A practical and tactical guide to creating a cocktail list. Starting with the basics, this seminar is
designed to address the practical elements involved in designing a list for your bar. This seminar will
cover business dynamics - location, demographic, availability of spirits, business volume, venue size,
skill level of existing staff, etc. - and address how that can impact drink dynamics - product
availability, ingredients, drink style, size, craft, etc.
In the bar/restaurant business, the story usually goes like this: the restaurant needs a cocktail list, or
at least several new drinks for the existing list, thus the bartender is tasked to create the menu. While
on bar, of course we know how make delicious cocktails that make our guests happy, however, this
skill does not necessarily translate when writing an actual list. And while pouring a collection of
favored spirits and ingredients into a glass may work for a "bartenders choice" cocktail, it may not be
affordable or practical on a broader scale. This seminar is intended to address building a cohesive list
1 that is fit for your bar, cost effective, approachable, and diverse, while incorporating the booze that we
love or are "encouraged" to use.

3 Women Behind Bars: A History of Women in the Spirits Industry
From mold-breaking saloon owners to current day cocktail mavens, women have had a vital, though
often overlooked, impact on the evolution of bars and cocktails. The Ladies United for the Preservation
of Endangered Cocktails will shed some light on the subject in this seminar as cocktails flow.
Lynnette Marrero and Meaghan Dorman of LUPEC NYC team up with Kitty Amann and Misty Kalkofen of
LUPEC Boston to introduce you to the likes of:
- Widow Alice Guest who ran her public house from a cave in colonial Philadelphia
- Ada Coleman, former Head Bartender of the Savoy Hotel, and famous inventor of the Hanky Panky
- Helen David, who opened the Brass Rail Bar in the midst of the Great Depression
- The current cocktail renaissance as seen through Audrey Saunders' eyes
We'll sketch, in broad strokes, the alcohol-influenced social changes that began with the antebellum
Temperance movement, culminated during Prohibition, and had ripple effects through WWII and
beyond. Attendees can expect colorful anecdotes from our favorite male bartending legends with an
appreciation for a lady behind the stick. With the spirit and wit specific to lady barkeeps, we plan to
raise a glass (or several) to the women who have influenced cocktail history.

the cozy and inviting booths throughout. A short walk down the hall gives way to a lofty barroom with
an eighteen foot ceiling. The bar itself is made of fine and sturdy oak that is lined with sixteen stools

stimulate the appetite. The competition started with regional mix-offs in each of the USBG’s local
chapters across the U.S. The regional finalists each won a trip to New York City to compete at the final

why eat or drink in the dark? With the loss of one sense, the others become heightened in awareness,
which serves as a opportune platform to smell and taste new cuisines and spirits. A portion of this
seminar will explore what the customer tastes, smells and senses about Pisco Porton, while engaging
with it in the dark. After wards, we will bring you back to the light where you will learn about Pisco, one
of the fastest growing spirits in the market over the past year, and the flavors, notes and history of

-They are so charismatic they've introduced people who have gotten married; they mix people, not

emerges, which says "right now, it's all about the people in front of me, and I'm going to put on a
good show."

their smile and their signature “finger point” has made them famous.
What we are looking for is that intangible Star quality, that special something that defines the
