Rinse and half the crab apples (or cut up the Bramleys). Remove stalks from the other fruits and rinse. Place all fruits in a preserving pan and add enough water to cover. 1. Wearing rubber gloves, cut the young shoots off the nettles. 2. Boil and simmer until the fruit is soft. Strain the juice through a jelly bag. Do not press through, the juice should be clear. 3. Chop the onion and saute in the butter. Add the coriander and chilli. Blend in. 3. Measure the juice before returning to the pan. For every 500ml of juice add 500g of sugar. Stir over a low heat until sugar dissolves. 4. Add the stock and peeled, chopped potato. Boil and simmer until potato is soft. 4. Bring to the boil. Skim off any white foam. Lower the heat and simmer until setting point is reached. 5. Add the nettles and wild garlic leaves, leave for a few minutes until wilted. 5. Test: put a little of the jelly on a cold saucer, leave it to cool and push with a finger until it wrinkles. 6. Remove from the heat and liquidise. 2. Wash the nettles and wild garlic leaves, and chop up the wild garlic. 7. Reheat and serve. 6. Once ready, pot in sterilised jars. Recipe by Ruth Mapes.
