PANCAKES ........................................................................................................................ 45 47 48 49 3 4 SOUPS 5 GARLIC SOUP - Potatoes Peel 2 potatoes and cut them in cubes. - Garlic Crash garlic as much as you like and boil water in a pot, add oil and salt. - Marjoram Put inside the potatoes cubes and add marjoram, pepper and cumin. - Eggs Add crushed garlic, mix everything, meanwhile, cut bread in cubes. - Cumin Put them in a pan with oil. Toast bread. - Pepper When the soup is almost done take an egg and add it directly to the pot. - Bread Serve on the table. Add roasted bread in soup. By Mary Ibañez 6 CHICKEN SOUP - Water - Vegetables Put the chicken in boiling water. The chicken needs more time to be cooked, so after some minutes (10 aprox.) add vegetables you like, salt, pepper. - Salt Very easy and taste. - Pepper By Jaroslava Tomsu 7 8 PUMPKIN SOUP Take a pumpkin, peel it, take away the seeds and cut into regular pieces. The size of your thumb. Cut an onion into thick rings and put them into a cooking pot with some olive oil and fry them to the point they turn golden. “In october-november I grew very fond of pumpkin soup. I tried to imitate a recipe I had learnt during a journey to Austria some weeks earlier, but the result was very "personal". This tastes good with a bottle of very cheap tokaj wine from the penny market.” Add the pumpkin bits and fry them for a while. Put some black pepper and salt to your taste. When everything is really hot, I normally put some soy sauce and after a couple of minutes I put some water (enough to cover all the pumpkin pieces). If you don't like soy sauce, just put water and wait. By Gianluca Delfino Stir regularly while it's boiling and try to mash the pumpkin bits. After a while you should get a creamy soup. If you don't, just use a mincer. - 1 medium-small orange pumpkin - 2 onions - Salt - Some olive oil - Some black pepper - Soy sauce - Water Pour contents into a saucepan, add one litre of water. Bring to the boil, mix with a whisk. Allow to simmer for ten minutes. Ready! 9 SOUPMIX First dish I cooked when I arrived to EVS By Kamil Kum - One package soupmix that can be with mushroom, vermicelli, tomato etc. - One litre water 11 SOLJANKA - Cabbage - Tomatoes - Cucumber - Vinegar - Butter - Water - Mushrooms - Onion - Lemon Cut in little pieces cabbage, tomatoes, cucumber pickles put into the pot, add vinegar, butter and watter- boil 15 minutes (maybe less, till to get soft). Separately – mushrooms and onion are stew in other pan – add grated lemon skin. Put everything together – boil for a few minutes and then serve. Labu apetiti. By Veronika Dolezelova FLEAS SOUP At first you have to catch flea which is annoying you all the day then very carefully put in the water. Add spices which you like. Boil ten minutes and you can serve. Enjoy your Flea! Traditional dish in Latvia. By Veronika Dolezelova - Flea - Water - Spices 12 13 14 MAIN DISHES 15 SAUSAGES WITH BEER With a knife cut in the middle of the sausages a line but without cutting into two parts the sausage. Put the sausages in a deep baking tray for the oven and start to prepare the sauce. Cut the onions and mix it with mustard and smash garlic, now with a spoon, take some and put it into the sausages line you cut before. The first Czech recipe I learnt with other EVS volunteers during our welcoming seminar together. By Lorena Ibarra - One or two sausages per person Then turn on the oven and after its hot, put the baking tray 10 minuts inside. With more cut onion and the hot peppers cut it into small pieces. Mix it in a big pot with ketchup and beer (the same quantity), add some spices like oregano and salt. Go back to the sausages, after this 10 minuts, take out the baking tray and put it in a table, add the ketchup and beer sauce until the sausages are cover by it. Then it will need more or less 30 minuts again in the oven to be ready. - Ketchup Variants: - Beer - Onion - Salt - Spices - Mustard - Hot pepper - Garlic If you like more one or other kind of flavor, you can change the spices or quantities you use to make it. 16 17 MISHMASH - 1 Onion Cut an onion to the small pieces. - Oil Take a pan, put on it a little bit of oil and give it on the cooker. When the oil gets hot, give there the pieces of onion. - 4 Tomatoes - Salt Cut the tomatoes to the pieces (from one tomato you should make about 8 pieces) and put them on the pan too. Now, leave it under the pot-lid about 15 minutes. - 2-3 Eggs - Pepper After 15 minutes the tomatoes should be very soft and you crash the eggs onto and mix. Then mix till the eggs are ready, add a little bit of salt and pepper (as you like) and you are ready! It´s usually eaten with bread or roll. KOSHARI - black lentil - rice - macaroni (short and small) - tomato It is vegetarian dish but in the same time lentil provides sufficient amount of protein equivalent to animal protein. It ain’t preferable for people who want to be slim, or for people who have partner and will share one bed. By Mohamed Saleh - onion - garlic - oil - salt - paper Lentil shall be boiled on steam: put lentil in pot, fill till surface with water, put on very low fire and watch water level, dnt let it be dry or neither swim in the water, just enough amount to cook lentil, taste the lentil every 15 minutes to check if it is done or still raw. Rice shall be cooked exactly as lentil. Maccroni shall b cooked in the normal method. For the tomato dressing: the main art is here, cut the tomato into tiny pieces, or make it in mixer, add the tomato in castroll( poet) with littel oil, tiny pieces of garlic (smashed garlic), salt and black paper. Mix the previous dish on fire till tomato is well cooked, then add vinegar and chilli, the more garlic,chilli, vinegar the better taste (strong taste will be). Now onion,shall be torned to small pieces and fried in littel oil till become brown colour.All ingredients are cooked but shall be served in the right method, mix the lentil with rice, then add the macroni on the surface of the mix. Then on the surface of macroni (which sall be the upper) spread the tomato dressing, dnt mix the mixture, just paint the surface. Then on the painted surface spry the small pieces of the brown onion. Now it is ready to be served. :) Amount of ingredients shall be added depend on taste of the customer. - vinegar (sugar cane) - chilli 18 19 Heat beans in a large saucepan over medium heat until cooked through, about 3 minutes. GOULASH Add salt to taste. Add the water and bring to a boil, then reduce heat to medium. In a frying pan, heat the shortening over medium heat until it melts. I learnt to cook during my EVS By Kamil Kum Add the beef and onion and fry, about 4 minutes. Season with pepper. Dust the meat with flour and allow it to brown. Add a little water from the beans to the meat and onion mixture to make a paste. - 1½ cups canned kidney beans - 2 Tablespoons tomato sauce Add this mixture to the saucepan of beans. Add tomato sauce and paprika. - ½ cup onion, chopped Simmer for about 20 minutes on low heat. - ½ teaspoon paprika - 2 cups water - cup flour - ½ cup shortening - ¾ pound beef, sliced - Salt and pepper, to taste 20 21 SPANISH GREEN SALAD By Tomás Mora - Lettuce (add as much as bigger you want the salad) - ½ cucumber - 30 g of sweet corn - 1 tomato - ¼ onion - ½ carrot (or 1, depends of size) - Olive oil - Modena’s vinegar - Salt Clean all vegetables. Peel onion and carrot. Chop in slices vegetables. Put them together in a big bowl. Add as much as you need of Olive oil, Modena’s vinegar and salt. Eat & enjoy. 22 SANDWICHES Well, the first recipe we made here was a fast and really elaborated 2 sandwiches! By Mary Ibañez and Guillermo Fernandez I took sandwich bread and I went to the fridge to take from there the cheese and ham. Then I opened the sandwich bread bag and I took 4 pieces, because I wanted to make two sandwiches (two pieces of bread each sandwich). I put one piece of bread. Then put one piece of cheese. Then put two pieces of ham and one more piece of cheese. And above one more piece of bread. By Mary Ibañez. With the knife put the Tatarska on the bread. Put the Jam and Chesse, and add more ingredients as you like. Cut the sandwich into two parts. Is ready to eat… Enjoy it :9 Another way can be toasting the bread before make the sandwich, and the second way can be toasting the sandwich in a special machine for that, the cheese will melt and it will be delicious. Peel onion, cut, put in pan with oil and fry (till to get gold). 23 VERUNKA'S LECSÓ Peppers, tomatoes and cuketa (you have to peel off) cut and add to the pan, mix in add to salt, pepper and stew till get soft (prostě než to změkne). Labu apetiti. - One onion - Two or three peppers - Four tomatoes - One cuketa - Potatoes STUFFED LIVER AND BACON - 4 Pieces of Liver = Lamb or Pork - 4 Pieces of Bacon = Streaky or back - 1 Small onion for stuffing - Mixed herbs By Anna (Senior Volunteer) - 2 ozs. Mushrooms optional - 2 ozs. Butter - Little fat or oil - Salt and Pepper Put a little fat or oil on a baking tray. Arrange pieces of Liver on baking tray. Make bread stuffing. Melt butter in a saucepan over a low heat, add chopped onion and mushrooms to cook for a few minutes. Make bread crumbs by rubbing the bread between your hands or in a blender. Add a little mixed herbs, salt and pepper to the breadcrumbs before putting all into the saucepan. Stir with a wooden spoon, taste for flavour, add extra mixed herbs salt and pepper if needed. Make sure stuffing is not too wet or too dry. Place stuffing with a spoon in each piece of Lver. Arrange the bacon on top by folding it over itself or around the piece of stuffed liver. Bake for 20 mins. = 30 mins. in a hot oven. Heat the oven to 200 C. EL. or Gas Mk. 6. before cooking the stuffed Liver. Delicious, serve with fried onions or vegetables of your choice, baked or mashed potatoes. - 4 or 5 slices of Bread for stuffing, make into bread crumbs by rubbing between your hands 24 Break the eggs. Pour into a bowl and beat them as little as possible, might otherwise lifeless hair. Yolks and whites should mix, but do not blend completely. 25 OMELETTE Add salt and pepper. Pour oil (2-3 tablespoons) or butter (2 nuts) in an iron pan or nonstick. Warm up and then pour the egg mixture. First dish I cooked when I arrived for my AMICUS project. By Nicola del Piano - 6 eggs - Extra virgin olive oil With a circular motion, tilt the pan so that the compound or hold the bottom evenly. Cover with a lid and cook over low heat, shaking the pan several times and making sure to change positions often the pan over the flame, so that the pancake has a uniform color. When the omelet will detach from the bottom of the pan is a good time to turn. Place a plate or lid over the pan, hold it with your hand and flip the omelet. Put the pan on the fire, pour a little oil or a piece of butter and slide the omelet from the plate in the pan, so it can cook the other side. - Salt - Pepper When cooked, slide the omelet on a serving dish and serve hot. 26 CHICKEN WITH VEGETABLES Something easy and fast to cook. By Rebeca - 2 chicken thigh - 1 small onion - 1 potato - 1/2 red pepper - black pepper - Salt - 5 Oil spoons - 5 Fried tomato spoons First put salt and black pepper on the chicken. Then you take a cristal bowl and introduce the chicken in the bowl. Put in oil on chicken. Then, cut the vegetables (onion, potato and red pepper in normal pieces) and add salt in the vegetables! Put the vegetables on the chicken and in the other bowl spaces. Finally, put a little bit tomato inside the bowl! Now turn on the oven in 180 degrees and introduce the bowl inside. Let wait 45 minutes aproximately and then the recipe will be ready! Bon appétit! 27 TORTILLA DE PATATAS - 6 medium potatoes, diced In a medium bowl mix the potatoes, onions, and 1/2 teaspoon salt. - 2 small onions, coarsely chopped Heat 2 tablespoons of the oil in a large non-stick frying pan. Fry the potatoes and onions on low heat and cover with a lid for 5 minutes to let them soften. Turn up the heat for another 5 minutes until golden brown. Remove from the stove and drain. Take off any excess oil. - 1/4 cup milk (optional, can be also without the milk) - Serving suggestion: tomato salad drizzled with olive oil - 2 tablespoons olive oil, plus 2 tablespoons Meanwhile break the eggs into a medium bowl. Add the remaining salt and milk and whisk vigorously until frothy. Add the potatoes and onions to the eggs and mix until fully integrated. - 1/2 teaspoon salt, plus 1/2 teaspoon Clean the frying pan and return to stove. - 7 eggs Heat the remaining 2 tablespoons of oil on a high heat and pour in the mixture, moving it around in the pan to help the tortilla to rise. Fry until golden brown, stirring occasionally until it has set. Then turn down the heat to allow the inside to cook. After a few minutes turn up the heat in order to brown the tortilla. When it's cooked place a large plate over the frying pan and flip the tortilla onto it. Return to the pan and fry the other side until golden brown. By Antonio Morote and José A. Ramírez 28 Wash, Peel and chop all vegetables. Leave potatoes whole. Put all ingredients into a saucepan and cover with boiling water. Add stock cube and a little salt and pepper. Put saucepan on to cook until boiling point, then reduce the heat to either mark 2 or 3 and leave to simmer for about 30 = 40 mins. 29 IRISH STEW Serve hot, garnish with a little chopped parsley. By Anna (Senior Volunteer) - 4 Lamb Chops - 2 Carrots, sliced - 2 sticks of Celery, cut small - 1 Onion, chopped - 4 Potatoes, whole - 1 Vegetable Stock Cube - Salt and Pepper - Water - Parsley to garnish if liked When cooked taste for flavour and if needed add a little extra salt or pepper. Irish Stew ready to serve. This is a complete meal in itself. Serve hot, garnish with a little chopped parsley. BRAMBORÁKY 32 BRAMBORÁKY Crispy goodie from the Czech Republic. Very delicious but also very heavy for night, be careful. By Honza Bubenik Oil150g Eggs2 pcs Garlic2-3 cloves Milk5 spoons Smooth flour120g Potatoes1kg Majoram Black melt pepper Salt Scrape raw potatoes, clean them and shred them. To the scraped potatoes add salt and pepper. Add eggs, majoram, if you need put also little bit of milk and flour for make the batter stiff. Put the oil on the pan. Take a big spoon and put the batter on the pan (Thin layer). Than just fry till the potatoe pancakes are gold. Golden potatoe pancakes serve hot or cold. It depends how do you like them. And don't forget to drink with the bramboráky a glass of milk!! Enjoy! 33 - For four people BRAMBORÁKY - 1 Egg - 3 Large potatoes - ¾ Cup milk Wonderful and vegetarian food from Czech Republic, dish I learnt to cook during my AMICUS project. - 2 Cloves garlic - ½ tsp. rosemary By Nicola del Piano - 2/3 cup flour - Salt - Pepper Wash the potatoes and grate the thickest part. Add potatoes with salt and pepper to taste. In another pot, put 2 large eggs beaten with a pinch of salt, pepper and rosemary. Then add flour “00” 100gr/120gr approximately (add more flour if the mixture is too liquid: it have to be a batter) and 5 tablespoons of milk. Add grated potato mixture. Take a pan, which can be large or small, depending on how you want to serve, and we fry in oil, be it seed or soy (even if he is not who prefer). Can also be used olive oil, which, of course, a completely different flavor. Expect, as with frying oil is at a temperature high enough, and fits with a wooden spoon the dough into the pan apppiattendolo. You cook, turning, as long as necessary until it becomes golden. Once gold is put out a paper towel to remove, who does not like the excess oil and bon appetite! - Canola oil 34 POTATO PANCAKES WITH CHICKEN - Potatoes - Black smashed pepper - Eggs I made potato pancakes. It is also one of traditional foods here in Latvia. Latvia is on crossroads from East to West and from North to South so here is traditional almost everything. But I will give you my special recipe for potato pancakes with chicken. By Michal Mrazik - Oil - Fluor - Oregano - Chicken steak - Salt First day you cut chicken steak into small pieces - cubes. You put on them salt and oregano, mix it, then put to one box and put oil on it. And press all chicken together so that there is no air, only chicken and oil. All chicken pieces has to be under oil. Then put this box to fridge for two days. Chicken will get taste and smell of oregano in this way any will become more soft. Than on third day peel all potatoes, grate them, put in smashed garlic (put how much you want, it is up to your taste, I put just very small), put in oregano, eggs and flour - make mixture which will be a bit liquid. Then put inside that chicken and mix it again. Oil from chicken you can use for frying pancakes. So this part is the same like in pancakes just fry then on pan until they are ready - and they are ready when chicken is ready. So and after all - dobrou chuť - Labu apetiti. :) 35 36 PASTA & PIZZA 37 PASTA WITH TOMATO SAUCE Cook the pasta (I think everyone knows how to do this but in case you don’t: Put pasta in the boiled salted water for 710 minutes and then drain it). Cut onion, fry it in olive oil until it becomes slightly golden, add garlic (if you add garlic before tomato sauce and fry it a little, the taste of garlic will be more light). Add tomato sauce and fry for 3-5 minutes all together, add salt and spices (I prefer oregano and basil). An easy and fast recipe. By Nadejda Cojuhari Mix the sauce with pasta. You can add mushrooms and fry them together with onion and garlic. Your pasta will become even tastier. - 250 gr. of pasta - tomato sauce - half onion - 1-2 slices of garlic 38 39 PIZZA Everybody loves pizza. I think it's an ideal quick dinner for busy EVS volunteers (pasta with millions of existing sauces is also a quick and very delicious solution). This was our opera one evening in Pelhrimov, Czech Republic. By Nadejda Cojuhari - Flour - Salt - Tomato sauce - Mozzarella - Warm water - Dry yeast In large bowl mix yeast and warm water, add flour, salt and mix well (usually on the pack of dry yeast is written the proportions of flour, salt and yeast, follow them). Leave the dough (pasta) in the warm place and let it rise for about 30 minutes. Roll the dough and add the ingredients that you like the most (basic is almost always a tomato sauce and mozzarella, use your imagination). 40 PASTA WITH TUNA SAUCE - 250gr tortiglioni Put less than 1lt of water to boil, put garlic on fire with 2 spoons of oil. - 1/2 box of pelated tomatos When oil is hot put tomatos then salt and leave it for 10min to cook. - 2 pieces of garlic When water is boiled put about 1 spoon of salt and pasta. - Oil After 10 min you can put tuna in your sauce and a little bit of oil and add basilic. - Basilic By Nino Lea - 1 can of tuna - Salt 41 PASTA WITH POTATOS AND CARROTS - 2 carrots Peel and wash potatoes and carrots and then cut in quite small pieces (cut carrots smaller than potatoes). Cover with water and put on fire for about 3040 min. After add pasta and a ½ spoon of salt. - Oil When pasta is cooked, add oil and parmigiano. - 3 potatos - Basilic - 250gr fusilli (or small kind of pasta) - Salt - Parmigiano By Nino Lea 42 SPAGUETTI WITH TOMATO SAUCE -Salt -Oil -Onion Cut the onion. Put it into a pan with some oil. Add to the pan mince pig meat and fry everything together. When will be done, sum the tomato sauce. In other pot start to boul the spaghetti in water with a little salt. To finish, serve in a dish the spaghetti and add the sauce on the top. If you like you can put some cheese. -Mince pig meat By Vanessa Walser -Spaghetti pasta -Tomato sauce -Cheese 43 44 SWEET DISHES Usually sweet knedliky (dumplings) are served as a full dinner, even though it seems more like a breakfast, lunch or side. 45 STEAMED SWEET DUMPLINGS The dumplings are usually cooked on hot air (steamed dumplings). If you do not have a steamer you can use a simple pot and colander (two main components to cook pasta). The recipe is the one that I learned in CZ, a traditional one. By Nadejda Cojuhari Pour 3 cups of water in the pot on high heat to boil. Put over the colander, lay the frozen dumplings on it. Keep on high heat, and steam for 8 minutes. Your dumplings are now ready. Melt butter in the microwave. Put the dumplings on the plate, pour over butter and sugar powder as much as you want. - 3 sweet dumplings Bon appetite! - 100 gr. of butter - sugar powder 46 47 - Some old white bread ARMER RITTER - 2 eggs - 100ml milk or tabwater - 1 pinch salt I learned from my great grandmother. - 1 bowl By Max Zaloudek - 1 pan - Oil Crack the eggs at the edge of the bowl and pour them into the bowl. Afterwards you beat them. Put the milk/tab water and the salt into it and beat everything. Slice the bread and put it into the blending, each side for about two minutes. Meanwhile you are heating the oil, which you poured into the pan. When the oil is hot enough put the first slices of bread in the pan and fry them from both sides, a golden colour would be ideal. 48 PANCAKES Go to the supermarket buy milk, eggs, flour, sugar, salt, oil for cooking or ask your mother she has everything already. Don’t forget to buy nutella, jam, honey, or something else you want to staff in the pancakes. Put on some music. Get a big bowl and a mixer, if you don’t have a mixer or if you don’t have it do it to old fashion way with a paddle. Put two cups of milk, two eggs, soup spoon of sugar and a pinch of salt. While you are mixing the stuff mentioned pour slowly the flour in the bowl and continue mixing until you finish the flour. The amount of flour you need is 2 cups. Take a pan and pour some cooking oil in it. Put it on the stove and wait for the oil to heat. Take a ladle and pour enough of the pancakes liquid in the pan that you can cover the bottom of the pan with a thin lair. Don’t forget to flip the pancake when it becomes ready on the first side you want it cooked on both sides. Repeat until you finish the pancakes liquid. Fill the ready pancakes with the filing that you bought in the shop. Don’t forget to take pictures and brag on the social media what a good cook you are! By Karolina 49 PANCAKES My favorite is with honey and cinnamon. But there are lots of variants! Find the one you like the most. By Michal Mrazik - Milk - Flour - Eggs - Oil - Jam - Nutella - Honey - Cinnamon - Banana Milk (can be water in case that there is no milk), flour, eggs from this you make mixture, but be carefull it can’t be too strong, it still should stay quite liquid. Then put oil on pan, and when it is hot enough, pt there that mixture and fry until it is nicely holding together and your pancake is ready! On it you can put jam, marmalade or nutella. 50 51
