1/2 tsp. salt, and 1/4 tsp. pepper and bring
to a simmer. Cook, stirring often, until slightly
thickened, 3 to 5 minutes. Stir in the vinegar.
Heat the oil in a medium skillet over
medium heat. Add the onion and cook until
softened, 3 to 5 minutes. Add the mustard,
honey, vinegar, red pepper, 1/2 tsp. salt,
and 1/4 tsp. black pepper and bring to a
simmer. Cook, stirring often, until slightly
thickened, 4 to 6 minutes.

In a large pitcher, muddle mint sprigs with
sugar and lemon and lime juices until well
combined. Add ice, rum and club soda and
stir together. Pour into glasses, straining out
mint. Enjoy!

1 tbsp. canola oil
1 liter club soda
1 oz. or 2 tbsp. simple syrup*
2 oz. or 1/4 cup pineapple juice
Splash orange juice
Ice, as needed

1. In desired drinking glass, add the pineapples,
oranges, blackberries, and lime wedges. Note: If
you dont like the fruits suggested here, feel free
to use whichever fruits you desire.
2. Next add the tequila, elderflower-flavored
liqueur, simple syrup, pineapple juice, and orange
juice. Add ice to glass and stir to mix ingredients.
Top glass with red wine and enjoy. *Simple syrup
is equal parts sugar and water cooked until the
sugar dissolves and then cooled completely.

2 limes, each cut into
eighths
20 mint leaves
1 tbsp. sugar
5 cups pineapple juice,
chilled
1 (12 oz.) can seltzer
water, chilled
In a pitcher combine
limes, mint leaves
and sugar. Muddle with a wooden spoon to
extract the juice from the limes and to break
up the mint leaves. Stir in pineapple juice
and seltzer. Pour into glasses filled with ice.
