seemingly every week, it has been another incredible year
for Manchester. The city and surrounding area have embraced
a host of exciting developments from world-class craft
breweries to groundbreaking street food events and pop-ups.
The rest of the UK is beginning to pay attention too, with
a host of rave reviews of our fine-dining flagships and edgier
eateries, while the city’s reputation for cool bars, typified by –
but not solely down to – the Northern Quarter, is unsurpassed.
This is the amazing scene the 18th MFDF is here to celebrate.

The Manchester Food and Drink Festival Awards
provide a benchmark for excellence. The below

MFDF Judging Panel, made up of the region’s
leading food and drink critics and experts.
You can vote for your favourite nominee on the
MFDF website (www.foodanddrinkfestival.com).
Your votes are combined with scores from
the judging panel obtained by ‘mystery shop’
visits, made between the announcement date
and the Gala Dinner and Awards. The winners
will be announced at this event on Monday,
21 September, at Manchester Cathedral.

Albert Square is the beating heart of the festival as always,
but now there’s an extra-special buzz as we celebrate
an astonishing year for the city’s food and drink culture.
This is reflected in the Festival Hub’s ‘food village’, offering
the best in casual cuisine, craft beer and cider, fine wine
and cocktails and, of course, Street Food – the meteoric
success story of the last 12 months. The pop-up vendors
are split into two sessions across the 11-day gastravaganza.
Thirsty? The 100 Beers Bar showcases the remarkable new
wave breweries that have sprung up, while the Wainwright
Bar upholds classic ale tradition. Plus there’s a mighty and
refreshing range of ciders courtesy of Magners.
This year the Hub is more active than ever with a host of
events such as the Three Wine Women, the Chilli and Tequila
Festival and a whole range of masterclasses. All this – it being
Manchester after all – against a stunning backdrop of live music
and cutting edge DJs day and night throughout the festival.

The UK’s best-selling golden ale gives its name to the Hub’s
central beer outlet throughout the festival. The Wainwright
Ale Trail Bar gives you ample opportunity to savour its delicate
citrussy flavours balanced with a subtle sweetness... but that’s
just the start of the trail. Beer, and in particular ale, has never
been so much in vogue and this year festival-goers will be
invited to explore the wonderful combinations of hops and
malts around. For new drinkers wanting to try cask ale for the
first time it’s the perfect, unintimidating introduction. The
Wainwright team will guide you with simple-to-understand
tasting notes and sampling sessions. In all, there are 15
different beers to choose from, including seven cask beers
from five separate breweries. In addition there are four craft
keg beers plus four European lagers, including the award
winning Czech Pilsner Krosowice making its debut. Tasting
sessions will run in the Snug next to the Wainwright Ale Trail
Bar – check out festival website for timings.

MFDF has invited three of the UK’s top wine experts to host
a tasting of their favourite wines... and they all happen to be
women. Kate Goodman, owner of West Didsbury’s Reserve
Wines shop, found fame as wine guru on the BBC’s Food
and Drink Show, Jane Dowler’s two restaurants/wine stores
on Deansgate and in the NQ focus exclusively on Spanish
wines, while The Guardian’s Fiona Beckett is one of the UK’s
top drinks writers (talented family – her son Will co-runs
the Hawksmoor restaurant chain). Expect Prosecco, cheese
matching and Spanish food pairing.

of the lauded Mexican restaurant group, Wahaca and author
of Chilli Notes, is coming to MFDF to head up a celebration

Olia Hercules is a Ukrainian-born Leith’s and Ottolenghitrained chef, recipe writer and food stylist. In December 2014,
she was named as Observer Rising Star of 2015 in the food

which introduced us to a cuisine very different from our Cold

Tampopo bring you a taste of the future with a special preview
of new dishes and cocktails. For one night only, you’ll be the
tasting panel as Tampopo celebrate 18 years of serving up the

Ice cream luminary Claire Kelsey, of Ginger’s Comfort
Emporium, is creating a very special six course banquet
for the Festival… consisting entirely of ice cream. Teaming
up with Bake-O-Rama’s Charlotte O’Toole and Jackie Kearney
from Hungry Gecko, it makes for an exciting MFDF highlight.
The menu is top secret and not for those without a leaning
towards a sweet tooth, but Claire’s acclaimed, experimental
(and highly addictive) approach to artisan ice cream craft
promises a fantastical feast and a fully rounded palate! Each
course will feature a beer match from the likes of Cloudwater
and Marston’s, alongside cocktail and wine pairing.
You won’t want to miss this fantastic hands-on collaboration
between two of the city’s finest indie food operations. Trove
will head up a bread making masterclass where guests will
be able to make their own dough. While it’s proving, Salvi’s,
along with some of their key suppliers, will host a variety
of talks and tastings on different cheeses, mozzarella, olives,
oils etc.. Guests can then eat the fruits of their labour
and sample some of Salvi’s products. Since winning the
Cheap Eats category in the 2013 Manchester Food and Drink
Awards Trove has never looked back. At the heart of the
Levenshulme cafe is their artisan bakery where bread
is hand-made slowly from the best organic ingredients with
no additives or improvers. Family-run deli/eaterie business
Salvi’s has built up is own little city empire, first at the Corn
Exchange and recently at two outlets on John Dalton Street
without compromising the authenticity of its Italian cuisine.

The Spanish restaurant chain’s latest outpost has been
wowing customers in Spinningfields since it opened in March.
Instrumental in its success has been group head chef César
García, who has profited from his seven years working
alongside Michelin-starred exec chef Nacho Manzano. Like
Nacho he relentlessly pursues a belief that only the finest
Spanish produce should be used in creating Ibérica’s menu,
allowing their flavours and textures to take central stage.
3pm Harry Yeung – Yang Sing
Harry began his kitchen apprenticeship in Hong Kong at the
age of 13, travelled to classically train as a dim sum, roast
and wok master chef before joining the family business in
Manchester as executive chef and making it one of the most
celebrated Cantonese restaurants in Britain. It earned him
the MBE in 2004 and, now in his sixties, he shows no sign of
slowing down while overseeing the ever-evolving Yang Sing
menus, cookery school and spin-off businesses.
5pm Alex Shaw – Volta
Volta’s head chef, Alex Shaw, has previously worked at Michelin
starred The Old Vicarage, The Wig and Pen in Sheffield and the
Royal Box at the 2002 Commonwealth Games in Manchester.
His cannily-compiled small plates have defined Volta’s meteoric
rise as a culinary destination beyond the ranks of Burton Road
bars, lauded by the likes of The Guardian’s Marina McLoughlin.

7pm Simon Shaw – El Gato Negro
Yorkshireman Simon is a highly experienced restaurateur
with over 35 years of experience, most notably as executive
head chef at Harvey Nichols, before opening his own highly
successful restaurant El Gato Negro Tapas in 2005, after
10 successful years in London. It was at the time visits to
the Basque Country and Catalonia inspired his ‘conversion’
to Iberian cuisine and contemporary take on it – honed to
perfection at the Michelin-rated El Gato, in the Pennine
hamlet of Ripponden, which is relocating to King Street
in Manchester later this year.

This exciting collaboration between organic co-op Manchester
Veg People and the Moss Cider Project offers a hands-on,
grow-your-own, make-your-own experience to festival-goers.
The Veg people are bringing their own produce to a special
market at the Hub, along with local restaurant partners they
supply, Bistro 1847 and Urban Cookhouse, to provide cooking
demos. Moss Cider founders Dan and Joe will unveil their plans
to source lost, hidden and rescued fruits from green spaces
across Greater Manchester. One and all can have a go on their
bike-powered apple crusher and traditional apple press –
and even buy a bottle of their collaborative juice made

unique collaboration between the Biospheric Studio and MFDF.

encounter. Normally running the cafe at Mustard Tree
themselves, during MFDF, the Freedom Project participants
will be having a week off from the cooking as the kitchen reins
