she also worked with other equine organizations and never lost
sight of creating her own business.
It was during those early years of work and discovery that she
also met her soul mate and life partner, Matt. Together the pair
enjoyed a shared love of adventure, spirituality and helping others.
Together they dived into learning as much as possible about
Equine Assisted Coaching. During this process, Sara completed
an intensive study and training program developed by Melisa
Pearce of Touched by a Horse. Sara is now certified in Melisa’s
Equine Gestalt Coaching Method™ and is a trainer for the
company. Taking her ambitions further, the couple created their
own company, Discovery Horse, in 2011. As an active part of the
business, Matt not only helps in managing the farm and caring for
the horses, he is currently taking the training necessary to join
Sara in helping clients with life coaching along with the business’
retreats and team building workshops.
The decision to expand and relocate took shape in late August of
2015 as increased interest in their offerings continued to grow.
This new success helped the couple realize they needed their
own homebase and they jumped at the chance to own their own
property which they affectionately dubbed, Dandelion Farm.

n a quiet country setting just south of Brainerd, there is a very
special family with a passion for helping others be the best
they can be with the help of some four-legged coaches. Sara
Sherman and Matt Schwab are the proud owners of Discovery
Horse; a successful business that ventures into the world of
Equine Assisted Life Coaching. Discovery Horse’s main objective
is to foster the dynamic relationship between horse and human; a
unique relationship where healing and self-discovery can begin.
It was many years ago during her college years that Sara began
manifesting the dream of creating a business that involved
working with horses and people. Though the notion had been
simmering inside of her for years, she put the seed of an idea
on the back burner while she finished her degree in Counseling
Psychology and Equine Experiential Learning. After graduation,
she spent many years working in child welfare, the youth and
adult addiction recovery field and was also facility coordinator and
program manager for a juvenile detention center. During that time

“The name Dandelion Farm is in honor of a book I love called
Dandelion by Sheelagh Mawe. Dandelion is a misfit horse who
goes out into the world to find her purpose. She is repeatedly
told she’s not good enough and struggles to fit in. In the end,
Dandelion does find her purpose as a polo horse, a role that is
much more rewarding and fulfilling than she could have ever
envisioned. I love the story, not only because it was about horses,
but also because of what the story represents. Dandelions
are viewed as a weed, yet they do have beauty and are superresilient. To us, that represents the mission of Dandelion Farm.
We want to create a space for people to find their purpose; a
trusted and safe place for people to see that they have value and
that their contribution is important in the world.”
Located in Fort Ripley, Dandelion Farm is a work in progress. The
couple shared that they have high hopes that this property will be
a catalyst for amazing work and services for adults and kids in the
Lakes Area and beyond.
“I honestly think it’s my calling in life to help the horse help
people; to show them their stories and mirror their souls,” Sara
admitted. “It’s such an amazing thing to be able to help others
understand their thoughts and how those thoughts and selfdoubts dictate the way they experience their lives. My own life
experience has taught me that the only true certainty in life is
how we choose to experience this life. Horses help us see those
thoughts and stories by their very sentient nature and provide a
safe place for people to find healing.”
When it comes to pairing people and horses together, fear and
misconceptions often bubble to the surface. Misconceptions Sara
and Matt frequently encounter include the fact that people think
that, in order to reap the benefits of Equine Assisted Coaching,
they need to like horses.
“When people come to us for our Life Coaching, Team Building
Retreats, Women’s Connection Groups, or Youth Empowerment
Programs, we want them to understand they do not ride the
horses,” Sara confirmed. “This is not about horsemanship. You
don’t need cowboy boots and prior equine experience of any kind.
Horses are awesome and you don’t need to love them to learn to
love yourself; but they’ll help. Fear of horses is another thing we
observe often. We always say, if you are afraid of horses, then

there is even more reason for you to come work with us. We
know that horses can be big and scary, but we offer a very safe,
confidential and empowering experience for our clients. What
we do here at Discovery Horse is not ‘just for kids’ or for broken
people. It’s for anyone who wants to be more in their life.”
The couple’s twelve year-old son, Oliver, has also become an
active part of the business. “Adventure is not new to Oliver, but
living on a farm is! He is such an inspiration for Matt and I and he
keeps us honest. He’s like an old soul in a seventh-grader body.
He’s also working on developing a deeper relationship with our
seven horses and it’s been so fulfilling watching him discover and
enjoy the work we do with kids, adults and horses. My mom, Ann
Sherman, is also a huge part of our business. She steps in when
needed and handles all of the business’ marketing and things like
our web design and maintenance. We are so grateful for her role
in our success as well.”
When not offering coaching and support in an innovative way,
Sara, Matt and Oliver simply enjoy being together and doing
things that all families do: laugh, love, explore and play.

“We are so blessed as a family to be able to do what we love
for a living,” Sara confirmed. “One of the best parts of my job,
other than being able to work with horses, is being able to teach
people to treasure their ‘inner awesome.’ That inner awesome is
the light, the warmth, the part of you that you already know, or
the part that you just can’t seem to find. Regardless of where you
are in relation to your own ‘inner awesome,’ all of us at Discovery
Horse (including the horses!) believe that it’s there and it can lead
you to the life that you deserve and desire.”

Many of Discovery Horse’s Youth Retreat experiences are rooted in trust;
trust by the horse and trust by the children. It was a beautiful moment

Tips for Winter Skin Care

I
n winter months, a common concern is how to keep skin healthy
and prevent dry, parched and chapped skin. Dry and irritated skin
is a very common skin problem and is often worse during the
winter when environmental humidity is low. Here are some tips
to keep your skin healthy and more comfortable during winter or
anytime the air is dry:
Winter Showers – A shower can add water to your skin - as long
as you keep it short. Long, hot showers remove the skin’s natural
oils and can actually draw water from your skin. Take shorter
showers or baths, using lukewarm water, and when you’re done,
gently pat your skin dry.
Moisturize after Showers or Hand Washing – Moisturizing is the
key to soft, healthy skin. Contrary to popular belief, moisturizers
do not add moisture to your skin. Moisturizers trap existing water
in the skin, preventing the water from evaporating. To trap water
from a bath or shower in the skin, moisturizer must be applied
within 3 minutes of bathing. Applied regularly, this helps to
decrease dryness and itching.
Exfoliate on a Weekly Basis – When hydrating doesn’t work
and dry skin is beginning to flake, it is important to exfoliate.
Moisturizer is much more effective on properly exfoliated skin.
Use a scrub in the shower once or twice a week to exfoliate your
skin, taking care to use a milder scrub when exfoliating your face.
Use a Winter Moisturizer – If you usually use a light lotion, try
a heavier cream during winter months. If your skin is oily, you
still need to moisturize using non-comedogenic products, which
won’t clog your pores. It is also important to drink plenty of water,
hydrating and moisturizing your body from the inside out.
Winter Sunscreen Required – Overcast weather still requires
sunscreen because up to 80 percent of ultra-violet radiation is
present on cloudy days. Skiers and other winter athletes are
at special risk of sunburn because snow reflects sunlight and
bounces 80 precent of the sun’s rays back to them. It is important
to apply a sunscreen with an SPF of 30 or more, and reapply at
least every two hours.
Invest in a Humidifier –With the heat on and the windows closed,
the air inside can become very dry in the winter, making dry
skin even worse. Use a humidifier to place moisture in the air.
Humidifying systems can be installed on your home’s furnace, or
you can purchase smaller humidifiers at a local department store.
When to See a Dermatologist – If these changes do not bring
relief, make an appointment to see a dermatologist. Very dry skin
may require a prescription ointment or cream. Dry skin can also
be a sign of an underlying medical condition, such as eczema. A
dermatologist can examine your skin and explain what will help
alleviate your dryness and irritation.

O
pening lines from Ah, January, a poem
from Doris Stengel’s latest book Arrival and Departure, illustrate her skilled
use of metaphors producing a thought
provoking poem.
This is Stengel’s third book of poetry,
which includes Horizons Measured and
Small Town Lines.
Her newest poetry collection takes readers
off to distant times and places, returning
them back again with a renewed heart.
Many of the poems are shaped by Doris’s
roots and history growing up on the North
Dakota prairies. While some of the poems
are serious and sad, they capture poignant
moments that fill the reader with a sense
of hopefulness and a joyful spirit. Stengel’s poems also contain a
fair amount of humor as evidenced in Ah, January. The collection
of poems tackles a variety of topics with Doris’s deft and creative
touch. Her work resonates long after you’ve read it.

retreats and poetry gatherings also inspire her to stretch in new
directions, helping in bringing a fresh approach to her writing.
It’s no surprise that Doris is one of Minnesota’s well-known poets
and, in September of 2015, she was honored by Five Wings
Grants program with a title Master Artist in the literary field. A
monetary award attached to this Master Artist title was provided
from the McKnight Foundation in St. Paul. Doris remains humbled
with this unexpected award and excited about future opportunities to share her craft.
Doris hopes her readers will
discover some of their own “arrivals and departures” in their
lives. A person’s life is constantly
filled with both. She is grateful
to her mentor, John Rezmerski,
who helped set her poetry free.

Stengel remembers having her first poems published when she
was just nine or ten years old in the Dakota Farmer. Writing poetry comes easily for Doris but, she says, “The hard part is finding
new things to say in a fresh way.”
Doris graduated from the University of North Dakota. Her family
settled in the Brainerd area in the late ’60s. She has taught in different capacities within the Brainerd Schools. In the early 1990s,
Stengel joined a new poet’s group in Brainerd. “That’s how I
grew. I started reading to other people, and we would critique
each other,” she recalled.

Doris has mentored students of all ages in poetry and she is a
member of Heartland Poets in Brainerd, The League of Minnesota
Poets and the National Federations of State Poetry Societies. Her

W
hen winter comes,
we need to help
protect our furry friends
in every way that we can.
The following guidelines
will help you protect your
pet when the mercury
dips:
1. Never let your dog
off the leash on snow
or ice, especially during
a snowstorm. Dogs can
lose their scent and easily
become lost. More dogs are lost during the winter than during any
other season, so make sure yours always wears ID tags.
2. Thoroughly wipe off your dog’s legs and stomach when he
comes in out of the sleet, snow or ice. He can ingest salt, antifreeze
or other potentially dangerous chemicals while licking his paws, and
his paw pads may also bleed from snow or encrusted ice.
4. Consider getting your shorthaired dog a coat or sweater with a
high collar or turtleneck with coverage from the base of the tail to
the belly. For many dogs, this is regulation winter wear.
5. Never leave your dog alone in a car during cold weather. A
car can act as a refrigerator in the winter, holding in the cold and
causing the animal to freeze to death.
6. Limit your dog’s exposure to the cold. If your dog is sensitive to
the cold due to age, illness or breed type, take him outdoors only to
relieve himself.
7. Get your dog in (winter) shape. Does your dog spend a lot of
time engaged in outdoor activities? Increase his supply of food,
particularly protein, to keep him – and his fur – in tip-top shape.
8. Dog-proof your car/garage. Like coolant, antifreeze is a lethal
poison for dogs and cats. Be sure to thoroughly clean up any
spills from your vehicle, and consider using products that contain
propylene glycol rather than ethylene glycol.
9. Make sure your dog has a warm place to sleep, off the floor and
away from all drafts. A cozy dog bed with a warm blanket or pillow is
perfect.

coat will provide more warmth. When you bathe your dog in the
colder months, be sure to completely dry him before taking him out
for a walk.

H
ere in the Lakes Area, on a “normal” year, the ice is usually
safe and drivable for most modes of transportation. But, this
year has been quite mild so everyone needs to keep close tabs
on the ice thickness because chances are it’s going to be very
variable. That being said, I encourage everyone to be smart when
it comes to venturing out on to frozen lakes.
Many times on a “normal” year, January can mark the slow
season for fishing; but this year is not “normal.” The key to
catching more walleyes this time of year, and really any time of
year, is to read the fish. How are they reacting to the bait you
have presented to them? If they are aggressive, you are going
to be loving life and will eat well through the winter. If you have
been studying your sonar (I use Vexilar) and you’ve noticed that
the fish are really finicky, it’s time to change things. You may want
to slow things down, make things more erratic, down-size lures,
fish at a different time of day or even head to a different lake.
If you do not use electronics, more than likely you will not be
catching as many fish as other anglers. This is not always a hard
fact, but if we are talking deep water pan fish, this is definitely

Real Stories, Real Possibilities

S
ince 1986 Kinship Partners youth mentoring program has
provided positive role models and guidance to youth in Crow
Wing County, southern Cass County and now the Staples/Motley
area.
Our mission is to help children reach their full potential through
a personal relationship with a caring, trained volunteer who becomes their friend, role model and source of strength. Currently,
there are over 200 children matched with a caring adult mentor
who helps them realize their innate potential.
Kids involved in mentoring are more likely to participate in positive
activities and relationships. They are less likely to get involved in
unhealthy relationships and activities with negative outcomes.
Kinship Partners helps kids avoid risky behavior.
Roger and Shaun’s Real Story:
About four years ago Roger Tietz decided he wanted to be a mentor. He had listened to a friend recount stories of his adventures
as a Kinship Partner and decided, “If he could do it, so could I.”
Roger went through the application and interview process and
then was sent information on three boys who were waiting for
a mentor. His response was, “I wanted to mentor all three, but
most of all I realized how great the need was in our area.”
After some consideration, it was decided that Shaun, who at
the time was nine years old was the best match for Roger. They
jumped right in and began what Roger calls their “treasure hunting.” Each week an idea would be hatched, a plan made and the
mission would be carried out to complete the task. Roger began
teaching Shaun the art of accomplishing everyday tasks.
Shaun, who was a third grader when he enrolled, wanted to
have fun with someone who had time for him. A happy, smart,
fun-loving kid, he shared that he liked football, baseball, bowling,
miniature golf, fishing and movies. To date, this partnership has
accomplished all these things and more.
More recently Roger took Shaun deer hunting. “He is receptive to
what I have to offer, a good listener and follows directions,” Roger
shared. “He is thirteen now and it’s a thrill to watch him mature
into the man he is becoming.”

Eddie is in first grade

special days Eddie and
his brother watch Teenage Mutant Turtles and
have pizza for supper.
Those are his favorite
days.
Eddie would like a Kinship Mentor who will
be his friend and take
him to their house every
week. If they have a
dog, it would be even
better.
This young man lives
with his mom and
younger brother in the Brainerd area and has been on the waiting
list since March of 2015.

Roger retired from his career with the DNR in October and Shaun
and his mom attended the party. It was an important day and of
course Shaun wanted to be a part of it.
Shaun’s mom says he is thriving and that Roger is keeping him on
the right path. “I really think of Roger as part of the family,” she
noted. “What a blessing Roger and the Kinship Partners organization is. We all believe that Roger and Shaun will be friends for
life.”
Roger will also tell you that being a mentor is rewarding. “What
better way to give than to be a friend to a child?” he added. Roger
has made a tremendous impact through this relationship and the
consistency he exhibits. His involvement in Shaun’s life has been
pivotal and Roger has become someone Shaun can count on.
On November 20, 2015, Roger received the Real Men are Mentors Award from Kinship Partners; an award honoring everyday
mentors making lasting impressions in a child’s life.

A routine gynecological exam helps evaluate your general wellness.

That’s why the American College of Obstetricians and Gynecologists calls it a
well-woman exam.
Your doctor might ask about any recent illnesses, talk about your family’s medical
history and inquire about your lifestyle. He or she will want to know whether your
menstrual cycle has been regular and what birth control you use, if any.
Depending on your age and risk factors, you might be asked to undergo a
mammogram or MRI—imaging tests that can reveal very early breast cancers.
You may also have a pelvic exam to check the general health of your vagina,
cervix, uterus and ovaries. Your doctor will need to press on your abdomen and
may also do a rectal exam at this time.
A frequent companion to the pelvic exam is the Pap test, in which your doctor
takes a sample of cells from your cervix to look for early signs of cancer.

Your doctor might recommend other tests—for chlamydia, HIV and other sexually
transmitted infections (STIs)—depending on your age and risk factors.
Tests you may need
Your doctor can help you decide what tests should be included in your annual exam.
Here are some testing recommendations from the college, the Office on Women’s
Health, the Agency for Healthcare Research and Quality, and the American Academy
of Family Physicians.

The Pap test: According to the above experts, the initial test should happen at
age 21. After that, most women should be screened every three years until age
30. The college recommends most women switch to co-testing with a Pap test
and HPV (human papillomavirus) test every five years from age 30 to 65. Some
women may be able to stop screening after age 65. Your doctor can help you
decide on the screening schedule that’s best for you.
Mammogram: The American Cancer Society recommends regular screening
starting at age 45. If you have risk factors for breast cancer, your doctor may
recommend earlier testing.
STI testing: Initial testing may be recommended when you become sexually
active. Routine testing depends on risk factors. All women should be tested for
HIV.

Though gynecological exams are recommended at least once a year, health issues
can arise that require more frequent checks or more specialized tests can help you
determine the exam schedule that best meets your needs.

Make your recipes healthier
with a few easy steps from

T
he Holidays mean many of us plan to do more cooking at
home. Cooking from scratch gives us the opportunity to Make
Recipes Healthier that still taste great.
Denise Cleveland, registered and licensed dietitian and Director
of Nutrition Services at Essentia Health-St. Joseph’s Medical
Center, suggests looking for ways to cut the calories, saturated
fat, carbohydrates, sugar and salt in recipes while maintaining or
improving flavor. Also boost the fiber and whole grains but retain
the original texture.
Her first step is to read the entire recipe. Check the amounts
and types of fats, sugars and salts. Many recipes rely on the
“usual” amounts of these items, such as 1 stick of butter, 1
cup of sugar or 1 teaspoon of salt. The recipe’s creator may not
have considered using a little less of these ingredients but give
yourself permission to do your own recipe rehabilitation.
Decreasing fats, sugars and salt does not greatly affect how most
recipes work or the number of servings. However, fat and sugar
provide structure and texture in baked goods. Change these
ingredients by only small amounts in cakes, cookies, breads and
muffins.
Here are a few tips to help you review and experiment with your
recipes.
TO HELP WITH WEIGHT LOSS OR WEIGHT CONTROL,
DECREASE A RECIPE’S CALORIES FROM FATS AND SUGARS:

Look for fats, such as butter, margarine, or oil. Cut the
amount by 25 to 50 percent in non-baked goods.
Look for sugars, such as white sugar, brown sugar and
honey. Reduce the amount by 25 to 50 percent in non-baked
goods.

Substitute fat-free sour cream or nonfat plain yogurt for
regular sour cream.
Applesauce can replace fats and maintain moisture. Use a
1-to-1 ratio, such as ¼ cup applesauce for ¼ cup butter.

Reduce the amount of cheese and choose a low-fat natural
cheese.
Choose leaner cuts of red meat such as the loin or round
cuts instead of chuck. Trim outside fat. These leaner cuts
work great in soups and stews.
Remove the skin of poultry.
Instead of breading, use finely chopped nuts to add flavor
and crunch. Nuts add good fats.

Eliminate all of a recipe’s salt or only use 25 percent. The
exception is yeast breads and fermented products that need
salt for the yeast to work and for the bacteria in fermented
products to be at a safe level.
Choose the light soy sauce and reduce the amount by 50
percent.
Use only no-salt-added or reduced-sodium canned
vegetables and tomatoes. Frozen vegetables without a sauce
are also good substitutions.
Make your own soups and gravies. Use unsalted stocks,
sodium-free bouillon packets or low-sodium soup bases.
Grind oatmeal in a blender and use instead of bread crumbs
in recipes such as meatloaf.
Buy poultry products that aren’t processed with sodium
solutions.
To increase whole grains and fiber:
Use white whole-wheat flour instead of all-purpose flour.
White whole-wheat flour is 100 percent whole grain, loaded
with magnesium and offers more fiber.
Use brown rice
instead of white
rice and just plan
for a longer cooking
time.

For baked goods, such as cakes and cookies, you can replace
half the white sugar with a stevia product. You can’t use all
stevia because the product won’t rise as expected.
For non-baked goods, replace all white sugar with a stevia
product and use only half as much stevia as the recipe calls
for.
BOAT DETAILING AND RV FALL CLEANING
Don’t bother with brown sugar substitutes because they
have the same calories and carbohydrates as brown sugar.
Instead, cut the brown sugar by at least 25 percent.

weet potato casserole is a classic fall dish. Here is a Streuseltopped Sweet Potato Casserole found in Southern Living’s
“Our Best Christmas Recipes.” To make this recipe healthier,
decrease the amount of fat, using oil instead of butter and a fatfree milk product. Substitute a stevia sweetener for white sugar
and cut the brown sugar in half. Use white whole-wheat flour
instead of all-purpose flour. These modifications cut the calories
by one-third, the fats nearly in half and the sugars by almost 75
percent.
ORIGINAL RECIPE
MODIFIED RECIPE
6 medium sweet potatoes
or yams (about 3 pounds) or
yams
¾ cup sugar
1/3 cup 2 percent milk
¼ cup butter or margarine,
melted
1 teaspoon vanilla extract
½ teaspoon cinnamon
