IDEAL TO REAL: FROM BARTENDER’S CHOICE TO DRINK LIST REALITY Saturday, May 12th, 12:00pm - 2:00pm at Raines Law Room with Joy Richard: Bar and Beverage Manager-Franklin Restaurant Group, Chad Arnholt: Assistant Bar and Beverage Manager-Franklin Restaurant Group, and Ted Kilpatrick: Bar Director-No 9 Park presented by Sailor Jerry SYNOPSIS: Ideal to Real: From Bartender's Choice to Drink List Reality A practical and tactical guide to creating a cocktail list. Starting with the basics, this seminar is designed to address the practical elements involved in designing a list for your bar. This seminar will cover business dynamics - location, demographic, availability of spirits, business volume, venue size, skill level of existing staff, etc. - and address how that can impact drink dynamics - product availability, ingredients, drink style, size, craft, etc. In the bar/restaurant business, the story usually goes like this: the restaurant needs a cocktail list, or at least several new drinks for the existing list, thus the bartender is tasked to create the menu. While on bar, of course we know how make delicious cocktails that make our guests happy, however, this skill does not necessarily translate when writing an actual list. And while pouring a collection of favored spirits and ingredients into a glass may work for a "bartenders choice" cocktail, it may not be affordable or practical on a broader scale. This seminar is intended to address building a cohesive list 1 that is fit for your bar, cost effective, approachable, and diverse, while incorporating the booze that we love or are "encouraged" to use. Havana was a place of excess and romance, much like Las Vegas would later become. Those Americans who could afford it flocked there for the nightlife, gambling, and outright revelry. Names like Chaplin, Pickford, and Hemingway were such fixtures at bars like the famous El Floridita that they became the monikers of classic rum cocktails that still live on today. Join us as we recreate the revelry of a Havana night at one of our own favorite watering holes, Mother's Ruin, as their world class team joins forces with barman Marshall Altier and Greg Boehm of Cocktail Kingdom to share these once forgotten drinks brought back to life with Denizen Rum along with a soundtrack from the legendary Bar El Floridita house band. What is it exactly that makes an evening of Hendrick's Gin cocktails at Dutch Kills a unique and memorable--yet at the same time "unusual" experience? The obvious answer would be our zip code. Dutch Kills is a neighborhood cocktail saloon on the Western frontier of Long Island City, Queens (Queens? Yes, Queens) where men and women from every strata of the socioeconomic spectrum can enjoy an exemplary and generously-priced drink within a warm and convivial setting. Neighborhood affiliation aside, Dutch Kills stands out amongst its peers due mostly to the care and precision with which our cocktails are consistently executed and presented to our guests by our bright, energetic, enduring, engaging, and dedicated staff. And that's exactly what you'll find when you boldly venture forth to Dutch Kills. Furthermore, our cocktail program is governed by a formidable range of premium spirits and liqueurs, carefully selected farm-fresh ingredients, and a superior caliber of ice that is produced via two Clinebell model CB300X2D machines courtesy of Hundredweight; our in-house block ice production facility. This ice is then harvested on the premises from 300-pound blocks that are hand-cut directly behind the bar for the purpose of satisfying the needs of every category within our canon of cocktails. The continued focus and development of our ice program is perhaps one of the most highly recognized and internationally lauded aspects of our service model. Unusual, indeed. The prevailing atmosphere within Dutch Kills is very much a reflection of the blue-collar industrial roots that resonate throughout the streets of Long Island City. The oak walls within the tavern section of the bar are stained with a deep, rich mahogany finish - lending a timeless and intimate aspect to the cozy and inviting booths throughout. A short walk down the hall gives way to a lofty barroom with an eighteen foot ceiling. The bar itself is made of fine and sturdy oak that is lined with sixteen stools where every seat at the bar commands a front-row view of three bar stations. Here guests can witness first hand the banter and quality craftsmanship of our bartenders who ply their trade with pride - and entirely without pretension or prejudice. Perhaps most importantly, specific inspiration for Dutch Kills comes from our desire to provide our local patrons with affordable and commendable cocktails in an environment that is completely devoid of any airs of exclusivity. Extensive training behind the bar has made our bartenders both well-versed and well-adept at conjuring myriad incarnations of drinks. Therefore, we do not necessarily specialize in one style of cocktail here, but instead we excel in every variety of cocktail that we set forth over our bar. Those who do appreciate the exponential benefits that Hendrick's Gin contributes to a cocktail will most certainly appreciate the unusual attention to detail in every aspect of service at Dutch Kills. Yes, our finalists can make a balanced cocktail. But what we really want to show is: -Do these bar stars have customers that come to wherever they are tending because they could care less about the bar itself, and just want to see HIM/HER? -Do they have something special - their shake, a bottle flip, the way they greet their guests? -They are so charismatic they've introduced people who have gotten married; they mix people, not just drinks. -They are psychologists; they read the customer the minute they walk up to the bar, give em' their fix, and then an hour-long therapy session. -They are actors; the minute they get behind the bar, they have a super alter-ego persona that emerges, which says "right now, it's all about the people in front of me, and I'm going to put on a good show." -Like Norm - every customer knows THEIR name. -Like Isaac - they aim to please and have a plethora of customers who want to date them because their smile and their signature “finger point” has made them famous. A dance-theater horror show? A wordless, nonlinear mash-up of Macbeth and the darker psychosexual corners of Hitchcock? A six-story Jazz Age haunted house for grown-ups and anyone who's ever entertained sick cineast-y fantasies of living inside a Kubrick movie? 'Tis all these, and more besides: 'a deed without a name,' to quote an infernal authority." Join us for a one-night-only, whisky-focused event at the McKittrick Hotel, including a performance of "Sleep No More" - the twisted, surrealistic, critically-acclaimed interactive theatrical event that has taken New York City by storm. This evening is presented by Bowmore, Scotland's first Islay single malt Scotch whisky, which will elevate an already intense sensory experience to entirely new levels. You'll be welcomed with drams of the wickedly intense Bowmore 15 Year Old Darkest before heading into the labyrinthine McKittrick Hotel, where you'll be set loose to explore, experience, smell, taste, and interact with the performance at your own pace, finding your own path. Once you've had your time to play (or whenever you reach absolute sensory overload), you'll head to the McKittrick's Manderley Bar and to the hotel lobby for specialty Bowmore cocktails and a sinful punch created by the one-and-only David Wondrich to enjoy with your comrades, whilst you recount the evening's curiosities over delectable culinary delights. "A merry macabre chase. A voyeur's delight. Messes with your head as thoroughly as any artificial stimulant. Spectacular!" - Ben Brantley, New York Times Ticket Price: $125 Total Tickets Available: 280 Total Tickets Sold: 264 - Sold Out! NOT JUST YOUR MAMA'S MARGARITA'S ANYMORE Tuesday, May 15th, 1:00pm - 3:00pm at Mayahuel with Philip Ward, Proprietor and Beverage Director - Mayahuel presented by Cointreau There's more to the world of Tequila (And Mezcal) Cocktail Bars than the Margarita and Mayahuel has proven so over the last 2 to 3 years. Mayahuel and Philip Ward do however recognize the importance of the Margarita's and Cointreau's historic roles in making Tequila (and Mezcal) relevant members of the Cocktail World. Now in this Tales from behind the bar event at Mayahuel Philip Ward will explain and 30 showcase just how far beyond the Margarita the cocktail world has come by showcasing a slew of Tequila, Mezcal, and Cointreau Cocktails including a Taco and Cocktail pairing. SWEET & BITTER Tuesday, May 15th, 1:00pm - 3:00pm at Raines Law Room with Don Katz, Graham Wright, and Kendra Strasburg. Mixology by: Kirsten Amann, Brand Ambassador, Fernet Branca, Mixology Twin; Joy Richard, Bar & Beverage Manager, Franklin Restaurant Group; Daniel de Olivera, Mixology Twin, Ben Sandrof, Northeast Sales Manager St-Germain, Martin Duffy, National Brand Ambassador Benedictine presented by Benedictine, The Bitter End, Fernet Branca, and St-Germain Why does Fernet taste delicious to some people and overbearingly bitter to others? And in a bartender's world, where bitter cocktails are all the rage, is there any hope for the sweet-toothed mixologist? The folks behind last year's Science of Taste seminar are back, this time to hone in on Sweet and Bitter, two of the most important yet ever so divisive tastes. Join Don Katz, professor of Neuroscience and Chemosensation, Chemist Graham Wright, and nutritionist Kendra Strasburg as they illuminate Sweet and Bitter from a scientific and biological perspective. From Fernet and a cheap beer to Imperial Royales to iconic drinks like the Hanky Panky and St-Germain Cocktail to nouveau creations from mixologists who fall into both camps, we'll sample cocktails and trick our tastebuds as we ask ourselves: "Sweet or Bitter, which is better? Can't we all just get along?" Ticket Price: $30 Total Tickets Available: 33 Total Tickets Sold: 32 - Sold Out!
