Mise en Place: “Putting in Place”
Before beginning your shift, you must make sure you have everything for your Mise en Place.
This means to have everything in its place. Your Mise en Place consists of the following items:
Bottle Opener
Boston Shaker
Bar Strainer
Mixing Spoon
Layering Spoon
Wine Key
Julienne Peeler
Jiggers
Cutting Board/Knife
Limes
Take whole lime
and cut in half the
long way
This is what they
will look like
Cut a shallow slit in
the middle of each
lime
Fruit Flag
Stick prism pick in
one end of orange.
Stick the cherry
through the middle.
Loop other end of
orange around the
cherry and secure
with end of prism
pick
Cut each wedge in
half again. These are
used for COCKTAILS
Cut each quarter in
half one more time.
These are used for

Jalapenos
Cut ends off of
Jalapeno
Cut jalapeno in
half the long way
Remove seeds
from jalapeno
Cut jalapenos into
half moon sliver

Remove Cherries
from jar and place
in ice tray
Remove Olives

Peel cucumber leaving
strips of peel attached.
Cut approximately ¼ in
slices

Cut end off of
strawberry
Rest of flat end of
strawberry and begin
cutting from top to bottom
Lime Wheels
Cut of ends of lime
to make circle

Lemon Twist
Using your peeler,
begin tearing back
lemon peel at top of
lemon
Applying heavy
pressure, begin
turning lemon in a
clock wise direction
Starting in the
center, cut a slit on
one side
Slide lime wheel on
edge of glass
Lemon Wedges
Once you have
reached the desired
length, twist the
peel and place on
glass rim
Apples
Use provided lemon slicer with the 6
blade attachment. Carefully Hold
lemon under slicer and pull down
handle. Yields 6 perfect lemon slices.
Wash apple and cut
in half.
Cut off all sides
leaving the core as a
square center.
Cut ½ inch cube
grids and soak in
fruit tray in sprite.
Oranges
Cut ends off
orange
Rest on side and
cut down the
middle
Cut slit down
middle of sliced
orange
Cut half moon
slices
Mint
In a clean, plastic
cambro (with lid)
place a damp paper
towel at the bottom.
Pluck mint leaves from
stems and place inside
cambro on top of
paper towel
Cover mint with an
additional damp paper
towel and keep covered
with lid. Label cambro.
Orange Peel
Hold orange in hand and apply decent
pressure. Using the julienne tool, peel
about 1-1.5 inch slice and place on end
of drink. Express oils from peel by
squeezing if instructed.
BHG Hurricane
VESSEL: 16 oz Drake’s pilsner
INGREDIENTS:
.75 oz Malibu Coconut Rum
.75 oz Absolut Apeach Vodka
.5 oz Well Vodka
4 oz Hurricane Juice
Splash of soda
BUILD: Fill 16 oz mixing glass with ice. Pour
ingredients. Shake lightly for 5 seconds.
Strain into glass with fresh ice.
GARNISH: Fruit Flag
Hurricane Juice Blend:
2 parts Cranberry Juice, 1 part OJ, 1 part
Pineapple Juice, 1 part Grenadine
BHG Red or White Sangria
VESSEL: 16 oz Drake’s Pilsner
INGREDIENTS:
2 oz Finest Call Red/White Sangria Mix
3 oz House Cab or Chard
.5 oz Well Vodka
.5 oz simple syrup (white only)
1 each Lemon, Lime, and Orange
wedge
Splash Sprite
BUILD: Muddle lemon, lime, and orange in 16 oz
mixing glass. (Include simple syrup in muddle for
white). Add wine and corresponding sangria mix
to mixing glass. Fill with ice and shake in mixing
tin. Pour all ingredients into a 16 oz Drake’s
pilsner.
GARNISH: no garnish
Boomer’s Iced Tea
VESSEL: 12 oz Drake’s Pilsner
INGREDIENTS:
.75 Bulleit Rye
.5 Southern Comfort
.5 triple sec
.5 Turkey Honey
1 oz sour
Coke
BUILD: Fill 12 oz Drakes pilsner with ice.
Build cocktail in glass. Top with coke.
GARNISH: Orange Peel
Cherry Limeade
VESSEL: Martini Glass
INGREDIENTS:
2 oz Grey Goose Cherry Noir
1 oz simple syrup
2 lime wedges
2 lemon wedges
.5oz sour
BUILD: Muddle ingredients, shake over ice
and strain into martini glass.
GARNISH: cherry
Cucumber Cocktail
VESSEL: 12 oz lowball
INGREDIENTS:
1.5 oz Effen Cucumber Vodka
.75 oz Sweet and Sour mix
.5 oz Simple Syrup
.5 oz Sprite
1 sliced Cucumber
1 Lime Wedge squeezed
BUILD: Place cucumber slice in bottom of
12 oz lowball. Fill with ice. Build in cocktail
shaker, minus the sprite, shake vigorously.
Strain over ice.
GARNISH: no garnish
Dragon Berry Mojito
VESSEL: 16 oz Drake’s Pilsner
INGREDIENTS:
1.5 oz Bacardi Dragonberry
.5 oz Simple
.5 oz FC Strawberry
3 lime wedges
6 mint leaves
3 strawberry slices
BUILD: Muddle all ingredients, take half
scoop of ice and shake gently, pour into 16
oz Drakes Pilsner, then fill with ice. Top
with soda and splash of sprite.
GARNISH: Lime wheel and mint sprig
Drake’s Breeze
VESSEL: 16 oz Drakes Pilsner
INGREDIENTS:
1 oz Bacardi Pineapple
1 oz Bacardi mango
4 oz Hurricane Mix
1 oz Pina Colada Mix
BUILD: Shake ingredients in cocktail shaker
with ice, strain into 16 oz Drake’s Pilsner.
GARNISH: Fruit Flag
Drake’s Woodford Exacta
VESSEL: 12 oz lowball
INGREDIENTS:
.75 oz Woodford Reserve
.75 oz Brandy
3 oz Ginger ale
Dash of bitters
BUILD: Fill 16 oz mixing glass with ice. Pour
bourbon, brandy, ginger ale, and dash of
bitters in glass. Shake lightly for 5 seconds.
Strain into glass with fresh ice.
GARNISH: Lime wedge
Ginger Lemon Drop
VESSEL: Stemless Martini Glass
INGREDIENTS:
1.5 oz Absolut Citron
.75 oz DeKuyper Ginger Liqueur
.5 oz Simple Syrup
Pressed juice of 2 Lemon Wedges
BUILD: Add ingredients into shaker with ice.
Shake vigorously and strain into
cinnamon/sugar rimmed stemless martini glass
GARNISH: Sugar and Cinnamon rim with
lemon twist
Ginger and Spice
VESSEL: 12 oz lowball
INGREDIENTS:
1.5 oz Avion
1 lime wedge squeeze
.5 oz simple
4 oz ginger ale
2 jalapeno slices
BUILD: Combine all ingredients (minus
ginger ale) in cocktail shaker and shake
VIGOUROUSLY, as to let the jalapeno
“muddle” during shake. Pour over ice, do
not strain. Top with ginger ale.
GARNISH: no garnish
Maker’s Peach Tea
VESSEL: 16 oz Drake’s Pilsner
INGREDIENTS:
1.5 oz Maker’s Mark
1 oz Peach Schnapps
Fill with sweet tea
BUILD: Fill 16 oz Drakes pilsner with ice.
Build cocktail in glass. Flip into mixing tin
and back into 16 oz Drake’s pilsner.
GARNISH: Lemon wedge
Melon Lemon Drop
VESSEL: Stemless Martini Glass
INGREDIENTS:
2 oz Grey Goose melon
1 oz simple
1 oz sour
1 lime
BUILD: Shake all ingredients and strain into
sugar rimmed martini glass.
GARISH: Lime Wheel
Pixy Stix Martini
VESSEL: Stemless Martini Glass
INGREDIENTS:
.75 oz Well Vodka
.75 oz Triple Sec
.75 oz DeKuyper Grape Pucker
.75 oz DeKuyper Island Blue Pucker
.75 oz Sour Mix
Splash of Sprite
BUILD: Combine all ingredients, except
sprite, in shaker tin over ice. Shake. Strain
into Martini glass with Pixy Stix sugar rim.
Finish with splash Sprite.
GARNISH: Cherry and Pixy Stix sugar rim.
Razberi Vojito
VESSEL: 16 oz Drake’s Pilsner
INGREDIENTS:
2 oz Stoli Razberi Vodka
1.5 oz Simple Syrup
8-12 mint sprigs
2 each lime wedge
.5 oz RazzMatazz
Splash soda
BUILD: Add mint, lime, and simple syrup to
16 oz mixing glass. Gently muddle. Add
vodka and top with ice. Add soda and flip
into mixing tin. Pour into 16 oz Drake’s
Pilsner. Top with float of RazzMatazz.
GARNISH: no garnish
Skinny Margarita
VESSEL: 16 oz Drake’s Pilsner
INGREDIENTS:
1.5 oz Sauza Hornitos
.75 oz Triple Sec
3 lime wedges, squeezed
3 oz Fresca
BUILD: Fill 16 oz mixing glass with ice. Pour
liquors and squeeze limes. Shake well for
10 seconds. Add Fresca to mixing glass. Flip
in mixing tin and pour ingredients in 16oz
Drake’s Pilsner.
GARNISH: Lime Wedge
Speedy Gonzalez
VESSEL: 16 oz Drakes Pilsner
INGREDIENTS:
1.5 oz Hornitos
.5 oz triple sec
3 oz sour
Lemon Lime Red Bull
BUILD: Combine all ingredients in
shaker, minus Red Bull, strain into
16 oz Drake’s Pilsner. Top with Red
Bull.
GARNISH: Lime wheel
Sweet and Spicy Margarita
VESSEL: 12 oz Drake’s Pilsner
INGREDIENTS:
2 jalapenos (sliced)
2 strawberries (sliced)
1.5 oz Hornitos
.5 oz Triple Sec
.75 oz Lime Juice
.75 oz Simple
BUILD: Combine all ingredients in
cocktail shaker with ice, shake
VIGOUROUSLY, as to “muddle” fruit and
jalapeno. Pour into sugar rimmed 12 oz
Drake’s Pilsner.
GARNISH: no garnish
Tequila Sunset
VESSEL: 12oz Drake’s Pilsner (with ice), or
Martini Glass if served up.
INGREDIENTS:
1.5 oz Hornitos
1 oz Dekuyper Ginger
.5 oz Blue Curacao
.25 oz Grenadine
3 oz pineapple juice
BUILD: Mix tequila, ginger liqueur and
pineapple in cocktail shaker. Shake very
cold, pour over ice. Take grenadine around
side of glass slowly. Take bar spoon for Blue
Curacao topper. Same build in martini glass,
minus the ice.
GARNISH: no garnish
Tip: if having problem with keeping the Blue Curacao to
float on its own, cut with tequila. Higher alcohol floats.
Honey Jacked
VESSEL: 12oz Drake’s Pilsner
INGREDIENTS:
1 oz Jack Daniel’s Honey
1 oz Thatcher’s Elderflower
liqueur
.5 oz Jack Fire
Sparkling wine (preferably Prosecco)
BUILD: Muddle orange slice and Jack
Fire in shaker tin. Add rest of
ingredients in tin with ice and shake.
Strain into 12 oz Drake’s glass.
GARNISH: orange slice.
Kentucky Porch Sipper
VESSEL: Stemless martini glass
INGREDIENTS:
2 oz Woodford Reserve
1 oz Simple Syrup
1 oz Sour Mix
2 lemon wedges squeezed
BUILD: Combine all ingredients in
mixing tin, shake and strain into martini
glass.
GARNISH: lemon wheel.
Mean Girl
VESSEL: Stemless martini glass
INGREDIENTS:
2 oz Absolut Mandarin
2 diced jalapenos
1 oz cranberry juice
2 lemon wedges squeezed
.75 oz simple syrup
.25 oz Tropical Pineapple
Oils squeezed from orange
twist
BUILD: Muddle first 3 ingredients in
mixing glass. Combine remaining
ingredients, shake and fine strain into
martini glass.
GARNISH: orange twist.
Prickly Pear Para Mi
VESSEL: 16oz Drake’s Pilsner
INGREDIENTS:
1.5 oz El Jimador silver tequila
.5 oz Triple Sec
.5 oz Finest Call Prickly Pear
.5 oz Cranberry Juice
1.5 oz Sour Mix
1 Lime Wedge Squeezed
BUILD: Combine all ingredients into
mixing glass, shake and strain into 16oz
Drakes glass. Salt or no salt per guest
preference.
GARNISH: lime wheel.
The Back 9
VESSEL: 12oz lowball
INGREDIENTS:
1.5oz Jack Daniel’s Honey
2 Lemon Wedges Squeezed
1 oz Lemonade
1 oz Unsweet Tea
BUILD: Combine all ingredients in
mixing glass. Shake and strain into 12oz
highball glass. Top with splash sprite
GARNISH: lemon wheel.
The Hemingway Daiquiri
VESSEL: 12oz Drake’s Pilsner
INGREDIENTS:
1.5 oz Bacardi Maestro
.25 oz Grenadine
.5 oz Grapefruit Juice
.5 oz Lime Juice
.75 oz Simple Syrup
BUILD: Combine all ingredients in
mixing glass. Shake and strain into 12oz
Drakes glass.
GARNISH: lime wheel (or fresh pink
grapefruit).
Patio Punch
VESSEL: 16oz Mason Jar
INGREDIENTS:
1.5 oz Well Vodka
.75 oz Strawberry Pucker
.75 oz Tropical Pineapple
Fill with Pink Lemonade
1 spoonful diced strawberries
1 spoonful diced apples
BUILD: Fill shaker glass half way with
ice. Add fruit. Fill with Ice. Add all
ingredients and shake vigorously. Pour
ingredients (including fruit) into 16oz
Mason Jar.
GARNISH: no garnish
The Limelight
VESSEL: Stemless Martini Glass
INGREDIENTS:
2 oz Tres Agaves Tequila
1.5 oz Tres Agaves Margarita Mix
BUILD: Pour ingredients into shaker
glass. Shake vigorously and strain into
half salted rim martini glass.
GARNISH: lime wheel
Buffalo Trace Mule
VESSEL: 14 oz Buffalo Trace Copper Mug
INGREDIENTS:
2 oz Buffalo Trace
3 oz Regatta Ginger Beer
.25 oz Key Lime Juice
BUILD: Fill copper mug with ice. Build
drink in copper mug. Lightly stir with
tall bar spoon.
GARNISH: no garnish
Tito’s Mule
VESSEL: Tito’s Mason Jar
INGREDIENTS:
1.5 oz Tito’s Vodka
.5 oz Nellie and Joe’s Famous
Key Lime Juice
.5 oz Dekuyper Ginger Liqueur
3 oz Regatta Ginger beer
BUILD: Place unsqueezed lime wedge
in Tito's glass mug. Fill mug with ice.
Add Tito's vodka, key lime juice, ginger
liqueur, and ginger beer. Stir with drink
straw.
GARNISH: no garnish
Poison Apple
VESSEL: 16oz Pilsner (mason jar if seasonal)
INGREDIENTS:
1.5 oz Cran Apple Pinnacle Vodka
.5 oz Sour Apple
.5 oz Razz Matazz
1 oz Cranberry juice
2 oz Angry Orchard
Dash of simple Syrup
BUILD: Build drink in pilsner glass. Top
with Angry Orchard.
GARNISH: apple slice and cinnamon
stick
Fallspice
VESSEL: Mason jar
INGREDIENTS:
1.5 oz Jim Beam Apple
.5 oz St. Elizabeth Allspice Dram
3 oz Cranberry juice
6 each cubed apples
BUILD: Place 3 cubed apples in empty
Mason jar. Fill with ice. In shaker tin,
combine Jim Beam Apple, St. Elizabeth
Dram and Cranberry juice. Shake
thoroughly with ice. Strain over ice and
apples in Mason jar. Take 3 remaining
apple chunks and dust with cinnamon.
Place on top of drink.
GARNISH: 3 cinnamon dusted, cubed
apples
