The Contrada Mandranova is situated in a naturally magnificent part of Sicily on a hill, a few miles from the sea. This is a
place of both ancient history and Mediterranean beauty, where the olive trees have been for centuries, blown by the winds of
the Sirocco and Maestrale. The Mandranova extra virgin olive oils are “monocultivar” meaning the oil is pressed specifically
according to the variety of the olive. An accurate control process of each stage of production yields a product of the highest
quality, recognized by awards in Italy and internationally.
MANDRANOVA ORANGE LABEL UNFILTERED EXTRA VIRGIN OLIVE OIL
Produced exclusively from Biancolilla olives hand-picked on the Mandranova farm in the beginning of October.
This oil has a pale green color, is medium fruity with hints of fresh grass. Mandranova Orange Label complements
raw seafood, prepared shellfish and fish, as well as fresh cheeses.
MANDRANOVA GREEN LABEL UNFILTERED EXTRA VIRGIN OLIVE OIL
Produced exclusively from Nocellara olives hand-picked on the Mandranova farm the first week of October. The oil
is extracted immediately after harvest. It has a beautiful green color with golden hues. Mandranova Green Label is intensely
fruity, with hints of fresh grass, artichoke and tomato; its pungency and bitterness are perfectly balanced. This oil pairs with
raw and cooked fish beautifully as well as vegetable and pasta dishes, stews, grilled meats and roasts and cheese.

This Tuscan extra virgin olive oil was introduced to the United
States almost 33 years ago. Badia a Coltibuono,(Abbey of the
Good Harvest),is the single most consistent producer of
authentic extra virgin olive oil in Italy and is widely considered
by chefs, food critics, consumers and media as the superpremium extra virgin olive oil by which all others are judged.
This classic Tuscan extra virgin olive oil has been produced
since 1058!
It is golden yellow with hearty green nuances. The oil has a balanced fruity flavor with a hint of toasted nuts and an intense
aroma of fresh olives. The distinct peppery sensation produced at the back of your throat on the oil’s finish is an attribute of
oil whose olive harvest was young and fresh.
This oil is perfect for dressing salads, vegetables, pasta, potatoes, soup and bread. Also use for garnishing dishes that call for
drizzling with olio crudo (literally raw oil). The acidity level, harvest and release dates are on each label to guarantee freshness.

Produced by Badia a Coltibuono, this extraordinarily rich, full flavored artisan oil is produced in limited quantities from
the highest groves on the Coltibuono estate. Albereto is produced from several varieties of olives, principally Frantoio,
Pendolino and Leccino, with smaller quantities of Moraiolo and Maurino. It has a deep emerald green hue and is left
deliberately unfiltered so to achieve full expression of the oil’s aroma and flavor. Handmade from the early harvest olives
which are pressed immediately, it has a distinct, peppery aftertaste and vibrant green color. Its low peroxide content deters
rancidity and is associated with high levels of vitamin E, A and K. Albereto is best savored alone, on bread, or drizzled
over soups, pasta and beans.

Produced by Badia a Coltibuono, this unfiltered oil is produced entirely from Frantoio olives, the estate's most pungent and
long-lived variety. The olive trees used in Campo Corto are protected by the ancient Coltibuono woodlands in a completely
clean environment. It is the result of many years of research into olive varieties that have been traditionally grown in the
Chianti region for the production of high quality oil. Luxurious with a deep emerald green color, Campo Corto has a bold
grassy bouquet with hints of artichoke and aromatic herbs.Campo Corto pairs well with exotic vegetables, flavorful bread,
roasts, game and mushrooms.
David Rosengarten in the Rosengarten Report gives this oil ***3 Stars,
“lots of wheatgrass, ripe bruised-fruit character, and big finishing prickle.
Plus…a kind of Tuscan version of butteriness creeps in.”
COLONNA (MOLISE)
The Colonna oils are produced by Principessa Marina Colonna. Her estate is in San Martino, in Pensilis, in
southeastern Italy’s unspoiled Molise region on the Adriatic coast. A family property for over 200 years, Colonna is
well known for its extra virgin olive oils as well as special blends that are pressed with fragrant organic lemons, oranges,
bergamots and tangerines. The family’s 140 acres of groves cultivate 22 varieties of olives including Coratina, Leccino
and Gentile. Manually harvested when slightly under ripe, Colonna olives are processed then milled on the same day.
Each olive variety is harvested, processed, milled and cold pressed separately to ensure quality. The oils are then
expertly blended and bottled in dark, glass decanters unique to Colonna, labeled and sealed by hand. The seal bears
the family’s red coat of arms—one of the most widely recognized symbols of medieval Rome. In contrast to robust
Tuscan oils, the oils of Southern Italy are characterized by warm olive aromas and lightness.

Colonna Extra Virgin Olive Oil with Lemon - This unique oil is prepared by simultaneously crushing fresh organic lemons with early
harvest olives. It is golden yellow in color with emerald green undertones and has a slightly fruity, balanced taste accented with the flavor
of fresh lemon peels. It is delicious as a marinade for seafood or drizzled on cured meats such as bresaola. It complements beautifully
boiled or steamed vegetables and will impart a lovely freshness to pasta sauces.
Colonna Extra Virgin Olive Oil with Tangerines - This beautiful oil is prepared by crushing chopped fresh organic tangerines with early
harvest farm olives. Golden yellow in color with jade green undertones, this oil is well balanced and lightly fruity, accented by the fresh
flavor of mandarin orange peels. It is the ideal marinade for fish and a great addition to any salad dressing. It also works beautifully with
cakes and biscuits in place of butter.
Colonna Bergamia Extra Virgin Olive Oil - Made with the zest of organic
Calabrian bergamots-a cross between the pear lemon and the Seville orangethis oil is prepared by simultaneously crushing fresh organic bergamots with
early harvest olives. Golden yellow in color with grass green undertones, this
oil has a unique flowery citrus taste. It is a delightful accompaniment to
seafood and is a wonderful addition to dressings, cooked vegetables and
pastas. Its fragrance also enhances the aroma of desserts and biscuits.
DEMEDICI GASTRONOMIA TRUFFLE OIL
Made from premium extra virgin olive oil, this quality truffle oil achieves its flavor by balancing the white truffle infusion with
the delicate flavor of Ligurian Oil. Most truffle oils are made with less expensive Umbrian oil, resulting in a heavy truffle
aroma but with little flavor, DeMedici’s unearths white truffles near the oldest oak trees then the most aromatic are steeped in
Ligurian extra virgin olive oil for 24 days. A small quantity of natural truffle essence is then added to perfect the balance of
flavor. The result is an extra virgin olive oil rich with the pungent, woodsy aroma of white truffles. Sublime drizzled over
pasta, risotto, eggs, potatoes even popcorn.

IL FORTETO COOPERATIVE (TUSCANY)
Il Forteto is an agricultural cooperative based in the city of Mugello in the hills of Tuscany. The story behind
Cooperativa Agricola Il Forteto is not only their fantastic products, including traditional Tuscan pecorinos, fresh
mozzarellas, tangy sheep’s milk ricotta and fresh pesto in addition to our IGP Tuscan Olive Oils, but it is the history of
the town of Mugello and the people that live there. The cooperative was founded in 1977 to give back to the town and
its residents. The inspiration behind it was to create a sustainable farm that contributed to the area’s rich agricultural
traditions and provided training and a safe haven for people in the area. Workers on the coop live and work the land,
with everyone from the original founders to the dairy workers taking home the same salary.

With a smooth, buttery texture and a mild grassy taste, Il Forteto is not your typical Tuscan oil. This
IGP oil evokes green tomatoes, artichokes and warm Tuscan meadows without a peppery bite at the finish. Il Forteto
Tuscan olive oil is made from a blend of different varietals including Frantoio, Leccino Moraiolo.

The organic variety is even smoother and more harmoniously balanced in flavor so it works wonderfully in most
applications, not over powering the other ingredients but adding a warm, summery note to dishes. Il Forteto Tuscan

OLIO CARLI (LIGURIA)
In 1911 Giovanni Carli, together with his brothers and sisters, created the Fratelli Carli Company. The system of direct
marketing to families was a success. Business expanded rapidly and Olio Carli achieved widespread distinction for its
exceptional quality. For years, Olio Carli has been sold direct from factory to consumer in Italy and cannot be bought in
stores. A fleet of over 100 trucks assures prompt direct delivery to more than 700,000 families, over 120,000, of which have
been loyal customers for two or more generations! The oil is produced from the finest olives and is first cold press. It must be
perfect in its aroma and flavor. The maximum acidity allowed is of 0.8% per liter. Carli EVOO has a sweet and delicate taste,
while maintaining its richness. It is exceptional in value and taste!
TENUTA DEL NUMEROUNO EXTRA VIRGIN OLIVE OIL (TUSCANY)
From southwestern Tuscany comes this wonderful find from the estate of Countess Romana Bicocchi Pichi. Nestled in rolling
hills above the sea and privileged by the mild marine climate, the Numerouno Estate is ideal for olive cultivation.
Numerouno’s first cold pressed extra virgin olive oil is produced from olives grown entirely at the Bicocchi estate, from
Frantoio di Leccino to Maraiolo and Pendaglino. The mature olives are harvested entirely by hand then cold pressed one time
only by the old traditional method in mills on the property. Naturally low in acidity, Numerouno is exceptionally dense but at
the same time has a softer, pleasing taste that is more compatible with other flavors making it highly prized by chefs. It is left
unfiltered to preserve its character then bottled in dark, protective glass. Numerouno has been featured in America’s leading
restaurants and specialty markets.

Chef Massimo Bottura commissioned one of Italy’s best Tuscan olive oil producers to create this all purpose oil he uses at
his two-starred ** Michelin starred restaurant-- Osteria Francescana, in Modena, Italy. Produced from Mariaolo and
Leccino olives, its taste is not overly strong, nor too mild, in other words, an everyday “gourmet” olive oil. Harmonious
and more versatile than most Tuscan oils, it will round out your best salads, vegetables and fish. Ligurian olive oils are a
favorite of Northern Italian chefs.

techniques. He has also deliberately preserved the traditional methods of cultivation and blending,
as well as the integrity of the oils that bear the Vea family name. As a result, Vea has earned
recognition among the world's most discerning chefs and restaurateurs who value the oil for its fine
and subtle flavor & consistency.
L'E S TORNE LL E X TRA VI RG IN O L IV E OI L
L’Estornell, a Catalan word for a type of bird that likes olives and comes to “help” during
harvest, proudly adorns their label. This elegant oil is made from hand-picked, coldpressed olives which come from the surrounding community just outside the village of Sarocca de Lerida, near Barcelona in
Catalonia. The Arbequina olive is the core olive in this oil--the most widely found variety in Catalonia. L'Estornell oils are of
exceptional fragrance and delicacy, suitable for dressing salads and for those special occasion meals. Every bottle is vintagedated.
L 'ES TOR NEL L ORGAN IC E X TRA VI RG IN O L IV E OI L
This delicious and organic extra virgin olive oil is produced from 100% Arbequina olives from the Vea estate as well as the
estates of eleven growers in the Sarocca de Lerida region. All product origins are controlled and certified by the CCPAE –
Catalan Council of the Organic Production – under the EEC standards. Each farmer gets the certification three years after
they begin cultivating olives in an organic manner. L'Estornell Organic, made from 100% Arbequina olives, has a
very fine, almost sweet, slightly nutty-almond taste (attributable to the planting of almond trees among the olive
groves.) In addition, other trademarks include a peppery quality and spicy aftertaste.
L ER IDA E XTRA V I RGIN O LI VE OI L
Acclaimed Master Taster Avelino Vea produces these oils from choice olive varieties, primarily Arbequina from northern
Spain's Catalan Region. Lerida gains its ardent taste from under-ripe Arbequina olives. The cultivation process has
remained organic and the harvest is reaped by hand daily to ensure that the olives are not bruised in the process. Lérida
EVOO is derived from the first extraction process of the select Arbequina olives. Fruity and relatively green, Lerida has
hints of almond flavor and has a buttery, delicate flavor and aroma. It is renowned for these qualities.
L ERIDA EAR L Y H A RVE S T E STA TE E X TRA VI RG IN OL IV E OI L
This Early Harvest oil is produced from the 100% Arbequina olives used for Vea’s Lerida olive oil, harvested by hand
during the first 4 days of the harvest before they have fully ripened while they are still young and green. The olives,
once picked, are taken to the mill within hours where they are examined for any cuts or bruises that may have oxidized
the fruit. Only pristine fruit is accepted for oil production. The oil is then extracted using state of the art methods that
allow for an extremely cold press and reduced exposure to light and oxygen, which can damage the oil. The result is a
beautiful green and fruity oil, fragrant from the young olives with the same distinctively nutty flavor and buttery texture
of the rest of Vea’s oils. This is the pure essence of mature Arbequina trees allowed to grow in their native soil.

LE S C OS T ES E S TA TE O I L
This property, bought by Don Domingo Vea Santclement in 1942, was home to approximately 350
Arbequina olive trees. Over the years, the family purchased more acreage from adjacent estates and now
has over 3,250 Arbequina olive trees! The average Arbequina olive tree on the Les Costes estate is 200
years old. As a result of increased age, productivity is reduced by about 20 kilos per tree. The regions
lack of rain further reduces the estate’s harvest. Les Costes is known to be difficult to access and farming
is therefore complicated. The end result is well worth it! The regions soil is incredibly rich in minerals
making Les Costes Estate Oil a truly outstanding liquid gem.
L ’ ES TORNEL L Q UINC E N TE NARY O LI V E O I L
Avelino Veá, renowned Patron of the House of VEÁ and producer of L'Estornell and Lérida Veá olive oils,
has searched for 500 year old trees to produce this superb extra-virgin oil. The age of the trees is
authenticated by reference to local records and family archives. Veá, each year, offers a strictly limited
production product which is presented in hand-crafted glass 'taberna' decanters, of the kind used
throughout
Spain during Columbus' lifetime. Each decanter comes complete with a glass stopper, and is decorated with
specially designed labels. Every case, and every decanter, will be numbered and is packed in individual gift
boxes using Galician pine - a magnificent presentation to celebrate the historic voyage of Christopher Columbus from Spain to America
500 years ago. The extra-virgin olive oil itself is of outstanding quality, color and flavor - perfect in extra-special salad dressings and in
dishes worthy of the authentic flavor and qualities of first-class, extra-virgin olive oil for their essential character.

SILVER MEDAL WINNER FANCY FOOD SHOW 2008 BEST OIL CATEGORY
From the Carlos Falco family farm near Toledo, Spain, this ultra premium extra virgin olive oil has a gleaming golden
hue with exceptionally vivid and intense aromas. The scent is reminiscent of green tomatoes, freshly mowed grass,
artichoke and green almonds. On the palate, it exhibits beautifully concentrated green vegetable and nutty aromas. Its
finish is pleasantly spicy and persistent indicating its high poliphenol content (antioxidants); seven times that of the
average oil. It is estate bottled in dark Bordeaux style glass like those of the family’s world class wines. The oil is made
predominantly from Picual olives and is custom blended with Arbequina olives; it is then processed within two hours
of being harvested. It adds refinement and flavor when drizzled over roasted vegetables, cured meats and grilled fish. It
is also excellent for tossing with pasta and salads or simply dipping a piece of wonderful crusty bread.

walnuts. The best quality walnuts are lightly toasted to bring out their full, warm flavors. They are gently pressed to ensure quality oil
with a smooth finish. They are stone-milled and gently grilled to add the sweet and pleasant flavor of cooked kernels. They are then
placed in a hydraulic press where the oil is extracted. Walnut oil is rich in omega 3 fatty acid, essential to a healthy diet. It is delicate,

Toasted Almond Oil in Orange Tins - Made from fresh, hand roasted almonds that are pressed, lightly filtered and bottled, toasted

Toasted Sesame Oil - This Asian oil is rich in phospholipids and essential fatty acids. It is prepared in the traditional manner. The
sesame seeds are grilled and then crushed to ensure superior flavor. Using a little of this very sophisticated oil toward the end of cooking

Toasted Rapeseed Oil - This oil is obtained from the first pressing of rapeseed immediately after being toasted in order to bring out its

PAPILLON EXTRA VIRGIN OLIVE OIL FROM THE FRENCH MEDITERRANEAN

In the shadow of the Canigou mountain, Papillon Extra Virgin Olive Oil is produced from olives from
the Combusta olive grove in the district of Salses le Chateau on the French Mediterranean coast. This
area is bathed in sun from morning through evening. Arbequina and Koroneiki varieties are beautifully
blended giving the oil a very fruity taste, neither bitter nor spicy. It is very well balanced with notes of
apple, artichoke and almond with extremely low acidity. Papillon Extra Virgin Olive Oil is grown
without the use of pesticides. It is beautifully presented in a metal tin designed to protect freshness with
an anti-spill pourer cap. This extra virgin olive oil is best as a finishing oil used to dress dishes such as
chicken, fish, vegetables, pasta and salads.

CHATEAU D’ ESTOUBLON
The Château d’Estoublon is located on the southern slopes of the Alpilles mountain range, near the
village of Fontvieille. It lies within the geographical territory defined as the Appellation d’Origine
contrôlée Vallée des Baux de Provence. The history of the estate, sometimes peaceful, often marked by
war, conflict, and successive frosts, is closely linked to the history of Provence itself, where the estate is
undoubtedly one of the most outstanding sites.
The Estoublon olive groves contain 5 different varieties of olive, Bouteillan, Grossane,
Salonenque, Béruguette and Picholine. Each variety of olive is harvested by hand,
separately so each one is picked at its optimal level of ripeness. Then the Estoublon olives
are crushed and pressed individually for the best results and each of the varietal oils are stored in separate tanks until it is
time for bottling or blending to obtain the estate’s signature A.O.C. Extra Virgin Vallée des Baux blend.

This oil radiates a beautiful intensity of color with a very slight opacity and a lovely bouquet. It has a mild nose, combining
almond and green apple, with a sweeter note of watermelon. The attack is unctuous, mild, and fresh while the dry matter
present throughout the entire tasting provides good balance. Retro-olfactory hints of freshly-cut grass
that finish on a slightly pungent note. A delicate balance of all the varietals going into the blend, it
will suit very well any course of your meal.

the mono varietal oil, making it the centerpiece of any connoisseur’s table.
M ON O VARI ETA L OIL S
Salonenque - Fresh, grassy, round and buttery. With aroma of fresh cut grass, La Salonenque is very fresh on the
palate. This is the lightest of the varietals.
Grossane - Elegant, sweet and light. Discrete on the palate, La Grossane developes aromas of citrus fruit.
Bouteillan - La Bouteillan develops aromas of asparagus tips, sweet tomato leaves and green
apple.
Beruguette - Vegetal, fiery and full bodied. Extraordinary flavor of artichoke and green
hazelnuts. La Beruguette is slightly bitter with a very characteristic hot and spicy aspect.
Picholine - Pungent, fiery, pepper. Strong, fiery and pungent, La Picholine is a wonderful
flavor enhancer. This is the spiciest of the varietals.
EXTRA VIRGIN OLIVE OILS & AVOCADO OILS FROM CHILE
TERRAMATER PETRALIA EXTRA VIRGIN OLIVE OIL (CHILE)
This Extra Virgin Olive Oil is extracted from a unique varietal the ‘Racimo’ which originated in Chile. Located
500 meters above sea level on the Mataquito River, 250 km south of Santiago, Chile, the oil has a medium level of
fruitiness but is very fresh and herbaceous on the tongue with an excellent balance between the herbal and spicy
notes. This Chilean oil has won many awards including the 2012 Sol d’Oro award in Verona.
TERRAMATER EXTRA VIRGIN AVOCADO OIL (CHILE)
The avocados used to create this delicious oil are manually harvested from November 15th to December 15th from
Chilean-grown Hass avocados grown in the Central Valley where TerraMater only uses the avocados of the most
experienced producers. The oil is then carefully extracted from the ripe pulp by placing it in a cold centrifuge.
Careful attention is paid to every detail to ensure the oil is of premium-quality. The meticulous production process
and the resulting low acidity (0.8%) qualify this oil to be designated “extra virgin.” TerraMater Extra Virgin
Avocado Oil is free of genetic intervention and contains no chemical ingredients or additives. It has a delicate avocado flavor
with smooth walnut notes. Dark bottles protect the oil from the harmful effects of light and oxygen and help to preserve its

OLIO SANTO EXTRA VIRGIN OLIVE OIL (USA)

olive was allocated to the church for use in religious ceremonies. Today, Olio Santo still only bottles the first cold

BALSAMIC VINEGARS
TRADITIONAL BALSAMIC VINEGAR & BALSAMIC CONDIMENT (ITALY)
Balsamic vinegar is manufactured from the juice of crushed white grapes, typically, trebbiano
grapes. The grapes are slowly reduced to create a concentrated must, which is then
fermented in a slow aging process that concentrates the flavors. The flavors develop and
intensify over the course of time while the vinegar is stored in wooden casks. The end result
is sweet, viscous and concentrated.
Balsamic vinegar is classified in two categories: Industriale also called Condimento, and
Tradizionale. Tradizionale, the finest balsamic vinegar, is labor-intensive to produce. To
receive this designation, by Italian law, the vinegar must be produced from 100% pressed
grape juice--called “must” – that is cooked down, then aged in a series of special casks for no
less than twelve years. Only two consortiums produce true balsamic vinegar, Modena and
Reggio Emilia.
Modena (Aceto Balsamico Tradizionale di Modena) designates balsamic vinegars age by label color. Reggio Emilia (Aceto Balsamico
Tradizionale de Reggio Emilia) uses a similar system to indicate the age of its balsamics. A white label means the vinegar has aged for at
least 12 years and a gold label bearing the designation “extravecchio” indicates that the vinegar has aged for 25 years or more. In
addition to Tradizionale, most companies produce a less expensive, but high quality vinegar, called Industriale or Condimento that is
the same vinegar but not aged as long.
De Medici is proud to offer the most extensive selection of authentic and delicious balsamic vinegars available in the United States
under one company. They have been meticulously selected during numerous trips to both Modena and Reggio Emilia. De Medici
carries three brands of Tradizionale approved by the Consortiums of Reggio Emilia & Modena. They are Cavalli, Del Cristo and Villa
Manodori.
CAVALLI (REGGIO EMILIA, ITALY)
Cavalli Balsamic is produced by the Cavalli brothers, sons of Ferdinando Cavalli, the legendary founder of the Reggio Emilia
Consortium. Giovanni Cavalli, resigned from the Consortium in order to independently produce Balsamic of Reggio Emilia according
to his own exacting standards. Although his father founded the Consortium, Giovanni believed that he must be free of the
Consortium's constraints to achieve his vision of excellence. The Cavalli name and reputation assures the highest quality.
By law, this vinegar must be aged in wood casks of oak, cherry, mulberry, chestnut or juniper. Two basic levels of quality have been
established --Silver Seal and Gold Seal. In Reggio Emilia, the Silver Seal represents balsamics aged a minimum of 12 years and the Gold
Seal 25 years. However, these are minimums and do not reflect the true age of many of Cavalli’s balsamics which can reach up to 300
years old.

An extraordinarily complex and rich balsamic with harmonious fragrances, more sweet than sour, with
persuasive structure, it is dense, suave and persistent. It is splendid drizzled over savory and spicy cheeses,
strawberries, cherries, pastry cream and ice cream. It also makes the perfect ending to a meal, sipped from a
spoon or glass. Each bottle contains 100 ml of Gold Seal Balsamic Vinegar and is numbered and comes boxed

being slightly sweeter on the finish than Modenese balsamico. It is consistently rated as the best alternative to precious
tradizionale balsamics. Cavalli's Classic Balsamico is aged for 3 years.

Riserva Nando, named after Ferdinando Cavalli, is the condimento balsamico that he kept for his personal use. The
antique mulberry and juniper barrels that Nando collected in the late 1920’s have imparted this product with silky
smooth richness, like rare port, with a deep prune-like color. Cavalli Riserva Nando is of a higher caliber than most
condimento balsamico due to the fact that it is aged longer in small casks, resulting in a finer, more intense flavor. It
is an excellent addition to marinades, mayonnaise, gravies and salads. Riserva Nando is aged for 5 years in chestnut
and mulberry barrels.

The newest member of Cavalli Balsamics has been acclaimed for its perfect balance of sweet and sour. Soft and Fruity is produced solely
from the same cooked grape must of Trebbiano grapes and it is for those who prefer a sweeter taste in their balsamico with less acidity.
It is delicious sprinkled on lamb, drizzled on fresh berries, or whisked with extra virgin olive oil for salad dressing.
DEL CRISTO (MODENA, ITALY)
For several decades the Barbieri Family has been passionately dedicated to the ancient values and traditions handed down for
generations. The "Acetaia del Cristo" is a small farm situated north of Modena in Italy. The Barbieri Family starts the production of the
worldwide famous TRADITIONAL Balsamic Vinegar of Modena from their own biologically grown grapes. Their values and traditions
make "Balsamico Tradizionale" a reality and famous for its high quality. The grapes utilized are Trebbiano and Lambrusco grapes only.
The Del Cristo Traditional Balsamic Vinegar of Modena (DOP) is produced by the family from maturing this grape must over a long
and slow vinegarization process through natural fermentation.
This is followed by progressive concentration by ageing in a series of casks made from different types
of wood and without the addition of any other spices or flavorings. The vinegar’s fluid yet syruplike consistency is complemented by its rich, dark brown color full of warm light. Its flavor is
distinctly complex, sharp, and unmistakably, but pleasantly, acidic.

Del Cristo’s White Seal Balsamic is aged for a minimum of 12 years in oak casks. Recently, they have also
introduced two new Traditional Balsamic Vinegars that were previously reserved only for the family’s private use.
Both are White Seal balsamic vinegars aged for a minimum of 12 years in either cherry or rare juniper wood.
Traditional Cherry Balsamic is syrupy and smooth, like traditional White Seal, only with the
elevated sweetness of taste and aroma that the cherrrywood imparts.
Traditional Juniper Balsamic is also syrupy and smooth, like traditional White Seal, only with
traces of resin from the wood that give it its characteristic body and spice-like flavor. This
white seal tradizionale balsamic vinegar is aged for a minimum of 12 years in rare juniper wood barrels that impart a

balsamic, made in the style of traditional Modenese balsamic, is intensely aromatic with a balanced sweet and tart
flavor with a dry finish. It is produced from cooked must and wine vinegar that are produced on premises and aged
in wooden barrels. The gradual transfer of woody essences from barrel aging gives this product an

FRENCH WINE & FRUIT VINEGARS
MARTIN POURET WINE VINEGARS (ORLEANS)
The Orleans process, as it has long been called in France and other parts of the world, is just the
old way of letting wine ferment slowly into vinegar inside partly filled barrels. Slow, old fashioned
methods do not fit easily into modern economy but Jean Francois Martin, 6th generation, is
convinced that the company has survived solely because of the merits of the product.
Maison Martin Pouret, founded in 1797, produces French vinegar using
the traditional Orleans slow process. It is a Cabernet Franc based wine
vinegar that solely uses grapes from the Bordeaux and Loire Valleys. The
wine is fermented, and then aged in oak casks. At the end of this process,
exquisite Orleans wine vinegar is born, retaining the full flavor and deep
bouquet of the original wine. The richness of these vinegars is balanced by its naturally high acidity.

The painstaking respect for tradition by workers whose parents and grandparents
performed the same tasks for the generations of Ortiz owners is still followed closely
today. The fillets are prepared using the traditional method of trimming and filleting
each anchovy by hand, which ensures that high quality is maintained.
Once the anchovies reach port, they are cleaned and placed in barrels where they are left
to mature for at least six months. This is followed by a six-step process of having the
anchovies de-boned and filleted by hand.
Caught close to the coast in the spring using nets, they are classified, salted and then kept until they reach perfect maturity.Once the
anchovies are properly preserved, they are either packaged whole in saltwater, or hand fileted one by one and packaged in olive oil.
La Gran Anchoa ala Antigua or the Ortiz selection of large size anchovies is prepared in the
traditional manner. The fillets are matured in barrels for at least six months and are presented
with the skin on in extra virgin olive oil.

Bonito del Norte is found in coastal waters of the Bay of Biscay in the Basque region of Spain during the
summer season when they come north to dine on the Cantabrian Anchovy. The Bonito del Norte is the
most valued member of the tuna family, highly appreciated for its white flesh, exquisite flavour and
delicate texture. This Ortiz specialty is fished using artisanal fishing techniques with the philosphy that we
must preserve our earth and its resources. Each tuna is individually line caught and not netted. They are
fully dolphin safe. When these fish are caught within a 24 hour period they are cooked in seawater and
the loins are then hand-packed in olive oil to keep it moist and flavorful and left to mature for at least two
months before they are shipped to customer around the world. Whether served as an antipasto, hors
d'oeuvres, snack or part of a Spanish tapas meal, there is a pack size and selection for almost every
consumer or chef.

CAMPANINI (ITALY)

For three generations, the Campanini family has produced superior Italian rice. It is located in a small riseria where
production is under the strict supervision of the family. The rice is natural and does not undergo any chemical
treatment. This superb rice is certified Kosher star K. Quality rice has the following properties: it absorbs well it’s
cooking liquid, each grain remains consistent, and it is not sticky. Three varieties are available from Campanini:
Carnaroli Superfino- This rice has a long, tapered grain with a central wide pearl. It is not very wide, cooks
uniformly and amalgamates well with condiments. It is perfect for making rice salads, pilafs and risotto that require
a less creamy consistency. The cooking time is approximately 16 minutes.
Vialone Nano Semifino- The traditional rice of the Mantua and Vento regions, it is a round, half-long grain, with a central, wide pearl.
It absorbs twice its own grain weight in liquid and is ideal for making perfectly creamy Risottos. Cooking time is approximately 15
minutes.
Arborio Superfino- This rice has a very wide and long grain with a central wide pearl. It is the most well known Italian rice and cooks in
approximately 14 minutes. During the cooking process, the external part of Campanini's Arborio cooks quicker than the central part.

a creamy liquid, while retaining its tender, distinct bite making it an ideal, healthy choice for risotto style dishes and

Pastificio Benedetto Cavalieri was established in 1918 near Lecce in Apulia, Italy. Today, the fifth

The durum wheat still grows on the southern exposed hillside which results in low yields but consistently
high quality. “Delicate methods” of production are then employed and grain characteristics are enhanced,

Saffron, the dried stigma of the Crocus Sativus plant, is the world’s most precious spice,

Safinter follows ISO -3632 standards in its gardening technique and quality control. The
saffron flower must be handpicked at dawn when it is in bloom.
Saffron is only in bloom from 15 to 20 days of the year, usually
during the end of October. The flowers are collected in baskets
and transported to the village, where the precious stigmas are
removed by hand.
Many people, even professionals, find it difficult to distinguish good quality saffron from bad. One of the most
marked indicators of quality saffron is its depth of color and flavor when cooking. General guidelines for
judging the quality of Saffron before purchasing it are to look for the following: Genuine La Mancha Saffron

The cultivation of red pepper for Pimenton was first introduced in the La Vera region of Spain in the XVI Century by monks.
Pimenton de La Vera’s exquisite flavor is due to the unique process by which is it made. La Vera Paprika (D.O.) is one of the most
exclusive spices in the world, due to its unmistakable aroma and flavor. It is prepared from the dry pulp of the Ocales and Jaranda
peppers grown in La Vera region, West of Spain.
The secret of its excellence lies in the laborious and delicate process by which it is dried. A hearth
filled with Holm oak wood is kept burning until the fruits become perfectly dehydrated. It is a slow
