BADIA A COLTIBUONO OILS (TUSCANY)
Badia a Coltibuono EVOO –
This is the first Tuscan extra virgin olive oil introduced to the United States almost 33
years ago. Badia a Coltibuono is the single most consistent producer of authentic extra
virgin olive oil in Italy and is widely considered by chefs, food critics, consumers and
media as the super-premium extra virgin olive oil by which all others are judged. This
classic Tuscan extra virgin olive oil has been produced since 1058!
It is a golden yellow with hearty green nuances. It has a balanced fruity flavor with a
hint of toasted nuts. The oil is full flavored with an intense aroma of fresh olives. The
distinct peppery sensation produced at the back of your throat on the oil‘s finish is an
attribute of oil whose olive harvest was young and fresh.
This oil is perfect for dressing salads, vegetables, pasta, potatoes, soup and bread. Also
use for garnishing dishes that call for drizzling with olio crudo (literally raw oil). The
acidity level, harvest and release dates are on each label to guarantee
freshness.
FINALIST ―OUTSTANDING CLASSIC" 1999-2000 FANCY FOOD SHOWS
Albereto Unfiltered 100% Organic EVOO – Produced by Badia a Coltibuono, this extraordinarily rich,
full flavored artisan oil is produced in limited quantities from the highest groves on the Coltibuono
estate. Albereto is produced from several varieties of olives, principally Frantoio, Pendolino and
Leccino, with smaller quantities of Moraiolo and Maurino. It has a deep emerald green hue and is left
deliberately unfiltered so to achieve full expression of the oil‘s aroma and flavor. Handmade from the
early harvest olives which are pressed immediately, it has a distinct, peppery aftertaste and vibrant
green color. Its low peroxide content deters rancidity and is associated with high levels of vitamin E, A
and K. Albereto is best savored alone, on bread, or drizzled over soups, pasta and beans.

Campo Corto Unfiltered 100% Organic EVOO – Produced by Badia a Coltibuono, this unfiltered oil is
produced entirely from Frantoio olives, the estate's most pungent and long-lived variety. The olive trees
used in Campo Corto are protected by the ancient Coltibuono woodlands in a completely clean
environment. It is the result of many years of research into olive varieties that have been traditionally
grown in the Chianti region for the production of high quality EVOO. Campo Corto pairs well with exotic
vegetables, flavorful bread, roasts, game and mushrooms.

COLONNA (MOLISE ITALY)
The Colonna oils are produced by Principessa
Marina Colonna. Her estate is in San Martino,
in Pensilis, in southeastern Italy‘s unspoiled Molise region
on the Adriatic coast. A family property for over 200 years,
Colonna is well known for its EVOO as well as special
blends that are pressed with fragrant organic lemons,
oranges, bergamots and tangerines. The family‘s 140
acres of olive groves cultivate 22 varieties of olives
including Coratina, Leccino and Gentile.
Manually harvested on the estate when slightly under ripe,
Colonna olives are processed then milled on the same
day. Each olive variety is harvested, processed, milled and cold pressed separately to ensure quality. The oils are
then expertly blended and bottled in dark, glass decanters unique to Colonna. It is then
labeled
and sealed by hand. The seal bears the family‘s red coat of arms—one of the most widely
recognized symbols of medieval Rome. In contrast to robust Tuscan oils, the oils of Southern
Italy are characterized by warm olive aromas and lightness.
COLONNA UNFILTERED EXTRA VIRGIN OLIVE OIL
Bright and clear with the harmonious aroma of green tomatoes, apples and olives, Colonna
EVOO tastes grassy and light with a hint of pepper at the finish. It is perfect with pasta,
salad, fish, vegetables and other light dishes.
COLONNA CITRUS OILS
Colonna EVOO W/ Lemon—This
unique
oil
is
prepared
by
simultaneously crushing fresh organic lemons with early
harvest olives. It‘s golden yellow in color with emerald green
undertones and has a slightly fruity, balanced taste accented
with the flavor of fresh lemon peels. It is delicious as a
marinade for seafood or drizzled on cured meats such as bresaola. It complements beautifully boiled or steamed
vegetables and will impart a lovely freshness to pasta sauces.
Colonna EVOO W/ Tangerines – This beautiful oil is prepared by crushing chopped fresh organic tangerines with
early harvest farm olives. Golden yellow in color with jade green undertones, this oil is well balanced and lightly
fruity, accented by the fresh flavor of mandarin orange peels. It is the ideal marinade for fish and a great addition to
any salad dressing. It also works beautifully with cakes and biscuits in place of butter.

Colonna Bergamia EVOO – Made with the zest of organic Calabrian bergamots, a cross between the pear lemon
and the Seville orange, this oil is prepared by simultaneously crushing fresh organic bergamots with early harvest
olives. Golden yellow in color with grass green undertones, this oil has a unique flowery citrus taste. It is a delightful
accompaniment to seafood and is a wonderful addition to dressings, cooked vegetables and pastas. Its fragrance
also enhances the aroma of desserts and biscuits.

De Medici Extra Virgin Olive Oil – This EVOO, straight from Liguria on the Italian Riviera, is made
entirely of premium hand-picked Taggiasca olives. Delicate and fruity, its versatility is one reason
why Italian chefs prefer Ligurian oil.
De Medici Gastronomia Truffle Oil – Made from the same premium EVOO, this quality truffle oil
achieves its flavor by balancing the white truffle infusion with the delicate flavor of Ligurian EVOO.
Whereas, most truffle oils are made with less expensive Umbrian oil, resulting in a heavy truffle
aroma but with little flavor, De Medici‘s unearths white truffles near the oldest oak trees then the
most aromatic are steeped in Ligurian EVOO for 24 days. A small quantity of natural truffle essence
is then added to perfect the balance of flavor. The result is an EVOO rich with the pungent, woodsy
aroma of white truffles. Sublime drizzled over pasta, risotto, eggs, potatoes even popcorn.

OLIO CARLI (LIGURIA)
In 1911 Giovanni Carli, together with his brothers and sisters, created the Fratelli Carli Company.
The system of direct marketing to families was a success. Business expanded rapidly and Olio Carli
achieved widespread distinction for its exceptional quality. For years, Olio Carli has been sold direct
from factory to consumer in Italy and cannot be bought in stores. A fleet of over 100 trucks assures
prompt direct delivery to more than 700,000 families, over 120,000, of which have been loyal
customers for two or more generations! The oil is produced from the finest olives and is first cold
press. It must be perfect in its aroma and flavor. The maximum acidity allowed is of 0.8% per liter.
Carli EVOO has a sweet and delicate taste, while maintaining its richness. It is exceptional in value
and taste!

RAVIDA EXTRA VIRGIN OLIVE OIL (SICILY, ITALY)
Ravida EVOO –Produced on the Ravida family farm ―La Gurra‖ in Sicily, this multi award-winning extra virgin olive oil
has been praised around the world. It‘s grassy, new mown hay flavor is the result of blending three local olive
varieties picked from the estate‘s 300 year-old trees which are then pressed within eight hours of harvesting.
Nocellara olives lend a slightly fruity flavor; Carasuola olives give the oil a tasty and full-bodied flavor, while light
green Brancolilla give the oil its distinctive color and fragrance. The oil is left unfiltered and has a markedly low
acidity level of .010 – one-tenth of 1%. The Ravida family uses their namesake oil in everything from meat and fish
preparation to seasoning vegetables, salads, risotto, pasta and on a slice of warm bread with a dash of RAVIDA sea
salt.

TENUTA DEL NUMEROUNO EXTRA VIRGIN OLIVE OIL (TUSCANY)
Tenuta del Numerouno EVOO (Tuscany) – From southwestern Tuscany comes this wonderful find
from the estate of Countess Romana Bicocchi Pichi. Nestled in rolling hills above the sea and
privileged by the mild marine climate, the Numerouno Estate is ideal for olive cultivation.
Numerouno‘s first cold pressed EVOO is produced from olives grown entirely at the Bicocchi estate,
from Frantoio di Leccino to Maraiolo and Pendaglino. The mature olives are harvested entirely by
hand then cold pressed one time only by the old traditional method in mills on the property. Naturally
low in acidity, Numerouno is exceptionally dense but at the same time has a softer, pleasing taste that
is more compatible with other flavors making it highly prized by chefs. It is left unfiltered to preserve
its character then bottled in dark, protective glass. Numerouno has been featured in America‘s
leading restaurants and specialty markets.

Villa Manodori EVOO – Chef Massimo Bottura commissioned one of Italy‘s best Tuscan olive oil producers
to create this all purpose oil he uses at his two-starred Michelin starred restaurant-- Osteria Francescana,
in Modena, Italy. Produced from Mariaolo and Leccino olives only, its taste is not overly strong, nor too
mild, in other words, an everyday ―gourmet‖ olive oil. Harmonious and more versatile than most Tuscan

VEA: LERIDA & L’ESTORNELL EXTRA VIRGIN OLIVE OILS (CATALONIA, SPAIN)
For Generations, the name Vea has stood for the highest standards of quality in the cultivation of olives and the
pressing of extra-virgin olive oils. Senor Avelino Vea, who
now runs the family business, has maintained and
elevated those standards by introducing the latest
production techniques.
He has also deliberately
preserved the traditional methods of cultivation and
blending, as well as the integrity of the oils that bear the
Vea family name. As a result, Vea has earned recognition
among the world's most discerning chefs and
restaurateurs who value the oil for its fine and subtle flavor
& consistency.
L'Estornell EVOO – L’Estornell, a Catalan word for a type of bird that likes olives and comes to
―help‖ during harvest, proudly adorns their label. This elegant EVOO is made from hand-picked,
cold-pressed, organically grown Arbequina olives just outside the village of Sarocca de Lerida, near
Barcelona in Catalonia. The Arbequina olive is one of the smallest; it has a violet/green shiny color
and produces a very precious, almost sweet oil. The Arbequina olive is the most widely found
variety in Catalonia. L'Estornell EVOO consists only of extra-virgin oils, personally selected and
blended by Avelino Veá, to create an oil of exceptional fragrance and delicacy, suitable for dressing
salads and for those special occasion meals. Every bottle is vintage-dated.

L'Estornell Organic EVOO – This delicious and organic EVOO is
produced from Arbequina olives from the Vea estate as well as the estates
of eleven growers in the Sarocca de Lerida region. All product origins are
controlled and certified by the CCPAE – Catalan Council of the Organic
Production – under the EEC standards. Each farmer gets the certification
three years after they begin cultivating olives in an organic manner. The
region‘s climate is ideal for organic farming of Arbequina olive trees.
During the winter, temperatures are very low, falling between –5 and –7
degrees. There is also an immense amount of fog. These two factors
cause a layer of frost to form on the olives that helps to eliminate insects
as well as maintain the temperature of the olives at no less than 0
degrees. This naturally occurring event controls the number of insects ensuring that they do not
adversely affect the olive harvest. Conversely, the summer is hot and dry.
Lerida EVOO -- Acclaimed Master Taster Avelino Vea produces these oils from choice olive varieties, primarily
Arbequina from northern Spain's Catalan Region. Lerida gains its ardent taste from under-ripe Arbequina olives.
The cultivation process has remained organic and the harvest is reaped by hand daily to ensure that the olives are
not bruised in the process, thereby eliminating any adverse effects to the oil‘s quality. Lérida EVOO is derived from
the first extraction process of the select Arbequina olives. Fruity and relatively green, Lerida has hints of almond
flavor and has a buttery, delicate flavor and aroma. It is renowned for these qualities.
Les Costes Estate Oil – This property, bought by Don Domingo Vea Santclement in
1942, was home to approximately 350 Arbequina olive trees. Over the years, the family
purchased more acreage from adjacent estates and now has over 3,250 Arbequina olive
trees! The average Arbequina olive tree on the Les Costes estate is 200 years old. As
a result of increased age, productivity is reduced by about 20 kilos per tree. The regions
lack of rain further reduces the estate‘s harvest. Les Costes is known to be difficult to
access and farming is therefore complicated. The end result is well worth it! The
regions soil is incredibly rich in minerals making Les Costes Estate Oil a truly
outstanding liquid gem.
Vea Extra Virgin Coffee Oil – A mixture of EVOO and virgin coffee oil obtained from
hand-selected, roasted, Arabic beans from the prestigious area of Antigua in Guatemala. This oil is
truly one of a kind. Arbequina EVOO blends seamlessly with the coffee oil due to its fresh, fruity

TRADITIONAL BALSAMIC VINEGAR & BALSAMIC CONDIMENT FROM ITALY
Balsamic vinegar is manufactured from the juice of crushed white grapes,
typically, trebbiano grapes. The grapes are slowly reduced to create a
concentrated must, which is then fermented in a slow aging process that
concentrates the flavors. The flavors develop and intensify over the course of
time while the vinegar is stored in wooden casks. The end result is sweet,
viscous and concentrated.
Balsamic vinegar is classified in two categories: Industriale, also called
Condimento, and Tradizionale. Tradizionale, the finest balsamic vinegar, is
labor-intensive to produce. To receive this designation, by Italian law, the vinegar must be produced from 100%
pressed grape juice--called ―must‖ – that is cooked down, then aged in a series of special casks for no less than
twelve years. Only two consortiums produce true balsamic vinegar, Modena and Reggio Emilia.
Modena (Aceto Balsamico Tradizionale di Modena) designates balsamic vinegars age by label color. Reggio Emilia
(Aceto Balsamico Tradizionale de Reggio Emilia) uses a similar system to indicate the age of its balsamics. A white
label means the vinegar has aged for at least 12 years and a gold label bearing the designation ―extravecchio‖
indicates that the vinegar has aged for 25 years or more. In addition to Tradizionale, most companies produce a less
expensive, but high quality vinegar, called Industriale or Condimento that is the same vinegar but not aged as long.

CAVALLI (REGGIO EMILIA, ITALY)
Cavalli Balsamic is produced by the Cavalli brothers, preeminent in Reggio Emilia. They are the sons of Ferdinando
Cavalli, the legendary founder of the provincial Consortium. Giovanni Cavalli, one of the greatest producers of
Tradizionale in Reggio Emilia, resigned from the Consortium in order to independently produce Balsamic of Reggio
Emilia according to his own EXACTING, HIGH standards. Although his father founded the Consortium, Giovanni
believed that he must be free of the Consortium's constraints to achieve his vision of excellence.
The Cavalli name and reputation assures the highest standard of quality. By law, this vinegar must be aged in wood
casks of oak, cherry, mulberry, chestnut or juniper. Two basic levels of quality have been established --Silver Seal
and Gold Seal. In Reggio Emilia, the Silver Seal represents balsamics aged a minimum of 12 years and the Gold
Seal 25 years respectively. However, these are minimums and do not reflect the true age of many of Cavalli‘s
balsamics which can reach up to 300 years old.

Based on the Tradizionale Reggio Emilia style, it is aged in wood and has a dense, aromatic, plummy sweetness
considered to be slightly sweeter on the finish than Modenese balsamico. It is consistently rated as the best
alternative to precious tradizionale balsamics. Cavalli's Classic Balsamico aged for 3 years in 50 liter barrels has
Acidity of 6.0 - 6.50 % with a density of 1.25 g/ml.

Cavalli Riserva Nando Balsamic of Reggio Emilia (Balsamic Condimento)
Riserva Nando, named after Ferdinando Cavalli, is the condimento
balsamico that the late Nando Cavalli kept for his personal use. The
antique mulberry and juniper barrels that Nando collected in the late
1920‘s have imparted this product with silky smooth richness, like rare
port, with a deep prune-like color. Cavalli Riserva Nando is of a higher
caliber than most condimento balsamico due to the fact that it is aged
longer in small casks, resulting in a finer, more intense flavor. It is an
excellent addition to marinades, mayonnaise, gravies and salads.
Riserva Nando is aged for an additional 5 years in chestnut and
mulberry barrels and has an acidity rating of 6.5-7.0 % with a density of
1.32 g/ml.
New Cavalli: Soft and Fruity Balsamico (Morbido & Fruttato)
Cavalli Soft and Fruity Balsamico is the newest member of Cavalli
Balsamics. With this new product, Giovanni Cavalli, our producer from
Reggio Emilia with a renown reputation for quality, now provides the
consumer three balsamics-- all of which provide a different profile within this category. Morbido & Fruttato made a
stunning debut at the Summer Fancy Food Show in 2009.
Cavalli balsamico has been acclaimed for its perfect balance of sweet and sour. Soft and Fruity, like Cavalli
Balsamico and Riserva Nando, is produced solely from the same cooked grape must of Trebbiano grapes without
any other added ingredients but Soft and Fruity is for those who prefer a sweeter taste in their balsamico--less acidic
and softer. This taste was not available among balsamicos until now.
Soft and Fruity brings forward the luscious sweetness of the select Trebbiano grape must. To create this product,
the process is only somewhat different from production of Cavalli's other balsamics. The process starts out just like
that of Cavalli balsamic "Classico", but in the middle of production it is topped off with younger fermented cooked
must, and further aged in smaller 5 liter traditional wood barrels for 15 months. This refilling reduces acidity and
increases the sweet-fruity flavor. Aged in wood, it has a dense, aromatic, plummy sweetness considered to be
slightly sweeter on the finish than Modenese balsamico. This product is younger, fruitier and less acetic than Cavalli
Balsamic Condimento. The Acidity ranges from 5.0 - 5.5 % while the density is 1.18 g/ml.
Use this product as you would any Cavalli Balsamic, but to your personal taste, whenever a fruitier flavor is desired.
The subtle differences afford a wide variety of new experiences for the informed user of balsamic vinegars. Delicious
sprinkled on lamb, drizzled on fresh berries, or whisked with extra virgin olive oil for salad dressing.

Del Cristo Specialized Traditional Balsamicos of Modena (Tradizionale)
For several decades the Barbieri Family has been passionately dedicated to the ancient values and traditions
handed down for generations. The "Acetaia del Cristo" is a small farm situated north of Modena in Italy. The Barbieri
Family starts the production of the worldwide famous TRADITIONAL Balsamic Vinegar of Modena from their own
biologically grown grapes. Their values and traditions make "Balsamico Tradizionale" a reality and famous for its high
quality. The grapes utilised are Trebbiano and Lambrusco grapes only. The Del Cristo Traditional Balsamic Vinegar
of Modena (DOP) is produced by the family from maturing this grape must over a long and slow vinegarization
process through natural fermentation. This is followed by progressive concentration by ageing in a series of casks
made from different types of wood and without the addition of any other spices or flavorings. The vinegar‘s fluid yet
syrup- like consistency is complemented by its rich, dark brown color full of a warm light. Its flavor is distinctly
complex, sharp, and unmistakably, but pleasantly, acidic.
Del Cristo formerly produced only two certified Traditional Balsamic Vinegars:
White Seal which is aged a minimum of 12 years and Extra Vecchio which is aged a minimum of 25 years. They
recently introduced two new Traditional Balsamic Vinegars that were previously reserved for the family‘s private use.
Both are White Seal balsamic vinegars aged for 12 years in either cherry or rare juniper wood.
Traditional Cherry Balsamic is syrupy and smooth, like traditional White Seal, only with the elevated sweetness of
taste and aroma that the wood imparts.
Traditional Juniper Balsamic is also syrupy and smooth, like traditional White Seal, only with traces of resin from
the wood that give it its characteristic body and spice-like flavor. This white seal tradizionale balsamic vinegar is
aged for 12 years in rare juniper wood barrels that impart a greater depth of flavor that has wonderful spice notes.

Villa Manodori Aceto Balsamico Di Modena “Artigianale”
This artisan balsamic vinegar is a labor of love for two ** Michelin Chef Massimo Bottura, proprietor of
Osteria Francescana in Modena, Italy. It is made in limited quantity from locally
grown trebbiano grapes that are reduced to must before being aged in a series of
oak, chestnut and juniper barrels for 10 to 15 years. Chef Bottura follows the same traditional
methods of production and careful aging that have been used for centuries by Modenese families.
Only under the watchful eye of a master blender can the grape and wood flavors marry to develop
balanced sweet and tart balsamico flavor with its dark color and rich aroma. It is the ultimate
dressing for greens, grilled meats and vegetables, aged cheeses like Parmigiano-Reggiano and

MARTIN POURET WINE VINEGARS (ORLEANS)
The Orleans process, as it has long been called in France and other parts of the world, is just the old way of letting
wine ferment slowly into vinegar inside partly filled barrels. Slow, old fashioned methods do not fit easily into modern
economy but Jean Francois Martin, 6th generation, is convinced that the company has survived solely because of
the merits of the product.
Maison Martin Pouret, founded in 1797, produces French vinegar using the traditional Orleans slow process. It is a
Cabernet Franc based wine vinegar that solely uses grapes from the Bordeaux and Loire Valleys. The wine is
fermented, and then aged in oak casks. At the end of this process, exquisite Orleans wine vinegar is born, retaining
the full flavor and deep bouquet of the original wine. The richness of these vinegars is balanced
by its naturally high acidity. It is available in a range of 10 flavors in both 250ml and 500ml.

L'Estornell Fine Sherry Wine Vinegar – L'Estornell Reserva Sherry Wine Vinegar is produced
from choice Palomino Fino, the primary grape used in Spain's renowned Sherries. Aged in a solera
of 24 oak casks, L'Estornell Reserva's aroma is pungent. Its taste is distinctly nutty with an
abundance of ripe that is delicately balanced by its tangy acidity. Enjoy its intense flavor as a

L'Estornell Fine Red Wine Garnacha Vinegar – This vinegar, produced in the southern region of

KIMBERLY WINE VINEGARS FROM CALIFORNIA
Kimberly, the only American producer of authentic Orleans process wine vinegars, is
yielded from premium California varietal wines and aged six months in oak. Kimberley's
methods preserve varietal wine character and result in a robustness and depth of flavor
lacking in many brands. Kimberley Wine Vinegar is made with the traditional French
method D‘ Orleans, using small, ventilated oak barrels partially filled with either organically
or conventionally produced wine. They slowly introduce their special vinegar culture which
over many months converts the wine into a full-figured vinegar. No preservatives are
added to the vinegar, nor are they pasteurized. Pasteurization is a common practice that increases shelf life but
degrades subtle flavor characteristics. Rich wonderful hints of robust wine mixed with acidity complement each batch

For three generations, the Campanini family has produced superior Italian rice. It is located in a small riseria where
production is under the strict supervision of the family. The rice is natural and does not undergo any chemical
treatment. This superb rice is also kosher. Quality rice has the following properties:
It absorbs well the liquid condiment.
Each grain remains consistent.
It is not sticky.

Carnaroli Superfino
This rice has a long, tapered grain with a central wide pearl. It
is not very wide, cooks uniformly and amalgamates well with
condiments. It is perfect for making rice salads, pilafs and
risotto that require a less creamy consistency. The cooking
time is approximately 16 minutes.
Vialone Nano Semifino
The traditional rice of the Mantua and Vento regions, it is a
round, half-long grain, with a central, wide pearl. It absorbs
twice its own grain weight in liquid and is ideal for making
perfectly creamy Risottos. Cooking time is approximately 15 minutes.
Arborio Superfino
This rice has a very wide and long grain with a central wide pearl. It is the most well known Italian rice and cooks in
approximately 14 minutes. During the cooking process, the external part of Campanini's Arborio cooks quicker than
the central part. The result is rice that is perfectly "Al Dente," and is great for making Risotto with a firm texture. Note

Pastificio Benedetto Cavalieri was established in 1918 near Lecce
in Apulia, Italy. Today, the fifth generation of the Cavalieri family
continues to run the business with the same devotion and
wholesome ingredients. The durum wheat still grows on the
southern exposed hillside which results in low yields but
consistently high quality. ―Delicate methods‖ of production are
then employed and grain characteristics are enhanced,
carbohydrates and vegetable proteins are preserved, guaranteeing the pasta is
more nutritious.
Artisan pasta is by far tastier than mass produced pasta. The use of better
ingredients and a slower hands-on process gives it a better texture that is
conducive to holding sauce. Packaged in
cello bags with a colorful blue sleeve, the
color and texture of Cavalieri‘s pasta is

L'Estornell Olives – Three of the best olive varieties from Spain‘s premier olive
oil producing regions are represented under the L'Estornell brand. Arbequina

from the tree and placed in water and salt for a minimum of three months. Finally, they are rinsed and bottled with

normal since the olives are completely natural, meaning, no preservatives or chemical are used.
L'Estornell Caperberries – These caper berries grow wild in the sun-drenched mountains of the VEA estate. Once
selected, they are placed in rock salt for a minimum of three months. Before bottling, the salt is removed by rinsing
the caper berries several times in fresh water.
They are then bottled in their softened state in white vinegar with no additives or preservatives. Capers can be
enjoyed with purées, sauces, sautés and dressings, even as a topping for pizza! They are also an elegant garnish to

RAVIDA Sea Salt comes from the low waters of the Mediterranean Sea along the western coast of
Sicily. Salt pans are filled with seawater in the spring and left to evaporate under the intense heat
of the Sicilian sun and strong African winds. Harvesting takes place once the water has
evaporated. The salt is piled into small heaps inside salt pans and then placed into larger piles
along the edge where they are protected from the rain by clay tiles. It is then crushed and ground

Safinter S.A, one of the world‘s oldest and largest producers of Spanish saffron, only harvest Saffron
from the La Mancha region of Spain, renowned for its quality Saffron. Saffron, the dried stigma of the
Crocus Sativus plant, is the world‘s most precious spice, owing to the fact that it takes 160,000
flowers to produce 1 kg.
Safinter follows ISO -3632 standards in its gardening technique and quality control. The saffron flower
must be handpicked at dawn when it is in bloom. Saffron is only in bloom from 15 to 20 days of the
year, usually during the end of October. The flowers are collected in baskets and transported to the
village, where the precious stigmas are removed by hand.
Many people, even professionals, find it difficult to distinguish good quality saffron from bad. One of the most
marked indicators of quality saffron is its depth of color & flavor when cooking. General guidelines for judging the
quality of Saffron before purchasing it are to look for the following: Genuine La Mancha Saffron filaments should be
joined in three‘s at the base, they should be between two and four cm. long and their color should be a vibrant, bright
red, never dark. When the label reads Safinter S.A, even the most discerning buyers can be assured that the
highest quality of saffron is guaranteed.

The cultivation of red pepper for Pimenton was first introduced in the La Vera
region of Spain in the XVI Century by monks. Pimenton de La Vera‘s exquisite
flavor is due to the unique process by which is it made. The secret of its
excellence lies in the laborious and delicate process by which it is dried. A hearth
filled with Holm oak wood is kept burning until the fruits become perfectly
dehydrated. It is a slow process that takes between ten and fifteen days to
complete. Experts turn each pepper by hand until dry perfection is achieved. This
traditional system of drying gives the paprika its three fundamental characteristics:
Balanced aroma, flavor and stability of color. Safinter smoked paprika is available
